Step three: Add the chicken pieces flesh side face down and cook for one minute. After one minute, repeat skin side down, then flesh side down again. Add water to cover chicken for cooking. Turn to high heat and bring to the boil for one minute, before lowering heat. Simmer chicken for 10 minutes.
