Pasta Per Voi: Fine Italian cuisine in a marketplace setting B

ack in March 1993, Yonkers resident Joe Fornino and a partner opened Per Voi at 23 North Main St, pouring a lot of money into the space to create this fine Italian restaurant where an army navy store had been.

Enjoying earlier success, he later sold the Port Chester restaurant to a trio which opened it as Daniele’s in September 1998. Daniele’s lasted for about six months when Fornino took it back. He proceeded to reopen the restaurant with no partners in July 1999 and called it Pasta Per Voi, the establishment that remains to this day.

The interior of Pasta Per Voi, which means “pasta for you” in Italian, is designed to look like an extraordinary open air Italian marketplace complete with three-dimensional shop fronts along the outside wall of the 143-foot-long main dining room. It also features pretty green carpeting with pink and white flowers and a high ceiling with exposed pipes painted blue with white clouds swimming through it to resemble the sky. Track lighting provides the perfect level of light to allow diners to see

their menus but still be subtle.

You can enter the restaurant either from the North Main Street side through a deep red entranceway or the Abendroth Avenue side which features an impressive entrance with brick and concrete pillars, wrought iron railings, decorative lampposts and a green awning with white lettering. During the warmer weather, shrubs, flowers, planters and hanging baskets of flowers adorn this entranceway.

Entering from Abendroth Avenue, customers come through the lovely bar with its 6-month-old painting of Fornino posing with Frank Sinatra, Dean Martin and Sammy Davis, Jr. done by an artist friend. The classy bar has a copper top, high-backed black stools matching the chairs in the dining room and a great tin ceiling. Four tables in this area, covered with magenta cloths draped with white ones like those in the dining room, provide more intimate dining and are often the preferred choice of customers during the week. Fornino said the last year has been good to him in spite of the construction downtown.

While weekdays are sporadic, he’s satisfied with business.

“We’ve become pretty consistent with our food and have been here long enough that most of the customers have become friends,” said Fornino.

Pasta Per Voi offers a good basic menu of regional Italian cuisine, intriguing daily specials, large portions, plenty of wait staff providing attentive service and reasonable prices consistent with the high quality of the food. That’s their recipe for success.

Head chef Manuel Romero of Port Chester has been with Fornino almost 11 years. He learned the fine art of regional Italian cooking from Fornino’s former partner Joe Giordano who is now the chef at the posh Val Bella in Greenwich.

Justin Cardazano of Rye Brook, originally from Port Chester, has been at Pasta Per Voi five years, starting as a waiter and working his way up to manager. He circulates throughout the dining room and keeps customers happy with his pleasant, outgoing personality.

Fornino is always on the premises greeting guests and taking care of business.

Dinner for two On a recent visit to Pasta Per Voi, our party of two started the meal with an appetizer special and the soup of the day.

The Tortolacci stuffed with shrimp and lobster in an Alfredo sauce ($8.95) brought three large pieces of delicate pasta stuffed with seafood in a not too heavy cream sauce which was out of this world. A bowl of seafood minestrone ($5.50), containing mussels and clams in a tomato broth with vegetables, was also satisfying.

Even before the appetizers, however, a basket of Terranova bread and thick bread sticks covered in sesame seeds came to the table along with a crock of butter whipped with roasted garlic and basil and a spread made with sundried tomatoes, roasted garlic, rosemary and melba sauce.

While I loved the butter, the tomato spread wasn’t appealing. Unexpectedly, a plate of cold antipasto also arrived, which is traditional at Pasta Per Voi on Friday and Saturday nights. It included marinated mushrooms, roasted red Please turn to page 8R

Pasta Per Voi: Fine Italian cuisine in a marketplace setting Continued from page 3R peppers, fresh mozzarella with sliced tomatoes topped with balsamic vinaigrette, grilled zucchini, provolone, chick peas and kidney beans.

To complement our meal, we chose a bottle of Greco di Tuffo “Struzziero” Villa Giulia, an Italian white wine priced at $29. It was dry, crisp and to our liking. The wine list contains two pages of red and white Italian and California varieties as well as champagnes and sparking wines priced from $19 to $250. There are a number of selections in the $20 to $40 range.

I highly recommend the Insalata Tri Colore, a blend of radicchio, arugula and endive greens, tomatoes and black olives topped with balsamic vinaigrette dressing and crumbled gorgonzola cheese ($5.95). The portion provided plenty for two to split.

Linguini Napoli ($14.95) brought grilled slices of chicken and perfectly cooked broccoli sautéed with fresh roasted garlic and virgin olive oil and served over thin linguine. This dish has a subtle taste which was enhanced by the addition of fresh parmesan cheese.

Grilled Steak Contadina ($24.95) was perfectly cooked medium—pink in the middle— and topped with mushrooms, crunchy thinly sliced potatoes, peppers and onions cooked in garlic and oil. An excellent choice.

At manager Cardazano’s suggestion, the tender piece of meat was sliced in the kitchen to make it easier to eat.

For both entrées, the portions were large and required doggie bags.

Too full for anything heavier, I opted for the royal raspberry sorbet ($5) which was fruity and yummy. I also had a sample of the creamy pistachio gelato, equally delicious. Other gelato flavors available include hazelnut and vanilla. A regular coffee ($1.75) and a cappuccino ($4.50) served with rock candy on a stick—a nice touch—brought our check to $109.17. If you prefer decaffeinated coffee, you can even get decaf cappuccino or espresso at Pasta Per Voi.

Menu The Pasta Per Voi menu is ample but not huge. It includes eight appetizers, six salads, 10 pastas, five chicken dishes, four veals, seven seafood entrées and three grilled meats. In addition, there are about 10 daily specials including appetizers and entrées which are always interesting.

From the regular menu, Fornino recommends the Linguini Marechiarra ($18.95), made with shrimp, mussels and clams in a fresh basil red sauce. He said the Chicken Scarpariello ($14.95), boneless pieces of chicken with hot and sweet cherry peppers in a garlic rosemary wine sauce, is the most popular chicken dish and also suggests the Veal Capri ($21.95), breaded veal cutlet topped with chilled tomatoes, tri-color salad, diced mozzarella and olives.

As far as specials, Fornino

For fish, he suggests the snapper wrapped in a thin potato over a bed of spinach in a Dijon mustard sauce. In addition, the Chicken Martini, breast of chicken pounded thin, breaded with Japanese bread crumbs, parmesan cheese and cooked in a lemon and white wine sauce, is sim-

ply delicious. And, if you go for red meat, said Fornino, Pasta Per Voi’s filet mignon is second to none.

The Golden Snapper encrusted with Japanese bread crumbs and cooked in a white wine and butter sauce ($19) is another excellent special I can advocate. It was served with whipped mashed potatoes and spinach cooked with garlic.

For dessert, many of the selections on the menu are homemade and the restaurant is always trying out new ones.

Besides the sorbet and gelato mentioned above, some of the choices are crème brulée, tira misu, carrot cake, Mississippi mud pie, fried cheesecake and raspberry almond cheesecake.

Fornino said the latter is so smooth, once you’ve tried it, you’ll no doubt keep coming back for more.

The lunch menu lists smaller portions of some of the pastas and entrées on the dinner menu as well as others like Chicken Per Voi (chicken sautéed with garlic, white wine, artichoke hearts and pimentos at $9.95). It also features salads, salad platters, Shepherd’s Pie, sandwiches like Turkey Club ($6.95), Cuban Pork ($6.95) and Sausage, Peppers, Sliced Potato and Onion with Broccoli Rabe Wedge ($6.95) and ¾ pound black angus burgers ($6.95 to $8.95). Fornino raved about the burgers.

For Mother’s Day, a special limited a la carte menu will be offered highlighting some of Pasta Per Voi’s best appetizers, salads, pastas and entrées starting at 1 p.m.

“This way the food comes out fast and good,” said Fornino.

Since he’s been going this route for holidays, “life is much easier and customers are much happier,” he said.

Some of the entrées to be offered on May 9 are Chicken Martini ($19.95), Osso Bucco Giordano ($27.95), Steak Diane ($33.95), Surf and Turf ($35.95) Stuffed Shrimp ($26.95) and Branzini ($26.95), a Mediterranean white fish butterflied, pan seared, topped with fresh herbs and Japanese bread crumbs and served in a lemon white wine butter sauce.

Mothers will receive a complimentary rose.

Hours, parking and such Pasta Per Voi is open Monday through Thursday from 12 noon to 10 p.m., Friday and Saturday from 12 noon to 11 p.m. and Sunday from 3 to 9 p.m. Parking is on the street on North Main or Abendroth Avenue or in the marina parking lot off Abendroth. As construction on the downtown redevelopment project heats up, Fornino hopes a solution can be worked out that will satisfy North Main Street businesses.

He thinks the many tractor trailers that will be coming in delivering concrete sections for the parking garage can be spread out around the village so all the parking isn’t taken away for him and other businesses on North Main. Otherwise, he said, they’ll be out of business. Right now he suggests parking on the street or in the nearby lot that was created where Coneyz used to be in Liberty Square.

Discover Mother’s Day history Mother’s Day is a holiday that is celebrated across the country and around the world. However, have you ever thought about the tradition behind the day?

The earliest Mother’s Day celebrations can be traced to the spring celebrations of ancient Greece in honor of Rhea, the Mother of the Gods. During the 1600s, England celebrated a day called “Mothering Sunday,” on the fourth Sunday of Lent (the 40-day period leading up to Easter). “Mothering Sunday” honored the mothers of England.

During this time, many of England’s poor worked as servants for the wealthy.

As most jobs were located far from their homes, the servants lived at the houses of their employers. On Mothering Sunday, servants had the day off and were encouraged to return home to spend the day with their mothers. A special cake, called the mothering cake, was often brought along to provide a festive touch.

As Christianity spread throughout Europe, the celebration changed to honor the “Mother Church” — the spiritual power that gave them life

and protected them from harm.

Over time, the church festival blended with the Mothering Sunday celebration. People began honoring their mothers as well as the church.

In the United States, Mother’s Day was first suggested in 1872 by Julia Ward Howe (who wrote the

words to the “Battle Hymn of the Republic”) as a day dedicated to peace. Ms.

Howe organized Mother’s Day meetings in Boston every year.

In 1907, Anna Jarvis, of Philadel-

phia, campaigned to establish a national Mother’s Day. Ms. Jarvis persuaded her mother’s church in Grafton, West Virginia, to celebrate Mother’s Day on the second anniversary of her mother’s death, the second Sunday of May. By the next year, Mother’s Day was also celebrated in Philadelphia.

Ms. Jarvis and her supporters wrote to ministers, businessmen and politicians in their quest to establish a national Mother’s Day. It was successful, and by 1911, Mother’s Day was celebrated in almost every state. In 1914, President Woodrow Wilson made the official announcement proclaiming Mother’s Day as a national holiday that was to be held each year on the second Sunday of May. While many countries celebrate their own Mother’s Days at different times throughout the year, some countries, like Denmark, Finland, Italy, Turkey, Australia and Belgium, also celebrate Mother’s Day on the second Sunday of May.

Ways to show mom you love her Why is Mother’s Day different from all other days? Because it’s the one day of the year when we stop to acknowledge and thank our mother for everything she has sacrificed to make our lives better. Here are some ways to show Mom how much you care: • Visit your mother, whether you live near or far. Anna Jarvis, the founder of Mother’s Day, proposed that a special visit to Mom would be an appropriate symbol of dedication to mother in honor of her day.

• Call her on the phone. These days, when families are separated by hundreds of miles and e-mail is so accessible, we need a little push to pick up the phone. So dial those digits!

• Get out that camera and snap some shots of Mom with her children, grandchildren or you. E-mail them to her, or frame them for a gift that will be sure to last a lifetime.

• Take Mom out on the town — see a movie, drive around the country or play a round of golf. Do something

that she thoroughly enjoys.

• Get Mom out of the kitchen and into a restaurant for brunch or dinner. She deserves the day off, especially if she’s the family chef every other day of the year.

• Give Mom a gift that’s just for her. It doesn’t have to be big or expensive — just something that says “I appreciate you” and reflects her taste and style. It’s the thought and love behind that gift that’s most meaningful to her.

• Send her a paper card — not one that’s e-mailed or store-bought. Jarvis proposed that we write Mom a letter just for her on Mother’s Day. Letter writing is more personal than a greeting card.

You can start just about any tradition to mark Mother’s Day. However you decide to express your feelings, do it in a way that fits your mother’s style, and Mother’s Day will be an unforgettable experience for both of you.

Mother’s Day tradition When Mother’s Day was founded in the early 20th century, it was proposed that we take pen in hand and write a special letter dedicated to mother in honor of her day. Times have changed over the years. Few people write letters anymore, favoring e-mails or e-cards. Perhaps that’s why it’s time to go back to the traditions of yesteryear and write that letter. Composing a note to your mother can be fun and satisfying — and will most definitely bring a smile to her face.
