Chef of the Year honors go to a P.C. resident By Jananne Abel

Port Chester has at least one decorated chef in its midst.


onathan Moosmiller, a certified executive chef who has lived in the village for two years, received the American Culinary Federation Northeast Region Chef of the Year Award at the 2008 ACF Northeast Regional Conference. It was held at the Hilton Cincinnati Netherland Plaza from April 5-7. Sponsored by Unilever Foodsolutions, the ACF Northeast Region Chef of the Year Award recognizes an outstanding culinarian who works and cooks in a full-service dining facility. This person demonstrates the highest standard of culinary skills, advances the cuisine of America and gives back to the profession through the development of students and apprentices. Moosmiller competed against three other Northeast Region Chef of the Year candidates before being declared the winner. He will compete for the national title against the winners from the three other ACF regions at the 2008 ACF National Convention in Las Vegas July 14-17. Moosmiller, 30, is executive sous chef for certified master chef Edward Leonard at Westchester Country Club in Rye. He graduated in 1998 from Johnson & Wales University in Providence, R.I., where he received an Associate of Applied Science degree in Culinary Arts. After graduation, he apprenticed at Le Moulin de Mougins in France. He assisted ACF Culinary Team USA as a sous chef in Basel, Switzerland at the 2005 Salon Culinarie Mondial, one of the most important international culinary arts competitions, when the team took home two gold medals in the cold and hot food. In 2007, he was named ACF Culinary National Team USA sous chef and will assist at the

Internationale Kochkunst Ausstellung International Culinary Art Competition, also known as the “culinary Olympics,” in Erfurt, Germany in October as they match their skills against more

Jonathan Moosmiller of Port Chester than 40 international teams. “I’m the sous chef for the culinary Olympic team,” Moosmiller said, speaking from the kitchen at Westchester Country Club, “support staff rather than a competitor. Competitors are five other chefs. My boss is the manager of the team and they practice here.” The American Culinary Federation, established in 1929, is the premier professional organization for culinarians in North America with 20,000 members spanning more than 230 chapters nationwide. Before taking a position at Westchester Country Club, Moosmiller worked at Cantare in Chicago which serves Northern Italian cuisine. He has been at WCC for five years, having started there as a banquet sous chef. This is his third season as executive sous chef.

For the Chef of the Year competition, Moosmiller had to cook four portions of one entrée of his choice in one hour. “I prepared a Portuguese pork and clam duo,” he said, explaining that you bring in your recipe and submit it to the judges and then have 15 minutes to set up the kitchen, an hour to cook and five minutes to present your food to the judges. “You have to plate it and they take it to the judges,” he said. “One plate is left for everyone to see and three plates go to three judges.” Chefs are judged on organization, how they set up their kitchen space, handling of all ingredients and, most importantly, flavor. Moosmiller prepared both braised and roasted pork, two different cuts. It was accompanied by a chorizo sausage potato bar. For the potato bar, he said, “you take potatoes and cook them and then they get riced like mashed potatoes and folded in with eggs and corn starch and whipped egg whites and then you pour it into a baking dish and it sets.” “It’s quite a lot to do in an hour,” he said. Moosmiller was nominated by his boss to participate in the Chef of the Year contest. As far as training new chefs, WCC has a 2-year apprenticeship where six students are trained for two years to be able to cook and run kitchens—all the aspects of cooking and ordering. Students have to have a little experience but don’t necessarily have to have come from a cooking school. “They are getting on the fast track to an entry level management job,” said Moosmiller. This being the first year of the program, from now on the country club will take on a new class every year. So next year they will have a total of 12 apprentices, six in their first year and six in their second. “On top of that,” said Moosmiller, “we take 12 to 16 externs from culinary schools for a 16- to

Moosmiller, who is second in charge of the kitchen at WCC, oversees three outlets which in the summer totals 30 to 40 people. The complete kitchen staff in the middle of the season reaches 40 to 55. Right now there are about 25. The club has 1,200 members

who use the dining room. Moosmiller and his wife Jessica rent an apartment in a house at 472 Westchester Ave. She is also employed by Westchester Country Club. “She used to work in the kitchen as well,” he said, but now has moved over to the sales and catering department. When it comes to cooking, Moosmiller said he doesn’t have a specialty. “I just like to cook,” he said.
