The Watershed Agricultural Council (WAC) works with farm and forest landowners in the NYC Watershed region to protect water quality on behalf of more than nine million New York residents. The WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds.

Ancestral Family Tradition

is an old name in Bovina, with the first Miller, David, arriving around 1815 from the Scottish Borders. Millers owned, resided and/or leased on Miller Avenue from 1832 to 1973. Miller Avenue is a 1 1/2 mile town road connecting Bramley and Lee Hollow to County Route 6 and the Bovina Center hamlet.

In 1832, William Miller, the brother of David, took a lease on a section of land, approx. 144 acres from Edward P. Livingston. His rent included 20 bushels of wheat, two fowls and one day riding (basically a day of labor on the Livingston estate). In 1859, Miller purchased the property from Livingston’s heir, Louisa Livingston for $575. In April of 1862, the property ownership fell to William’s sons, William Junior and Berry Shaw Miller. The property descended through to Berry Shaw Miller’s grandson, Mural 0. Miller, who was a second cousin of Anna Bell Barnhart LaFever. In 1973, it was sold out of the Miller family until 1999 when it was purchased by Duane LaFever, a third great-grandson of William Miller and grandson of Anna Bell Barnhart LaFever.

Duane and his wife Karen, along with their two sons, Cody and Cullen, continue an ancestral family tradition by producing maple syrup on the 104 acre property. Remnants of the original sugar house foundation can still be seen today, as well as the barn and rock foundation of what was an old home. Daffodils still come up in the spring around the foundation stones.

They have over 500 apple trees with over 25 varieties including Mac, Macoun, Honeycrisp, Gala, Sweet 16, Liberty and Wellington to name a few. At their Fall Festival weekends, children and young at heart can enjoy many activities such as pumpkin and apple picking, hiking, gold and gem mining, roping, pony driving and riding, tractor & horse drawn wagon rides, goat petting & many photo opps. Good eats are in the sugar house store.

Fall Festival weekends at the sugar house, the pumpkin and U-Pick apple orchard are open, 10 AM–4 PM from September 13th–October 11th, 2025. Maple Weekends are the last two weekends in March 21st–22nd & 28th-29th, 2026, 9 AM–3 PM. Family Farm Day, Saturday August 23rd, 2025, 10 AM–4 PM. Appointments are available for visits and purchasing of maple products.

Three years ago, we began Tenfold Farm with just that goal in mind. Our pigs, chickens, turkeys, and lambs are pasture-raised in the lush, green hills of the Western Catskills. The family-owned and run farm has 156 acres of fields, including four springs, a pond, an 1800s-era barn and farmhouse, and two farmstay vacation rentals where your family can learn, relax, play, and pitch in if you choose.

On a walk through the farm, you’ll see chickens and turkeys in mobile chicken coops that allow us to move them to fresh ground each and every day. You’d

see pigs that live their entire lives outdoors, foraging and rooting in fields and forests, and lambs that enjoy an allgrass diet. These healthier and happier animals produce nutrient-rich and flavorful meat. We offer a range of products, from roasts, sausages, and bacon to ground lamb and chicken breast.

We also offer delicious prepared foods using only our own meats, local vegetables, and even local grains. These healthy, heat-and-eat meals change weekly with the season. Some favorites are lamb curry, chicken soup, pulled pork, and a chicken liver pâté that always sells out at the farmers’ markets.

AT GREENE COUNTY WOOL, our goal is to raise healthy sheep and produce the highest quality hand-spinning fiber, fully utilizing the grazing potential of our antique farm in East Durham, NY.

I began spinning yarn 25 years ago, learning from a teacher at the Los Angeles Spinning Guild. After purchasing my first fleece at the Ventura County Fair, I dove into spinning, dyeing, knitting, and marketing. In 2017, after moving to New York, we started raising sheep and chose the Romeldale-CVM breed for its fine, grey wool. To prepare, I took shepherding courses and attended seminars through New York State and Cornell University. With the help of mentors, a local vet, and a lot of dedication, Greene County Wool’s fleeces are now sold at the prestigious Rhinebeck Sheep and Wool Festival.

The Romeldale-CVM is a “threatened” breed, at risk of extinction without efforts to breed and register new lambs. Raising this rare breed and supporting the Livestock Conservancy’s efforts is a mission we are passionate about.

We participate in the “New York Grown & Certified” program, ensuring our farm meets environ-

mental stewardship standards and that our products are of New York origin.

As our flock grew, we faced grazing challenges. We researched “silvopasture” to expand our grazing space. Over three years, we transformed 10 acres of neglected forest and fields into a thriving pasture. This project involved specialists in soil, trees, and forage, creating a balanced environment where sheep can graze in sunny and shaded areas among mature oaks and maples.

Today, we’ve reached a sustainable, self-sufficient operation. Partnering with regional mills, we produce yarn and other products, alongside raw wool. Selling wool and wool-based products covers the sheep’s nutritional needs. Our Romeldale-CVM sheep also naturally fertilize the soil, help eradicate non-native plant species, and provide animal therapy. Most importantly, they contribute valuable wool that aligns with the growing demand for natural, compostable products.

By nurturing our flock, we continue to learn, grow, and share the beauty of wool while maintaining the health of our land.

Bell's Christmas Trees

THE BELL FAMILY FARM was established by Jason Bell in the early 1900s. Originally working on the D & H Canal, Jason and his son Aaron did whatever was necessary to maintain the farm, eventually transitioning to dairy farming. When the third generation, Gordie Bell, graduated from Delhi College, he and his wife Paula transformed the struggling farm into one of the most successful dairy operations in Ulster County. Through hard work and dedication to the land, Shady Maple Farm was able to survive some of the toughest times for dairy farming in New York State. By 1990, it became clear that change was necessary to keep up with the times. Gordie sold the dairy herd and focused on hay production while searching for other ways to continue farming the same land. A trial planting of Christmas trees blossomed into a thriving business called Bell’s Christmas Trees. This shift has allowed the Bell family to preserve and pass on the farming culture they had come to love. Now, Gordie, his son Brian, daughter-in-law Lori, and even grandson Lucas plant and care for each and every tree on their 24-acre plantation, which is part of the 150-acre farm. What makes the experience even

more special is the opportunity for the family to share the land with customers, welcoming them each year to choose and cut their own unique Christmas tree. Watching families return year after year, generation after generation, to create lasting memories while enjoying the fruits of their labor has made all the time and hard work that goes into farming worthwhile. Cutting a real Christmas tree at Bell’s Christmas Trees is a family experience that will always be remembered, creating warm memories on cold days.

In addition to their choose-and-cut Christmas trees, the Bell family has developed a thriving topsoil, mulch, and gravel business. These products can be picked up at the farm by appointment, or they can be delivered to you. This diverse 19-acre farm, which includes a 100-year-old barn, is home to Huacaya alpacas, Babydoll sheep, German angora rabbits, and a plethora of happy chickens. Our alpacas, sheep, and rabbits provide us with beautiful fibers, which we process on the farm and hand-spin. We participate in local fiber festivals, offer spinning workshops, and have fiber products for sale.

At the top of our hill, we have a beautiful lavender field, planted in 2019. We grow several varieties of lavender, which we use for bouquets, wreaths, and handcrafted products. We also create soaps, salves, sprays, teas, sachets, candles, and more, all available for purchase. We offer U-pick days during the lavender season in July, as well as workshops featuring both fresh and dried lavender. Our lavender is celebrated annually with our Lavender Festival.

Next to our lavender field is our butterfly garden, wildflower meadow, and plots of sunflowers, zinnias, cosmos, and other

vibrant flowers. We offer hand-cut bouquets and takehome arrangements made from our flowers.

Jubilee Farms operates with a strong emphasis on sustainability and supporting pollinators. We compost, use only natural fertilizers, and never use pesticides on our crops. All of our fiber and cut flowers are proudly New York State Grown and Certified.

We open our farm for seasonal festivals and farm tours by appointment. This year, we’re excited to host several exciting events, including our Lavender Festival on July 5th, Family Farm Day on August 23rd, and, on September 27th, our first Wine and Alpaca Festival in partnership with Middleburg Winery.
