SLOW ROASTED PRIME RIB

INGREDIENTS:
• An 8- to 10-pound beef prime rib roast (boneless, trimmed, cleaned, & tied)
• KPR Italian Beef Rub, as needed
• Olive oil, as needed
INSTRUCTIONS
Set oven to 400 degrees.
Drizzle oil over prime rib and rub to coat lightly. Rub with spice rub and place in a roasting pan. Place roast in the oven and cook for 20 minutes, until browned.
Reduce the oven to 275 degrees and continue to cook, basting occasionally, until an instant-read thermometer inserted into the thickest part of the meat registers 120 degrees (for medium-rare).
Remove from oven and loosely tent with aluminum foil. Let rest for 20-30 minutes before carving.

TRUFFLE CARBONARA

INGREDIENTS
• 7 oz spaghetti
• 2 large egg yolks
• 1 large whole egg
• 1 cup Parmesan cheese, finely grated
• 1 tablespoon white truffle oil
INSTRUCTIONS
• 1 tablespoon unsalted butter
• Freshly ground black pepper, to taste
• 1-2 tablespoons salt
• Fresh black truffle, thinly shaved, for garnish
Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 9–10 minutes. Reserve ½ cup of pasta water before draining. In a bowl, whisk together egg yolks, whole egg, Parmesan, truffle oil, and a generous amount of freshly ground black pepper. Set aside.
Add the drained spaghetti to a large skillet or bowl. Remove from heat, then slowly pour the egg and cheese mixture over the hot pasta, tossing quickly to create a creamy sauce. Add reserved pasta water a little at a time until you reach your desired consistency.
Divide the pasta between plates. Garnish with shaved truffle. Enjoy!

AUTUMN HARVEST PURPLE RICE PILAF

INGREDIENTS
• 2 cups wild or purple rice
• 3 ½ cups chicken stock or vegetable broth
• 1 medium-sized butternut squash, diced ¼ inch
• 8 ounces mixed mushrooms (any variety)
• 1 tablespoon chopped fresh rosemary
• 2 tablespoon chopped fresh sage
• 1 tablespoon chopped fresh Italian parsley
• 1 teaspoon white truffle oil
• ¼ cup golden raisins, soaked overnight
• 2 ounces butter
• 1 ounce extra virgin olive oil
• Salt & pepper to taste
INSTRUCTIONS
The evening before, place the golden raisins in a small jar, cover with water, and refrigerate to rehydrate. Drain before using.
On the day of preparation, peel and dice the butternut squash, slice the mushrooms, and finely chop the herbs. Rinse the rice in cold water, then drain well. In a 4-quart pot, combine the rice with chicken stock or vegetable broth. Bring to a boil, cover, and reduce to a gentle simmer. Cook for 20–25 minutes, until the liquid is nearly absorbed. Remove from heat and let rest, covered, for 10 minutes to finish steaming.
While the rice cooks, warm the butter and olive oil in a large skillet over medium-high heat. Add the diced squash and sauté until just tender. Stir in the mushrooms and continue cooking until both are golden and fragrant. Season with salt, pepper, fresh herbs, and a drizzle of truffle oil. Fluff the rice with a fork and fold in half the vegetable mixture. Transfer to a serving platter, spoon the remaining vegetables over the top, and finish with golden raisins. For an elegant touch, garnish with crisp fried sage leaves before serving.
• Duck fat (enough for confit, plus ¼ cup reserved)
• 2 quarts + 1 cup vegetable stock
• 1 pint heavy cream
• ½ nutmeg ball, freshly grated
• Salt, to taste
INSTRUCTIONS
Melt butter in a large pot over medium heat.
Sauté fennel, onion, celery, and pear until soft and translucent.
Deglaze with white wine.
Add parsnips, bay leaf, and vegetable stock.
Simmer for about 30 minutes, or until all vegetables are tender. Remove bay leaf.
Add heavy cream and nutmeg; simmer an additional 5 minutes.
Blend on high until smooth. Strain through a fine mesh strainer.
Season to taste with salt.
Chill and reheat when ready to serve.
INSTRUCTIONS
Confit duck legs with garlic and thyme until tender.
When cool enough to handle, pick the meat and reserve.
Strain and save ¼ cup of the duck fat. Before serving, sauté the duck meat in the reserved fat until crispy.
Alternative: Use pre-cooked duck confit. Pick the meat and crisp in grapeseed oil.
Curry Oil
• 1 cup grapeseed oil
• 1 teaspoon Madras curry powder
INSTRUCTIONS
Combine oil and curry powder in a small pot.
Steep over very low heat (pilot light) for 1 hour.
Strain through cheesecloth.
Apple, Cardamom & Cilantro
• Thinly sliced apple (use mandoline for uniform slices)
• Micro cilantro
• Ground cardamom, for sprinkling
ASSEMBLY
Ladle hot soup into each bowl.
Add a mound of crispy duck carnitas to the center.
Top with apple slices and micro cilantro.
Sprinkle lightly with ground cardamom.
Spoon curry oil around the surface of the soup.

BRAISED SHORT RIB RAGÙ

INGREDIENTS
• 3 pounds English cut short ribs
• Salt & pepper
• Olive oil
• 2 medium carrots, finely diced
• 2 celery stalks, finely diced
• 1/2 medium yellow onion, finely diced
• 1 small fennel bulb, finely diced
• Bouquet garni, tied with kitchen twine or wrapped in cheese cloth:
1 bay leaf
2 sprigs rosemary
2 sprigs thyme
1 small bunch basil
• 1/2 tsp freshly ground nutmeg
• 1 cup dry red cooking wine
• 1 28-ounce can whole San Marzano tomatoes
• 2 cup chicken, vegetable or beef stock, preferably homemade
• 1 pound long pasta, preferably fresh
• Grated Parmesan
INSTRUCTIONS
1. Rinse the short ribs well to remove any bone fragments or blood clots. Pat dry and season heavily with salt. Cover tightly and place in the fridge until ready for use. This can be done up to 24 hours in advance.
2. Preheat the oven to 325 degrees. In a large dutch oven on the stove over medium heat, drizzle enough olive oil for a very thin layer to coat the bottom. Sear the short ribs until golden brown on all sides and much of the fat is rendered out, working in batches if needed so as not to crowd the pot. About 2-3min per side. Set the short ribs aside on a plate.
3. Discard the beef fat from the pot and return to the stove on mediumlow heat with a glug of olive oil. Add in the diced vegetables and season with a pinch of salt. Cook until the vegetables begin to soften, but retain a little firmness. Add the bouquet garni and nutmeg, and gently stir to incorporate. Pour in the cooking wine and let simmer until the wine is almost all evaporated.
4. Add in the can of tomatoes and crush the whole tomatoes with a wooden spoon. Stir in the stock and return the short ribs to the pot, nestling them evenly spaced and about half covered. Cover and place in the oven for 3 hours. Uncover to cook for the remaining 30 minutes.
5. Return the pot to the stove. At this point the rib bones should easily slide out, and the beef can be shredded, creating a thick, beefy sauce. Discard the bouquet garni, bones and any large pieces of fat.
6. Cook pasta until almost finished as instructed on label, reserving 1-2c pasta water. Strain and add pasta directly to the sauce, adding in pasta water as needed so the sauce coats and sticks to the pasta. Plate immediately with plenty of grated parmesan, black pepper, and serve with a side salad and crusty bread.

THE BIG PARM’S ORANGE SPIRAL HAM
Sweet heat meets smoky perfection in this festive centerpiece, bringing together bright citrus, a hint of chipotle, and Big Parm’s signature flair for flavor. Glazed with honey, brown sugar, and peach nectar, this spiral ham is equal parts comfort and showstopper – the kind of dish that turns a meal into a celebration!
INGREDIENTS
• ½ cup dark brown sugar
• ½ cup honey
• ½ cup fresh orange juice
• ½ cup peach nectar
• 4-5 chipotles, minced
• 1 (5-pound) spiral-cut smoked ham
INSTRUCTIONS
1. Preheat the oven to 375°F (190°C).
2. Make the glazes: In one small bowl, mix together the brown sugar and honey; set aside. In another bowl, combine the orange juice, peach nectar, and minced chipotles.
3. Bake the ham: Place the ham, cut-side down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and between the slices. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.
4. Glaze and caramelize: Remove the ham from the oven and reserve about 1½ cups of the cooking juices. Brush the honey mixture generously over the ham, then return it to the oven. Bake for an additional 1 hour, or until the glaze forms a rich, caramelized crust.
5. Serve it up: Transfer the ham to a platter and drizzle with the reserved juices. Slice, serve warm, and enjoy that perfect blend of smoky, sweet, and spicy.
Big Parm’s tip: Pair this ham with a glass of VJB Barbera or Vin de Campagne — both have the fruit and spice to play beautifully with the chipotle-peach glaze. For a little extra flair, garnish the platter with orange slices and fresh rosemary sprigs before serving.
LENTIL SALAD

These Lamb Chops with Lentil Salad make it easy to create an elegant, satisfying meal in less than an hour. The wine’s bold tannins and deep cassis notes balance the savory, herby lamb, while its hints of spice enhance the arugula and thyme aromatics.
Warm Lentil Salad
INGREDIENTS
• Olive oil
• 1 red onion, thinly sliced
• 3 cups cooked French lentils
• ½ cup dried sour cherries
• 2 tablespoons red wine vinegar
• 1 ½ Tbsp Dijon mustard
• Salt
• Freshly ground black pepper
• 2 cups fresh arugula
INSTRUCTIONS
Over medium, heat a large skillet; add
1 tablespoon olive oil. Add onion; cook for 3 to 4 minutes.
Stir in lentils and cherries; remove from heat and place in a bowl.
In small bowl, whisk together vinegar, mustard, and 2 tablespoons olive oil. Salt and pepper to taste.
Pour dressing over lentils and arugula; stir to combine.
Adjust seasoning as needed.
Lamb Chops
INGREDIENTS
• 4 lamb loin chops, trimmed
• Salt
• Freshly ground black pepper
INSTRUCTIONS
Heat oven to 350°F.
• 1 cup beef stock
• 2 tablespoons quince paste
• 1 tablespoon fresh thyme leaves
Heat a large, ovenproof skillet on medium heat.
With paper towel, pat chops dry. Sprinkle with salt and pepper. Add a drizzle of olive oil to pan; sear chops 2 to 3 minutes per side. Place chops on a plate.
In the same pan, add stock and quince paste. Bring to simmer; stir to melt quince paste. Add a pinch of salt and pepper.
Return chops to pan. Turn a few times to coat both sides; transfer to oven 6 to 8 minutes or to desired doneness. Place chops on plate.
Add thyme to pan sauce; reduce to desired consistency. Salt and pepper to taste.
To serve, divide salad between plates and top with a lamb chop. Drizzle with pan sauces.
Tip: No quince paste at your market? Apple or fig butter or highquality peach jam will provide a similar texture and sweet-tart flavor.

Sonoma County Harvest Fair Celebrates 50 Years
of Wine, Community, and Celebration
The spirit of Sonoma County was in full bloom on Saturday, October 11th, as more than 1,300 guests gathered at Grace Pavilion for the 50th Anniversary Harvest Fair Gala. The milestone event honored five decades of local wine, food, and agricultural excellence with a dazzling evening of tastings, awards, and festive camaraderie.
Guests sampled gold medal wines from across the county, paired with gourmet bites from local restaurants, caterers, and food trucks. Amid the joyful buzz, anticipation filled the room as hosts took the stage to reveal this year’s most coveted honors — the Sweepstakes Awards, chosen from among 33 Best of Class winners. The top winners of 2024 were announced live to applause: Breathless Blanc de Noirs
for Sweepstakes Specialty Wine, Raymond Burr 2024 Estate Vermentino for Sweepstakes White Wine, and Bucher 2023 Three-Sixty Pinot Noir for Sweepstakes Red Wine.
The professional wine competition, held September 24th and 25th, was managed by longtime Professional Wine Coordinator Sheila Quince, Chief Wine Judge Debra Del Fiorentino, and a panel of 21 respected wine professionals, including sommeliers, winemakers, and wine writers. In all, 914 wines from 149 Sonoma County wineries were submitted, producing 114 double golds, 236 golds, and 33 Best of Class designations.

Angelina Mondavi Takes the Helm of Winemaking at Charles Krug Winery

The name Charles Krug Winery is tied to Napa Valley as it is the oldest winery in the area, founded in 1861. The Mondavi name is closely linked to a wine family that represents quality, heritage, and a legacy of over 100 years. This legacy started in 1906, when Cesare and Rosa Mondavi, Italian immigrants, arrived in Minnesota and then moved to Lodi, California, in the early 1920s. As they were in the grapeselling business, they eventually bought the Charles Krug Winery in 1943. Since then, the Mondavi name has been associated not only with wines of the highest quality but also with a family deeply connected to the Napa Valley soil. Angelina grew up immersed in soil and grapes, as if they were part of her DNA. From an early age, she instinctively knew she wanted to join the family business, even if she didn’t “understand” the meaning of the name “Mondavi” at that time. No stranger to hard work and dedication, Angelina developed with the mindset of “one day…” in mind. She earned a bachelor's degree in chemistry, with a minor in business administration, from Villanova University. Later, she worked in Australia and earned a master’s degree in winemaking from the University of Adelaide.
Throughout the years, Angelina has refined her craft at various wineries in the Barossa Valley in Australia, Chile, and, of course, Napa Valley. Her experience included being a “cellar rat” at The Hess Collection and working at Pine Ridge Estates as an assistant winemaker under Stacy Clark, who became the head winemaker at Charles Krug in 2011.
As Angelina’s career advanced, including a six-year period working for one of Napa’s cult wines, she launched her own business, A. Mondavi Consulting, to offer services from the vineyard to the shelf. In 2005, she and her three sisters, Riana, Alycia, and Giovanna, started a special project called Dark Matter. This small, exclusive brand uses fruit from the family’s Howell Mountain Vineyard. The sisters handle everything themselves, from planting and vineyard management to harvest, winemaking, sales, and marketing. Additionally, Angelina is also a winemaker and consultant for the prestigious family label Aloft, alongside her other projects.
Having worked with Stacy Clark since her days at Pine Ridge, Angelina continued her collaboration with her at Charles Krug starting in 2022. Now, with Stacy’s retirement, Angelina has taken on all responsibilities for winemaking,
becoming the first woman from Mondavi to hold this prestigious position at Charles Krug Winery.
Upon reaching this pinnacle, Angelina commented: “This isn’t just a job-it’s my calling, I’ve poured my heart and soul into this industry from a very young age, always with the hope that one day I would help carry my family’s legacy forward. This is a dream my grandfather always envisioned, and I am determined to see it fulfilled.
But that’s not all. Angelina also sits on the board of directors for C. Mondavi & Family and is a co-proprietor of Charles Krug Winery. To say she has her plate full is an understatement.
Spare time? Angelina does make time for herself. She loves fly fishing and tries to take a trip or two every year to various areas. She also enjoys skiing, particularly in the Lake Tahoe area, and hiking the trails surrounding the Napa Valley region.
Although now overviewing the winemaking process at Charles Krug, this remains a close-knit family business, with Riana as the hospitality director and the other sisters and cousins all involved in different ways.
Congratulations to Angelina Mondavi on her past and recent achievements, which represent another important step in this talented young woman’s journey to carry on the Mondavi family legacy and forge new paths forward — not only for Charles Krug and the Mondavi family but also for Napa Valley and its future.

The Kitchen Sync: Sips + Songs + Prix Fixe at Priest Ranch is an elevated dinner and music showcase hosted at the winery’s downtown Yountville Tasting Room, located in the heart of the Napa Valley. Each event features Priest Ranch’s estate-grown wines, a seasonal prix fixe dinner menu crafted by Executive Chef Dan Solomon, and live performances by recording artists in partnership with A&R Worldwide. Guests can expect the unexpected at this intimate and eclectic series that syncs all the senses through wine, food, and the arts.
“We are excited to add yet another unique series to our growing lineup of experiential events,” said Judd Wallenbrock, President & CEO of Somerston Estate. “While our long-running Thursday Night Live summer music series features regional artists, The Kitchen Sync partners with A&R Worldwide to present national and international recording artists alongside our wines and Chef Solomon's prix fixe dinners.”
These intimate dinner-and-a-show gatherings blend live performances with engaging artist interviews. Host Joel Quigley will explore each artist’s musical journey through candid conversation and audience interaction. Tickets are $125 per person, with wine available for additional purchase.

Holiday Cheer at Passaggio Wines
As the holidays draw near, Passaggio Wines in Glen Ellen is brimming with cheer and excitement. It all begins on Black Friday, November 28th, when visitors are invited to unwind with a glass of wine, explore festive gift specials, and ease into the holiday spirit surrounded by the warmth of the tasting room.
The celebration continues the following week during the Glen Ellen Wine Trail, December 6th and 7th, where one historic mile becomes a wine lover’s dream. Six boutique wineries — including Passaggio, Once & Future, Grand Scheme, Rock & Clay, and Trestle Glen — come together to showcase their handcrafted wines in the heart of Wine Country.
Then, the season hits a joyful crescendo with “Boogie Woogie Christmas!” on December 13th, a lively weekend of music, merriment, and holiday tastings featuring all five wineries in one spirited setting. With live music now playing both Saturdays and Sundays (except certain holiday weekends), there’s always a reason to stop by Passaggio, raise a glass, and toast to the magic of the season.
