Helping the hungry One food bag, one soup bowl, one garden at a time

hile the holiday season is synonymous with giving and during this time of year donations are often plentiful, feeding the hungry is a continual endeavor, and local food distribution services operate year-round to ensure that residents have enough to eat.

Westchester County is known as an affluent area, which is why it may come as a shock that 15% of people in Port Chester live below the poverty line, with the majority of those families containing schoolage children.

When Nancy Howse found out that many of the students at King Street School relied on the free meals the school provided as their only food for the day and therefore they often went hungry over the weekends, the Rye resident was horrified.

“I heard stories that they weren’t eating on weekends and thought that’s just insane considering where we live,” she said.

“I think a lot of people don’t realize there is a need.”

Howse decided to do what she could and asked then-Principal Dolores Obuch if she could begin bringing bags of nutritious, kid-friendly food on Fridays for the Continued Christmastime 2013

In just two years, her idea has grown into a fullfledged program, Food 2 Grow On, supported by the Rotary Club of Port Chester/ Rye Brook, which supplies 130 bags of food each week during the school year.

“We’re always looking for ways to give back to the community, and this one really touched our members deeply that here in our own backyard there are children who are food-challenged over the weekends,” said Jack Zaccara, president of the Rotary Club.

For Zaccara, a former Port Chester teacher, working to ensure students get enough to eat was “a no-brainer,” because, he said, “You can’t learn very well if you’re hungry.”

Originally Howse started with just King Street School but quickly branched out to Thomas A. Edison School.

“There’s a lot more demand in this community than we’re able to meet,” Zaccara said. “We’re doing two out of 8

four elementary schools and there’s need at the others.”

Since its inception, the project has worked out some of its earlier kinks.

“You kind of learn as you go along,” Howse said. In the beginning when the group asked for donations, they received a variety of products. Now they suggest those who want to help hold a drive for a specific item such as a peanut butter fundraiser. The other option is for people to donate money so they can purchase the food themselves. A mere $8 is all that is needed to fill a bag.

Each bag contains about 10 items including a couple pieces of fruit and usually a small container of milk. Other items often are a jar of peanut butter, loaf of bread, container of soup, instant noodles, packet of oatmeal, granola bar or box of cereal. Finally, there is a treat, like a cookie, in each bag. Everything is kid-friendly with easy-open pop-tops for the soup, for example.

Speedy seniors pack the sacks The bags of food are all put together by senior citizens at Atria Senior Living in Rye Brook, a practice that started when Rotary got involved because the director there, Joshua Krull, is also a Rotarian.

“So now we’ve got ourselves a multigenerational project,” Zaccara said.

“Seniors helping children, a win-win.”

“We feel very sad to know that there are so many people who do need our help here,” said Sonnee Beck, one of the seniors.

Volunteers from Food 2 Grow On bring the food and oversee the packing, which the seniors do in an assembly line format that only takes about 15 minutes.

“They just whip through those bags,” said Rev. Bruce Baker of All Souls Parish in Port Chester, one of the first groups to team up with Howse.

“To help people who need it, the young people, it takes no time at all,” said senior Natalie Garr. “This is for poor people and we just want to help them get more food, especially because a lot of the children are involved. The more we can help the better.”

Many of the seniors, like Garr, enjoy the chance to help out in the community.

“As least you feel like you’re doing something, especially at our age,” said Teddy Koch.

The bags are then dropped off at the schools and distributed to the students who will benefit from them.

“The schools generally know who’s in most need,” said Howse, who does not pick which ones will take them home.

This degree of separation helps deal with any stigma attached to accepting the bags, she added.

Pasta night helps fill another gap Once a month, however, Howse and the other volunteers do get a chance to see their impact in the smiles on the children’s faces at the community pasta dinners at Edison School. The idea for the dinners came to Howse one Friday when she was dropping off bags of food and one of the aides looked particularly stressed. Howse asked what was wrong.

“She said, ‘There’s a little boy upstairs, a little boy who can’t stop crying because his mother doesn’t have food for the family,’ and that just hits you,” Howse said.

Because the bags were needed for other families, the aide could not give one to the crying, hungry boy. “I was standing in the cafeteria when it happened and thought: ‘Why can’t we have a pasta night right here?’”

The monthly pasta dinners at Edison immediately became a hit with about 150 children attending each one. Local restaurants and businesses such as Frankie and Louie’s, Neri’s Bakery, and Marini’s Deli have contributed the food for free or at cost. Any leftovers get packed up for the children to take home with them.

“It is really special to see these kids are so happy,” Howse said.

lish similar setups at all the Port Chester schools. That, unfortunately, requires more donations and more volunteers, something they are working on increasing.

“I think it’s a great way to bring the communities together and feed kids and have a good time,” Zaccara said.

Food pantries: a bridge to self-sufficiency Unlike Food 2 Grow On, which targets children, there are also more traditional food pantries to aid needy families, such as Caritas, the food pantry organized by Holy Rosary Church which operates out of Don Bosco Center.

“It started out when the people coming into Holy Rosary Parish were poor and the priests realized the need for food,” said Caritas Board President Patricia Walsh Hart of Rye.

Soup and sandwich nights quickly morphed into bags of supplemental food and the creation of the food pantry in 1995.

By 2003, the soup kitchen, based out of Don Bosco Community Center, was also in full swing serving a continental breakfast for the day laborers, a hot breakfast and lunch five days a week and the continental breakfast on Saturdays, too. There is also an Open Closet the same days as the pantry. Donations are collected in a red box in front of Holy Rosary Church.

One mother who routinely takes advantage of the food pantry moved to Port Chester about four years ago. With her husband still in Guatemala and two—now three—children to feed, she needed some help and turned to Caritas.

“Sometimes I don’t have enough money and this helps a lot every month,” she said in Spanish.

Although residents are allowed to come monthly, the 36-year-old comes every month or every other month depending on how her supplies are lasting. In particular, she is glad to be able to get cereal for her son at the pantry.

Her 3-year-old son, who was with her at the pantry, helped carry out one of the bags of food, a big smile stretching across his face.

Each registered family gets two bags of

food, which amounts to about 15 meals, plus extras donated to the pantry, which is open on Tuesdays and Saturdays. The day the 36-year-old went with her son, Chobani had supplied boxes of yoghurt and The Good Bread Bakery on New Broad Street had given fresh loaves of bread.

“The food pantry, we think, helps these people provide some sort of stability in their lives,” Hart said. Most of those who

make use of Caritas’ services are single mothers, families and the elderly and those who are unemployed or underemployed. They rely on the pantry “in order to make the money they do earn stretch enough,” usually for rent.

“Twelve years ago I came to Port Chester and they helped me out for two years,” said another woman. She has since become a U.S. citizen and now volunteers at the pantry on Saturdays.

“I think there are more stories here like that,” Hart said. “They’re here trying to make a better life for themselves,” and once they have a steady job, they come back to help. They’re “not just here to take.”

Caritas only formalized and became a non-profit in 2012, but the Holy Rosary Church community began helping out new immigrants like those two women long before then.

served, gently used clothing and shoes were distributed to about 15,000 individuals and 550 families were given bags of food each month. While the numbers have not been finalized, Hart said they have all increased in 2013.

“We have all the customers that we can handle,” she added.

It only costs Caritas about $25 to fill the two bags of food from the pantry and $2 to prepare a meal in the soup kitchen.

Like Food 2 Grow On, in addition to money, food drives are essential for maintaining their supplies.

“The more food we get, the better we are and the less we have to go out and buy,” Hart said.

From garden to pantry to table Over the summer the offerings of fresh produce at the Caritas food pantry grew thanks to the Giving Garden at the Port Chester Middle School.

Those who go to food pantries often want to choose healthy options but are often limited by what is available.

“A lot of the food that’s given away is packaged and prepared. They don’t have the best nutritional value,” said Allison Silverman, the Port Chester Middle School garden coordinator.

While school was out, four families assisted Silverman with the Giving Garden and then, once school started, 8th graders got to help harvest the late produce.

Between June and September, they harvested about 1,000 pounds of organic, pesticide-free food.

“There is not one chemical that has been sprayed in this garden all season,” Silverman said.

That is one reason why the garden and its produce is so essential for the community, said Ellette Hirschorn, director of clinical services for Open Door Family Medical Centers, which has helped sponsor the garden. By supporting the Giving Garden, Open Door is helping transform Port Chester into a healthier, more livable community. “People would much rather eat fresh, locally grown fruits and vegetables,” she added.

In addition to Caritas, food from the Giving Garden was also donated to the Carver Center’s food pantry, which also gets produce from the garden at John F. Kennedy Magnet School. The Food Bank for Westchester also contributes fresh produce but not as often as the Port Chester schools’ gardens do.

“It’s benefiting a lot of families that

come through here,” said Alex Chavarria, the Center’s community and family service manager. “It’s nice for them to get some fresh carrots and fresh lettuce, especially that’s been picked the same day.”

In operation for more than 50 years, the Carver Center’s pantry is set up similar to a grocery store which allows its users to shop and choose what they would like to eat. Once a month, more than 1,300 eligible individuals pick out three days’ worth of supplemental food from the food pantry, which is open five days a week.

Some of the families, especially those with dietary restrictions, made sure to go on days they knew the gardens had dropped off vegetables.

“They call me in advance and say, ‘How much fresh produce do you have?’”

Chavarria said.

Tomatoes, onions and cilantro were always the first to be snatched up.

“These are the things they use every Village Views

day in their cooking,” Chavarria said.

Other items contributed from the gardens included Swiss chard, eggplants, lettuce, zucchinis, radishes, tomatillos, okra, kale, carrots, squash, broccoli, cauliflower, onions, leeks, beans, peppers, potatoes, cucumbers, watermelons, peas and other herbs.

On July 25 alone, JFK teacher Jennifer Curti harvested nine white onions, eight red onions, six heads of broccoli, four cucumbers, four leeks, two pounds of Swiss chard, five pounds of kale, a bowl of mixed beans, a variety of herbs including parsley, basil, dill and sage, one small yellow zucchini and flowers from the garden.

“It’s amazing how much you can grow in a small space,” said 4th grade teacher Kate Albero as she harvested carrots in August. Those are her favorite to pick because of the sound they make as they pop out of the ground. “Mostly I’m just excited this food is going to the community.”

Community gets a green thumb Members of local congregations helped out in both the JFK garden and the middle school garden as part of God’s Green Market, a volunteer program chaired by Rev. Baker, who also works with Food 2 Grow On. “What we’re trying to do with God’s Green Market is to provide more sustainable food production,” Baker said. “There are wonderful people who donate all kinds of non-perishable items to food pantries throughout the village, but to get fresh, organically grown—we don’t use any pesticides or herbicides—vegetables and fruits, it’s just healthier for people.”

The group also provided some of the funding to ensure the teachers could work with students in the JFK garden.

“A lot of the kids have parents and grandparents who had gardens or might still have small gardens, so it’s kind of a reinforcing, a renewal for some of them in terms of the whole gardening process,” Baker said, adding that the group wants the students to be able to get out in the gardens and get their hands dirty.

The JFK garden got some additional helping hands from the Carver Center volunteer base. Some of the kids who go to the Port Chester schools also attend afterschool programs at the Carver Center and their families may shop at the food pantry.

Getting volunteers from the Center to help out in the garden brings it full circle, said Leith Colton, the Center’s community engagement manager.

“It’s just exciting to partner in this way,” she added.

Help in many forms is vital Throughout the community, there are other opportunities for hungry people to get help.

The Salvation Army, which moved into a new, permanent home on Bush Avenue about a year ago, has a small food pantry and soup kitchen, which they hope to expand. Both St. Peter’s Episcopal Church and St. Frances AME Zion Church also run soup kitchens, and Carver Center provides a meal once a week.

“With soup kitchens, they serve many of the same people that would be in the food pantries,” Baker said.

Despite the occasional overlap, Baker feels that both play important roles in the community.

“If you’re working late and you can’t get to the soup kitchen when it’s serving, what are you going to do?” he asked.

Especially towards the end of the month, food pantries can really become essential.

“People run out,” Baker added. “There’s just a great need. ‘Do I feed my family?

Do I pay my rent? Do I get the medication that I need?’”

Given the need in the community, having more than one option for families is essential, and thankfully in Port Chester, there is quite the variety. n Nancy Howse of Rye passes out some fresh fruit to Thomas A. he car trip home from the family Christmas reunion was taking my wife and me through a borough I hadn’t been to in many years. As we traveled, my mind drifted to the days when I lived here in the sixties with my parents. Ancient memories long forgotten flooded over me as I drove through familiar streets. The hills of the golf course on my right, now buried beneath a carpet of snow, beckoned me to return with my “Flexible Flyer.”

The neighborhood park on my left, now unkempt, whispered to me of a day when my first love had grown cold. I warmed to the thought of stopping to gaze at the old

house, if only for a few moments. I asked my wife if she minded.

“No, not at all. We’ve got plenty of time,” she replied, knowing how much it meant to me.

“I won’t stay long.”

Feeling my heart begin to race, I continued on, drawn to where I remembered it to be, anxious to see what I might find.

Arriving at the address, I pulled up to the curb and sat staring at what had been my house. What glared back at me was something I wasn’t prepared for.

“How could they have done this?” I said to my wife. It was no longer the tiny Cape Cod, three-bedroom house I remembered; instead it had been transformed into a faux stone, three-story, imposing structure. Stepping from the car, I walked slowly to the front of it, mesmerized by the transformation.

Why do I sense a feeling of familiarity with this man who’s standing before me with such a look of dismay? I know him, I’m sure, from another time, but when? Now I recall, I knew him when he wore a younger man’s clothes. His hair has grayed and his face is lined, but his eyes haven’t changed. It’s coming back to me now. He was the eldest of three children belonging to the first family I sheltered. The names of the many children following them are mere blurs, but his name and the name of his siblings have remained with me. How could I ever forget them, having shared our years of puberty together?

Courtesy of Carmine Tenebruso My gaze came to rest on the fine walnut entry door now decorated for the holidays, its image slowly morphing to the tan birch door I bought with my first paycheck when I worked in the lumberyard so many years ago. Where is that door now, I wondered; had it been callously cast aside? I

realized it was no longer necessary for the birch door to have remained in place, for those memories of my loved ones were so imbedded in my mind they would remain with me forever.

With this thought, I had a change of heart. The earlier feeling of disappointment had now been replaced with one of understanding.

Viewing it now through objective eyes, I saw it had been tastefully remodeled and appeared to be the finest on the street. I grew up a bit that day realizing it was the memories of what took place within its walls and not its exterior that made me love it so much.

The look of disillusionment appears to have left his face and he’s smiling. I know he’s begun to understand that appearances, while pleasing to the senses, mask our ability to see beneath the façade. Because of this, he and I will be forever bound.

I thanked my wife for giving me time with my thoughts and began to pull away from the curb. Looking at the house one last time, I wondered if in years to come someone else would drive up and learn the valuable lesson I had learned today. n

Sir Ian McKellen and Patrick Stewart, two British acting knights who would stand out at any all-time great actors’ roundtable, make Samuel Beckett’s “Waiting for Godot” and Harold Pinter’s “No Man’s Land” outstanding revivals in a season of what amounts to outstanding revivals while conducting a veritable acting master class on communication, conversation and the lack thereof in an existential void.

In “Godot,” Stewart plays the cerebral straight man Vladimir to the more instinctual Estrogen (McKewan in a sure to be Tony-nominated performance), a kind of hobo Buster Keaton to McKewan’s wounded tramp Charlie Chaplin with both mired in a T.S. Eliot-like wasteland of sameness. They fill their emptiness and yearning for connectedness with meaningfully meaningless chatter while waiting for someone to come who never comes. Nothing much ever happens either.

Except words, words, words, philosophical yet comic words hovering around the absurdity of the human condition if you think about it. But the understanding, enjoyment and exquisite timing behind and in between the lines underline their essential sadness—to part or not to part, to stay or not to stay—mine the depths that lift Beckett’s bleak vision into the realm of high comedy while genuflecting to the tragicomedy, a genuflection reflected in the way the audience laughs at the absurd goings-on. Hats off to a brilliant performance in more ways than one.

Pinter is, of course, the British heir to the French Beckett, and in his “No Man’s Land,” two veddy Brit poets (McKewen, the successful one, and Stewart, less so and looking for a meal ticket), talk a lot, drink a lot, and lance a lot while recalling memories of events that may or may not have ever happened. They go from bar talk to one-upping one another until a couple of thug-like man servants (Billy Crudup and Shuler Hennessey, both also top-notch sufferers in minor “Godot” roles) cut the interloper down to near paralytic size.

Pinter scores again, albeit not with the major critics, with his “Betrayal,” based on his real life love affair with a BBC commentator. What makes this show go is the fact that the Mike Nichols-directed play starts with the end of the affair and

proceeds backwards to its passionate beginning with the triangle involving the best of friends. What makes this show a box office success is the fact that it stars Daniel Craig, who is, of course, Bond, James Bond, 007, the suave, womanizing Brit spy extraordinaire of movie fame, and his real life actress wife, the beautiful Rachel Weisz.

While it is still in previews, the advance buzz is that “Beautiful: The Carole King Musical” will rank right up there with the season’s best. Why? Long before she was Carole King, chart-topping music legend, she was Carol Klein, Brooklyn girl with passion and chutzpah.

She fought her way into the record business as a teenager and, by the time she reached her twenties, had the husband of her dreams and a flourishing career writing hits for the biggest acts in rock ‘n’ roll. But it wasn’t until her personal life began to crack that she finally managed to find her true voice.

“Beautiful” tells the inspiring true story of King’s remarkable rise to stardom, from being part of a hit songwriting team with her husband Gerry Goffin, to her relationship with fellow writers and best friends Cynthia Weil and Barry Mann, to becoming one of the most successful solo acts in popular music history. Along the way, she made more than beautiful music, she wrote the soundtrack to a generation.

Opens Jan. 12 at the Stephen Sondheim Theatre, 124 W. 43rd St., for an open-ended run.

That kind of storyline is what is missing from the season’s other so-called musicals, starting with the entertaining “After Midnight,” one of Broadway’s “bests.” But is it really a musical despite being filled with some of the best singing and dancing on the Great White Way? We think not. But if you are looking for a jazz concert par excellence coupled with great singing and dancing, ‘Midnight” is the place to be on Broadway.

“After Midnight” more or less focuses on the story of Harlem’s Cotton Club and some of the great starts who played there.

Only the storyline is virtually non-existent even though what amounts to a parade of Duke Ellington’s greatest hits fills the stage as played by The Jazz at Lincoln All Stars with Wynton Marsalis, artistic director, and special guest star Fantasia singing up a storm matched by some of the best backup singers and featured tap dancers currently strutting their stuff on any Broadway stage.

“A Night With Janis Joplin” offers a highly-sanitized look at the rock star who died of a drug overdose which is light on the storyline behind her life but ultra-strong on her vocalizing with Mary Bridget Davies practically bringing her to life on stage, especially when she brings down the house with “Piece of My Heart” and “Me and Bobby McGee.” So this show is more of a rock concert than a musical, with Davies an early frontrunner for the best actress in a musical. What adds to the evening’s enjoyment are the performances of singers playing vocalists who had formative influences on Joplin— Taprena Michelle Augustine as Chantel, Bessie Smith and De’Adre Aziza as Nina Simone and Odetta, Allison Blackwell as Aretha Franklin and Nikki Kimbrough as Etta James.

The same lack of storyline undercuts “Lady Day,” subtitled “The Billie Holiday Musical,” with Dee Dee Bridgewater giving one of the season’s best musical performances in the title role.

The plot, or what there is of it, revolves around a London band rehearsal leading up to a drunken, drugged performance during Billie’s European comeback tour at a time when she is barred from performing back in the U.S. But only the sketchiest of reasons are given for Lady Day’s alcoholism and drug addiction and the rape outside a house of prostitution that led to her straying from the straight and narrow. Despite that, you are unlikely to see a better singing performance this season. Too bad it is in a role that is essentially looking for a character.

The season’s only other new musical worth mentioning is “First Date,” about the trials and tribulations of—you guessed it—a first date involving a girl who has been around the track blind date-wise and a virtual novice who gradually confesses to the heartache and tragedy in his life. While it seems to take Babcia no effort at all, making the dough and then forming the shapes was trickier than Leslie had anticipated.

After snacking on quite a few of them, we divvied up the cookies, packing some up for me and Leslie to take home, some for the office and even some for Leslie’s class, as well as many left behind for Babcia’s family to munch on.

My favorite bar cookies I don’t know where I got this recipe, but I’ve been making these cookies for years. They’re not only my favorites, but they’re a favorite with my family. I always have a supply in my freezer and they’re quite good eaten directly from the freezer, allowing a few minutes to soften a bit.

Ingredients: 1 cup all purpose flour ½ cup brown sugar ½ cup unsalted butter

Sift first two ingredients together. Work in butter till mixture has pie crust consistency. Press mixture into 8”x8” pan. Bake at 350°F till slightly brown—10 minutes or so.

Ingredients: 1 cup brown sugar 2 tbsp. flour ½ tsp. baking powder 1 tsp. vanilla ¼ tsp. salt 12 oz. semi-sweet chocolate bits 2 eggs beaten Mix above ingredients and pour over baked bottom layer. Bake at 350°F till brown—app. 20-25 minutes. Cool completely and cut into squares.

Italian stuffing/Italian casserole Who doesn’t enjoy eating during the holidays? Call this recipe what you want: Italian stuffing or Italian casserole; it’s delicious. I have been making this dish for at least 10 years, and it can easily be tweaked to your liking. It’s a perfect dish for any holiday. I have made it for Thanksgiving, Christmas, and Easter. My family loves this dish, and they often request that I make it for a holiday. Family members will continue to hound me to prepare this dish until I finally give in and make it for them. It’s a gluten free meal with all the Italian dry meats that I absolutely love. It makes me happy when the family enjoys eating it and I have cooked it for them with love. Buon Appetit!

Ingredients: 2-lb. box of white rice 1½ lbs. sweet sausage 4 eight ounce bags of shredded mozzarella cheese (32 oz.)

2 cans of small black olives Medium container of sliced pepperoni* Medium container of dry sliced sausage* Medium container of sweet sopressata* Pepperoni, dry sausage, sweet sopressata from Italian deli—the kind you get on a stick for Italian antipasto

Cook rice and set aside. Take sweet sausage out of casing and roll into tiny meatballs. Fry sausage meatballs in oil, drain, and set aside. Slice black olives into small rings. Take pepperoni, dry sausage, and sweet sopressata round slices and quarter them into four pieces each.

Mix well and set aside. Note: You do not need salt or pepper. Once baked, all the flavors will come together.

In a large mixing bowl, mix together all seven ingredients.

Bake at 350°F for one hour or until mozzarella is melted.

Stuffing/casserole can be put together one day and baked the next. Enjoy this Italian delicacy!

Meringues* When I was little, my mother used to make meringues, which taste kind of like a cross between toasted marshmallows and cotton candy, at any time of year but more often during the holiday season. We used to form the traditional drops, fill up tins with them and pass them out as presents. Sometimes she would go that extra step and craft different shapes: pine trees for Christmas and bunnies and chicks for Easter. As a kid, frothing up the light and airy batter using only a couple ingredients seemed like magic, and I loved to watch her make them. Even today, there is still something magical about the process when I make them myself.

They are definitely one of those foods that is just as much fun to make as it is to eat.

Racine, Westmore News reporter Ingredients: 3 large egg whites ¼ teaspoon cream of tartar (optional – it helps the peaks form) ¼8 teaspoon salt ¾ cup sugar ¾ teaspoon vanilla or ¼ teaspoon almond extract Food coloring (optional) You can bake these cookies two sheets at a time. Preheat the oven to 225°F. Line two cookie sheets with parchment paper.

Beat the egg whites, cream of tartar (optional) and salt in a medium bowl on low speed until foamy. Then increase the speed to high and mix until it just begins to form soft peaks. Gradually add the sugar, beating until well combined.

Reduce the speed to low and add the flavoring. The mixture can be split in half and part of the flavoring added to each. At this point, add several drops of food coloring if desired. For example, add a couple drops of green for Christmas.

Beat until the meringue is glossy and stands in very stiff peaks.

Using a pastry bag fitted with a ½-inch open star tip or a heavy-duty zipper-topped plastic bag with a bottom corner snipped off, pipe the batter into 1¼-inch kisses about 1 inch apart on the cookie sheets. (Or, drop heaping teaspoonfuls of batter in peaked mounds.) Makes about 36 1½-inch drops.

You can also make different shapes such as Christmas trees and snowmen.

Almond flavored and vanilla flavored meringues shaped into snowmen and Christmas trees respectfully.

Bake for 45 minutes at 225°F rotating the sheets and switching positions halfway through baking. Turn the heat off and let the cookies stand in the oven for 30 minutes or until cool. For optimal results, leave overnight in the oven. *Adapted from “Joy of Cooking” recipe for meringue kisses

Potato latkes Potato latkes are traditional for Chanukah and are one of the most famous of Jewish foods. Latkes can be served as an appetizer or a side dish and are typically served with apple sauce or sour cream. I prefer apple sauce.

Christmastime 2013

Ingredients: 2 lbs. potatoes 2 large eggs salt oil for frying Peel and finely grate the potatoes. Put them straight into cold water, then drain and squeeze them as dry as

you can by pressing them with your hands in a colander. This is to remove the starchy liquid which could make the latkes soggy.

Beat the eggs lightly with salt. Add to the potatoes and stir well.

Film the bottom of a frying pan with oil and heat.

Take tablespoonfuls or as much as ¼ cup of the mixture and drop into the hot oil. Flatten a little and lower the heat so the latkes cook through evenly. When one side is brown, turn over and brown the other side; lift out and serve very hot. Makes enough for six people.
