Pasquale Ristorante: Consistent through the years Decor

hen Pasquale II Ristorante had been open almost a year, I commented that this eating establishment had succeeded while two others at this same Port Chester location near the Greenwich border had failed. Now, more than seven years later, I can safely say that Pasquale has not deviated from the course it was on back then, still offering the same high quality food, presentation and service. No wonder it has built up a regular local clientele and is busy with parties almost every weekend.


Unfortunately Pasquale, normally closed on Mondays, will not be open on Valentine’s Day this year. However, owner Frank Di Rende of the Bronx said he has gotten many reservations for Friday, Saturday and Sunday, some no doubt from people choosing to celebrate early rather than dine out on a Monday night. Pasquale Osso, the person for whom the 2 Putnam Ave. restaurant was named and Di Rende’s cousin, was originally his partner and head chef. He left the business five years ago to start a

new venture in Maryland and then died in a freak accident three years ago. When he became the sole owner, Di Rende decided not to change the name of the restaurant. And his other chefs, including head chef Rosario Barrera of the Bronx, stayed on board, having been at Pasquale II from day one. “Thank God for that,” he said. Di Rende and Osso, who both came from the town of San Lucido in southern Italy, had worked together at Dominick’s on Arthur Avenue in the Bronx when Osso asked Di Rende about

They had a few friends and customers from Port Chester who recommended this location to them. “We came to see it, liked it and went with it,” said Di Rende. They opened Pasquale II on Nov. 18, 1996, naming it such since Osso already had another restaurant with the same name in Eastchester. Barrera had also worked with them at Dominick’s and before that at other restaurants, “bringing a little experience from all of them to us,” said Di Rende, who

has been more than pleased with the reception his restaurant has gotten from the Port Chester and Rye Brook community. Di Rende, 38 and single, does prep work in the kitchen in the morning and then takes care of the front part of the restaurant as manager, maitre d’ and bartender. He attributes the eating establishment’s success to the quality and freshness of the food, the service and “myself being attentive to every step of the business.” Pasquale offers fine Italian cuisine in a garden setting, the latter not being as noticeable this time of year as in the warmer months. Barrera cooks up many traditional Italian dishes as well as others that aren’t as well known, making for an attractive menu of appetizers, soups, pastas, steaks and chops, veal, chicken, fish and seafood dishes. Additional specials—6-8 appetizers, 2-3 pastas, and 4-5 entrées on the weekends as well as an occasional dessert—add interest. Service is exceptional with a number of waiters, bus boys and runners working together and actually scrambling to get the food to their customers and then to clear the dishes away after the meal. “The majority have been with me a very long time, 3-4 since we first opened up,” said Di Rende.

Well landscaped and nicely decorated with windows providing lots of natural light, Pasquale is an especially nice place to visit during the day or the summer months when it stays light later or you can eat outside on the red brick patio surrounded by trees, flowers and shrubs. However, the ambiance is also lovely inside after dark. The restaurant, which seats 130, has two dining rooms, one to your right and one to your left off the entryway. It is decorated with mirrors to make it seem even larger than it is. Oak colored wood and a rustic tile open entryway greet you as you enter Pasquale. A small oak bar with glasses hanging overhead and a rack displaying an extensive selection of wines is straight ahead. You enter the sunnier dining room to your right through an open archway. Beige and red drapes are usually tied back at the entranceway but can be closed for private parties. This room can accommodate parties of up to 60 people. The wide windows throughout the restaurant are hung with beige verticals accented by multicolored fabric draped across the top. A maroon theme carries throughout from the runner as you enter to the carpeting to the tablecloths and dishes. The latter are white with maroon trim. Chairs and barstools have maroon seats. Globed oil lamps on the tables have a silver base and flowers etched in the glass. Fancy bottles of olive oil also decorate the tables. Other globed lights hang from the mirrors. Varied paintings and prints hang on beige walls. Di Rende said he has made minor changes to the décor over the years and has plans in the next few months to renovate the bar and install new carpeting.

Pasquale Ristorante: Consistent through the years wines from Italy and California as well as sparkling wines from Italy and France. They range in price from $25 to $200. Described as clean and crisp, the Gavi was just that. Pasquale has also been offering wines of the month for some time—currently a merlot, chardonnay, cabernet and shiraz—wines that are not on the list but that are recommended to go with the restaurant’s entrées. Since I’m always looking for suggestions as far as wine, I find this a nice touch. A loaf of European style round bread from the Terranova bakery on Arthur Avenue was yummy, sliced and served warm to accentuate its crunchy crust. Both whipped butter and olive oil is provided for dipping or spreading. The tri-color salad with Italian dressing and gorgonzola cheese (the cheese was my choice) at $8.45 was a special and plenty for two to split. It featured red, white and green lettuce (radicchio, endive and arugula) with plenty of cheese and green and black olives on top. The Shrimp Oreganata ($18.95) brought 16 medium shrimp sautéed in garlic and wine topped with bread crumbs. This dish, certainly an ample portion, is good but somehow not great. I can recommend the Cappellini Adriatica ($19.95), a special consisting of shrimp; clams and mussels in the shell cooked in a red or white sauce and served over angel hair. I’ve also requested just shrimp in the white sauce made with wine, garlic, fish stock and seasonings over spaghetti in the past, which isn’t on the menu, and have been totally pleased with the preparation. The Filetto di Salmone alla Dimonese ($19.95), filet of salmon sautéed with capers, white wine and Dijon mustard, is delicate and delicious. While the portion was not tremendous, every piece was savored. My 11year-old wanted to order it again when we returned.

Pollo alla Calabrese ($16.95) brought two pieces of boneless chicken breast sautéed with hot cherry peppers and sun-dried tomatoes in a garlic and white wine sauce. This dish was tangy and tasty but not too spicy and provided enough to take home for another meal. String beans, broccoli, spaghetti or penne with tomato sauce come with all entrées but not pasta dishes. What’s nice is that the vegetables are served family style on a separate plate for easy sharing. Broccoli rabe ($8.95), escarole ($6.95) and spinach ($6.95) are extra. For dessert the Amaretto biscotti cake ($6.50), a special, was delightful. It had sliced almonds on top and was served with dollops of whipped cream and raspberry sauce decorating the plate. Coconut sorbet ($6) came in a coconut shell and the plate was similarly decorated. Cappuccino ($3.50) is served with rock candy on a stick, always a pleasure. We also enjoyed an espresso ($2.50). Our check came to $114.50, but the price of the desserts and coffees were deleted as a courtesy from the owner because, although we had a reservation, we had to wait some time for a table. That’s the kind of nicety that keeps customers coming back.

Recommendations While you couldn’t go wrong with anything on the menu, owner Frank Di Rende made some recommendations. For appetizer, he suggested the stuffed artichoke ($8.95). Stuffed with bread crumbs, it is prepared ahead because it takes 1 ½ hours to cook. This dish is delicious albeit messy to eat. Other suggestions are the Calamari Fritti (fried calamari), a large portion at $11.95, and the Portobella alla Pasquale ($8.95), a few grilled Portobello mushrooms topped with a demi-Cognac sauce which takes 6-8 hours to prepare. The owner’s mother, Carmella makes this pasta specialty for the restaurant. etables and beef stock which takes time to reduce. For pasta dishes, Di Rende recommends the Linguine Pescatore ($18.95), fresh chopped clams and shrimps in a light marinara sauce served over linguine, and the Gnocchi Bolognese ($15.95) his mother Carmella makes for the restaurant. While I’m often afraid to order gnocchi for fear of it being too heavy, she said the secret is not to use too much flour. I can attest to the fact that it is filling but not heavy, and the meat sauce is surprisingly light and appetizing. “Chicken Scarpariello ($16.95) is a favorite of everyone,” said Di Rende. It features boneless chunks of chicken sautéed with hot cherry peppers and artichoke hearts in a garlic and white wine sauce. I have tried this one, too, and can put in a good word for it. Zuppa di Pesce ($23.95), a mixture of shrimp, calamari, mussels, clams, and baby lobster tails in a light marinara sauce,

and Steak Contadina ($23.95), made with sliced potatoes, bell peppers, mushrooms and onions, are other popular dishes. As far as specials, Di Rende mentioned the Pasta Adriatica I recommended above or the Pasta Mediterraneo ($21.95) which adds baby lobster tails to the shrimp, clams and mussels in the first preparation. He also suggested the Veal Chop alla Pasquale ($23.95), a double cut veal chop grilled and topped with the Portobello mushrooms in Pasquale sauce mentioned as an appetizer. Chicken Verbena ($18.95), boneless breast of chicken layered with prosciutto, asparagus and mozzarella cheese in a light white wine sauce completes the special suggestions. Eggplant Parmigiana, meatballs and sausage, while not on the menu, are always available. There is no children’s menu, but Pasquale definitely welcomes and attracts children, accommodating them with chicken fingers or half portions. The latter worked well at a recent meal where two 11-yearolds shared the Penne alla Nonna ($17.95) and were both satisfied. This pasta dish consists of diced pieces of chicken and shrimp and sun-dried tomatoes in a light red sauce over penne.

The dessert menu features homemade tiramisu, Italian cheesecake and cannoli; vanilla, chocolate or hazelnut gelato; as well as a variety of other desserts made by Bindi and imported from Italy. Colorful photographs of the other desserts appear on the menu. Among them are Tartufo (creams rolled in crushed caramelized peanuts and covered with powdered cocoa), Profiterol Cup (chantilly cream and choux base covered with chocolate cream and decorated with rosettes of chocolate cream) and lemon, peach, coconut and pine-

apple sorbets served in their natural fruit shell. Desserts are priced from $4 to $7. Lunch, served Tuesday through Friday from 12 noon to 4 p.m., consists of a few appetizers, salads ($3.95 for garden to $9.95 for Caesar with grilled chicken), soups ($3.50 to $4), and a good selection of pasta, chicken and seafood entrées ranging from $7.95 to $12.95 as well as shell steak ($11.95) and a pork chop ($9.95). There are also specials of the day.

About the owner Since Frank Di Rende, a pleasant personality, took over as sole owner of Pasquale five years ago, his parents have been lending a hand. His mom makes some of the pastas and his dad, Paul, goes to Hunt’s Point in the Bronx to buy the meat and vegetables for the restaurant and to the Fulton Fish Market for seafood. By the end of this year, said Di Rende, the fish market will be moving over to Hunt’s Point and there will be one stop shopping. Di Rende, who came to this country as a baby, was right out of college and working on Wall Street when he was attracted into the restaurant business by his uncle, co-owner of Dominick’s. While he now admits it’s not an easy profession and he doesn’t have much time for socializing, he’s happy with the business he has created and can’t imagine doing anything else.

Hours, parking Pasquale II, located across from Cumberland Farms, is open Tuesday through Thursday from 12 noon to 10 p.m., Friday from noon to 11 p.m., Saturday from 3 p.m. to 11 p.m. and Sunday from 1 p.m. to 9 p.m. There is free parking on the premises and free valet parking on the weekends when the number of spaces in the restaurant’s lot do not suffice.
