ne of the huge benefits of living in, or near, a city as beautiful as Salisbury is that it looks absolutely stunning festooned with Christmas lights! In fact, the lights switch on, which marks the official start to the festive season, has become one of the best-loved events in the city’s calendar. We let you in on what to expect at this year’s event, plus all the other things going on over the festive season, from page 18.

AN EVENING WITH LORD ROBERTSON

E

njoy an evening with Lord Robertson of Port Ellen on Wednesday 20 November at Salisbury Guildhall. Lord George Robertson, Baron of Port Ellen, is a Labour peer and former Secretary General of NATO. His tenure as NATO Secretary General encompassed the September 11th attacks and the subsequent military action in Afghanistan and Iraq. As such he was NATO’s Secretary General through a defining moment in 21st century geopolitics. His experience at the front line of international relations gives him a fascinating perspective on the key geopolitical risks and security issues facing the world today. His talk, entitled Can an Unstable World be Made Safer? promises to be informative, enlightening and

THE CATERPILLAR WHO WANTED TO FLY

L

ocal author Maureen Brown’s new book, The Caterpillar Who Wanted To Fly is out now, and makes a perfect gift for a child this Christmas. Maureen began telling stories for her children to enjoy at bedtime and wrote them down in

a notebook so as to recall them at a later date. However, it was only after the birth of her first grandson that she started creating stories again and embarked on the path of becoming an author. Maureen says, “Elliot used to arrive with his Pinky Pig toy and ask me to make up a story about Pinky’s adventures. Ten stories later they were made into my first book, The Adventures of Pinky Pig & Friends. Then more grandchildren arrived and so the demand for stories continued, leading to the publication of Taffy’s Adventure In The New Forest, Tell Us A Story Granny and The Extraordinary Othello & Other Cats. Her latest book The Caterpillar Who Wanted To

Fly came off the printing press earlier this year. The Caterpillar Who Wanted To Fly is a wonderfully engaging tale, beautifully illustrated by Maurice Stevens. It’s perfect for reading to children as a bedtime story as it’s not too long, but also ideal for those learning to read independently. SALISBURY 2020: CITY ON THE MOVE Plans to mark the 800th anniversary of the founding of Salisbury Cathedral and the development of modern Salisbury announced at the Guildhall. cathedral and its community from Old Sarum to its present site. Driven by the need to access fresh water, and desperate to escape bad weather, royal supervision and regular harassment by soldiers stationed at Old Sarum Castle, his actions changed the community and landscape of South Wiltshire forever. By April 1220 the foundation stones for what was to become an iconic national landmark were laid and expansion of the city we know and love began.

ast month, plans for Salisbury 2020: City on the move, a year-long programme of events and activities marking the 800th anniversary of the laying of Salisbury Cathedral’s first foundation stone and the development of Salisbury, were announced at the city’s Guildhall. Photographed with a giant Salisbury 2020 logo, founding partners Salisbury Cathedral with Salisbury BID, Salisbury City Council, Wiltshire Creative, Wiltshire Council, Wiltshire and Swindon Sports Partnership and Visit Wiltshire outlined plans for the year and invited local organisations, business and community groups to get involved and contribute their own events and activities to the evolving programme.

This edition FRAN STEVENS, aka The Food Wife, offers three deliciously tasty one pot dishes for all the family to enjoy...

Serves 2

This combination uses spicy chorizo and naturally sweet peas to give a nice balance of flavours. I like to use bouillon vegetable stock and find I don’t need to add any extra salt as the stock and parmesan are salty enough. I also cut the chorizo up into different sized pieces, some finely diced, some half moons, some full slices, I find this gives a good dispersion from the small pieces and also you still get the odd big chunk! Make sure the pan you use is hoband oven-safe and deep enough to 16

hold the cooked risotto. It does not need a lid. If you are feeding a larger group just scale up the proportions! Ingredients 1 tbsp oil or butter 1 onion or leek, finely chopped ½ bell pepper, cut into small dice 75g chorizo, chopped 110g arborio rice 320ml hot veg or chicken stock 50ml white wine or vermouth Pinch of white pepper 2 tbsp grated Parmesan 150g frozen petit pois Method Preheat your oven to 150°C. Heat the oil or butter on a medium heat in a deep oven proof pan. Add the

leek or onion and soften for five or so minutes before adding your red pepper and softening for another five minutes. Add your chorizo and stir to release its oils and then stir in the rice, coating it in the oils. Add the white pepper, stock and wine and bring to the boil, then transfer the pan (uncovered) to the preheated oven and leave for 25-30 minutes. After this time, remove from the oven and stir in the parmesan and frozen petit pois and then return to the oven for a further 15 minutes. Serve immediately with seasonal veg and an extra sprinkling of parmesan.

A traditional risotto can be a labour of love but a baked risotto requires little interference and still produces a satisfying dish for a weeknight meal.


Serves 4-6

During the week it’s a godsend to be able to throw a few ingredients in a dish and then pop it in the oven and forget about it. This dish takes five or 10 minutes of prep and then about 50 minutes in the oven and it’s ready to serve.

Method Preheat the oven to 190°C. Mix the spices together and set to one side.

You can choose how much effort you put in to the spicing too. I made my own spice mix, but if there is a shop-bought one you like, by all means use that. I have suggested cooking this in two baking dishes, as I found cramming it into one made it overcrowded and would have resulted in it steaming rather than baking.

Score the top of each of the chicken thighs with a sharp knife three times and place on top of the potatoes.

Toss the potatoes, peppers and onions in the olive oil and a pinch of salt and divide between two baking trays.

Sprinkle the seasoning mix over the skin of the chicken and toss lightly with the vegetables, before nestling them, skin-side up amongst the potatoes and peppers. Place in the preheated oven and cook for 50 minutes.

Ingredients For the spice mix: 1 tsp (hot) paprika This is nice served with seasonal veg 1 tsp chipotle chilli flakes in winter or green salad in summer 1 tsp dried oregano with some feta cheese sprinkled over. 1 tsp sumac (or the grated zest of a lemon) 1 tsp caster sugar 1 tsp garlic powder (or two garlic cloves, crushed) Pinch of salt Serves 5-6 For the bake: Sometimes you just want a bowl of 2 peppers, cut into 1- inch pieces warmth you can eat with a spoon, 750g small new potatoes, quartered and this is just that. 2 red onions, peeled and cut into thin No oil is needed as the chorizo will wedges release its own, adding extra flavour. 2-3 tbsp olive oil Made in just one pot it is ready in Pinch of salt about half an hour, and can be eaten 1kg chicken thighs

Ingredients 200g chorizo ring, peeled and sliced into slices 3-4mm thick 1 onion, medium dice 1 fat clove of garlic, peeled & minced 1 heaped tsp hot paprika 1 heaped tsp smoked paprika 1 red pepper, deseeded & dice 1 tin butterbeans, drained 350g sweet potato, peeled and cut into 2cm cubes 150g red lentils 500g passata 700ml vegetable stock Salt and pepper Method In a heavy bottomed sauce pan, over a medium heat, add the chorizo and let its oil come out. After a couple of minutes add the onion and stir, cooking for another five minutes. Next add the garlic, red pepper and paprika and stir, and cook for a minute. Add the beans, lentils and sweet potato, stir well and then add the passata and stock. Season with a big pinch of salt and pepper and bring to a simmer. Put a lid on the saucepan, lower the heat (it should still be simmering) and cook for about 20 minutes until the potatoes are cooked and the lentils are soft. Check the seasoning and serve. 10 YEARS OF SOFACO!

This November sees Warminster retailer SofaCo Plus celebrate 10 years in business. Owner TOM O'HARE reflects on a decade of independent trading. 2008's credit crunch had passed and my friends and I thought that after a tough 12 months I'd be flying! As it turns out, a rollercoaster ride would be a better desription of how the next decade would unfold. I'd spent 30 years working for others though; stepping into the unkown and becoming self-employed was nervy but exciting. I can honestly say that the quality of life, and the lovely people I have met on my journey far outweigh the financial challenges. The support from the wonderful people of Warminster, its surrounding villages and further afield has been amazing. Warminster Independent Traders have also been very supportive. When I need an extra pair of hands there is always help from the neighbouring shops.

ow, we made it…. 10 years in business. A lot of you will know my story, but for those who don’t, it started by going to auction in Devizes in July 2009 and buying 15 George Street in Warminster. At the auction they were filming for BBC’s “Homes Under the Hammer”, and once my winning bid went

down, I was persuaded to make my TV debut. During the recording presenter Martin Roberts asked me why I thought I could run a successful business from this end of town, after so many before me had tried and failed. My answer was….”Low overheads”. It seemed ideal to me. The building was paid for, business rates were low, I had no rent to pay and living above the shop would help keep my costs down.

The shop is constantly evolving… Some years ago, I used to let local artists display their work, but I found it was not always in keeping with the feel I was trying to create within the store. Now I have carefully selected artwork, sculptures and lighting which are fun and give the shop a brighter look. We've also updated the outside of the shop, changing about a year ago from our original cream and grey to a new livery of charcoal and burnt orange (the paint supplied by our good friends at A Touch of Tradition just a few doors down). And how can we talk about the last 10 years without a mention of the shop cats...?! Both arrived within the first year. Poor Mr Darcy passed away about a year ago, but they


house & home were always around to greet clients, and many local people popped in just to see them. Tosca is doing well, and loves testing out the new sofas that come on display…. For non cat lovers, Tosca is always willing to rest upstairs too!

CRISIS? WHAT CRISIS?!

ne of the things I guess I have to be aware of, being the age I am, 54, is a mid-life crisis. It’s one of those things that seems to happen to men of a certain age. It apparently doesn’t happen to women, but the difference between men and women? That’s a topic that may have to wait until another time… perhaps when I have a spare three years to write it!!! One of the more traditional, if you can describe it that way, events in an M-LC is ditching the wife and trading her in ‘for a younger model’. The fact that my lovely wife

I think if I am going to do the whole M-LC thing then I may have to think of something else, although I’m not sure what that might be. I think the very fact I can’t think of anything probably precludes me from being able to have an M-LC but that’s OK as I don’t feel as though I am in a very ‘crisis’ place at the moment anyway. I’m very happy with my young wife thank you!!
