Serves 4 - 6 900g parsnips, peeled & chopped
freshly ground black pepper, small pinch smoked paprika (optional)
150g plain flour
To serve:
3 egg yolks
4 tbsp rapeseed oil
9 sage leaves, finely chopped
18 sage leaves
1 tsp sea salt
200g Barkham Blue, cubed
1 Boil the parsnips in lightly salted water for 20 minutes or until soft. Drain well and leave them to steam dry in the pan for a minute or two, then puree until smooth. Add the flour, egg yolks, chopped sage and seasoning and bring together into a firm dough, adding more flour if necessary.
3 About 15 minutes before you’re ready to serve, put a large pan of salted water on to boil. Heat the rapeseed oil in a small frying pan and fry the sage leaves in batches for a few seconds until crisp. Leave to drain on kitchen paper and reserve the oil.
2 To make the dough into gnocchi, break off an orange-sized lump and roll into a sausage about 2cm in diameter. Cut on the diagonal into lozenge shapes and space out on a piece of greaseproof paper, repeating until all the dough has been used.

4 The gnocchi will need to be cooked in batches to avoid overcrowding the pan, so put a bowl in a low heat oven to keep them warm. Each batch will take about 34 minutes to cook in the boiling water and the gnocchi will float to the surface when they’re ready.
