Leal Montalvo Returns for Santa Maria Bullring Opener
Santa Maria Bullring opens the 2017 Winter Texan season Sunday, January 8. Leal Montalvo, the 2016 Maximo Triunfador and winner of the Golden Ear Award is slated to return in the opener.
The dramatic encounter with Leal’s last bull in the gran finale caught him and tossed him ten feet, at least, in the air, and when he hit the ground, the bull picked him up again, nearly putting a horn in his hip. Leal jumped up, grabbed his cape, and dropped onto both knees and caped the bull around him in a 360-degree pass that made the fans break into a roar. It was so dramatic that they kept it up, and he turned it on for ten more passes. He then limped away from his adversary, returned, and grabbed the rose from the shoulders of the bull in the symbolic kill. The fans kept roaring their approval. The judge, Don Gerado Martinez, awarded
him the symbolic ears and tail and the golden trophy. Matador Montalvo suffered a tremendous hematoma on his right hip that had to be tended to by doctors after his return to Monterrey.
Appearing with Leal in the opener is the fantastic young matador Andre Lagravere, who recently returned from a tour of Spanish rings, including the capital in Madrid. He scored high among the Spaniards, appearing in 10 different cities. He is expected to turn it on in La Gloria.

McAllen Firefighters Play Santa and Deliver Gifts Gifts
distributed to children in area hospitals

McAllen firefighters, along with Sparky, delivered Christmas gifts today to McAllen hospitals including Rio Grande Regional Hospital. The 130 toys were donated by Horizon Montessori School and were distributed to children who are hospitalized during this holiday season.
“It’s our pleasure to bring smiles to children who are in the hospital
for different reasons. Our firefighters look forward to seeing them smile, especially because this gives them a chance to take their minds off of their circumstances and have a merrier Christmas,” said McAllen Fire Department Chief Rafael Balderas.
The toys were loaded into fire trucks and delivered to area hospitals. •

The 8th Annual Llano Grande Quilt Show January 31

The 8th Annual Llano Grande Quilt Show will be held Tuesday, January 31, from 9:00 a.m. to 3 p.m. For the first time, the show will be held at the spacious new Hynes Event Center at the Llano Grande Resort. Admission fee is $2.00.
This year’s theme is Bordeaux Elegance. On display will be beautiful quilts, wall hangings, table runners, totes/purses, and jackets. You will get to vote for your favorite! Family vintage quilts will be on display, as well.
The Bee’s Opportunity Quilt, Bordeaux Elegance, will be on display. Tickets for the drawing will be offered for $1 or six tickets for $5. In addition, we have a boutique sale, several vendors, and door prizes, including a Baby Lock Sewing Machine.

Orphan Train Riders –A Traveling History Lesson

“Now, that’s the way history should be taught.” “I really felt I was one of the kids on the Orphan Train.” These are a couple of comments made by people who attended one of Dorothy A. Lund Nelson’s interactive Orphan Train presentations. A PowerPoint, music, and videos are incorporated into the “lesson.”
Dorothy created her program as a feeling and educational event. Attendees will become “children” and learn why they have to travel from the East Coast across America to be “placed out” into a new family and why children were homeless. Which institutions and agencies were caring will be answered, too. (Between 1854 and 1929, the Children’s Aid Society “placed out” over 200,000 children from NYC.) Reading lists will be available for those who want to learn even more!

The Vultures are Back!

Beautiful when effortlessly soaring on the thermals with outstretched wings, up close, turkey vultures’ (Cathartes aura) bare-skinned red head with greenish warts and hooked white bill do not attractive birds make.
Not everyone appreciates them, but these carrion scavengers perform a much-needed environmental service. Turkey vultures are permanent residents here, and are joined this time of year with those wintering over. You’re likely to see a vortex of vultures as you travel along country roads.
The word “tenacious” comes to mind with turkey vultures. One morning I watched a vulture zip up about six feet and then down, smack in the middle of the road. It repeated this with each passing car, and was still there hours later. Why didn’t it just haul the road kill to the side of the road where it’d be safer, I wondered?
A little research provided the answer. Turkey vultures are unable to carry off their carrion. Their feet are chicken-like, not talon-like like hawks or eagles. They are the only
scavenger birds that can’t kill their prey.
Their beak, however, can pierce through the toughest cowhide. Their diet consists entirely of dead animal remains -- the fresher the better. They won’t eat extremely rotted carcasses.
Turkey vultures are among the very few birds that can smell. They detect by sight, but also rely heavily on their sense of smell. They can sniff out a dead critter from more than a mile away. Their sense of smell is so acute that they can locate hidden food as small as a dead rat under a pile of leaves. They are more likely to search out food away from urban areas. They’ve been known to cruise 30 to 50 miles in search of food.
An adult turkey vulture wingspan reaches to six feet. They can swoop up to 60 mph. Surprisingly, they only weigh between two to four pounds. Because of their light weight, they can virtually float in the sky, using the thermal currents (rising columns of air) to get around the skies. This technique uses very little energy, as the vultures rarely need to flap their wings. They are so efficient at finding
thermals, hawks will look for kettles of vultures (vultures circling in air) and then fly over to take advantage of the rising air.
In flight, they hold their wings at a slight angle, which stabilizes their flight in turbulence.
Turkey vultures have an unusual defense mechanism. They regurgitate their last meal--apparently a worse smell than decaying meat and effective against any predator with a sense of smell. •

Adobe Wells: A Hurricane Changed its Course

Adobe Wells Golf Course is a private course for the use of their park residents. Wally and Gene McClendon owned the property and were citrus farmers. Hurricane Beulah came along and wiped out over half of their grove in 1967, and they decided to build an RV park to replace the citrus trees. Wally had been an avid golfer, so he decided his park needed a course.
Over the years, more land was purchased and developed into sites for mobile homes, park models, and RV units. The golf course went from a 9-hole to an 18-hole over the years. The residents of the park volunteered a lot of time and talent to make the park what it is today. In 1982, the Homeowners’ Association was
established, in 1986, the park was annexed into the City of McAllen, and by 1988, the park became residentowned-and-operated and debt-free.

Mid and Lower Valley 1st Responders Tour
Weslaco Regional Rehabilitation Hospital and Knapp Medical Center Tour

Thursday, December 8, Weslaco Regional Rehabilitation Hospital, located at 906 South James Street in Weslaco, hosted the Mid and Lower Valley 1st Responders at a season kick-off event. Elsa Quintero, director of marketing and business development, met us in their beautifully decorated lobby and then invited everyone to the dining room for refreshments, where we were welcomed and introduced to the staff. The staff presented “The Rehab Insider: An inside view of a day in the life of a rehab patient.” We had the opportunity to examine and try many of the rehabilitative tools and equipment they use for specific types of patient, such as stroke or Parkinson’s patients, as well as others, following illness or injury.
A very emotional farewell to one of the patients was witnessed. We clapped and cheered for him, wishing him well alongside the staff as he departed, upon graduation from rehabilitation, for his trip home. The hospital also provides monthly “stroke-out” patient services in the form of a support group. We toured their facility, which has 32 private patient rooms, a daily physician, 24hour nursing care, and three-hour sessions daily of rehabilitative care spread across 5-6 days per week. The daily living suite is lovely, and the 2400-sqaure-foot therapy gym with daily living areas is also most impressive. A great staff provides physical, occupational, and speech therapy using LiteGate and Vital Stim Technology.
Information was provided for each of the attendees to share with their resort communities, such as a Homework Checklist for fall prevention and a Safe Home Program to prevent accidents, in addition to the Signs and Symptoms of Aspiration and Aspiration Pneumonia.
Following the tour of Weslaco Regional Rehabilitation Hospital, we were invited to tour Knapp Medical Center at 1401 East Eighth Street, where we met Michael Swartz, director of marketing, and toured their Emergency Department and the Medical ICU and Telemetry area on the 5th floor. This community hospital was built in the early 1960s and has been wonderfully refurbished and modernized to meet the needs of the community. Their staff is focused on providing compassionate and competent care. One of the waiting areas had lovely sky panels, which simulated green tree branches overhead and is a restful place for patients’ families to wait. We also saw an example of a patient bed with turning capabilities that would be quite comfortable for a critically ill patient.
While touring the hospital, the staff was friendly and appreciative of our early intervention for patients, explaining their services and patient care. A new 64 slice CT scanner has been added to the radiology department. They offer 400 services at the adjoining Outpatient Center, as well. A list of active medical staff and information on their services was provided to each of the attendees. We learned of the continuance
of care provided for stroke patients and those suffering from many other types of injuries or illness by Knapp Medical Center, Weslaco Regional Rehabilitative Hospital, and other facilities. •
El Pollo Loco: A Culinary Work of Art Respect The Chicken

El Pollo Loco translates to The Crazy Chicken, but there is nothing crazy about the delicious, flamegrilled chicken served in this chain of restaurants. There are five locations in the Valley, with another opening soon. We visited the Nolana Loop location (601 W. Nolana Ave. in McAllen) and had a great meal, as well as a most informative visit with General Manager Mike Garcia. We learned that the restaurant started in Mexico, then migrated north into California, and from there east to Texas and elsewhere. The difference between this chicken restaurant and others is the juicy, grilled bird that is made possible by secret spices, garlic, and deep citrus marinating that takes place before grilling. The restaurant is built so customers can see the golden brown chicken halves toasting over the open flames; the aroma is yummy! The result is skin that is crispy but not dry, moist meat, and a unique flavor. This chicken is served in so many ways, from salads to tacos to quesadillas and burritos. Of course, you can also get grilled chicken meals, from a two-piece plate to a heap of 16 pieces the entire family can enjoy. As a most unexpected feature, they will also assemble vegetarian meals, if requested, so no one need avoid this restaurant if you don’t eat meat. To round out the meal, sides such as charro beans, rice, cole slaw, mac and cheese, mashed potatoes and gravy, and even steamed broccoli are available. We enjoyed the eightpiece thigh-and-leg special with two sides ($17.99) and had lots to take home for another day. One of the unique features of El Pollo Loco is the condiment bar. Four freshly made salsas ranging in heat from mild to “fiery” are available, along with lemons, fresh cilantro, peppers,
and chopped onions. You help yourself, dressing and seasoning a meal to your liking. Tortillas to sop up the juices are another welcome addition.
Mike advised that the difference is not only the marinade and freshly made salsas but the hand-cut chicken and the fire-grilling process. There is no doubt the extra care taken with the cooking produces an excellent product, one you will enjoy over and over. As we were talking and finishing up our meal, another customer stopped at the table to say the Nolana Loop location is “the best one in the Valley.”

Have You Tried Shuffleboard Yet?

ther than dining out, and, perhaps, dancing, shuffleboard probably has the highest participation rate for Winter Texans. This is a game you can learn quickly. It is mentally challenging but easy on older bodies. It is a great way to get outside, enjoy the weather, make new friends, and get some exercise.
This game was first created in Florida, and most cruise ships have shuffleboard courts on their decks. Courts are six feet wide and 52 feet long. The playing surface is 39 feet long and has a triangular-shaped house at each end, divided into seven sections. Sections are labeled with 10 points, eight points, seven points and minus-10 points. Two players play at each end of the court. Using six-foot long sticks, each player pushes four ceramic discs to the opposite end. Your opponent plays beside you, and your partner is on the same side of the court but at the other end. The score is tallied, and then the other end plays those eight discs back again. This occurs 20 times during the game, and the partners’ scores are added together at the end to determine the winning team. Play usually takes about an
hour and a half per game.
Many senior parks in the Rio Grande Valley have shuffleboard courts. Most parks have lessons and loaner sticks, so it is very inexpensive to play. In-park shuffling usually occurs several days a week. Add to this shuffle tournaments, which are held somewhere in the Valley every week during the winter. These tournaments are sanctioned by the Texas State Shuffleboard Association and can be singles, doubles, or mixed doubles. Winners in these tournaments are awarded trophies and points.
Many people look at this game and think it is an ‘old folks’ game,’ and they are probably right; however, most Winter Texans are already qualified as ‘old folks.’ The fun part of this game is the variety of strategies that can be applied to score points and to protect scored points from being knocked off. The game is much like the ice curling game in that setting guards and hiding behind those guards is the best strategy. Because of this, the game is very addictive, with many players playing or practicing every day of the week. Most players go
home in the spring and have no place to play or have other things to keep them occupied. However, many are so addicted that they play all year in state, provincial, national, and international tournaments. If you have never played this game, I highly recommend that you give a try. Consult with your park activity director to find your shuffleboard chairperson. He/She will be more than happy to show you the ins and outs of the game and get you started at becoming addicted, too! Bernie & Red: Let Them Entertain You
January Only!
Now that we are into the New Year, we have lots of visiting entertainers in the Valley, and one act that has been performing for Winter Texans for over 20 years is here for the month of January only. Husband and wife comedy and music team Bernie & Red first brought their comedy to the Valley in 1998 and have not missed a year since then! They make a point of writing and performing new material every year, so lots of repeat customers will no doubt be looking out for their new show for 2017, which is titled The British Invasion. Bernie & Red both grew up in Liverpool in the sixties and saw The Beatles at The Cavern and other locations, so of course there are several Beatles songs in this show, as well as loads of other songs from the 60s, everything from Mrs. Brown You’ve Got A Lovely Daughter to Downtown and from Ferry Cross The Mersey to House of the Rising Sun. Bernie is something of a trivia nut, so you’ll also hear the fascinating stories behind the hits and the performers, and as an added bonus, Johnny Carson’s alter ego from the 60s, Carnac, will return with all-new predictions.
Look out for the new show at select locations. And some of their older shows are also being performed, so check listings in this and other publications. Their final show for this season will be their annual charity fundraiser for the St Baldrick’s Foundation, raising awareness and generating support for kids with cancer. The concert will be at Texas Trails Resort in Pharr and happens Monday, January 30, at 2 p.m. This is the 10th annual concert for St Baldrick’s, and 100 percent of the proceeds go to the charity. So far, Bernie & Red and their Winter Texan supporters have raised over $20 thousand. This is always a special concert, with requests from the audience, some of the lesserheard songs performed, and routines from their vast repertoire delighting the crowd.

While traveling in Canada, provinces other than Quebec have a reciprocity agreement. Their home province will cover costs as if the Canadian were at home. But there are limits to this coverage that travel insurance can cover. Travelers also may be required to pay up front and then seek reimbursement.
If a traveler has a minor injury or illness, there may be no risk or only a small amount of exposure. This wouldn’t be a concern to most people. More important is what could happen in the event of a major incident, such as a stay in an intensive care unit. ICU beds are in short supply everywhere in Canada. Provinces prefer to keep those available for their own residents and would rather transfer out those from another jurisdiction. As soon as medically possible, they may elect to book a private jet with a medical team to fly the patient home at his/her expense. This will usually cost tens of thousands of dollars. The patient may also have to pay additional costs, such as prescription drugs, medical supplies, and other out-ofpocket expenses, not to mention the cost to bring their spouse, vehicle, and pet home. Paramedic fees alone can range from hundreds to even thousands of dollars. These items are usually covered by travel medical insurance.
The risk while traveling outside of Canada is even greater, particularly in the USA, where medical costs are among the highest in the world. A serious injury or illness can result in expenses exceeding a million dollars. Converting these costs from American to Canadian currency, all travelers should be insured for at least two million dollars (Canadian). More is even better. Provincial coverage while traveling is very limited, and all provinces recommend buying travel medical insurance. Reimbursement may not even be available if treatment is received at a private hospital or clinic.
Some Canadians are willing to travel to Mexico without insurance.
They feel their provincial plan will cover the costs. It may not be that simple. They need to be prepared to pay all expenses up front. This would require a large cash reserve or a huge line of credit. It could be hundreds of thousands of dollars. It will probably take months to recoup costs from the provincial plan. During that time, can you imagine the interest expense on a credit card compounding monthly at 18 percent or higher? Costs may be much higher than the provincial plan will reimburse. Increasingly, American hospitals are expanding into Mexico and charging at American rates.
Evacuation plans can give a false sense of security. Repatriation is usually the smallest cost to a serious incident. That’s why insurance companies will typically medevac the insured if it is safe to do so. It’s cheaper than paying for care away. Bills to evaluate and stabilize a patient prior to transport can be huge. In cases where transfer is dangerous, the costs can grow well into six figures.
Keep in mind that travel insurance only works when covered by a provincial health plan. Absence from your province greater than 90 days may require special permission. These requirements vary between provinces. Be sure to check with them prior to any extended trip. When away from your home province longer than the maximum period allowed, provincial coverage may cease as early as one month following departure. Since travel insurance is a supplement to provincial coverage, and it is required to be in force, an extended absence may need to be covered by an expatriate plan.
The Wild Flowers of Oleander Acres

A friend of mine said, as you get old, you start to take pictures of flowers. Well, I am by no means old, but I do enjoy stopping and looking at the flowers. The old song lyrics, “You’ve got to stop and smell the roses,” seems accurate. The thing I have noticed is, as you age, you start to appreciate the beauty of nature. When we are young, we are in such a hurry with so much to do, we have no time to just stop and “smell the roses.”
As I walk each day here at Oleander Acres, I think I find a new flower. I am totally amazed at the variety and, with some, the paper-thin quality. GOD has made each of these, and they are for our pleasure. I am not totally sure of this next statement, but I do not believe any two are exactly the same. Sometimes I think they are, but as I have studied them with the camera, I see differences. Some of these flowers are so crepelike that you almost wonder how they survive wind and rain and sun on a daily basis.
Below are some of my favorites. I think the morning glories are
probably the ones I personally like best. Their texture and color are amazing. I love the way they drink in the dew of heaven and display it. The sheer number of different types is something to see. The white posted here has a white center, but some have yellow. Then we come to the “Susans.” Some are “blackeyed” and some are “brown-eyed.” I believe the last is the “purple robe.” With this one, you have to look a little closer, but they are there. To be appreciated, they must be seen in person.
I wish I could have captured them in a better quality, but hopefully, it will make you want to get out and see them for yourself through a camera lens. One other aspect of photographing the flowers is it is forcing me to research to find out what they are. If you want the easy way out, just stop by the garden center at Oleander Acres and ask a member of the Welliver family, and they will tell you because they know. The important thing is…get out see and enjoy! •

Memories of a One-Room Schoolhouse

As a child, I attended a country school where all eight grades were taught in one room. Miss Ringsrud was my first grade teacher, and she became a legend in her own time at Pleasant Hill, South Dakota, School District #57. She was tall and angular and wore her hair in a knot at the back of her head. She wore a hairnet over her hair at all times.
She didn’t have a discipline problem because everyone knew she could beat them up with one hand tied behind her back. When she made a rule, it stuck. She taught eight grades in one room, and our curriculum was challenging. There were two outhouses behind the schoolhouse, and in winter, it was the coldest place in the world to drop your pants. Only one person was allowed in the toilet at a time, and if two kids ever entered together, there was always a knock on the door, and the teacher would tell one of them to come out.
One day when the sun was pouring in too brightly through the south windows, Miss Ringrud asked me to pull down the window shade. I tried to grasp the little finger ring at the end of the pull-down string, but I wasn’t tall enough to reach it. She was watching. I meekly said, “I can’t reach it.” She said, “Well stand there until you figure out a way.”
With everyone in the room enjoying my discomfiture, no one saying a thing, just waiting and watching. I stood there with my face in my hands. She walked over and asked me what I thought I might do when things were out of reach. Then it dawned on me, and I meekly said, “I could climb up and reach it, I think.” She smiled and said, “That’s right, Margie. When you can’t reach something, you just climb UP and then you will find you CAN reach it.” So I placed my knee on the windowsill, pulled myself up, grabbed the finger ring, and lowered the shade.

She patted my head and went back to teaching her class. I felt as if I had climbed Mt. Everest....down deep in my mind, I also had a valuable lesson imprinted on my brain.
She was big on music and rhythm bands. My brother, Leverne, rather prided himself on saying, “I can’t sing.” He made the mistake of saying that to Miss Ringsrud, and it went something like this. “What do you mean you can’t sing? Everyone can sing.” Then she proceeded to stand him up and place her hands on his chest and back, telling him to say, “aah.” She banged a key on the piano and told him to make a sound that sounded like it. This went on for some time, but sitting there watching, I could see the stubborn look on my brother’s face, and I knew he was not going to sing in spite of her efforts. And he didn’t. No one can make a person sing, eat. or pee!
Everyone in the district had his/ her own stories to tell about Miss Ringsrud. For over 70 years, the stories were shared and enjoyed, and it wouldn’t surprise me if they were still being told at reunions and church suppers. •

Easy Grapefruit Pie
4-6 servings
• 3 to 4 cups Texas Red Grapefruit • 1 cup prepared strawberry glaze
• 1 (9-inch) baked pie shell • Whipped cream
Peel and section grapefruit; drain well using paper towels to absorb all juice. Carefully fold grapefruit sections into strawberry glaze. Pour into pie shell and refrigerate until firm.
Top with whipped cream before serving.

Flour Tortillas
Makes 10 tortillas
• 2 cups flour
• 1 teaspoon salt
• 1 teaspoon baking powder
• 5 heaping tablespoons shortening
• ½ cup hot water
Blend flour, salt, and baking powder with a fork. Cut in shortening; add hot water. Complete mixing the dough by hand, and shape into large ball. Let rest 5-10 minutes. Divide dough into 10 portions and shape into balls. Lightly flour surface if dough is sticky. Roll each ball into a thin circle. Cook on a griddle over medium heat, approximately 1 minute; then turn and cook about 30 seconds on other side. Do not overcook as the tortillas get too hard! This recipe requires coarse flour. We recommend Pillsbury flour.

Recipes for All Outdoor Chefs
Pulled pork is what you make when you have A LOT of people coming over to eat, and you don’t want to spend a ton of money or loads of hours over the stove. You can make it several ways, but on the grill is a delicious method and doesn’t heat up the kitchen. This recipe serves 10-12. •
Pulled Pork on the Grill
• 1 Boston butt (bone-in pork shoulder roast), 5-7 pounds
• 3-4 tablespoons of a basic barbecue rub that you can find in the spice section of the grocery store
• 1 tablespoon brown sugar • 1 teaspoon black pepper
• 1 teaspoon hot red pepper flakes
Sprinkle the pork shoulder on all sides with the barbeque rub, patting it onto the meat with your fingers. Put roast into a large plastic bag and refrigerate for up to 24 hours. The longer it cures, the richer the flavor. Set up your grill for indirect grilling and preheat to medium-low. Place the roast either on the cool side of the grill, if using gas, or between two piles of hot briquettes, if using charcoal. Replenish the coals, as needed, during the cooking. Place a drip pan under the roast.
Combine all of the ingredients of the mop sauce with ½ cup warm water and stir until the salt and sugar are dissolved. Cover the grill and cook meat for 4-6 hours or until the internal temperature reaches 195 degrees F. After 1 hour, baste with the mop sauce and repeat every hour. Remove the pork from the grill, cover loosely with foil and let it rest for 15 minutes.
Using gloves and two large forks, remove any fat and shred the meat. Serve on buns with barbeque sauce on the side. In North Carolina, which is said to be the birthplace of pulled pork, a vinegary cole slaw is served on top of the meat in each bun, so that will be the next recipe.

Pollo a la Naranje (Chicken with Orange Sauce)

This recipe is attributed to an area of Veracruz, Mexico, where oranges abound. It is a very simple recipe, and we enjoyed it a lot when we made it. The recipe is designed to serve four, but we cut it back a bit, using a whole chicken and using the wing and leg quarters, reserving the breast meat for other uses.

Pollo a la Naranje (Chicken with Orange Sauce)
• 1 whole chicken – cut into serving portions
• 2 Tbsp. salt
• ½ tsp. fresh ground pepper
• about ½ cup flour
• 6 Tbsp. butter
• 2 cups orange juice
Preheat oven to 400 degrees.
Salt and pepper the chicken portions and let sit, refrigerated, for a few hours or overnight. Melt the butter on a sauté pan. Dredge the chicken portions in the flour and sauté for several minutes until they are golden brown. Remove the chicken and place in an ovenproof baking pan. Add the orange juice to the sauté pan and stir with the pan drippings. Drizzle the orange juice mixture onto the chicken. Cover the pan with aluminum foil and bake for 20 minutes.
Remove from oven and flip the chicken portions. Cover again with foil and bake 20 minutes. Remove from the oven, uncover, and bake an additional 15 minutes, until done. Serve, garnished with fresh orange slices.

Texas A & M Singing Cadets Set to Perform in Pharr January 12

The Senior Ambassadors will welcome the Texas A & M Singing Cadets to the Rio Grande Valley Thursday, January 12, for a performance at the Center Church (formerly Trinity Worship Center), located at 4801 N. Cage Boulevard in Pharr.
Internationally known as the “Voice of Aggieland,” the Singing Cadets are Texas A & M University’s premier men’s chorus. The Singing Cadets started the fall of 1995 academic semester with their current director, David L. Kipp, who is the thirteenth director of the 60-member men’s choral group. Under his leadership, the Singing Cadets are staying true to their crisp, military style and diverse selection of music. The Cadets will perform American, military, sacred, and Aggie-themed numbers.
Doors open at 6:00 p.m., and the performance will start at 7 p.m.
Seating is general admission, and the cost for a ticket is a modest $10.
Monies raised from the concert will go toward two university scholarships. One scholarship will be at the University of Texas Rio Grande Valley, and the other scholarship will be given to a deserving member of the Texas A & M Singing Cadets. Both of these scholarships are funded by the Senior Ambassadors, who are hosting this concert.

The Lamb’s Loom’s Third Annual Yarn Tasting will be held Saturday, January 14, 2017 from 10:00 am - 4:00 pm.
We have all had LOTS of fun over the past two years, and we are looking forward to this year as we meet a few new faces and share all things yarn with all of our friends! There will be opportunities to sign up for upcoming classes and workshops, new yarns on display, and fun ideas to share with one another. Everyone is given a Yarn Tasting Menu to guide you through the displays. We also encourage everyone to fill out your question section on the menu, as that is what helps guide the shop in plans, classes, and yarn orders for 2017.
Our friend, Janice, will be doing a spinning demonstration and will be happy to answer questions. The Yarnies, Michelle and Mando, will be doing a little drop spindle for us, too! Also, our local dyer, Diana of DG Crazed Yarns, will be on hand to show
off her latest collection.
The last two years have been great fun. We do want to extend a special thank you to everyone who comes in and adds so many lovely items to the donations chest! You are a blessing to soooo many!!!!

1 1/2 cups dry white wine, like a French white burgundy or white table wine
8 cups beef stock, preferably low or no sodium
1 loaf country style French bread
Kosher salt
Ground black pepper
Splash of Cognac (optional)
1 cup Gruyere cheese, grated
In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes.
French Onion Soup Gratin
I was recently asked to reprint this column from last year and it is certainly perfect right now with this chilly weather we are enjoying. This is a beautiful and soul satisfying soup which is also relatively easy to prepare. This is a family favorite of ours and while it may seem elegant, it is most certainly not fussy nor expensive to make. All you really need are some onions, a little dry white wine, a baguette and a little cheese – well maybe a few other things but not much. It is guaranteed to transport you on Sunday afternoon from your kitchen to a quaint little sidewalk café in the country-side of France. •
Add the beef stock and salt and pepper to taste. Bring to a boil, then simmer uncovered for 20 minutes. Remove the bay leaf, taste again for seasoning, add salt and pepper as needed. Remove from heat and add the additional splash of Cognac (this is optional)
Cut country bread in rounds large enough to fit mouth of oven safe soup crocks or use multiple rounds if using a small loaf such as baguette. Place the slices on a baking sheet
and place under broiler for 1 minute, taking care not to burn them as the bread will brown quickly.
Ladle soup into bowls leaving one inch to the lip. Place bread rounds, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes.
