Welcome In This Issue

Dear Members,

Message from COO, 2

Spring has arrived and the weather is perfect for utilizing all the amenities Wexford has to offer. The golf course is coming out of dormancy, Waves kitchen is open and has been well received, and the Pickleball courts are very active with social and friendly competition.

Ryan Spence Chief Operating Officer

you to make reservations in advance so the Wexford staff and leadership can properly prepare and provide a high level of service that you deserve. The Planning and Amenities committee have been working diligently to provide a very thorough presentation of the proposed amenities plan for the future of Wexford. I hope you were able to attend a listening session in the month of April. If not, we will have a Town Hall meeting on May 19th to learn more about these wonderful plans for the Clubhouse and Harbour Center. If you have any questions about the proposed amenities plan, please don’t hesitate to contact me or any Board member.

See you at the club,

Ryan

Letter from the Board President Hello Neighbors,

job in finalizing the Pickleball project and in overseeing the harbor wall repair work.

As we close the book on a very busy April and move into May, I want to share some quick updates:

• Member engagement continues at all-time high levels this year. Wexford’s current progress and results are exceptional with record performance in virtually every department and operating measure including owner utilization, financial stability, golf rounds, harbour lock activity, and more. Thanks to all owners for making this happen.

• NPOIF: A special thanks to all owners for the strong participation on the NPOIF voting initiative. The telephone outreach effort by many Vince Sullivan President owners and Board members was most helpful in achieving the strong vote turnout and is greatly appreciated. • Golf course and common areas are dressed and ready for the season. Newly planted spring annuals throughout Wexford and the golf course coming out of dormancy have accentuated the beauty of Wexford. Adam Gibbons, Landscape Superintendent, and his crew did an amazing job around the pickleball courts planting and creating a beautiful view. Great job, Adam! • Infrastructure projects are underway across the community, of note: • Pickleball courts are complete, and this area is very active. We’re pleased that we added a fourth court to the project ensuring more court availability for our members. Presently, the project is approximately $60k under budget. • Harbor wall repairs are being done on a uniform basis by one contractor. Thanks to all Harbourfront property owners for their cooperation with Dan Ogden, Wexford’s Infrastructure and Project Manager. Dan has done a fine

The Facilities Enhancement Presentations highlight the month of May following from April’s Listening Session with all Wexford committee members, with the continuation of a series of smaller in-home group listening sessions. The presentations will conclude with an open Town Hall Meeting for Wexford owners on May 19th. Congratulations to the Planning and Amenities committee for their participation and guidance in putting this comprehensive presentation together for all owners to evaluate. Harry Mellon (QB), Ryan Spence, Linda MacIlroy and Gary Crandall had lead roles in bringing the graphics and data together to the committee and community. Many thanks for all the time and idea generation you’ve all put into this project. Thanks to all owners and staff for all you do to make Wexford the best place to live and work on Hilton Head!

Sincerely,

Vince

Chef’s Table with Chef Colby Todd

Wexford Corvina with Kale & Cauliflower Rice Chili & Coriander Spice Rub

The Club Times • 6

Ingredients: Chili Powder – 2 Tablespoons Ground Coriander – 1 Tablespoon Kosher Salt – 2 Teaspoons Corvina Filet – 6 Ounces Butter – 2 Tablespoons Directions: Mix all spice ingredients in a bowl. Season fish generously with spice rub, then in a hot sauteé pan add canola oil. (You may also use the delicious chorizo oil for that extra punch of flavor.) Place the fish down laying away from you to avoid oil splatter. Sear each side for about a minute to a minute and a half, or until golden brown. Remove pan from burner and then place into a 350-degree oven and cook for about 5 to 7 minutes or until the internal temperature of the fish reaches 140 degrees Fahrenheit. There is no problem going over if you like your fish more well done, to each their own. Lastly, remove from the oven and add the butter and baste generously over the fish. I prefer to incorporate aromatics such as chopped shallot, garlic and thyme into the pan while I am basting to give it that extra flavor.

Continued on next page

Continued from Page 6

Chorizo Oil Ingredients: Chorizo (Diced) or (Ground) – 6 ounces Canola Oil (Salad Oil) – 2 Cups Directions: In a sauce pot, sweat chorizo until it renders some of its natural juices. Incorporate canola oil and cook on medium heat stirring frequently until fragrant and the oil turns a dark red. Remove from heat, and pass the chorizo and oil through a fine mesh strainer and place in separate containers for later use. You may store both of these ingredients to use with other dishes as well.

Kale & Cauliflower Rice Ingredients: 1 Head of Cauliflower 1 Bunch of Fresh Green Kale Garlic Cloves Minced – 1 Tablespoon Butter – 1 Tablespoon Chorizo Oil – ¾ Cup Diced or Ground Chorizo – 3 Ounces Parsley Leaves – 1 Tablespoon Kosher Salt – To Taste Coarse Ground Black Pepper – To Taste Directions: Split cauliflower in half and remove the core and leaves. Then using a box grater (cheese grater) shred cauliflower

until it’s finely grated. You may also use a food processor or a knife. Wash and remove kale from the stem. Chiffonade (finely slice) leaves into strips. In a hot sautée pan, add chorizo oil and garlic and sweat until fragrant. Add chorizo, cauliflower rice, and kale and cook until cauliflower becomes soft. Season with salt and pepper and incorporate butter, remove from heat and stir until butter is melted. Lastly finish with fresh parsley and serve! This dish I usually pair with a roasted tomato and fennel salad to go right over the top of the fish. But if you want to push the envelope a bit and get adventurous, you can take it a step further and make an awesome tomato compound butter with ground fennel seed and coriander and incorporate some fresh baby arugula for that peppery, sweet, acidic, earthy succulent flavor. Interested in learning more? Come on down to the Clubhouse, enjoy a delicious meal and ask for Chef Colby. We will develop a personalized recipe to ignite your inner Chef!

Get your vessel ready for safety inspections

This month I would like to discuss safety on the water, the season is just getting under weigh (yes, I meant to spell it that way) and we are once again using our boats more frequently. I am sure almost all of you have performed spring maintenance and boats are ready for another busy summer taking you to all those fun places you can’t get to by car.

Last month, vessel inspectors from America’s Boat Club (formerly the American Power Squadron) visited Wexford and certified a number of boats as being compliant with all the necessary safety gear on board. If you missed out, it’s not too late. We have a couple of our own inspectors on site. Contact the Harbour Center to schedule a time to have your boat checked out and the all-important decal applied. These inspections address the same things a Coast Guard boarding party would, so it is worth your participation to ensure you have all the necessary equipment and up-to-date documents. If you have an America’s Boating Club sticker, it doesn’t mean the Coast Guard won’t come aboard but they will stay for a much shorter time. The shorter they stay, the less likely they are to find things. If your boat passes the inspection, you will get a sticker mentioned above and it will then be applied to your vessel. Now, the Coast Guard has pulled you over – what will they look for? Good question. Here are a few things the Coast Guard may want to cover: • Life jacket supply • Emergency sound producing devices

The Club Times • 8

Blessing of the Fleet The Blessing of the Fleet Ceremony was another sellout Yacht Club event, with full regalia and maritime tradition on display! The Bluffton High School Junior ROTC Color Guard presented the Stars and Stripes.

• Operational and in-date flares and emergency equipment including first aid kits • Display of registration or documentation numbers and the associated documents for those numbers • Adequate ventilation for inboard engines • Operational navigation lights • Visible marine pollution placard and MARPOL trash placard • Condition of bilge pumps, marine radio, and anchor line

Note: You should always have proof of insurance as well as a copy of federal or state registration papers on board. If these are aboard, you will have less drama and be on your way that much faster. By the way, in order to have a boat in Wexford Harbour you are required to have copies of the same papers registered with us. One more important thing to be aware of this summer, last year a federal law was passed regarding the usage of the Emergency Cut Off Switch (ECOS). Any powered vessel 26 feet and under must have the ECOS lanyard attached to their person. This applies only when under way – when docking or anchoring you are exempt. The local sheriff and the DNR marine patrol will be looking for this. If they do catch you, it’s a $600 fine. Be careful out there this summer and contact the Harbour Office if you would like more details about anything mentioned above. See you on the water,

Mark

Sailing Program The supply chain devastates Wexford’s Junior Sailing Program (well, delays it in any case)! The four boats that Wexford bought for the Junior Sailing Program were expected to be here by now, but unfortunately are not here yet. We are pulling all the strings we can and hope to have them here a little later in the season. Stand by for updates on delivery and actual scheduling of the sailing courses!

UPDATED HOURS OF OPERATION The Harbour Center office hours are now 8:00am to 6:00pm. These hours will last through the end of September.

EDUCATION PROGRAM

Daufuskie Lunch Trip | May 19th Last month’s Daufuskie Lunch Trip was rerouted to land-based facilities. This was a result of the weather forecast of 15 to 25 knot winds and rain showers. Prudent seamanship dictated that automobiles be used to seek lunch someplace closer and dryer. Members navigated to the Crazy Crab on the north end of the island, and the Tiki Hut near Coligny Beach in complete comfort. The Wexford Yacht Club will attempt to visit Daufuskie again this month on Thursday, May 19th. Captains, please plan on arriving no later than 11:45am.

Guide to Local Waters | May 18th at 3:00pm Our most popular seminar, Guide to Local Waters will be held again on May 18, at 3:00 PM. New to boating in the area? Come to hear from experts on the local waters (and watering holes) to maximize your fun and enjoyment on your boating excursions! On a more serious note, there are lots of tricks to the trade in our local area, and much can be learned from those who have spent years navigating around the island.

If you are interested in participating in any of the Wexford Yacht Club trips or would like more information, contact Mark Dryden in the Harbour Center or Al Klein at ajklein@gmail.com.

Cobia Seminar | May 13th at 9:30am We will again be hosting a Cobia Fishing Seminar this spring with the pre-eminent local Hilton Head fishing expert Collins Doughty. Come learn from Collins’ 50-plus years of experience fishing for Cobia in local waters! Not sure what bait to use? Where to go? How deep to fish, etc., etc.? Here’s your chance to find out. This is just in time to try out your new knowledge in our Cobia Tournament on June 4th. Join us on the pool deck for this not-to-be-missed seminar! Cobia Tournament | June 4th (Captain’s Meeting | June 3rd at 4:00pm) Get your gear and crew ready (along with all the new stuff you bought after listening to Collins) for Wexford’s uber-popular fishing tournament. HAPPENINGS FloatTails | June 12th FloatTails is Docktails on the water! Join us on your boat (or we’ll help get you on a boat) in Bryan’s Creek, directly across Calibogue Sound near Daufuskie Island. Bring an appetizer to share and what you want to drink. Boats will raft-up around 4:30pm for a boat-hopping party and return to Wexford before dark. Sign up with Mark in the Harbour Center.

TENNIS TIP

Use the ball machine to improve your game

In between a lesson with a Wexford Pro which fixes your form, and your match play which works on your strategy, use the ball machine to improve your shots, your cardio, and your confidence! The ball machine delivers consistent feeds to the shot you are working on, which is difficult if you’re relying on a hitting partner to be accurate. You can also quickly and easily switch the shot you are working on. The ball machine can also change speed, spin, height, and depth to simulate the exact shot you are working on. When working with the ball machine, make sure you have purpose to your practice. Set the ball machine in a place that simulates doubles or singles. For example, if you’re a doubles player, don’t set the ball machine up in the middle of the court, rather set it up in the corner of the doubles court. Always place targets on the court to emphasize where you are aiming. Make sure you improve your form with a weekly lesson. Then, repetition is the key to confidence!

Q: How long is the longest rally in a professional tennis tournament? A: The longest recorded rally in a professional tennis event was at the 1984 Virginia Slims Tournament in Richmond, Virginia and was played by Vicki Nelson and Jean Hepner. These women hit an incredible 643 shots in one point! The point lasted 29 minutes in their epic hour and 47-minute tie break. The match lasted a total of 6 hours and 31 minutes, with Nelson eventually getting the win over Hepner.

What’s the News in the Kitchen?

The fastest growing sport in America has officially landed at Wexford! The brand new pickleball courts are open and we could not be happier, but the excitement doesn’t stop there! The new pickleball clinics include a Beginner Clinic on Mondays from 11am -12pm, an Intermediate/ Advanced Clinic on Wednesdays from 11am – 12pm and a Beginner/Intermediate Mixed Doubles Clinic on Wednesdays from 5:30pm – 7:30pm. Wexford women play first league match A huge thank you to Bonnie Hackworth and Lisa Klein for volunteering to co-captain our new 3.0 Ladies Pickleball League! The Wexford women played their first match in April. They fought hard; however, Palmetto Bluff prevailed in the end. Congratulations ladies on a great first match! Matches are held every Saturday at 11am, with one away game on May 7th, and the last home game on May 14th. Make sure to cheer them on with extra Wexford spirit!

Going out on top

The pickleball world was caught by surprise when superstar pickleball player Ben Johns announced his retirement this past week. He has held his pickleball #1 ranking for quite some time in singles, doubles and mixed doubles. So, the big question…: what is next for Johns? We do not know yet, although there have been hints at a potential Table Tennis career!

Wexford Golf Course Markings Over the years, the golf course markings (Red and Yellow) have changed based on member feedback and course maintenance practices. Starting this month, we will change all the yellow course markings to red, which should alleviate any confusion and help with member play and enjoyment. The major difference between a red and yellow penalty area is that with red, one may take two club lengths not closer to the hole, whereas with yellow, that option is not available.

No. 15 will be the hole most affected by the new course markings.

For the most part, a change to red will not be noticed throughout the course — except Hole #15. Currently, when you hit a shot that clears the water and ends up in the water, you must hit your next shot from across the water. This is the same ruling as Hole #15 at Augusta. However, with a switch to red, if you happen to putt, chip or hit a shot that was across the red line (putting green side), now you can take two club-lengths not closer to the hole and drop and proceed.

Hole #15 Examples: • The player hits a shot that lands on the green and rolls back into the water. The player may take a drop two club-lengths, not closer, to the hole on the green side of the penalty area. • The player hits a shot that lands on the wall and goes directly into the water. The ball never crossed the red line; therefore, the player must drop from the fairway side. • The player hits a shot that immediately goes into the water and

never crosses the red line; therefore, the player must drop from the fairway side. • The player is putting or chipping from over or left of the green and it rolls into the water, the player may drop the ball with two club-lengths of where the ball last crossed the red line. There many other examples that I can give, but overall this should be a change for the benefit of the membership.

BOBBY’S BASICS:

Let the wedge work: Chipping & Pitching Most of us know how to set up properly to a chip shot; more weight on your front foot, stance a little closer together, and get your hands to fall a little bit ahead of the club head. Now, this is where the actual chipping motion, or swing, needs to become more consistent. Our wrists should be passive during the swing, and the club head should swing on an arc. As our swing goes through the hitting area, we need to keep the club head low and try to scrape a little bit of grass. The loft of the wedge will do the work and you will begin to make more consistent contact. Let the wedge work!

From L to R: Harold Varner III, Jonathan Byrd, Webb Simpson, Graeme McDowell, Brandt Snedeker, Corey Connors, Collin Morikawa

The weather and the golf course could not have been any better for the RBC Wealth Management team and touring professionals who visited Wexford last month. A huge thank you and congratulations on an incredible job by our Golf, F&B, Golf Course Maintenance and Security teams.
