金門縣文化局局長序 金門，由於受限花崗岩地貌和海島地形，原本農田不多，但此刻卻是金黃青綠處處、高 粱與麥穗遍野如浪。坤和任職金門文化局後，總自喻為文化農夫，如懷抱希望夢想的墾 荒先驅者，帶領著團隊夥伴們，努力將文化種子紮根在金門各個角落。 為鼓勵以影像創作攝製推廣金門形象，藉影視產業宣傳之能量，擴大行銷金門之效益。 欣見《金門縣政府補助影視業者製作拍攝申請計畫》中，由瑞齊傳播有限公司所製作的 影像紀錄片《鞠。麴》經過兩年的辛苦拍攝，藉由製作金門高粱酒關鍵的麥麴，所衍生 的一系列相關人事物，將象徵金門人韌性的奮鬥精神，以影像美學透過鏡頭呈現。 所有的豐碩，都是堅忍不拔與自我要求下的成果，我們期待所有的金門文化之花，能如 《鞠。麴》影片中那片浩瀚的麥田，豐富了所有人們的視線。

Foreword by Bureau Chief Kinmen, an island built on granite, never had much agricultural land, but it is now covered in oceans of golden green sorghum and wheat. After taking the directorship of the Cultural Affairs Bureau of Kinmen, Lu Kun-ho described himself as a farmer of culture with a mission to develop the wilderness. With his team, his aim was to plant the seeds of culture in every corner of Kinmen.

Fostering Ferment was produced by RICH production studio through the “Kinmen County Government Support Program for Motion Picture Production,” a program established to encourage the promotion of Kinmen's image and marketing through the mediums of film and television. tto film the documentary. The film, which took two years of hard work in the field to complete, takes a look at the production of fermentation starter in the making of Kinmen's famous Kaoliang spirit, following the network of human connections that it creates on the island and displaying the resilience of Kinmen people.

All the riches that are created are the result of result of this resilience and the striving of Kinmen's people to do their best for their home. We hope that all the benefits that have been achieved will be like the grand oceans of crops that are seen in “Fostering Ferment,” giving enjoyment to all.

製片立意 2013 年起莫名地燃起了潛藏的「金門魂」，獲得金門縣文化局及胡璉文化藝術基 金會的補助，一連串的在金門拍攝了幾支紀錄片和微電影。因「魔力假期 - 金門」 的拍攝，兩年期間在金門陸續待了一百餘天，對金門有了更深厚的情感。期間有幸 拍攝酒廠的製酒過程，了解到酒麴製作是高粱酒的重要關鍵，而製麴師忍受著高溫 高濕的環境，只為將麥麴的品質顧好。更有鑑於近些年的天候異常，也造成金門小 麥與高粱的收成不佳，但是農民的堅毅個性不被惡劣天候打敗，遂想以小麥、麥麴 和高粱酒、金門的相互關係製作一紀錄片。 金門有世人所熟知的人文、民俗、建築、戰地文化！但我想讓大眾看到另一個有別 於世人印象中的洋樓古厝、風獅爺、鹽田、水牛、戰地據點等之外的金門～ 我知道金門不只是這樣而已！ 我知道「小麥不只是小麥」、「高粱不只是高粱」， 而「金門，不應該不只是金門」。它們，都還有更多的可能性！

Mission Statement In 2013, the latent spirit of Kinmen emerge onto the cultural scene. with subsidies from Kinmen's Bureau of Cultural Affairs and the Hu-Lien Culture and Arts Foundation leading to the release of a string of documentaries and micro movies about Kinmen.

Due to the production of “Stress Holiday – Kinmen,” I was on the island for more than 100 days over a two year period, and developed a deep connection with the island. I had the opportunity to shoot inside the Kaoliang production plant. I witnessed the hot and humid environment that the teams nurturing the fermentation starter worked in. This is an environment maintained for the benefit of the starter. Due to fluctuations in the weather in recent years, the sorghum and wheat harvests had been poor, but the farmers did not let the weather beat them down. This experience led me to plan a film that linked wheat, fermentation starter, Kaoliang spirit and Kinmen together.

Kinmen has a culture, traditions, architecture, and war memorials that are well-known to all. I wanted to show a Kinmen that was quite different from those perennial icons of baroque mansions, wind lions, salt fields, buffaloes and the sites of long-ago battles.

What I know of Kinmen is just this: I know that “wheat is more than just wheat” I know that “sorghum is more than just sorghum” and that there is much more to Kinmen than meets the eye All of these things have much more potential

They spend their lives constantly striving to create a better starter to facilitate the production of the internationally recognized Kaoliang liquor. And the resilient spirit of Kinmen's people is similar to that of wheat.

The farmers stand tall against the trials of natural disaster, working harder than ever and making all the preparations in the hope of a better harvest in the coming year. And Kinmen's business culture is as protean as the bacteria of the wheat starter, fermenting and striving for achievement in cultural industry in ways that will catch the eye of the world.

關於音樂與流氓阿德 一開始，我並不認識歌手「流氓阿德」，但我聽到他創作的《我愛妳 ‧ 金門》，就被 他對故鄉金門之愛的歌聲所感動。在與他當面洽談希望紀錄片使用他的音樂的構想時， 他豪邁且不加思索的立即應允，在隨後的詳談中我發現金門人既純樸又爽朗的性格在他 身上表現無遺，更喜歡上他不做作、沒有一般藝人包裝式的個性。原本的構想中，並沒 有想到要記錄歌手「流氓阿德」的，但他對金門的愛不只展現在歌曲創作上而已，遂力 邀他也成為被記錄的對象之一，更感謝所屬唱片公司的大力協助，再提供「流氓阿德」 新的創作歌曲豐富了本紀錄片的內容。

About the music and Ardor Huang At first, I did not know Vagabond Ah De, but when I heard his song “Kinmen, I love you” I was deeply moved. When I approached him about using his music in the documentary, he agreed without hesitation. I got to know him better when we came to discuss the details of the collaboration, and I found that he fully expressed the simple and direct spirit of Kinmen's people. This made me like his work even more, particularly the lack of packaging so much favored by many artists. Originally I had no intention of incorporating Ah De into the film, but when I found that his love of Kinmen went far beyond his songs, I invited him to take a more active part in the project. I would also like to thank Ah De's record label for their assistance in the project, and for allowing tracks from Ah De's new album to enrich this movie.

He has been nominated for a Golden Melody Award three times, including a nomination for best male vocalist for a Taiwanese song in 2016 for “Useless Little Thing.”

Film concept The film approaches its subject through the characters of two farmers, father and son, who cultivate wheat in the Qing Yu area of Kinmen's Jinsha Township. Through their determination and resilience they overcome challenges of uncertain weather, harvesting the most important ingredient for the manufacture of fermentation starter. The wheat they grow is the central thread of the story.

The production of Kaoliang, a spirit that has become famous around the world, starts with the work of the teams making the fermentation starter. This invaluable work links together this famous spirit with wheat, Kinmen's industry, tourism, customs and life in general.

Kinmen, wheat and Kaoliang continue to ferment, revealing incredible potential in the hands of farmers, winemakers, artists, singers and the young people of Kinmen.

金門精神 金門推動觀光不遺餘力，而這些慕名而來金門旅遊的遊客，除了走訪擁有世界文化遺 產般的戰地金門，和豐富固有的民俗文化外，還有什麼接地氣的金門記憶可以帶走？ 要怎樣才能讓金門的無限生機讓世人 TOUCH 到？ 是春天裡搖曳生姿的麥浪，還是聞名於世優質的高粱酒？ 還是那一個個一輩子只想做好一件事，即便這件事不是在世人面前所容易看到，不是 一項金門特產、不是一次觀光文化之旅、不是一首傳唱的堅持～～ 而是金門人一生只想做好一件事的金門精神。

謹以此片，向李國修先生，及一輩子默默奉獻的專業職人們致敬。並獻給所有讓我感 動的金門精神。

Or might it be through the dedication of doing one thing really well, even when this is something that is not easily seen by the outside world. Even if it is not a specialty product, not a travel experience, or a song … but is something as indefinable as the Kinmen spirit, the determination to do things really well.

This film is dedicated to Hugh Lee and all the tireless professionals who dedicate themselves to what they do. It is also dedicated to the spirit of the Kinmen people.
