Turn the dough out onto a lightly floured work 3 surface, flour a rolling pin well and roll the dough out until it is approximately 2cm thick. Cut it into squares or diamond shapes with a sharp knife and transfer to the prepared baking tray, making sure you leave space between them for expansion. Very gently begin to bring the flour and butter together by rubbing between your thumb and fingertips, allowing it to fall from a short height above the bowl.
