This is the first winter I have ever gone to the beach and walked on snow, maybe not the nineteen inches outside my window, but spectacular nonetheless. 2010 was a wildly better year for Welcome than 2009. Our biggest successes were both glorious (Cooking with Italian Grandmothers and Primal Cuts) and mundane (our return rate dropped so dramatically that our net numbers became triumphant). Random House was flying and we along with them. I have begun to believe deeply in what I am always quoted as saying, “If we don’t make the past our future, we won’t have a future.” I vote we all reduce the number of titles we are publishing and publish them better. Here are my five best books for the fall of 2011: Lucy Lean’s Made in America: Our Best Chefs Reinvent Comfort Food. Marrying the past and the future, bringing our origins to our greatest chefs who are riffing on our greatest classic recipes, we are celebrating our roots and our ingenuity with ingredients that were local long ago and are local once again. Imagine the brilliance of Tom Colicchio and Chicken Noodle Soup, Charlie Palmer and Baked Beans, Lidia Bastianich and Lasagna, Daniel Boulud and Red Wine-Braised Short Ribs. Lucy is a Renaissance woman. Take it from me. Marissa Guggiana’s Off The Menu: Staff Meals from America’s Top Restaurants is eclectic, evocative, and entirely familial. Staff is like family. When they are well fed, they’re happy. Marissa takes you behind the scenes and brings you great meals that are original, cost-effective, and, often, made from leftovers. Translated for the home cook, there is nothing downscale here but there is elegant simplicity. From New York’s Paul Liebrandt’s Lamb Shepherd’s Pie (Corton) to New Orleans’ John Besh’s Jumbalaya (La Provence) to the Bay Area’s Christian Caiazzo’s Pork Chili Verde (Osteria Stellina)—it’s an irresistible collection of family-style dishes. And, then there is Love’s Exquisite Freedom, illustrated by the sensuous Pre-Raphaelite Sir Edward BurneJones. What hasn’t Maya done? What hasn’t she excelled at? A dancer and a singer and a San Francisco cable car operator, she stood by Malcolm X and Martin Luther King, she was nominated for Pulitzers and National Book Awards. She acted, wrote books, poetry and screenplays, produced and directed. She taught. She edited. She walked in many shoes, and she always saw love, truth, and integrity as the answer. 1 cup butter (2 sticks), at room temperature 1 cup sugar 2 eggs 1 teaspoon vanilla extract 3 cups flour

1. Cream the butter and sugar. Beat in the eggs and add the vanilla. Add the flour and mix well. Refrigerate for at least 2 hours. 2. Preheat the oven to 375°F and line baking sheets with parchment paper. 3. Roll the dough out on a lightly floured surface (marble or wood) and cut with a cookie cutter. Transfer the cookies with a spatula

to cookie sheets. If you are going to decorate without icing, decorate with sprinkles and move the sheets into the oven. Bake for approximately 10 minutes. When the cookies are beginning to brown, remove them from the oven and slide the parchment off the baking sheet. When the cookies have cooled a bit, slide them off the parchment. Cool the cookie sheets before using them again. If you have baked the cookies without decorations, wait until they are completely cool before icing. A crisp is an apt expression of pantry cooking, which makes it a natural dessert for a staff meal. Though it is a forgiving and adaptive dish, you would do well to follow this version to the letter. For the filling: 2¼ pounds apples, peeled and cut into ½-inch dice ¼ cup chopped walnuts 3 ½ cup sugar ½ teaspoon cinnamon ½ cup rum raisins 8

Preheat the oven to 375˚F. In a medium bowl, combine the apple filling ingredients. Cover the bowl and allow to stand at room temperature for 30 minutes.

What was the first meal you made that you were proud of? August of 1978—my first omelet. What was your favorite food as a kid? The brookie: half brownie, half cookie. My invention.

Transfer the fruit filling into a pie dish. Remove the topping from the refrigerator and spread the topping evenly over the filling, breaking up the dough into small, grape-size pieces if necessary.

What would you eat at your last meal, if you could plan such a thing? Pasta and tomato sauce, assuming I could also plan the season.

Bake for 30 minutes on the center rack of oven until the crust is golden brown. Serve warm with ice cream, creme fraiche, or caramel sauce. Serves 6 to 8

What chef do you most admire? Michel Rostang. He’s a brilliant chef from a whole line of brilliant chefs.

What music do you like to hear when you cook? None.

Where the Chefs Eat, Drink & Shop

What is your favorite midnight snack? Before the drive home from Stone Barns, I reach for sweets, like handfuls of petits fours or cookies from the cafe. I crash about halfway to the city.

What’s your favorite place to go for: • Sweets: Does home count? My wife is an incredible baker.

What kitchen utensil is most indispensable to you? A spoon. I’m very particular about the spoons we use—both for plating the food, and for tasting it.

• Hamburgers: Our dog Jackson satisfies my hamburger craving for me.

If you could do one other job, what would it be? A bouquiniste—one of those street booksellers in Paris.

• Happy hour: I just realized I’ve never been to a happy hour.

What do you most value in a sous chef? I read that Warren Buffet once said: “In looking for people to hire, you look for three qualities: integrity, intelligence and energy. And if they don’t have the first, the other two will kill you.” That’s about right.

• Late night/after work meal: I have whatever I’ve stashed in my cup holders on the ride up that morning.

What food trend would you erase from the annals of history? “Comfort food.” All food should be comforting. What one food would you take with you on a desert island? GORP—granola, oats, raisins, and peanuts trail mix.

What is your favorite ingredient? Maybe a new breed of tomato, because they have to compete with everyone’s idealization of heirlooms. There will always be a place for Brandywines and Green Zebras, but a great plant breeder can take the best genetics from those older varieties and make them even better.

Margarita’s Chili Verde This is a homey, family recipe that Margarita often had as a child in Michoacán. The restaurant before Stellina was a white man’s version of a Mexican restaurant and the only highly regarded dish was Margarita’s chili verde. She has even won a local cooking competition with it. For the stew: 2 cups regular olive oil (not extra virgin) for frying 5 pounds Niman Ranch or other local pork butt, or fat part of the leg, trimmed of all but 10% of the outside fat and cut into 1½ inch chunks 2 heads garlic, chopped Salt & pepper 1 large yellow onion, diced 1 large bunch cilantro, roughly chopped For the salsa: 5 pounds tomatillos, peeled from paper but not skins, raw 2 to 6 fresh jalapenos, to taste 4 cloves garlic, peeled 1 large yellow onion, peeled and quartered 4 quarts water

Use a large, thick-bottomed braiser pot, approximately 18” diameter with 6” sides, suitable for slow-frying and stewing. Heat the oil over medium high heat and add the pork, garlic, and salt and pepper before the oil is too hot. Bring to a boil and lower to a simmer. (The entire mixture should be at a bubbly simmer.) Slow fry the pork in the oil for approximately 1 hour. When the pork has a bit of brown color, and has been cooked well on all sides, remove about 90% of the oil. Add the diced onions and cook for another 2 minutes. While the pork is cooking, prepare the salsa. Put the tomatillos, jalapeno, garlic, onion, and water into a large container. Using a hand mixer, coarsely chop all ingredients together. The mixture should be chunky and not too fine. When the pork, garlic , and onion mixture is ready, add the salsa and cook for approximately 1½ to 2 hours more at a good simmer. Check the seasoning a few times while cooking and salt and pepper to taste. Check the doneness of the meat at 1½ hours. The pork should be well braised and easy to bite through; the tip of a small knife inserted into the meat should be easy to insert and withdraw. The meat should be “falling off the bone” tender. Check seasoning once again for final time, then add cilantro to finish. Serve with bread, rice, or warm corn tortillas. Serves 8 to 10
