s June arrives so summer officially begins! This month we’ve compiled a fantastic rundown on some of the best local festivals, events and fayres that are coming our way over the warmer months. From a midsummer vintage show to Larmer Tree Festival there is something for everyone - find out more from p15. Speaking of Larmer Tree, head to p79 to enter our fantastic competition to win weekend tickets to this year’s event! Longleat is hosting its Food & Drink Festival again this June and this time it has an Australian-theme in celebration of the arrival of their wombats and koalas. Headlining the event is celebrity chef John Torode. We find out more on p24. Our bumper food and drink section also includes yummy salad recipes from The Food Wife Fran Stevens (p29), and we meet Scottie, head chef at The Longs Arms in Steeple Ashton (p34). COSÌ FAN TUTTE COMES TO GREAT CHALFIELD Bath Opera will return to Great Chalfield on 28 & 29 June with their 2019 touring production of Mozart’s Così Fan Tutte. Performances will be in the Great Hall (which has excellent acoustics): an intimate setting for an audience of 70. The gardens will be open for picnics from 5.30pm, the show starts at 7.30pm and there will be an interval of 30minutes. Mozart’s engaging and hilarious tale involving two engaged sisters is given a new “Sixties” hippy twist in Bath Opera’s new production. Director Tom Magnone takes one of the 18th century’s greatest ensemble operas on an emotional 1960s roller-coaster ride of love, trust, loyalty, disguise, betrayal, deception, bewilderment and self-realisation.

The subtitle for the opera is La Scuola Degli Amanti (The School for Lovers), The short title, Così Fan Tutte, literally means ‘So do they all’ and is usually translated in English as ‘Women are like that’. Mozart’s hilarious ‘Opera Buffa’ Così Fan Tutte was first performed in 1790 at the Burgtheater in Vienna, Austria. The libretto was written by Lorenzo Da Ponte with whom Mozart also collaborated on The Marriage of Figaro and Don Giovanni.

TESS OF THE D’URBERVILLES AT THE TITHE BARN Thomas Hardy’s most popular novel will be brought to life in the magnificent Tithe Barn from 2 - 6 July! The multi-award winning Bradfordians are proud to bring you the story of Tess - a beautiful, spirited country girl - and the two men who desire her. Hardy’s original version of the story was somewhat too strong for Victorian tastes and was heavily censored. It was only some years later that it

Warmer weather calls for cooling salads. These fantastic recipes come courtesy of Fran Stevens, aka The Food Wife. Her blog is full of great recipes for all occasions.

Spiced Butternut Squash, Feta and Pomegranate Salad Serves 2-4

Sweet, roasted, spiced orange flesh with sharp and creamy cheese. Do you need any more encouragement to give this salad a go? Whilst this is a summery dish it is delicious at any time of the year. I have eaten this salad a lot recently; as a main meal paired with warm flatbreads, and as part of a lunch with falafel and houmous. It’s also well suited to accompany other salad dishes.

I have tried the two spice mixes on the squash and both work well. You’ll get a milder herb/spice from the za’atar and the addition of sesame seeds brings a nuttiness, whilst the ras al hanout has a hotter, more complex spice blend. The dressing

Halloumi & Courgette Salad with Lemon & Chilli VINAIGRETTE Serves 3-4

Recently I’ve served Delia’s Fried Halloumi Cheese with Lime & Caper Vinaigrette for friends at lunch. It’s a real favourite of mine as the dressing is so zingy it makes the cheese’s flavour really come alive. I’ve now come up with a recipe of my own that celebrates this wonderfully squeaky cheese. I served it to friends accompanied by my Spiced Butternut Squash, Feta and Pomegranate Salad with flat breads on the side. Ingredients For the salad: 1 large courgette 225g halloumi 2 tbsp plain flour Salt and pepper Olive oil for frying For the dressing: 1 unwaxed lemon (zest and juice) 3 tbsp olive oil 1 red chilli, finely diced (with or without seeds; leave them in for more heat) 1 tbsp chopped parsley

This is great to have when it’s hot. It’s so quick (assuming you’re using leftover chicken), fresh, and incredibly satisfying. The fat-free dressing gives you a citrusy, salty, chilli hit. Yum. It’s also great for when you’re watching your calorie intake. I also like it without the noodles if I’m looking for a carbfree meal or an even lighter lunch.

Ingredients 1 chicken breast cooked and shredded 50g vermicelli rice/bean noodles, soaked in boiling water until soft then drained under cold water and pepper and press the slices of A mix of salad such as: cheese so they have a light coating Baby gem lettuce, sliced of the flour. 2 inches of cucumber, sliced or cubed 2 spring onions, sliced Heat 1-2 tbsp of olive oil in a non-stick 1/2 carrot, peeled into ribbons pan on a medium-high heat, and fry 1/2 red pepper cut into thin strips the slices of floured halloumi for a 5 cherry tomatoes, halved couple of minutes on each side until Small bunch of mint leaves, torn golden brown. ‘SCOTTIE’, head chef at The Longs Arms in Steeple Ashton, talks bread & butter pudding, catering for large numbers and knife sharpeners! What was your first job in catering? At The Angel Inn in Heytesbury. I absolutely loved my time there and even met my husband there – some 25 years ago now. Where have you worked before? The Lamb on the Strand in Seend and a caterers called Fit For A King. What is the first dish you mastered? My first, and favourite, dessert was a pear and frangipane tart, which I still love making (and eating!) to this day. Do you have any favourite local suppliers? We source our meat from WJ Beaven in Melksham and our seasonal veg comes from Ashton Farm. We are also very lucky to have some fantastic homegrown fruit and veg brought in from our locals in return for refreshments! Scottie loves cooking up an old school pudding!

f you’ve ever been tempted by a vegetable box scheme, but then unsubscribed because you’ve not been able to choose your own veg and have ended up with an excess of carrots, think again! Local Bradford on Avon hotel, Woolley Grange has come up with an ingenious scheme whereby not only can you buy their fresh produce (grown to organic standards), but you can also have some choice. Join the Garden Basket scheme and every Tuesday pop along to The Potting Shed Shop in the hotel’s tranquil Victorian walled kitchen garden. Fill a beautifully handcrafted traditional basket with your chosen produce and then bring it back empty the following week, and repeat. Just like shopping used to be and with no plastic packaging in sight…well, actually, only the compostable leafy salad bags.

INHERITANCE TAX Inheritance tax usually becomes payable when assets are left on someone’s death, however, gifts can also be taxable. To ensure that tax bills do not make farms unviable, agricultural and farming assets may be sheltered from inheritance tax by Agricultural Property Relief and Business Property Relief. These reliefs can reduce the tax payable by either 50% or 100%. The difference between full or partial relief can be little more than a few words in the partnership agreement so expert advice can pay dividends. The ‘residential nil rate band’ is now £150,000 per person for the 2019/2020 tax year rising to £175,000 for 2020/2021. This could save a couple inheritance tax of up to £140,000. Strict criteria apply and

BEHIND THE SCENES This month we’ve caught up with First Team Physiotherapist CERI PARHAM to find out more about what goes on behind the scenes at Bath Rugby. HOW DID YOU GET INTO SPORTS PHYSIOTHERAPY? I had a strong interest in sport from a young age my father and brother were both very active and competitive, my brother is currently a GB triathlete. I studied Sport & Human Movement Studies at Cardiff Metropolitan University in the late 90’s and that led to pursuing a career in physiotherapy graduating as a Chartered Physiotherapist in 2002. I worked in the NHS in Merthyr, South Wales for 7 years and they were very supportive in allowing me to work part-time with the Welsh National Football Squads. I progressed to full-time sport in 2009 when I was appointed Head of Sports Medicine at Swansea City FC. WHAT LED YOU TO BATH RUGBY? I had worked for a brilliant group for 3 years at London Irish and Bath had appointed their Head of Performance Allan Ryan and Head of Medicine Declan Lynch. They contacted me when I was working at Wasps to see if I’d be interested in coming on board. They had just made the Premiership final, so I jumped at the chance. I have a young family too and the opportunity to raise them in such a great part of the world was very appealing. WHAT WOULD CONSTITUTE A TYPICAL DAY, IF THERE IS SUCH A THING? We meet early as a medical team, plan the day, then start triaging any players from 8am. There’s lots of prep for their morning performance sessions and then again for the afternoon rugby

sessions. The aim is to be as proactive as possible although naturally there’s a reactive element to it also. No two days are ever the same looking after 55 young athletes. DO YOU DO PREVENTATIVE WORK WITH PLAYERS OR ARE YOU KEPT BUSY ENOUGH WITH INJURIES? Players all have individualised programmes to work on based on their injury history or specific needs, hip mobility, trunk stability etc. There are planned slots in the day where players can work on these or one on one slots with the medical team. Training loads are also monitored individually via GPS and other measures in fine detail, to manage injury risk. DOES THE MODERN GAME MEAN YOU ARE TREATING MORE OF A PARTICULAR TYPE OF INJURY? Just more of everything really, the Premiership is a very tough and physical league. There is much more thought and management of training load and limiting soft tissue injuries (muscle strains), which is an area you can really target and limit injury risk and exposure. WHAT’S THE BEST THING ABOUT WORKING IN THE PROFESSIONAL SPORT ENVIRONMENT? I am fortunate at Bath that I work with some brilliant people, it’s the people really that make the job. INTERESTING FACTS So unpleasant is it to ask people to clear their desks and take their skills elsewhere, that a huge number of words and phrases has grown up to describe the simple fact of redundancy. You might have been handed your cards or perhaps you’re clearing your desk, considering your position or maybe becoming a consultant. Maybe you’ve been

deselected or you’re taking an early bath. Then again, perhaps you’re excess to requirements or you’ve even been excluded. You’re leaving to give time to your other commitments or else you’re off on gardening leave. If you’re lucky you’ll have negotiated a golden handshake rather than merely being given a leave of absence or let go. When you’re given notice let’s hope they don’t say it’s natural wastage or that you’ve been stood down. No, you’re spending more time with your wife and family, as it’s your right to do, even if your contract has been terminated and nobody could really describe this as a voluntary relocation.

AND NOW MY WATCH IS ENDING...

S

o it’s over. I haven’t seen it yet but it is finished. Someone, or no-one, sits on The Iron Throne as ruler of The Seven Kingdoms. It is, waiting, on our TV downstairs for us to watch and because we love it we have set aside an hour or so this morning after dropping the kids off to watch and enjoy what is possibly the biggest event in TV history…well this year anyway!! I am, of course, talking about Game Of Thrones. I know some of you will hate it and some of you won’t have seen a single minute of it which is your prerogative, obvs…but if not, why not?!

The storylines are amazing, the characters are brilliant, it’s exciting, in short it has everything you would want in a TV series. It has heroes and villians, comedy and pathos (the scene in Series 6, Episode 3, when

Jon, Danaerys, Sansa, Arya, Bran, Tyrion, Cersei, Jaime and all the rest of the characters seem a little bit like family now, a slightly crazy, weird family, that you only see a few times a year, to be sure, but then who doesn’t have family like that? It will be slightly strange knowing that there will be no more episodes to look forward to. All the ends will, hopefully, be tied up and if previous series are anything to go by everyone will be happy… or dead.

Do yourself a favour if you haven’t seen it. Leave your prejudices in the kitchen or bathroom, turn down the lights in the living room, get some snacks and drinks, maybe order a takeaway and binge watch the whole thing on Catch Up TV…or just watch the first episode… at least give it a decent go. I can’t write anymore at the moment as I am too excited… I need to go and calm down a bit. I also have to get through the next 4 hours or so without seeing any spoilers. If anyone mentions anything about it at school drop-off this morning there may be trouble… I may have to get the Mother of Dragons involved!!! Phil Rockliffe

They are big books but to give you an idea of how gripping they are, and the TV show is no different btw, I am three-quarters of the way through the second book, which is almost 1000 pages long, and I’ve only had them for 17 days! I am self employed have two small children to help look after and I have managed to get through almost two of the books in 17 days because they are that good.
