INGREDIENTS 1 chicken (3 pounds), liver discarded 2 1/2 quarts cold water 4 carrots, peeled and cut into bite-size pieces 2 onions, peeled 2 celery stalks with leaves, cut into 4 pieces 6 cloves garlic, peeled 2 fresh thyme sprigs or 1/2 teaspoon dried thyme 1 1/2 teaspoons kosher salt 1 teaspoon whole black peppercorns Soup: 1 cup small pasta, cooked 1 cup frozen peas, thawed 1/8 teaspoon salt 1/8 teaspoon pepper 2 tablespoons fresh dill, chopped 2 tablespoons fresh parsley, chopped

DIRECTIONS 1.

To prepare broth: In large pot over high heat, bring chicken and all remaining broth ingredients to boil. Reduce heat to low; skim surface of broth to remove foam. Let simmer 1 1/2 hours, skimming occasionally, and turning chicken. Add more water if necessary to keep chicken submerged. 2. Remove chicken with tongs and cool. Strain broth through fine sieve. Discard celery, herbs and spices. Reserve onions and carrots. Remove any excess fat from top of broth with spoon. 3. Pull chicken meat from bones and discard skin and bones. Dice chicken and reserve. Quarter cooked onions, if desired. 4. To prepare soup: In large pot over high heat, return strained chicken broth and bring to rolling boil. Add reserved onions and carrots. Reduce heat to low; stir in reserved chicken meat, pasta and frozen peas, cooking until warm. Season with salt and pepper. Ladle soup into bowls and top with dill and parsley.

Hot Stuff in Wasaga Beach Some fortunate folk follow their heart and find success. Shawn Bell of Wasaga Beach followed his taste buds. In an unexpected turn of events almost two decades ago, Bell was introduced to an amazing hot sauce made by a Trinidadian friend who invited him for dinner, a “crazyamazing” curry-goat dish. Not only was the main dish exceptional, his friend also had a home-made Trinidadian hot sauce which “was mind-blowingly hot, but I loved the flavour” explains Bell. It was the flavour combination that piqued his interest and excited his palate. Hot sauces were not as popular then as they are now, so this was indeed a rarity. Bell was inspired to create a hot sauce with a unique flavour profile.

It was Bell’s penchant for perfection and determination for success that lead to the name Doc Bells . He and his family joked that he spent more time “messing with” hot sauce recipes and cultivation than most doctors spend in medical school. He connected with a fellow in Cambridge, Ontario “Pepper Steve” who was growing varieties of peppers that were hard to come by. Bell learned a lot about growing peppers in our Ontario climate. Soil mixture was crucial. He started with a seven-part soil mixture as suggested, allowing for aeration, root growth, nutrition and so on. He was told he was “too far north” for growing peppers. This encouraged Bell to experiment with soil mixtures. He got it down to five parts, to three parts and down to two parts of soil mixture with some added bits like worm castings. It was a combination of research and practical application that saw him get to the premium constituents, keeping it all as natural as possible. “Everything all came together at once” he says, with pepper plants as tall as his eyes and 55 pounds of peppers from 145 square feet of greenhouse.

He grows most of the peppers he uses and has gone totally organic in his greenhouses. Persistence against the odds have seen him become very successful at his culinary craft.

Two years and seven batches of sauce later, he came up with his first original sauce he calls Sweet Heat. This sauce suited his “more tame” palate at the time. Sweet Heat is meant to give one a hit of heat but “goes away very quickly”. He continued making this sauce for a few years. His experimentation began with eight different hot peppers he could find at a local grocery store. He worked on the recipe, getting down to four peppers; Scotch bonnet, Thai chili, Hungarian yellow and jalapeño. He tried with seeds, without seeds.

Health caused him to take a break basically for a year, but he was able to freeze seventy pounds of peppers to get things going again when he was able. Done correctly, peppers “keep their constitution” when frozen says Bell. This year, he ran out of freezer space. This lead to the creation of his Pineapple Punk hot sauce as he had 20 pounds of fresh peppers to use up. He had also connected with a farm who grows crimson hot red peppers. These are considered a mild hot pepper and are a major part of Pineapple Punk. At least one of his sauces has included his own dried basil flower. Bell may not be an overall chef, but he’s fluent in adjusting, adding and taking way ingredients to finesse a sauce to his wants.

Doc Bells was a part of the Champions Showcase at the 2023 Royal Agricultural Winter Fair in Toronto. He had 5 top ten placings with 8 of his hot sauces. He gained a spot in the Championship Showcase due to his hot sauces exceptional standings the year before. Bell’s sons, ages 12 and 8 are involved with the business, helping plant and pick peppers. He took care to make sure his sons were acquainted physiologically with peppers to assure they would be accustomed to and not have negative reactions to hot peppers. To accommodate growing enough peppers of his own, Bell has established a couple of green houses on a farm in Mulmur Township. He has gone fully organic. The new greenhouses resulted in him contending with different moisture content and required some techniques to be adjusted. He changed from plastic pots to fabric pots... ever learning and ever improving his product; it is the way of Doc Bells.

The final recipe for Sweet Heat featuring Scotch bonnet was extremely popular with family; “They were pretty much addicted to it” he says. It kept him busy, making 6 litres at a time. With some simple ingenuity applied to growing peppers alongside his deck in Wasaga Beach, with a sand base to wick away moisture, Bell had success. He was able to create the perfect climate for growing very hot peppers in his back yard. Quite a feat for someone trying to “grow peppers off the south end of Georgian Bay, outdoors”. He admits his success was against a few odds.

An Easy and Nutritious Muffin Recipe to make this Family Day (NC) Unlike most store-bought muffins, these are brimming with nutrients. Made with Greek yogurt and chia seeds, these muffins have both protein and fibre, making them a healthy snack or breakfast. They’re also chockful of oats, which are associated with lowering levels of C-reactive protein, a marker of inflammation found in the blood that’s often associated with diseases such as rheumatoid arthritis.

Banana Date Protein Muffins Prep time: 10 minutes Cook time: 18 to 20 minutes Serves: 12 INGREDIENTS 2 ½ cups (625 ml) old-fashioned rolled oats 1 cup (250 ml) 1 per cent plain Greek yogurt 2 eggs ½ cup (125 ml) sugar 2 ripe bananas 2 tsp (10 ml) baking powder 1 tsp (5 ml) vanilla ½ tsp (2 ml) baking soda 1 tsp (5 ml) cinnamon 3 tbsp (45 ml) chia seeds 6 Medjool dates (pitted and halved)

DIRECTIONS 1. Preheat oven to 400°F (200°C) and lightly grease a 12-cup muffin tin with oil. 2. In a food processor or blender, add rolled oats and process into oat flour. 3. Add the rest of the ingredients, except chia seeds and dates, and process until evenly mixed to form a batter. Fold in chia seeds. 4. Divide batter evenly into tin. Place half dates on top of muffins and bake for 18 to 20 minutes. TIP: Instead of dates, you can use blueberries or raisins for sweetness. TOPPING 1 3/4 cups plain Greek yogurt (fat free, 2% or 5%) 1/3 cup maple syrup 1/2 teaspoon ground cinnamon PANCAKES 1 cup all-purpose flour 2 tablespoons sugar 1 teaspoon baking powder 1/4 teaspoon baking soda 1/8 teaspoon salt 1 egg, lightly beaten 3/4 cup plain Greek yogurt (fat free, 2% or 5%) 1/2 cup milk (skim, 2% or whole) 3 tablespoons melted butter 1 teaspoon vanilla oil 1 cup fresh blueberries or chopped fresh strawberries

DIRECTIONS To make topping: 1. Stir yogurt, syrup and cinnamon. Cover and refrigerate. To make pancakes: 1. In mixing bowl, stir flour, sugar, baking powder, baking soda and salt. In separate bowl, whisk egg, yogurt, milk, butter and vanilla. Add yogurt mixture to flour mixture. Stir just until combined (batter should be slightly lumpy). 2. Scrape batter into large plastic food storage bag. Oil nonstick griddle or large nonstick skillet. Heat over medium heat. Cut off about 1/2 inch from corner of plastic bag. Squeeze batter, about 1 tablespoon at a time, onto hot griddle. Cook 1-2 minutes per side, or until pancakes are golden brown, turning to second side when bubbles form on surface of pancakes and edges are slightly dry. 3. Serve warm pancakes topped with cinnamon-maple yogurt and sprinkled with berries.

Feta Roasted Salmon and Tomatoes Prep time: 15 minutes Cook time: 15 minutes Servings: 4

INGREDIENTS Nonstick cooking spray 3 cups halved cherry tomatoes 2 teaspoons olive oil 1 teaspoon minced garlic 1/2 teaspoon dried oregano or dried dill weed 1/4 teaspoon salt 1/2 teaspoon coarsely ground black pepper, divided 1 1/2 pounds salmon or halibut fillets, cut into 4 serving-size pieces 1 cup (4 ounces) crumbled feta cheese

DIRECTIONS 1. Preheat oven to 425 F. Line 18-by-13-by-1inch (half sheet) baking pan with foil. Lightly spray foil with nonstick cooking spray. Set aside. 2. In medium bowl, toss tomatoes, olive oil, garlic, oregano, salt and 1/4 teaspoon pepper. 3. Place fish pieces, skin side down, on one side of prepared pan. Sprinkle with remaining pepper. Lightly press feta cheese on top of fish. Pour tomato mixture on other side of prepared pan. Bake, uncovered, 1215 minutes, or until fish flakes easily with fork. 4. Place salmon on serving plates. Spoon tomato mixture over top.

SAUCE 1 cup low-fat plain yogurt 1 tablespoon honey 1 tablespoon orange juice or lime juice FILLING 1 tablespoon vegetable oil 1 pound boneless, skinless chicken breast halves, cut into bite-size pieces 1 tablespoon Cajun or Creole seasoning 1 large fresh mango, seeded, peeled and chopped 3 large whole-wheat pita rounds (or 6 small), halved 1 1/2 cups spring greens 3/4 cup crumbled blue cheese (3 ounces)

DIRECTIONS To make sauce: 1. In small bowl, stir yogurt, honey and juice. Cover and refrigerate. To make filling: 1. In large nonstick skillet over medium-high heat, heat oil. Cook and stir chicken with seasoning in hot oil 4-6 minutes, or until chicken is no longer pink in centre. Remove from heat. Stir in mango. 2. Fill pita pockets with greens, chicken mixture and blue cheese. Spoon yogurt sauce on top.

1. DO ROTATE PET BEDDING AND BLANKETS If you have pet bedding - like removable, machine-washable pet bed covers or designated pet blankets - or removable furniture covers, they can quickly get dirty with pet hair, oils and any soil your pet may track in from outside. Make sure to regularly wash and rotate these items to prevent odours and bacteria buildup. Ideally, you should do this once a week. Make it easier on yourself by having a couple sets of bedding and blankets so you can remove and launder one set while using another. 2. DON’T WAIT TO WASH Pet parents know that accidents happen. While you can’t control unexpected pet messes, you can act right away. As soon as you notice dirty paw prints, urine or other accidents, treat and wash the fabric right away to prevent any stains and control odours. Make sure to invest in a pet-safe stain remover that’s gentle on fabrics. 3. Music and Good Times on the Menu In December of 2023 a wonderful opportunity for budding musicians began in Wasaga Beach, Ontario. Musician and local businessman (mortgages) David Grossman began hosting an open mic night. With the new moniker of the GC Lounge (Georgian Circle Lounge), the familiar Georgian Circle Family Restaurant continues to provide an outlet for professional and aspiring artists, with an audience of supportive and enthusiastic music fans, on Saturday nights. Grossman appreciates how eager owner KellieJoe Darnley is to provide a live music venue. “Her support has been tremendous” he says. Darnley’s right-hand man Todd Gervais is a major part of running the restaurant and keeps things running smoothly. The open mic event certainly draws an enthusiastic crowd. The trimmed-down menu seems popular with guests and the staff is always upbeat (so to speak), adding to the positive vibes one can sense upon entering. Currently, Grossman’s format for the stage is to open the evening himself at 7:30pm with a few tunes and welcome people. A guest performer or two may take to the stage during the first hour followed by a feature performer; someone with enough experience to carry the show for the next hour. Then it is back into a variety of performers on stage for the remainder of the evening. He has a handful of semi-scheduled guests but room can be made for those who come and want to share a few tunes. The featured performers, who are professionals, receive compensation for their time.

Sometimes a duo or trio “breaks out” spontaneously. Veteran singer/ guitarist Bill McKetrick is often on-hand to support other players as well as manning the mixing board (sound). One may be surprised to learn the background of some of the musicians who take to the stage rather casually. Like Bill, some have played with the best and we’ve heard them in other people’s recordings over the years, but boasting and egos don’t make an appearance. Everyone is here to enjoy the music, support newer artists and for the camaraderie so many of the attendees are familiar with. “Networking and making new friends is something we all enjoy” says Grossman, “this is an opportunity for all that”. Performing in front of an audience can be very daunting for a newer performer. The one way to get used to that is to, well, perform in front of an audience. The GC Lounge open mic night is a safe and supportive place to gain that experience. On December 30th 2023, Grossman held a special fundraising open mic night to benefit the Wasaga Beach Ministerial Food Bank. For every person who came in with a guitar, playing it was not mandatory, Grossman (RockYourMortgage.com) and the restaurant donated $10 to the food bank. A donation jar was also on hand for those who wished to contribute directly; many people gave to the cause. In total, 44 guitars were present. The venue was at full capacity; what a grand feat for a good cause. The total amount raised for the food bank came to $660.30. Most of that amount came from RockYourMortgage.com and Georgian Circle Family Restaurant.

INGREDIENTS 1 package (11 ounces) vanilla wafers 1/3 cup butter, melted 2 cups heavy whipping cream 1/4 cup confectioners’ sugar 1/2 cup Key lime juice, divided 1 package (8 ounces) cream cheese, softened 1 can (14 ounces) sweetened condensed milk 1 teaspoon coconut extract 1 cup shredded coconut 1/4 cup toasted shredded coconut lime zest maraschino cherries 1. In blender, pulse vanilla wafers into crumbs. Add melted butter and pulse until combined. Press crumbs into bottom and up sides of greased 9 1/2-inch deepdish pie plate. Refrigerate 30 minutes. 2. In large bowl, beat whipping cream until it thickens. Add confectioners’ sugar and 1 tablespoon lime juice; beat until stiff peaks form. Remove 1 cup; set aside. 3. In separate large bowl, beat cream cheese until smooth. Add sweetened condensed milk and coconut extract; beat until blended. Add remaining lime juice and shredded coconut; stir until combined. Add reserved whipped cream. Stir until combined. Pour into crust. 4. Refrigerate 4 hours.

WINTER WHEELS WHAT TO DO WHEN YOUR CAR STARTS TO SLIDE ON ICE (NC) Winter in Ontario can be quite intimidating – black ice, flurries and reduced visibility don’t make for the best driving conditions. Taking precautions like reducing your speed, using winter tires and adjusting your driving for the weather can help keep you safe on winter roads. But sometimes, no matter how much you slow down and take the cautious route, slips can still happen. Losing control of your vehicle can be scary, but the key is to not panic. Instead, take a deep breath and remember these tips. WHEN YOUR CAR STARTS TO SLIDE What you’ll need to do to correct your slide depends on which wheels are slipping on the vehicle: If it’s your front wheels, remove your foot from the accelerator and let the vehicle slow down. If you continue to slide, press on the brakes gently to help bring your vehicle to a stop. If it’s your back wheels, slowly turn your steering wheel in the direction of the slide

while removing your foot from the accelerator. WHAT CAN YOU DO TO PREVENT SLIDING? By the time winter rolls around each year, many of us are out of practice when it comes to winter driving, and cars sliding on ice is a common occurrence. As a result, the first snowstorm of the year typically leads to an unusually high number of collisions. Of course, the hazardous roads make it more difficult to drive safely in the winter months, but what else contributes to this increase in collisions? Here’s what you can do to help avoid sliding: USE WINTER TIRES Once temperatures are consistently below 7°C, it’s time to change to winter tires. They’re made of softer rubber and have specially designed treads to grip slippery surfaces. In fact, they provide up to 50 per cent more traction than other tires and can shorten stopping distance by up to 25 per cent. Plus, many insurance providers – like Onlia Insurance – offer discounts for equipping your car with them during the winter months. SLOW DOWN Driving too fast on icy roads isn’t the same as speeding in good weather conditions. Even if you drive at your usual speed, particularly on the

If the temperature is below freezing and it’s snowing, your best bet is to slow down and take your time. AVOID HARSH BRAKING Braking too quickly can lead to slipping and sliding. Brake gently by easing your foot down on the pedal. Be sure to keep enough room between yourself and the driver in front of you to give yourself a little extra stopping distance. ACCELERATE SLOWLY When your wheels spin faster, your chance of losing traction increases. If you need to speed up for any reason, remember to ease into it. Master Gardener ’s Corner February Things to do for - or in - your garden: •

The warm pre-Christmas weeks into the first 2 weeks of January were over with a ten below bang. The snow was really here. There was lots of snow cover too. But, before we get a February thaw and refreeze, mound up all the available snow and any new snow that falls, around tender plants like roses.

If you have a few boughs left over from your Christmas tree, put them over tender plants to catch the snow. It is the freeze/thaw cycle that kills plants, not just the cold.

Start planning your garden projects for 2024. Make a list for the Spring, then you will know what you didn’t get done when you check it in June. I have mine done and I am tired already. Luckily, a garden is never finished!

Go online and order up Spring Catalogues. I just got mine from Botanus in British Columbia, packed with spring and summer plants like dozens of colourful dahlias, beautiful begonias, lovely lilies and achilleas. Check them out at www.botanus.com

Start propagating stem cuttings of geraniums, fuchsias, etc. by the end of the month.

Plant slow germinating seeds for the spring inside now, like impatiens, peppers, eggplants, etc.

Don’t over-water house plants. Wait till the soil in the pot is dry down at least an inch before adding more water. Then water well and wait until it’s dry again.

As the weather warms, you can start pruning shade trees, fruit trees and shrubs, if you can get to them through the snow. Leave trees that “bleed” like maples and birch until after the sap runs and the leaves appear in the spring.

You can forget about the big garden shows again this year. Canada Blooms and the Peterborough Garden Show have again been defeated by fears of COVID, etc.

But, to get a WHIFF OF SPRING, plan to take in the Barrie Spring Garden & Home Show, March 9 & 10 2024, 10am to 4pm at Bradford Greenhouses Garden Gallery in Springwater, on Hwy 90, just west of Barrie. Hear special guest presenter, Frankie Flowers - 1pm Saturday and Sunday. It’s worth the drive to Springwater.

Old Fashioned Bourbon Maple Popcorn with Pecans Servings: 4-6

INGREDIENTS 8 cups popped popcorn 1/2 cup chopped toasted pecans 1/3 cup maple syrup 1 tablespoon bourbon 2 tablespoons butter 1 tablespoon orange zest 1 dash bitters DIRECTIONS 1. Place popcorn and pecans in large bowl. 2. In small saucepan over medium-high heat, combine maple syrup, bourbon and butter; bring to boil. Cook, swirling pan, 3-5 minutes, or until mixture thickens to corn syrup consistency. Stir in orange zest and bitters. 3. Drizzle maple syrup mixture over popcorn; toss to evenly coat. Cool completely and serve. 4. Tips: Substitute bourbon with rye or whiskey. For “mocktail” popcorn, substitute with non-alcoholic bourbon or whiskey.

Mocha Popcorn Yield: about 6 quarts

INGREDIENTS 6 quarts popped popcorn nonstick cooking spray 3 cups sugar 1/3 cup unsweetened cocoa powder, sifted 1 tablespoon espresso powder or instant coffee granules 1 cup milk 1/4 cup powdered sugar DIRECTIONS 1. Place popcorn in large bowl sprayed with nonstick cooking spray; set aside. 2. Line baking sheet or work surface with waxed paper or foil. 3. In large saucepan, stir sugar, cocoa, instant coffee and milk. Cook until mixture registers 250 F on candy thermometer, stirring occasionally. 4. Pour hot mixture over popcorn; stir to coat popcorn completely. 5. Spread popcorn onto prepared surface and allow to cool. Sprinkle with powdered sugar. 6. Break into pieces to serve. Store in airtight container.

Spicy Korean Barbecue Popcorn Servings: 4-6

INGREDIENTS 8 cups popcorn 1/4 cup honey 2 tablespoons brown sugar 1 tablespoon butter 1 tablespoon sesame oil 1 tablespoon gochujang (Korean chili paste) 1 tablespoon soy sauce 1 teaspoon garlic powder 4 teaspoons toasted sesame seeds 1 tablespoon gochujaru (Korean chili flakes) 1 green onion, thinly sliced (optional) DIRECTIONS 1. Place popcorn in large bowl. 2. In small saucepan, combine honey, brown sugar, butter, sesame oil, gochujang, soy sauce and garlic powder; bring to boil. Cook 3-5 minutes, or until mixture thickens to syrupy consistency. 3. Drizzle honey mixture over popcorn and sprinkle with sesame seeds and gochujaru; toss to evenly coat. Garnish with green onion, if desired. Serve immediately or cool completely. Tip: Substitute green onion with 1 teaspoon freeze-dried chives, if preferred.

Sugar and Spice Popcorn INGREDIENTS 2 tablespoons brown sugar 2 teaspoons chili powder 2 teaspoons paprika 2 teaspoons ground cumin 2 quarts (8 cups) air-popped popcorn butter-flavoured nonstick cooking spray

DIRECTIONS 1. In small bowl, combine brown sugar, chili powder, paprika and cumin; mix well. 2. Place cooked popcorn in separate bowl; spray lightly with nonstick cooking spray and sprinkle with spice mixture. 3. Toss to mix until kernels are coated. Store in airtight container.

Jumpin’ to the Reggae Beat Strolling minstrels have nothing on this band, TooNice. Strolling minstrels are generally quiet, sedate, folksy and romantic. Not so much for TooNice. With their wireless instruments, Johnny TooNice (leader and band name), Dancin’ Nic (bassist) and DJ (keyboard and violin) all end up leaving the stage and interacting with the audience as they perform their tunes. Unsuspecting diners may end up with a bassist at their table, or a keyboard player, maybe a violinist. Johnny is known to hit the dance floor with his guitar. Their antics really get the crowd excited... imagine an empty stage and a room hopping with the sound of live music. Weird and wild. And then there is the “rusty trombone” Johnny plays. If he was any more active while playing the trombone, a writer would have to employ the word “acrobatic”, but jumping around, dancing, will suffice for now. The band has performed gigs where they have left the building and played out on the street, keeping the music going in the venue. The name came about years ago, a result of not having a name and members contributing a word each to come up with a band name, on the spot, at a gig. No one could remember the words for the band name as the evening progressed. Although there was confusion, there was no arguing about what the elusive name was. One of the members, Tuck, said “Everybody’s just too nice about it”. THAT was the name. TooNice. Tuck, their keyboardist at the time, also designed their logo. Members have changed over the years, but Dancin’ Nic and Johnny TooNice have remained a consistent duo and are currently working as a trio with DJ on keyboards. Comedy and banter is a large part of their show... dead air is not a thing. The band enjoys collaborating and in fact they anticipate working with a comedian in the near future on some original material. The band is hometown (Wasaga Beach) proud and it comes across in may of their original songs. Regular fans readily sing along with the band’s own tunes. They have a following in most towns around Georgian Bay and beyond.

They are known for reggae, ska and punk. Their reggae leans toward a southern California style rather than the roots style one may find in Toronto, and some United Kingdom-style ska. With the variety of instruments they have available, there is a great range of sound, mood and genres they can invoke. Johnny plays guitar, trombone and sings. DJ has her keytar (a keyboard on a guitar strap, basically) and violin. Dancin’ Nic offers up amazing bass and has been known to vocalize now and again. They all escape the confines of the stage area, if you haven’t caught on to that by now. TooNice is also versatile in that aside from providing a family-friendly show, they can spice it up when the venue calls for it. Although mostly a trio, TooNice can be anything from a single act to a full band. All this keeps them fairly busy year-round. Their latest album, produced last year is available on vinyl and streaming services. Currently they are working with an engineer who has recorded for Drake, Tragically Hip and Rush, to name a few familiar names. Although Johnny writes the band’s original tunes, each player writes their part... bass, keyboard and such. Each player gels with the others, each creating a supporting role in the finished number. During the summer TooNice can be heard along the beaches of Georgian Bay, over to Lake Huron and down to Lake Erie. They love interacting with beach-goers who may not get out to see live music on a regular basis. Seeing children spontaneously burst into dance, full-out or just a wiggle, is always fun and provides some lasting memories for families. The Mobile Soup Kitchen

The Mobile Soup Kitchen and Jay Smith, our amazing, compassionate driver, pick up the Elephant Thoughts van with the evening’s allotment of meals and drives to Hope Chapel at 19 Cameron St, where the van is loaded with all the additional supplies Jay feels might be needed in the community. These supplies include, non-perishable food goods, first aid items, socks, mitts, hats, harm reduction materials, personal hygiene products, and lots more. Our collaboration with Elephant Thoughts provides us with a van, a driver, and 60 meals a day. The meals are made by the Youth Centre’s workforce development skills training in technical arts program run by Elephant Thoughts. . It is a paid internship that teaches skills to under-served youth.

The Mobile Soup Kitchen expects to expand to a third evening as demand increases and as soon as donations and volunteers can meet the needs of the organization. The Mobile Soup Kitchen makes stops at: Hope Chapel - 19 Cameron St., Collingwood TD Bank - 104 Hurontario St., Collingwood The Collingwood Public Library - 55 Ste Marie St., Collingwood Walmart - 10 Cambridge St., Collingwood The Busby Centre. Jay’s respectful relationship with our vulnerable community members is immeasurable. He goes above and beyond to make sure we are able to fulfill as many needs we are able to. The Mobile Soup Kitchen hopes to expand in the upcoming months to include locations in Wasaga Beach. In addition to the twice weekly meal outreach, The Mobile Soup Kitchen fill hampers and delivers them, once a week, to families suffering from food insecurity. The Mobile Soup Kitchen also has a stationary location in the Butterfly Community pantry at 200 Erie St. (Church of the Nazarene). The community pantry is filled three times a week; Monday and Wednesday at 2:30pm and Friday morning at 9:00am. The pantry is available to the community 24 hours a week. The needs of the Mobile Soup Kitchen are varied and ongoing: FOOD CLOTHING • pull top meals in a can • socks • treats • mitts • candy • backpacks • chocolate • camping gear • lunch snacks • reusable bags • juice boxes • granola bars • fruit packs • pudding, etc.
