AGENDA 2025

Elise Rothman d'Hauthuille is a mycologist, author, and citizen scientist with 20 years of experience studying mushrooms across the United States, England, Wales, Greece, and France. Since 2017, she has resided in France, in a forested region of the Tarn, where she continues her work on mushrooms.

Elise has published several works on mushroom identification in both English and French, including:

• Deck 1: The Edibles

• Deck 2: The Deadlies

• The Twins Book

• Collection I: Les Comestibles

• Collection II: Les Mortels

• Ce Champignon est-il comestible?

Her publications aim to assist both novice and experienced foragers in identifying edible and toxic mushrooms. Currently, she is working on a third collection featuring 25 entheogenic mushrooms found in the US, Canada, and Europe.

In addition to her writing, Elise offers guided mushroom foraging experiences at her property, where guests can relax in a rustic environment surrounded by 100 acres of forest.

The Illustrations

The illustrations in this agenda have been crafted with dedication and precision by: Samuel Arnold Keane — monthly and seasonal featured mushrooms, Eleanor Quinn — the toxic twins and the beautiful cover, and Lola Crozet Molinengo — the deadly twins. These illustrations can also be found in the book "Ce champignon est-il comestible ?" published by Éditions Terran.

Note from the Author

I've created this agenda to provide a practical space to organize your days. While you use this planner to complete tasks and achieve your goals, you'll also be reminded of the fascinating fungi that are doing the same all around you.

Why This Agenda is Different

As someone who depends on an agenda to help her complete projects, I find that each year I modify the one I’m using. I add pockets with scotch tape, create separate to-do lists pages that I staple in and assign specific times to tasks. This new agenda incorporates all these features. It is designed to boost your productivity while giving your brain a much-needed break by clearly outlining your daily tasks.

How to Use This Agenda Effectively

Remember: Your chances of hitting a target increase substantially when you're actually aiming at it. Just as in darts where you aim for the bullseye, in life, you should aim precisely for your goals. Be specific. Frame your objectives in terms of time and quantity.

This agenda provides:

• A monthly goals page (your monthly "to-do list")

• Weekly task spaces

• Daily schedules for appointments and specific actions

The Fungi Connection

While you're getting things done, you'll also learn about the mushrooms that are achieving their goals during the same period. It's a unique way to stay connected with nature while boosting your productivity. A section for each season provides a list of edible mushrooms that can grow in Europe and North America (excluding Mexico) during that season. Each month, you will be introduced to a featured edible mushroom along with a list of its toxic lookalikes. This will help you differentiate the edible mushroom from those that are morphologically similar and share some or many characteristics in common with it.

I hope this agenda helps you achieve your goals and cultivates an appreciation for the fascinating world of fungi that surrounds us.

Edibility or Toxicity Icons & Their Meaning

The author of this book has not eaten all of the mushrooms listed as edible. It is through extensive research, relying on history, and the experts in this field that the appropriate edibility or toxicity icon was assigned. If all research indicated that the mushroom was considered edible, it was assigned an edibility icon 2 . The author and editor strongly recommend that an expert verify any mushroom before it is eaten. Neither the author nor the publisher accept responsibility for any reaction to any mushroom.

Considered a choice edible

Considered edible with culinary value

Experts did not indicate or did not agree on the edibility or toxicity of this mushroom

Most experts listed this mushroom as having no culinary value

Considered not edible, will likely cause a negative reaction

Considered toxic and possibly deadly

Experts considered this one very dangerous with possible or confirmed deaths associated with its consumption

2. Remember, what was edible yesterday may not be considered edible tomorrow. And what is edible for one person, may not be for another.

Explanations & Limitations

What’s in this notebook?

This is an efficient desktop planner with some mushroom content. This agenda or diary as it is sometimes called, is designed to help organize your days while providing valuable information on edible wild mushrooms found in Europe, the United States, and Canada. The mushroom content is presented within the context of the seasons and months.

Seasonal Mushrooms

One mushroom is featured for each season. For each seasonal mushroom, you'll find: an illustration on one page and a description and key characteristics on another. Keep in mind that within a species, there can be significant variability in size, color, and shape. While this variability is difficult to convey in a single illustration, it is covered in the description section. Trust the written description more than the illustration for accurate identification.

In order to help you with identification, for each seasonal mushroom featured, we’ve included a list of dangerous lookalikes. These lookalikes, or twins, are mushrooms that resembles the edible one morphologically (in shape, size, color) and share several key characteristics in common with it. We’ve also included toxic mushrooms that have historically caused confusion with the presented edible species. Additionally, you’ll find a list of many edible mushrooms typically found during each season.

Monthly Mushrooms

For each month, you'll find an illustration of a mushroom that typically grows during that period. Remember that due to morphological variability, the actual mushroom you encounter may differ in color, shape, or size from the illustration. For complete descriptions of the monthly mushrooms, including their variability, refer to the publication: Mushroom Identification Deck 1: The Edibles.

Safety Warning

Only consume mushrooms that you are 100% certain you have correctly identified; that is to say, all characterics match. Majority does not reign in the domain. Proper identification is crucial for your safety. It can be a matter of life and death.

DEFINING FEATURES

Its fan-like cap varies in colour anywhere from creamy white to dark gray or brown tones. It grows in groups on dead wood late in the season. Its long and short gills converge at the stem. It is never pure white and always has a stem that is off center.

Poisonous Lookalikes for this Mushroom

White Clitocybe species Funnels

Clitocybe that look like the P. ostreatus do not grow on wood and they normally have a welldeveloped central stem. Always pay special attention when collecting white mushrooms with white gills, as there are many toxic ones with these two elements.

Pleurocybella porrigens Angel’s Wings

This twin is paler in colour; pure white or very light cream, smaller (2-10 cm) and thinner. Its gills are very straight, it grows on conifers not broadleaf, smells like burnt almonds and has no stem or a hint of one.

Winter Mushrooms

Foraging edible mushrooms in the winter can be challenging. A majority of mushrooms do not thrive in very cold temperatures. Those that you do find may be more difficult to identify as frost can cause damage to the fruiting body, alterring key characteristics. There is also some evidence that mushrooms which have undergone the freeze-thaw process several times, might be more prone to bacteria, making them unsafe to eat.

Here is a list of edible winter mushrooms that can grow in Europe and most of North America (excluding Mexico).

ST GEORGE’S MUSHROOM

DEFINING FEATURES

Appears rst in April, often in large fairy rings. Its rm white or cream coloured esh takes up most of its cap (shallow gills), it does not have a ring and smells strongly of our. Its cap can be deformed. Found in prairies, elds, occasionally in wooded areas.

MARGIN TASTE

SMELL STEM rolled under sweet fresh our or owers white, smooth, rm, a brous bulbous base

3a Amanita white ones

3b Entoloma sinuatum

3c Inocybe patouillardii

Beware of its toxic twin Entoloma sinuatum, which also smells of fresh our and white Amanitas that have a ring and a volva.

Poisonous Lookalikes for this Mushroom

Amanita sp.

White ones

The potentially deadly white Amanita species are distinguished by the presence of a skirt-like ring around the stem, a bulbous stem base enveloped by a volva, and gills that are free from the stem. They do not smell of flour, and prefer to grow in the forest.

Entoloma sinuatum/lividum

Livid Pinkgill

The same size as the C. gambosa, and the same smell of flour. However, it grows in the forest and its cap is greyish yellowish. The gills are yellow at first becoming pinkish only with age and gills are somewhat more spaced. As with all Entoloma, the spore print is pale pinkish.

Inocybe patouillardii

Deadly Fibrecap

It has a white cap but only when the mushroom is young, then it reddens. It is found in the forest. Its gills are spaced fairly wide apart and redden like the cap and the stem. It does not smell like flour, but has a pleasant fuity smell that becomes unpleasant with time. Its spore print is brown.

Tricholoma album group

White Knight group

This group of similar species does not smell floury, but unpleasant or gassy and its flesh is bitter. Its gills are more distant than those of C. gambosa. Found from late summer till late fall, rather than spring.

Hebeloma sp.

pale ones Poison Pie

Although these twins may sometimes seem to grow in an open field, they are always associated with trees. Hebeloma species have “café-au-lait” coloured gills (not white to cream) that often exude droplets. They have a raphanoid scent (radish, rather than floury), and brownish to dark brick spore print (not white).

Spring Mushrooms

Mushrooms in the Springtime

Many mushrooms have a symbiotic relations with flora and thus do most of their work in the springtime. While they are helping, they do not have enough energy to produce fruiting bodies. Most mushrooms require water (about 4cm) and some warmth to grow. These are the main reasons why we do not see many mushrooms just after winter.

However, there are a few very good mushrooms that appear in the spring and are certainly worth the forage. Below is a list of edible mushrooms that grow in Europe and most of North America (excluding Mexico) during this period.

PARASOL MUSHROOM 15

DEFINING FEATURES

This mushroom has a large scaly cap and a stem covered with a snake-like pattern. Its ring is distinctly moveable (moves up and down on the stem). If cut or scratched, there is no distinct colour change. With these 4 elements and a cap Ø > 9cm, its a Parasol.

STEM

See The Twins for additional lookalikes 10-30 cm( Ø ) 15-40 cm(L)

15b Chlorophyllum molybdites

15c Chlorophyllum brunneum

Less than 10cm diameter and high? Don’t eat it. However, none of the toxic Lepiota under 10cm have a moveable ring.

Poisonous Lookalikes for this Mushroom

Lepiota small ones

Small deadly Parasol species

Be very careful when collecting mushrooms under 10 cm in height or diameter that look like Lepiota. They could be deadly. However, there are no known small toxic Lepiota that have a moveable ring. In any case best to stick with those with caps > 10 cm .

Chlorophyllum molybdites

False Parasol

About the same size and stature, similar cap texture and a moveable ring (slides up and down). There are however, several obvious differences: its gills start out whitish but usually turn dark and green, its stem is usually darker, either grey, brown or reddish, no snake-skin or zigzag pattern on the stem and its spore print is green. Plus, it does not grow in the forest.

Chlorophyllum brunneum (syn. Macrolepiota venenata)

Brown Parasol

It is smaller (6-15 cm) and it too, has a moveable ring (slides up and down along the stem). Both have scales on their caps but those of this mushroom often take the form of a star. Its base is bulbous and marginate (the stem and base are separated by a groove) and the stem is often offcentre. Its flesh reddens quickly when damaged. Its habitat is different too. It can be found in gardens, on compost, close to homes and buildings, and in the forest, and more often with conifers than broadleafs.

Summer Mushrooms

Mushrooms

that appear or grow in the summertime

There are plenty of mushrooms that don’t mind the heat of a hot summer’s days. They will likely be found in areas fed by snowmelt, near streams and on logs soaked from winter and spring rains. Going out a day or two after heavy thunderstorms will give you an advantage.

Here is a list of mushrooms that will likely grow in the summertime in Europe and most of North America (excluding Mexico).

DEFINING FEATURES

The cap colour of this mushroom is extremely variable, but its gills are always “greasy”. Rub your nger across the gills, if they bend but do not break you’ve got the Charcoal Burner or another edible Russula. Like all Russula, the stem breaks like chalk.

According to several experts, this mushroom could be toxique if eaten raw.

Poisonous Lookalikes for this Mushroom

Amanita phalloides

Deathcap

This mushroom will very slightly resemble R. cyanoxantha on rare occasions when its cap colour is very pale. So there are many differences mainly. A. phalloides has both a volva and a ring. Russula cyanoxantha has neither. The stem of the A. phalloides does not break like chalk. All Russula have a stem that breaks snapping off, as if breaking a piece of chalk.

Russula emetica

Sickener

This mushroom has a more vibrant red cap colour although it can fade into a rose colour. And like most Russula, its gills will break when you rub your finger across them. Its stem is larger at the base. It has a sharp, peppery.

Russula mairei

Beechwood Sickener

Although the cap color of R. cyanoxantha is enormously variable, the cap color of this twin is distinctly red, albeit sometimes pale red. Like most Russula sp, its gills will break when you rub your finger across them. This mushroom has a bitter taste and a spicy smell, reminiscent of honey or, as some say, coconut. Russula nobilis is a synonym.

Fall Mushrooms

Mushrooms that are Prevalent in the Fall

Many species of mushrooms thrive in the moderate temperatures of fall. Add all the leaf litter from falled leaves, you have a rich food source for fungi. The leaves gone from the trees, the forest floor suddenly becomes more open, making the mushrooms more visible, thus giving you the impression of an abundance of mushrooms. With enough water from the rain and slightly cooler temperatures, most fungi thrive under these conditions. There are many exellent mushrooms that appear in the fall as this is the true mushroom season. Here is a list of some of the mushrooms that grow in Europe and most of North America (excluding Mexico) in the fall.
