We are diligently working with our two new landscape vendors on grounds maintenance and revitalization of several entrance planting beds; preparing for the pools to open on Saturday, May 26th; and completing common area repairs. Additionally, Design Review is at its peak with a considerable number

The Taste of Healing Fighting Cancer with Veggies by Tracy Krulik Willowsford Resident “The mass that was on your pancreas two and a half years ago is still there,” the doctor said to me in 2007. “But don’t worry—it can’t be cancer. It’s smaller than it was back then.” That conversation was one piece of a crazy decadelong journey that started with me becoming as frail as an octogenarian in 1998, when I was 27-years old. Over the next nine years I found myself in and out of hospitals for debilitating symptoms—including pain, vomiting, and low blood sugar episodes—that flummoxed doctor after doctor after doctor. But in 2007, one M.D. figured it out. A mass on my pancreas was the root of all those years of misery. And it turned out that despite the belief that “cancer doesn’t reverse itself,” as I was told reassuringly by my doctor while we waited for biopsy results, that mass was, indeed, cancer—metastatic neuroendocrine pancreatic cancer, to be precise. A few weeks later I learned that the cancer had spread to my liver and my chest, and once that happened, my disease was deemed incurable. After consultations with myriad endocrinologists, oncologists, and surgeons, the decision was made to remove the primary tumor and half of my pancreas and leave the metastases for experimental radiation in Europe after I recovered from the surgery. But beginning Valentine’s Day 2008, every subsequent scan showed that the metastases were shrinking on their own. I didn’t even qualify anymore as a candidate for the radiation protocol.

Needing to know if my cancer was a ticking time bomb waiting to go off, I went on a mission to figure out what the heck was going on and do whatever I could to stop the countdown. I devoured any and all research I could find about cancer, and one word kept jumping out to me: diet. Maybe that was the reason for my good fortune?

correlation between animal protein and liver tumor growth, both in a cohort study of Pilipino children and then later in controlled laboratory experiments with rats. No matter how high the presence of the carcinogen aflatoxin, if animal protein (specifically in this study, the milk protein, casein) was 20-percent of the rat’s overall protein consumption, the tumors grew. You see, something changed in my life before the scan in 2004 and the one in 2007: I switched to a vegetarian diet in 2005. Could this be the answer? I poured through research, including that of T. Colin Campbell, professor emeritus of nutritional biochemistry at Cornell University, who found a

WillowsfordFarm It turned out that I was discovering this news about the correlation between diet and cancer right when it was getting hot. There was a growing cadre of books and movies about the benefits of vegan and vegetarian diets for our health, including the popular movie, Forks Over Knives, which included Dr. Campbell’s research, while revealing how switching to a plant-based diet can reverse cancer, diabetes, and heart disease. Interestingly, the research wasn’t just proving how taking out certain foods can make us healthier. There were studies on what to put into our bodies as well. Author and certified family physician, Joel Fuhrman, M.D., led the charge in this arena, with his “nutritarian” diet—one that focuses on fueling our bodies with the most nutrient-dense plant-based foods. So, by removing animal protein from my diet, I could potentially slow down or reverse cancer growth, and by flooding my body with nutrients and phytochemicals from foods such as kale, collards, mushrooms, beans, and berries, I could also turn my immune system into a cancerfighting machine. Here I am in 2018, and I’m still eating my Brussels sprouts and collard greens, and I feel incredible. It’s no coincidence that my husband and I chose to live in Willowsford—a community built around a farm, where I can walk a half mile up the road and load up my bags with as much cancer-fighting (and delicious!) produce as I want or need. Will we ever know for sure if my diet is the reason that ten years later I still haven’t needed additional medical treatments to fight my cancer? No. We’ll never know. But I’m going to keep doing what my docs have prescribed for me: “Don’t change a thing. Whatever you’re doing is working.”

Ingredients •  7 cups kale (stemmed, washed, and packed) •  5 cloves garlic •  1/2 cup walnuts •  1/4 cup olive oil •  1/4 teaspoon salt, to taste •  1/2 cup Go Veggie! grated parmesan (optional) 1.  Remove stems from kale and wash thoroughly. 2.  Add kale to food processor along with the garlic, walnuts, and Go Veggie! grated parmesan. 3.  Pulse 5 or 6 times to get everything chopped up. 4.  Turn the food processor on and slowly add the oil while the processor is processing. 5.  If you added 1/4 cup of oil, you will end up with thick, spreadable pesto. You can stop here or if you desire a thinner consistency to use the pesto as pasta sauce, continue adding oil (about an additional 1/4 cup) until the pesto reaches the consistency you want. 6.  Use immediately or refrigerate for up to one week (OR you can make the sauce in bulk and freeze it for later). Eisenbergs

Life in The Grant

by Kacie Ward HOA Administrative Coordinator Gary and Sharon Eisenberg are the pure definition of neighborly. “They are generous and selfless neighbors who are well liked by all in The Grant. We count ourselves very fortunate to have the Eisenbergs as next door neighbors,” says Tom Reynolds. They won’t hesitate to strike up a friendly conversation, share their adoration of the community with others, and welcome new residents in. “At each event we end up meeting someone new and we enjoy making new friends,” says Sharon. Once, while hiking along the trails, Gary ran into prospective buyers who had come to visit the community but got lost. Of course he provided directions, but also answered their questions about Willowsford and even invited them into his home for a tour.

“It’s been a wonderful three and a half years here.” As the principle of Franklin Middle School in Chantilly, Sharon has dedicated her life to service and education. As for Gary, after a successful career in sales as a manufacturers representative, he retired last year and now spends his days assisting his family and friends. Gary and Sharon both grew up in the DC Metropolitan area. They met on a boat named the Miss Steak, although their chance encounter was anything but. They married over Memorial Day weekend in 1976; this May will mark 42 years of wedded bliss. Following their

nuptials, the couple resided in South Florida for nearly a decade, but made the decision to move back when their two sons were preschool-age. And after 29 years in Fairfax County, Gary and Sharon made their final move: to Willowsford. They had no intention of moving here, but their sons, now adults with their own families, convinced them to take a look at the new communities popping up along Evergreen Mills Road in Ashburn. They discovered WIllowsford and the perfect single-level floorpan offered by Arcadia which, paired with the opportunity to be closer to their children, was something the Eisenbergs couldn’t resist. In September of 2014, they settled into their dream home in The Grant. “This is the end for us,” Sharon declares happily.

FamilyFeature “My fondest Willowsford memory is of participating in a Rev3 Adventure race through the trails, our first winter here. Chef Bonnie’s chili waiting for us at the end made it all the more worthwhile,” Gary recalls. The Eisenbergs appreciate the farm-to-table aspect of the community and especially enjoy attending events that involve Willowsford Kitchen, such as wine dinners and cooking classes. They make the most out of the various amenities throughout the community; you might spot the duo hiking along the Grant Loop trail or lounging by Sycamore Pool with their three grandchildren in tow. “It’s been a wonderful three and a half years here,” says Sharon. Apart from attending Willowsford-sponsored events, Gary and Sharon make time for their neighbors down the street. Sharon regularly meets up with fellow residents of Welbourne Walk Court for book club. Neighborhood gatherings and theme parties are not uncommon. They also enjoy hosting, especially when the weather is conducive to utilizing their putting green. Tom divulges, “The putting green has given rise

20

to the annual ‘Eisenberg Open’ which entails Driving, Chipping, and Putting Competitions. Afterwards, Gary presents trophies to the winners and then the entire group moves indoors for the 19th hole festivities!” The Eisenbergs are thrilled to have found Willowsford, but more importantly to have met so many wonderful residents that they now call friends.

WillowsfordConservancy Claudette has been a Willowsford resident since 2015. She has nearly 20 years of experience in the environmental movement. She began her career serving in the U.S. Peace Corps in Zambia, working to stop deforestation and promote sustainable agriculture. Claudette spent the next decade as a researcher for environmental non-profit groups, including the Ecology Center and Greenpeace. She is currently a full-time mom and part-time consultant to environmental groups in D.C.

When she’s not out biking, camping, or exploring with her two young children, you might find Claudette working in her yard. Her yard has been landscaped with native plants and designated a Wildlife Sanctuary by the Northern Virginia Audubon Society. Claudette holds a Bachelor’s in Engineering and Master’s in Environmental Policy from the University of Michigan.

by Iris Gestram Conservancy Executive Director In January, Willowsford Conservancy welcomed two residents to our Board of Trustees, Grove resident Chris Bodley and Greens resident Claudette Papathanasopoulos: Chris and his wife, Dara, joined the Willowsford community largely because of their commitment to conservation and environmental stewardship. Chris looks forward to supporting ongoing and future efforts; advancing the implementation of programs that support the natural development of Willowsford’s conservation spaces; and promoting a robust and rewarding relationship between our residents and the naturally occurring wildlife that share our community. Originally from Rochester, NY, Chris enjoys fall and winter weather. Chris supports the Federal Government, holding a BA in Intelligence Studies from Mercyhurst College, and a Master’s in Cyber-Security and Information Assurance from Penn State.

Recreational Archery Range & Archery Club Work on the new Conservancy archery range continues in the southern part of The Greens. Designed with assistance from members of the Willowsford Archery Club, the 10-lane range is scheduled for completion in late spring and features a pavilion, storage area, picnic tables, and space for archer education. The Willowsford Archery Club is a Willowsford community group sponsored by the HOA and Conservancy, established to promote the sport of archery among community members of all ages and experience levels. The club plans to hold an official range opening and kickoff event once construction is complete, so please be on the lookout for more information as the event draws near!

Pizzeria MOTO Serving Smiles by the Slice by Kacie Ward HOA Administrative Coordinator Pizzeria MOTO customers can choose from a menu of pies that include The Mutz, Italian Goat, Magnum P.I., and more. With a base of sourdough crust, crushed tomatoes, and fresh mozzarella, you have the perfect canvas for toppings such as shaved pancetta, sopressetta, basil, and brussels sprouts. As Tyler Smith, owner and pizzaiolo, emphasizes, “We put a lot of time into our crust, and I think it all starts there.” The Neapolitan-style pizzas are then fired in a 900-degree mobile oven, using only local hardwoods – each one taking just mere minutes to crisp up to delectable perfection. Tyler, an Ashburn native, enrolled in culinary school at The Restaurant School of Walnut Hill College in Philadelphia. But roughly a year into the program, he realized that traditional French-style cooking just wasn’t his thing. “I really enjoy cooking and working with food, but I couldn’t see myself working in a typical restaurant kitchen,” explains Tyler. He returned home, to American Flatbread where his passion for cooking with fire began. It was at American Flatbread where Tyler was introduced to Jay Clement, the original owner of Pizzeria MOTO. Tyler was Jay’s faithful, right-hand man for over six years. The duo set up at local breweries and wineries to gain exposure, and then expanded into the private catering business. Eventually Jay moved onto other endeavors, and in December of 2016 Tyler took a leap of faith and purchased the business. “I’ve always wanted to work with pizza, and I really love it. You don’t have to explain pizza to anyone,” he says. You see, Tyler comes from a family of successful entrepreneurs, so in his mind, it was inevitable that he would ultimately follow the same path.

LocalBusiness And even though Tyler is consistently booked for private events and other gigs, it doesn’t really feel like work since he’s fulfilling his dream. “I get to work with my friends everyday… and when I’m doing an event it’s usually someone celebrating something so that makes it even more fun,” Tyler says. Some other friendly faces you might meet at Pizzeria MOTO include his one full-time employee Andre, his fiancé Kelly, and his best friend Andrew.

If you happened to stop by the Farm Stand this past fall, there’s a good chance you encountered the Pizzeria MOTO oven. The team was set up in the Farm Garden firing up fresh pies to pick up for lunch or dinner. The

weekly special, the Market Pie, was topped with Willowsford Farm veggies. “We looked forward to Pizza Tuesdays!” resident Jessica Trigiani says.

So, when and where can you get your hands on this delicious pizza? Pizzeria MOTO will be on-site serving up pies at Wineries at Willowsford on Saturday, June 2nd. Stop by and say “Hello!” to Tyler and the rest of the Pizzeria MOTO team. Of course, if you just can’t wait until then, the mobile oven is available for weddings, rehearsal dinners, corporate events, birthdays, and celebrations of all kinds. Gardeners Know All the Best Dirt Community Club Spotlight by Christine Somer Willowsford Resident Since its establishment in 2015, the Community Garden Club has offered residents of all ages the opportunity to explore the rewards of organic gardening, expand their passion for healthy eating, de-stress and build connections with their neighbors. Scientific studies have shown that digging in the dirt benefits your mind, body, and soul. The Community Garden Club is open to all Willowsford residents, and no prior garden experience is required. Current members have a wide range of knowledge and everyone is willing to share their gardening tips and, better yet, their harvests. Past club events have included a Garden to Table Seminar, Summer Harvest Party, and Fall Clean-Up BBQ. Our membership continues to grow with each passing season…don’t miss out on all the fun!

In case you haven’t caught on by now, we like to be innovative here in Willowsford. So, when it came to our grounds maintenance contract, we didn’t disappoint. New this year, Willowsford HOA is working with two different landscape companies to fulfill grounds maintenance responsibilities. With Route 50 serving as the gauntlet, each vendor will maintain one half of the community. Nothing like a little friendly competition! Down to Earth Landscaping, Inc. is servicing The Grange and The Grant. They are based out of New Jersey, where they have experience maintaining communities with natural landscape designs similar to Willowsford. Chris Merkler, from Down to Earth, says “We want to own Willowsford landscape. We want people to see how beautiful it is and say ‘wow’!” Meanwhile, BrightView Landscapes, LLC is in The Grove and The Greens. Eco-Friendly Lawn Care Perfect Your Technique Maintaining your yard in a traditional manner isn’t always the “greenest” endeavor. Whether it’s using chemical-laden pesticides and fertilizer or working with greenhouse gas-producing lawn tools, some methods of lawn upkeep can be tough on the environment. Thankfully, there are plenty of eco-friendly ways you can keep your yard looking lush. So, reduce your carbon footprint, and try some of these simple tips: •  Conserve water by watering your lawn more heavily but less often. By doing this, you’re ultimately using less water because the heavier watering lasts longer, allowing you to spread out how often you need to water your lawn. Also, watering in the early morning or early evening gives water a chance to soak into the soil without evaporating as it would during the hottest parts of the day. Finally, consider switching to water-saving sprinklers and hose nozzles. •  Don’t cut grass too short. Keeping your grass at the tall end of its optimal mowing height (usually

between 3.5- 4.5 inches depending on the type of grass) helps ensure that the root systems are deep enough to protect the grass from getting scorched by the summer sun. To avoid stressing the grass, a good rule of thumb is to cut no more than 1/3 of the grass’s current height. Be sure to cut your grass often so that you don’t have to take off too much with each mowing. •  Consider trading in your gas-powered lawn mower for an electric or battery-powered mower. Gaspowered engines contribute significantly to air pollution, so switching to an electric or batterypowered mower reduces carbon emissions. Both types of mowers are easy to start, and batterypowered mowers are rechargeable and run up to 70 minutes. Electric and battery-powered versions of other gas-powered lawn tools, such as weed whackers and leaf blowers, are also available, so consider swapping those out as well. •  Go organic when choosing a fertilizer. Organic fertilizers take longer to show results than chemical fertilizers; however, organic fertilizer will improve your soil quality in the long run and yield a much greener lawn. Conversely, chemical fertilizers can deplete your soil of minerals, pollute ground water runoff and cause soil to become too acidic.
