Greater McAllen Association of REALTORS® Donates Toys to Rainbow Room Special to Welcome Home RGV

The

Greater McAllen Association of REALTORS® Public Relations Committee had no doubt what organization would be receiving the donation of toys from this year’s toy drive. “Rainbow Room serves children who on many occasions are experiencing some life-changing trauma,” said German Garza, who chairs the PR Committee for the local REALTOR® association. “We want to give them a sense that there is still some love out in the world.” German, along with the committee members, worked with REALTOR members and affiliates of their association to have 25 boxes placed throughout the McAllen-MissionEdinburg area for collecting the toys. “GMAR is very aware of our responsibility to help the community we live in,” said Association Executive Monica Solis Peña. During the holidays, caseworkers from CPS see many children who are in distress and who do not receive any Christmas gifts. Many businesses helped with the toy drive by placing donation boxes at one or several

locations. Volunteering

to help Amigos de Los Niños de Mexico with their annual Christmas party for the children of Progreso, Mexico, and the surrounding area is an inspiring way to spend Christmas morning. This party is sponsored by the Amigos and has been an annual event for about 30 years. President of the group is Dick Druse. Ted and Carol Schnase have been the liaisons between the Amigos in the U.S. and the Amigos in Mexico. They had their hands full this year because of not one, but two, last-minute changes in venues where they would hold the event. They do a marvelous job of encouraging volunteers and handling the details of organizing a large party in a foreign country. The Amigos were joined by the Pastors’ Association from Progreso and Rio Bravo, Mexico (about 14 churches). This group has been such a big help in handling details in Mexico, serving as interpreters, and handling the children coming to the party. Lines formed early in the morning, and the gates opened at 9 a.m.

The children and their parents were led through the line and gathered fruit, cupcakes, notebooks, crayons, pencils, peanuts, toys, pasta, beans, and rice in their bags. They even have piñatas and a visit with Santa. Approximately 2000 children attended and almost 250 volunteers from the three organizations made this a very successful event. What a great way to spend a Christmas morning! A follow up meeting was held Tuesday, January 10, at First United Methodist Church in Donna at 1:30 p.m. Plans for next year’s party were discussed at this meeting. Restaurant Review: You’re Never Far from El Pato by Sandy Olson

If

you haven’t eaten at El Pato, you are in for a wonderful treat. This chain of fresh Mexican fastfood eateries has 13 locations in 10 different Valley cities; you are never very far from an El Pato, and that’s good! What we learned on a recent lunch visit is that it really IS possible to have freshly prepared home-style Mexican food that is tasty, plentiful, and fast. You don’t have to give up quality to save time. We ate at the Pharr location (707 W. Highway 83), where manager Brenda Sanchez told us this food is just like her grandmother used to make. Brenda has been with the company for 11 years and knows exactly what goes into pleasing customers. The menu at El Pato is easy to understand. There are many tempting choices, including a kids’ menu, breakfast plates, and a “light and tasty” menu. El Pato’s menu includes specialties for all three meals of the day, as well as desserts and beverages. Beer, both domestic and imported, is also available to cut the heat. Each customer chooses the ingredients that please him or her, adds the condiments needed to round out the taste, and digs in. I ordered their signature dish, beef

guisado, in a Pato. This is a soft flour tortilla (they are made fresh daily) stuffed with the saucy beef, to which I could add “fillers,” the extras that complement the meat. The guisado was delicious, better than some I’ve had in traditional Mexican restaurants around the Valley. It is also available on a plate with beans, rice, and tortillas. The gravy was so well seasoned I needed no additional salsa or other toppings. I decided on cheese and lettuce/tomato as my fillers. My husband had the same Pato but with shredded, seasoned chicken. When you order a meal at El Pato, you are welcome to enjoy chips and salsas from the complimentary condiment bar. All the salsas are made fresh and include pico de gallo, avocado, salsa verde, salsa roja, and the hottest, chile del arbol. Whew! Onions, peppers and lime wedges top things off. Be forewarned: all of the salsas are spicy. Brenda told us customers have requested that style, and she is happy to comply. Daily specials Monday through Friday are featured for $5.49. Every Friday, you can get one chicken Pato and one beef Pato served with Spanish rice and ranchero beans.

What a deal! There are many Mexican restaurants in the RGV, but Brenda would like people to know that the food served at El Pato is just like homemade-made fresh--not shipped in from a corporate kitchen. That, plus the quick service…what’s not to love? •

Next Nature Speaker Series Event at Quinta Mazatlan Set for January 12 Ranch Life in Hidalgo County after 1850 Special to Welcome Home RGV

planes. No automobiles. No phones. What was life like on a South Texas ranch in the late 1800s? Much quieter than it is today! Join us at Quinta Mazatlan Thursday, January 12, at 6 p.m. for a look back at the chronicles of a ranch family as they went about their daily lives. Special guest and local historian Robert Ramirez will be on hand to bring to life the stories found in the book Ranch Life in Hidalgo County after 1850. A college professor and school administrator, Emilia Schunior Ramirez wrote a chapter on ranch life for a book on the history of Hidalgo County in 1954. Unfortunately, the book was never finished, and the chapter remained unpublished. Almost 20 years later (1971) , her son Alfonso Ramirez, published the chapter as a stand-alone book. Emilia’s grandson, Robert Ramirez, later edited and republished the book with additional information about the Schunior and Ramirez families in 2014, including pictures, biographies, and newspaper accounts. Robert Ramirez was born in 1949 in Edinburg. He received

his bachelor’s in English at Pan American University in Edinburg. Ramirez had a long career in broadcasting, working locally at KGBT-TV, Channel 4 in the news department and for a small station in Chicago. He worked as a fundraiser at UT-Pan American and ended his career teaching nine years of high school Spanish in Irving, Texas, and in Sharyland ISD in Mission. After retirement, Ramirez founded LecturAmérica, an educational start-up providing literacy materials for monolingual, Spanish-speaking children. The Nature Speaker Series takes place on Thursday evenings through May and is proudly sponsored by Thurmond Eye Associates. The program fee is $3 per person, and no advance reservation is required. McAllen Public Library Director Receives Worldwide Recognition Kate P. Horan to be featured in a book along with world’s best librarians

Public Library (MPL) Director Kate P. Horan is in the spotlight on a global scale. She is one of only 28 librarians who will soon be featured in a prominent international publication. “Kate is enthusiastic, innovative, and devoted to her job. She is passionate about providing library services to children and youth and she is an asset to our community,” McAllen Mayor Jim Darling said. “It is a well-deserved recognition.” “I’m blessed to be able to do what I love every day. I’m honored and proud to have McAllen Public Library in such prestigious company as the Vatican Library and the Library of Congress,” Horan said. Horan, who has been at the helm of the MPL for four years, will be highlighted in chapter 21 of the book, World´s Leading National, Public, Monastery and Royal Library Directors, written by Dr. Patrick Lo, Allan Cho, and Dr. Dickson Chiu and published by De Gruyter in Germany. “I was surprised -- no, stunned is more like it -- when I received the invitation to interview for Dr. Lo’s book. At first, I thought it might be a hoax, but after some quick research, I discovered the project and publisher were in earnest,” Horan continued. In the book, Horan will join prominent librarians, such as David Mao, deputy librarian of the

Library of Congress and Austrian National Library Director Dr. Johanna Rachinger, among others. Jorge Gonzalez, systems supervisor at MPL, said the organization was thrilled to learn of Horan’s selection for the book and that the library is fortunate to have her. “We are excited to hear that our director, Ms. Horan, was chosen for this honor,” Gonzalez said. “In the years that I have worked at MPL, I have witnessed her unique vision of library services in action. Her leadership has changed how libraries interact with their patrons, not only here in McAllen but also across South Texas. I believe that through this book, she will inspire many to transform their libraries.” Part of the reason Horan says she was hand-picked for the publication is because of the publicity received by the McAllen library for its beautiful architecture and inviting design of user space. “In a way, it’s not so surprising to be a part of this book,” Horan said. “MPL has been in national and international news since we opened in 2011 and is famous for having been transformed from a big box store into a beautiful, modern, world-class library.” Once a deserted Wal-Mart, the warehouse structure was repurposed into the country’s largest single-

to our Winter Green Estates 2017 King and Queen, Bob and LaVonne Madsen. Married for 56 years, these Winter Texans live in Park Rapids, Minnesota, during the summer months. They have been coming to the RGV for 17 years. Bob is a retired plumbing and heating professional, and LaVonne stayed at home to raise their children and then worked at the Sears catalog store. King Bob and Queen LaVonne have three children, eight grandchildren, and three great-grandchildren. Their favorite activities include gardening, church, square dancing, fishing, volunteering, food shelf replenishing, and meals on wheels. Their hobbies are cards, music, jams, cards, biking,

CARDS, baseball, going out to eat, CARDS, entertainment, CARDS, friends, CARDS, and cruises. Other activities they love include alternate block captain, helping at the flea market, working Friday night suppers, serving cookies for jams, and hosting Sunday cake and ice cream. •

MPL has a collection that features 323,822 physical items, more than 10,000 e-books, and now, with Freegal, access to millions of downloadable songs. Horan says she hopes more people take advantage of the dynamic civic resource in their community. “As McAllen Public Library director, I am always proposing ways to ensure

that our programs and services are as modern as the building and relevant to all of our citizens,” Horan said. “People often tell me, ‘Wow! I never realized everything the library has to offer me and my family!’ I get phone calls from patrons just to say thank you for the wonderful service they receive.” The World´s Leading National, Public, Monastery and Royal Library Directors book is expected be out in June/July 2017. week, we want to introduce you to a golf course in the Rio Grande Valley that opened in 1927 as the Ebony Hills Public Golf Course. The course, now known as Ebony Hills Golf Course, was named for the ebony trees that are found in abundance on the course. Many residents in the area built, and originally owned, the course. In later years, it was leased to the City of Edinburg and was eventually purchased by the city. During the winter months, this is a popular course for senior citizens who enjoy walking when they play. It is basically a flat course and is, therefore, easy to walk using a pull cart for golf clubs. Ebony Hills has rental carts for those who want to ride. It is a very affordable course, which makes it even more popular among the Winter Texans. Highlighting the course is a canal that runs through the layout, along with all the ebony and palm trees that line the fairways. The fairways are common Bermuda grass, while the

greens are 419 Bermuda grass. It is a 9-hole course with multiple tees, so it can be played as an 18hole course. It has three sets of tees that have been rated for men. They are 5975 yards rated 68.7/109, 5604 yards rated 66.8/105, and 5249 yards rated 64.9/102. There is a shorter set of tees for women at 4564 yards that are not rated. The course is located at 300 West Palm Drive in Edinburg and tee times can be reserved by calling 956-292-2144. If you enjoy golfing and you want an easier course, give this one a try. •

• 1 cup white corn syrup • 1 cup dark brown sugar, firmly packed • 1/3 teaspoon salt • 1/3 cup margarine, melted

• 1 teaspoon vanilla extract • 3 eggs, slightly beaten • 1 heaping cup pecan halves • 1 (9 inch) pie shell, unbaked

Preheat oven to 350 degrees. Combine syrup, sugar, salt, margarine, and vanilla; mix well. Add eggs. Pour into pie shell. Sprinkle pecans over all. If time allows, arrange pecans neatly in circles on top of pie. Bake for 45-55 minutes. (Sharp knife inserted in pie should come out clean.) New Year’s Conservations-The Gifts that Keep on Giving Special to Welcome Home RGV

that all the presents are unwrapped and the frenzy of the spirited season of giving subsides, it is worth stepping outside to remember the rest of the gifts that await our discovery--our gifts from nature. They are abounding, not only under the tree but inside, above, and around. Trees are one of humanity’s greatest gifts. Their ability to trap carbon dioxide stabilizes Earth’s climate, keeping it cool enough for nature to recycle. At the same time, trees release the oxygen we require-- 16 trees per person are needed to produce enough oxygen! Do you and your neighbors have enough trees on your street? qAnd then there are economic benefits. According to USDA, “The net cooling effect of a young, healthy tree is equivalent to ten room-size air conditioners operating 20 hours a day.” Trees can hand home and business owners a $10,000 reward in terms of increasing the value of the property. Trees bring the gifts of beauty, shade, oxygen, and nature into our lives. But they can’t do it without water, a gift which is surprisingly less available than we may think. Although 70 percent of the planet is covered in water, the majority of it is salty and unable to be used for drinking or agriculture. Only a small fraction--2.5 percent--of that water is fresh, and a good portion of that is frozen, trapped in polar ice. What is available for humans to drink is actually only seven one-thousandths of the world’s water. And that 0.007 percent must meet the needs of 6.8 billion people every day! What we do with our greatest gifts in this country is worthy of making community-wide “New Year’s Conservations.” On average, each citizen uses about 80-100 gallons of water per day! Fewer than four cups of that we actually drink. The rest reflects our lifestyles. Showering, dishwashing, flushing, car washing, and lawn watering are the most obvious. Less obvious are the water costs involved in producing food. A single hamburger, for example, takes 680 gallons of water to produce! When the City of San Antonio campaigned to get home and business owners to convert to low-flush toilets and xeriscape landscaping 10 years ago, their population doubled, with little increased demand on their water consumption. As a community, San Antonio developers, governments, and citizens chose to take conservation

to heart. With predictions for our region to grow in the next 30 years-to double its current size by the year 2050--and with projections for more droughts during that time, we are called to alter our water consumption habits. We need trees to breathe. We need water to survive. We simply cannot take our most precious gifts for granted. 2017 Elvis Festival in Los Fresnos Canceled Special to Welcome Home RGV

The

2017 Elvis Festival in Los Fresnos, hosted by Little Graceland and Simon Vega, scheduled for January 14 has been canceled. Simon Vega, who has hosted the Elvis Festival for 30-plus years, has been hospitalized for health reasons. He is hopeful his health will be better so he is able to promote and host the 2018 Elvis Festival in January 2018. Vega’s book, Service with the King, which covers his time serving in the Army with Elvis Presley and his association with Elvis, will be published and available for purchase

in February. Vega is hopeful his health will improve so he can have a book signing event before the end of this winter season. The Little Graceland Elvis Presley Museum, located at 701 West Ocean Boulevard in Los Fresnos, is being moved to the ground floor and is currently under renovation. Vega is hopeful the renovations will be completed soon and the museum will be reopened for tours. Today’s wisdom: Intense love does

not measure, it just gives. ~Mother Teresa I was recently at a dance for older folks in their 60s and 70s. The rock ’n’ roll band was playing really well, and all the folks were shakin’ their booties and stepping to the beat. The scene was one right out of high school, except all the kids just had older bodies. And, of course, just like in high school, there was one couple on the dance floor who stole the show. He was handsome, dark, with a mustache and muscular build. He looked like Zorro. She was trim, with long blond hair, still a bit on the attractive side. In my imaginary high school, she was Cathie with a C, he was Rick. In that perfect world, he was on the football team, and she was a cheerleader. They were probably the homecoming royalty. Of course, we all know real high school was anything but perfect. That couple dancing together the other night would have never happened in my high school. They would not have fit into our vision of being cool. Cathie with a C was in a wheelchair. Rick

leaned over awkwardly with one arm around her shoulder and the other hand on the arm of the wheelchair so he could push it around with the music. Cathie showed no visible sign of connecting with the music. No head bobbing, no toe tapping, no finger snapping, nothing. The only sign I saw of her connecting with the moment was a great big smile. One thing I have observed in life is that, in high school, we were usually pretty shallow people. However, somewhere between then and today, the sense of relationship changed from what we can get out of a relationship to what we can put into it. We see it in our doting over grandchildren, in our volunteering, and in our friendships. We see it in our care for each other in spite of our infirmities. That night, we saw it watching Cathie and Rick. I don’t know what this couple’s real story is; I’m sure it has been pretty dramatic. But for a few hours that evening, they told us a story of what a love relationship really is. They were the coolest couple on the dance floor. I’m just sayin.’ •

Composer John Williams’ Star Wars Suite remains among the most highly recognizable and popular pieces of symphonic POPs in the world. The Valley Symphony Orchestra will transport our listeners to the yearning melody of Princess Leia, the relentless angularity of the Imperial March, and the bold fanfares of the main title theme we so fondly recall from the full-length feature films of yesterday and today. Our theme this year is Trains Built the Lower Rio Grande Valley, Texas. Next time you find yourself stopped at a train crossing waiting for a train to go by, imagine what life was like before this reliable rail system came into being and how difficult it was just to deliver important things like postage and money. We are so used to seeing trains in the Valley that we don’t realize how recently they arrived. Though the concept of rail lines in the Lower Rio Grande Valley dates from the mid-1800s, their reality and reliability were only realized in the 20th Century. The Lower Rio Grande Valley of Texas became what it is today because of the development of a reliable rail system--specifically the MissouriPacific Railroad. Local banks and post offices came to depend on the trains’ efficiency; thus trains, postage, and coins have become, to

collectors, historically interrelated. From the early days, trains had special “Mail Cars” that handled only closed-pouch mail, sealed until the destination was reached. (Back then, most mail was distributed only between the larger post offices.) As time went by, mail started being sorted en route for connecting lines and local post offices. On August 16, 1988, the U.S. Postal Service issued a 21-cent coil stamp commemorating the role of the Railroad Mail Car of the 1920s. Certainly, if you collect stamps, coins, postcards, or model trains, our show will intrigue you. It’s All about Family But

as many as received Him, to them gave He power to become the sons of God, even to them that believe on His name; which were born, not of blood, nor of the will of the flesh, nor of the will of man, but of God... And of His fullness have all we received, and grace for grace. -John 1:12-13, 16 When you come into a relationship with God through faith in His Son, Jesus, you are empowered, or have the right, of becoming God’s child through adoption (Ephesians 1:5). If you pursue that relationship, you can go from just meeting Him to being taken in as “family.” Family has privileges that acquaintance does not. In family, there is love, gifts, joy, and brothers and sisters. Also, there is discipline and correction because of that love. This generates peace, comfort, and security, knowing that the relationship is not dependent upon your behavior but upon your position in the family as a child of the Father. Those who exercise their right of becoming a child of the Heavenly Father receive a portion of all that is contained in Him. We get His spiritual DNA. Jesus built and strengthened that

Father/Son relationship to the point of fullness (Colossians 2:9). You could say He was complete, or whole--fully developed. He “grew up,” and the more He matured, the more Jesus displayed the family likeness. There was no mistaking who His father was. When you saw Jesus, you saw the Heavenly Father (John 14:9). That spiritual DNA you received from God is intended to produce the same richness and intensity in you. It’s a raw gift from the Father that must be developed through time spent in His presence and His Word, hanging out with your spiritual brothers and sisters, your “God family.” Every day, get in the presence of your Heavenly Father through worship, talking to Him, and listening to what He says to you. Read the Bible. Attend services with your family of faith. Soon you will begin to display the family likeness, the power and presence of our Heavenly Father.

Thank you, Father, for making me part of Your family. Help me find and take the time to build that relationship with You. Show Your power and presence to the world through me, that they, too, may know You. •

senior citizens turn into amazing smiles of adventure and excitement of their childhood? That is what happened recently at Eastgate RV & MH Park in Harlingen. Rachel of SegValley Tours brought her Segway and gave us a talk about their company, and all the tours offered in the Valley. There are so many beautiful areas they go to, from the beaches of South Padre Island to Bentsen-Rio Grande Valley State Park. After the talk, she gave anyone who was interested a lesson and a chance to ride outside. The people

who participated were amazing. They had the chance to fulfill an item on their bucket list or do something they had never even dreamed of doing. For almost two hours, they took turns cheering on each person. Even Margene, who is 84, rode as well as her daughter, Kathlyn, who recently moved in with her. All were excited and amazed that they “rode A Segway” and said, “It was easy!” and “Now we’ll be booking our tours!” Thank you, Rachel of SegValley Tours, for a wonderful morning. Your patience, knowledge, and smiles were enjoyed by all. •

Beatles Statue, Amazing Grace, and How Great Thou Art By Bernie Crawley

When

visiting Liverpool recently, I wanted to see the newest Beatles addition, which is a statue located at the Pier Head. As I’ve mentioned in previous articles, for a long time, the Liverpool City Council seemed destined to forget the Beatles’ legacy in the city. But that has changed dramatically over the past 10 years, and this latest installation is an example of the current thinking. The bronze statue was funded by the Cavern Club and is loosely based on the cover photo for The Beatles on Air, Live at the BBC CD. After checking out this new statue, I took a short walk to Orleans House, with the intention of photographing

the plaque the commemorates the fact that John Newton, the writer of Amazing Grace, lived there from 1754 to 1755. I was foiled in this attempt, however, as the building is being refurbished and converted into modern flats, and the plaque is hidden behind safety netting. Undeterred, I returned a few days later and managed to get hold of one of the construction workers. I gave him my camera and asked him to do his best! (See photo) Amazing Grace is generally accepted as the most popular hymn in the English language, but running a close second, especially in North America, is How Great Thou Art, and I thought readers might be interested in the strong links with--if not to-Liverpool, then, certainly, England.

How Great Thou Art is based on a Swedish traditional melody and poem written in1885. It was translated into English from the Russian by English missionary Stuart K. Hine, who also added two original verses of his own. The composition was then set to a Russian melody. In view of its current popularity, it’s interesting to note that it did not reach the U.S. until 1951 and even then was not greeted with unanimous approval. That didn’t happen for another five or six years. Evangelist Billy Graham and his featured vocalist, George Beverley Shea, were the people responsible for the ultimate popularity

and longevity of the hymn. As the story goes, when the Billy Graham team went to London in 1954, they were given a pamphlet containing the hymn Hine had composed. Although they did not sing it in England, it was introduced the following year to audiences in Toronto. But it didn’t really catch on until they took it to Madison Square Garden in 1957. According to Cliff Barrows, Dr. Graham’s long-time associate, they sang it 100 times during that campaign because the people wouldn’t let them stop. The hymn and its soaring melody is now firmly entrenched as one of the most popular and uplifting of all spiritual compositions and a guaranteed showstopper in live concerts. Here are just a few of the artists who have recorded it: Elvis, Vince Gill, Dolly Parton, Johnny Cash, Anne Murray, Willie Nelson, Daniel O’Donnell, Loretta Lynn, Lee Greenwood, Tammy Wynette, The Oak Ridge Boys ……….and the list goes on. •

Swing to the Beat of the Swing Street Big Band Special to Welcome Home RGV

Street Big Band was founded in the 1990s here in the Rio Grande Valley by a group of Winter Texans. The band was originally called the “Society for the Preservation of Big Band Music” and was later changed to “Sing Street Big Band.” They pooled together musical arrangements brought from home, playing in seasonal RV resorts around the Valley. Over the years, the band has evolved. In 2013, the band was reorganized by Bob Comeau, its current leader. Comeau has built a new music library, with many original arrangements of the Big Band leaders of the 30s and 40s, such as Count Basie, Duke Ellington, and Les Brown, as well as later popular rock tunes and ballads performed in the Big Band style. As the older musicians have retired, younger musicians from here in the Valley have stepped in. Nearly all of the current players are either active or retired band directors and include some of the finest musicians in the Valley. The band currently includes five saxophones, four trumpets, four trombones, piano, bass, drums, guitar, and a female vocalist. Many of these musicians also play in the McAllen Town Band. The band has expanded its bookings to include 90-minute holiday and traditional Big Band shows, as well as dances

that usually play from 7 to 10 p.m. They recently appeared for a private engagement at the new Embassy Suites Convention Center in McAllen. The group of Swing Street enthusiasts continues to grow, and the band just played to a sold-out New Year’s Eve audience of nearly 500 at Fun ‘N Sun RV Resort in San Benito for the second straight year. Swing Street enthusiasts include ballroom dancers, amateur dancers, folks who like to watch the dancers, and those who just enjoy listening to Big Band music from the 30s and 40s to the present day. Dancers and listeners enjoy the band’s mix of rock ‘n roll, Latin tunes, waltzes, and polkas, along with traditional Big Band era music. The younger generation of retirees who are used to dancing to rock ‘n roll and country music are surprised to learn they can easily dance to the swing beat of In the Mood, Proud Mary, or Old Time Rock ‘n Roll and slow dance to songs like You Belong to Me, Crazy, or At Last. Support for Support Hose

Support

hose are not the most attractive garment in a wardrobe, but for many they are a blessing. They come in various strengths: mild, which means they look great but provide little benefit; medium compression, which means they look fairly good, but the therapy is minimal; and firm, which means they compress your legs to the point where your voice squeaks, you can barely bend your knees, and a lot of what is below the waist is pushed above it. Whether for venous insufficiency or various other conditions of the lower extremities, support hose may be the determining factor in your willingness to go dancing with your “lover-kink” after working all day. (Assuming people really do that.) My only complaint about support hose is their cost! There is something about paying $24.95 for a pair of unattractive stockings that makes me tetchy. That fact notwithstanding, some of us should consider them necessary for our well-being. Wise nurses wear support hose. It is what keeps them upright after a day on their feet. They should not leave home without them. Support hose have unique characteristics. They seek that part of your anatomy that is the smallest in circumference, and, if you are lucky, that is your ankle(s). This garment takes about 20 minutes to pull on and then two hours to settle, forming a little lateral bridge about four inches above the knees. That is why nurses walk funny. Having experienced many years with my lower extremities encased in support hose, I can speak

from experience that when one’s support hose have settled to just above the knee, it tends to make nurses crabby. Those of us in the nursing profession had a choice to make--to be jolly old girls with edematous ankles or have small ankles and venous integrity and snap like a turtle when asked, “Is it time for my pain pill?” Unfortunate choice, that. After 16 years, I must admit I adapted to them, realized their value to my good health, and willingly recommended them to young people entering the nursing profession. This recommendation was usually met with a dismissive look that intimated I was talking nonsense, but I wisely shrugged the look away, knowing one day they would glance down at their shoe tops and say, “Oh no!, Not that! Must I wear those things?” The wiser among them would solemnly nod their heads in affirmation as they hobbled their way along the hospital corridors. • M. Rio Grande Red Hat Queens’ Council Holds 2nd Annual Festival of Tables Special to Welcome Home RGV

The Rio Grande Red Hat Queens’

Council will sponsor their 2nd Annual Festival of Tables Tuesday, January 31, at the Nomad Shrine, 1044 W. Nolana Loop in Pharr. The event will feature 40 theme-decorated tables for Red Hatters to view at 11:00 a.m. when the doors open. At 12noon, a chicken cordon bleu meal will be served by Bolli’s Catering. Following the luncheon, guests will be entertained by one of the most popular entertainers in the Rio Grande Valley, J.C. Harrisson. There will be a raffle and many door prizes. This event is for Red Hatters and

Cashew Chicken with Couscous and Grapefruit Serves 4

• • • •

Cashew Chicken

Nonstick cooking spray 1/2 cup roasted salted cashews 1/2 cup panko breadcrumbs 1/2 teaspoon kosher salt

• 1 cup Israeli (pearl) couscous • 1/4 cup chopped fresh mint

• 1/2 teaspoon ground black pepper • 2 eggs • 4 boneless, skinless chicken thighs

Couscous

• 1/4 cup chopped fresh parsley

Salad

• 3 cups baby arugula • 1-1/2 tablespoons olive oil • 2 Winter Sweetz grapefruit, peeled and segmented Preheat oven to 400 degrees F. Spray rimmed baking pan with cooking spray. In food processor fitted with knife blade attachment, pulse cashews until finely ground. Place ground cashews in shallow dish. Add breadcrumbs, salt, and pepper; stir until well combined. In second shallow dish, whisk eggs. Working with one piece at a time, dip chicken in egg, shaking off excess; then dip in cashew mixture. Place on prepared baking pan; lightly spray chicken with cooking spray. Transfer chicken to 400-degree oven and bake 18 to 20 minutes or until internal temperature reaches 165 degrees F, turning once. Meanwhile, make the couscous: Prepare couscous according to package directions. Stir in mint and parsley. To make the salad, in a large bowl, toss arugula, grapefruit, and oil until well combined. It is created in shades of cream, soft seafoam green and rich browns with an intricate diamond pattern adorning the front, a complimentary pattern featured on the back and an elegant custom quilting pattern. Bordeaux Elegance is everything the name personifies! Tickets to win this quilt are available from any Bee member for $1 each or 6 for $5. Last year the quilt show attracted almost 1400 visitors. you believe 2017 is here already? We had a wonderful 2016 at the Weslaco Museum, with many great exhibits and programs, and wish to continue this into the New Year. Starting January 3 and running through January 26, the Weslaco Museum will feature our collection of 19th and 20th Century quilts. The museum is lucky to have some unique quilts dating all the way back to the early 1820s. These quilts are some popular patterns from the late 1800s and early 1900s, such as a triple Irish chain, honeycomb, crazy blocks, star of Bethlehem, and flower garden, as well as several unique pieces. Among the many distinctive quilts displayed is a needlework project that was started in 1993 by the Weslaco Museum’s guild members as a contribution for Weslaco’s 75th anniversary celebration. The quilt’s design is composed of 30 blocks, each representing an element of Weslaco’s history. Each block on the quilt was plotted out and assigned to volunteers to embroider. Widely known facts in Weslaco history, along with not so well known tidbits, make examining the blocks interesting. Continuing with our Saturday Afternoon Lecture Series, on January 14, Robert Ramirez will present Ranch Life in Hidalgo County. This is an exciting presentation exploring the beginnings of the ranching culture with the Spanish and how and why it grew to what it is today in Hidalgo County. This is a wonderful opportunity to discuss the history and the culture that is such a part of us. This presentation will begin at 2 p/m. HOT Off the Grill: with Sandy Olson

Recipes for All Outdoor Chefs

This

week’s recipe isn’t really cooked on the grill, but it’s the traditional accompaniment to a pulled pork sandwich in North Carolina. They say pulled pork is an art form in that state, but there is no reason Texans can’t enjoy it, too. The slaw is piled on the pork inside the bun, so each bite gives both the rich meat flavor offset by the tart and the vinegary tang of the salad. •

North Carolina Coleslaw • 1 small head green cabbage, about two pounds • 1 cup North Carolina vinegar sauce Core the cabbage and remove the outside leaves. Cut it into chunks; then finely chop in a food processor. Transfer the chopped cabbage to a glass bowl and toss with the vinegar sauce. Taste for seasoning and add vinegar sauce, as necessary. Store in the refrigerator until ready to serve.

North Carolina Vinegar Sauce • 2 cups cider vinegar • 3 tablespoons ketchup • 2 tablespoons brown sugar • 4 teaspoons Kosher or coarse sea salt • 1 tablespoon Tabasco or other hot sauce • 1-2 teaspoons black pepper • 1-2 teaspoons hot red pepper flakes or more, to taste Combine all ingredients in a glass bowl and whisk until the salt and sugar dissolve. Taste for seasoning, adding hot pepper flakes, as necessary. Transfer to clean (or even sterile) jars and store in the refrigerator, where it will keep for months. I don’t know about everyone else, but I am exhausted from the holidays. 1 tablespoon olive oil 4 ounces hot or mild Italian sausage, removed from casings 1 onion, diced 1 medium rib celery, diced 1 medium carrot, diced One 15-ounce can white cannellini beans, rinsed and drained One 15-ounce can diced tomatoes 2 cups no or low-sodium chicken or vegetable stock One 8 to 9 ounce package of refrigerated tortellini Kosher salt and freshly ground black pepper 1/4 cup prepared pesto Grated Parmesan, for serving Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.

Don’t get me wrong, they were fun and I enjoyed every minute, but whew! It was A LOT! So now I’m looking for easy, stress-free and fun winter dinners. This soup fits the bill perfectly. And it features one of my favorite pastas ever – tortellini. They are so cute and also delicious with their yummy cheese perfectly tucked inside – what is not to love!? And if you have not yet thought to put them in soup, here is your chance! • Heat the oil in a medium pot over medium heat. Add the sausage and cook until browned, about 4 minutes. Add the onions, celery and carrot and continue to cook, stirring, until the vegetables are softened, about 5 minutes. Add the beans, tomatoes, stock and 4 cups water and increase the heat to medium-high to bring to a simmer. Continue to simmer, adjusting the heat if necessary, until

the vegetables are tender, about 10 minutes. Add the tortellini and continue to cook until they are tender, about 7 minutes. Season to taste with salt and pepper. Serve in bowls and garnish with a dollop of pesto and a bit of grated Parmesan.
