ie lesen hier vielleicht zum ersten Mal vom Alentejo. Wir, die dieses Heft machen, sind aber schon das dritte Mal in dieser schier einzigartigen Region Portugals unterwegs und haben uns nach dem Einfachen umgesehen, das im Alentejo viel, viel mehr bedeutet. Wir treffen auf Schlichtes und Klares, so wie hier für Olivenöl ein Stück Brot ausreicht. Ein Besuch im Alentejo ist eine Reise ist eine Reise des Abschaltens: abschalten von Stress, Lärm und der Digitalisierung. Ein Besuch im Alentejo ist aber auch eine Reise des Einschaltens: einschalten unserer Sinne, riechen, schmecken und berühren; eine Reise in das Langsame, das im Alentejo ausschließlich ein Fortschritt ist.

Der Alentejo ist unser Rückzugsgebiet im äußersten Westen Europas. Dort, wo die Hitze der Landschaft auf die kühlen Winde des Atlantiks trifft. Der Alentejo ist einer der wenigen, bislang unentdeckten land-

schaftlichen Schätze Europas, eine Gegend, in die wir eintauchen können wie in ein gemachtes Bett, das uns nach einem langen Tag auffängt.

Der Alentejo: Das sind weite, hügelige Landschaften, die einer weitgehend außergewöhnlichen Kulturlandwirtschaft Platz geben – Weingärten und Olivenhaine. Der Alentejo: Das sind aber auch lebendige Kleinstädte mit großer, lokaler Gastronomie, von der einfachen Kneipe bis zum Sternerestaurant, die aus den Grundprodukten des Landes schmackhafte Gerichte kreiert.

t could very well be that this is the first time you’ve read anything about Alentejo.

But we, who work on this booklet, have been on the road now for the third time in this truly unique region and taken a good look around. Seeking the simple things, which in Alentejo become more and more meaningful. We require clarity, just like the bread here reaches for the olive oil...

Alentejo is our favourite retreat, here in the extreme west of Europe. Where the heat of the landscape meets with the cool winds of the Atlantic ocean. Alentejo is one of the few hitherto undiscovered topographical

here are wines, which don’t exist. Well, not everywhere … One among these is the red Moreto de Alentejo, whose ‘o’ is pronounced like ‘u’. But this U can also stand for Unconventional – and for drinking pleasure of the highest order.

for the simple reason that the phylloxera plague that destroyed nearly everything in its path in the 19th century could hardly get a grip on some vines of Alentejo.

One essential reason for this is the heat; here the air temperature can sometimes reach 50 °C in the summer sunshine. Additionally, the soils in the sub-region Granja Amareleja are very sandy and dry. There is almost no moisture, and then only in springtime when the area receives a great deal of rain. The vine-louse didn’t stand a chance here 150 years ago, even if that beastie is a very tough customer.

planted to Moreto – but then, with the international wine-boom and the trend toward planting international varieties that it brought, this changed. The current proportion of Moreto vineyards is now only a fraction of what it once was. José Piteira explains that there were additional reasons behind the decline of the ‘Muretu’, such as the labour-intensive cultivation that the variety demands – in no way lowmaintenance. And then, according to Piteira, many growers were simply careless with the material they harvested, and did not recognise what great quality could be achieved with the Moreto.

And since we are currently examining old traditions that are once more in practice in Granja Amaraleja, Piteira winds up our tour by showing us the forty amphoras that are once more being used for maturing wine by the co-operative, here called Talhas (for more on Talhas, see the story on page 115). Yesterday becomes successful today, and thrives tomorrow.

The yield from this old vineyard, where we are now standing with José Piteira, is particularly low. Only 2,000–4,000 kilogrammes of grapes per hectare (and that depending upon prevailing climatic conditions in a given year) are to be had in late autumn from the vines. Far too little for

quantity-obsessed winegrowers, but absolutely perfect for those like José Piteira, who value that which is distinctive and wish to preserve it, even when the distinctive can only be obtained in tantalisingly modest quantities.

And then, money naturally comes into the picture: grape growers in the co-op are paid a higher price per kilo for Moreto grapes, because of the greater workload in the vineyard. The contemporary consumer, in turn, is quite content to pay more to obtain a fullbodied rarity.

‘I find the grape variety Moreto so exciting for this reason’, states José Piteira enthusiastically, ’because it is so unique and so different and it’s not being offered by anybody else in the wine market.’ Here, in Alentejo, the ‘Muretu’ runs to top form: vibrant freshness, good structure, high concentration, deep colour and a delicate aroma. The alcohol content in hot years reaches sixteen or even seventeen per cent. That is not for everyone.

Nevertheless, on the palate one notices the alcohol hardly at all, because it is countered by the respectable acidity of the Moreto – a rare combination here in the south – and buffered both on the palate and going down the hatch.

In closing, José Piteira tells us that he obtains the best results with Moreto in meagre, sandy and well-drained soils. The vines make it through even the extremely hot years, like 2018 has been, almost without irrigation.

Thanks to climate change and the accompanying rise in temperatures, we shall quite likely be hearing a lot more from the ‘Muretu’.

And perhaps the variety will also find a second home, outside of Alentejo.

Dass in der Granja Amareleja ohne Chemikalien gearbeitet wird, versteht sich wohl von selbst, denn Trockenheit und Hitze sind K.-o.-Kriterien für Schädlinge.

Der chemische Pflanzenschutz, wie er in Mitteleuropa leider noch zur Gewohnheit gehört, muss hier gar nicht erst eingesetzt werden. Das Zusammenspiel von Weinreben und Olivenbäumen ist auch Teil einer schädlingsvermeidenden Biodiversität und hat hier, in diesem Weingarten, eine kurze Tradition. Erst vor zwei Generationen wurden alle Weinberge nach diesem Prinzip bepflanzt.

Wein und Oliven sind zwei der wichtigsten Lebensmittel der Gegend. Durch das Zusammenspiel von Reben und Bäumen innerhalb eines Weinberges werden natürliche Synergien auf geringster Fläche ideal genutzt.

In den 1970er-Jahren waren in der Region Granja Amareleja sogar bis zu 99 % der Rebfläche mit Moreto bepflanzt. Das hat sich jedoch mit dem internationalen Weinboom und den ihn begleitenden internationalen Rebsorten geändert. Der jetzige Anteil an Moreto-Rebflächen ist also nur mehr ein Bruchteil dessen, was einmal da war. José Piteira erklärt, dass es auch weitere Gründe für die Dezimierung des 'Muretu' gab, etwa die Arbeitsintensität im Weingarten, die diese Sorte eben mit sich bringt – pflegeleicht geht anders. Und dann, so Piteira, waren viele Winzer schlicht nachlässig mit dem Lesematerial und erkannten nicht, welche Qualität von Rotwein sich damit erzeugen lässt.

Die Ausbeute des alten Weingartens, in dem wir hier mit José Piteira stehen, ist maximal gering. Nur 2000 bis 4000 Kilogramm Trauben pro Hektar (und je nach Jahresklima) holt er hier im Spätherbst von den Stöcken.

Zu wenig für etragswütige Winzer, aber genau richtig für solche wie José Piteira, die das Besondere lieben und das Besondere auch erhalten wollen. Selbst wenn das Besondere nur in besonders geringer Menge zu erzielen ist. Dann muss es eben der Preis regeln: Den Traubenproduzenten der Kooperative wird für ihre Moreto-Trauben schon auf-

grund des erhöhten Arbeitsaufkommens im Weinberg ein höherer Kilo-Preis bezahlt. Der Konsument wiederum ist gerne bereit, für eine vollmundige Rarität mehr auszugeben.

Und weil wir gerade bei den alten Traditionen sind, die in der Granja Amaraleja wieder hochgehalten werden, zeigt uns Piteira im Anschluss in der Kooperative auch die vierzig Amphoren, hier Talhas genannt, (dazu auch eine Geschichte auf Seite 120), in welchen sie hier wieder den Wein reifen lassen. Das Gestern erfolgreich im Heute und im Morgen. „Ich finde die Sorte Moreto deswegen so spannend“, schwärmt José Piteira, „weil sie so speziell und so anders ist und sie am Weinmarkt von niemanden anderen angeboten wird.“ Hier, im Alentejo, läuft der 'Muretu' zur Hochform auf: Animierende Frische, gute Struktur, hohe Konzentration, starke Farbe und ein delikates Aroma. Der Alkoholgehalt steigt in heißen Jahren bis zu 16 oder sogar 17 % an. Das ist nicht jedermanns Sache. Am Gaumen jedoch merkt man den hohen Alkoholgehalt so gut wie gar nicht, denn er wird von der ebenfalls hohen Säure des Moreto – im Süden eine Seltenheit – im Mund und im Schluck zurückgedrängt und geschmacklich abgemindert.

Die besten Ergebnisse von Moreto, erzählt José Piteira zum Schluss, erzielt er auf sandigen, kargen und gut drainierten Böden. Die Reben kommen sogar in extremen Hitzejahren wie 2018 nahezu ohne Bewässerung aus. Durch den Klimawandel und dem damit einhergehenden Temperaturanstieg wird man vom 'Muretu' wahrscheinlich noch viel hören. Und möglicherweise findet die Sorte dann auch eine Heimat außerhalb des Alentejo.

To be a tourist restaurant, and at the same time serve sophisticated dishes? This we’ve got to see... That sort of capability is not a given in the holiday strongholds of the Algarve, and actually not the sort of thing one takes for granted even in Lisbon. But it holds true in Alentejo. In Évora, at the Taberna Tipica Quarta Feira, José Dias wields the ladle, no longer a young man, but a passionately dedicated chef de cuisine. To look at him, shirt stretched over the imposing belly, one imagines he could play the lead in a film about rural and rustic restaurateurs.

The portions in his Taberna Tipica Quarta Feira are indeed formidable, but the prices embarrassingly modest. And everything is truly delectable, because sausage and mushrooms, pork and potatoes, spinach and cakes are all perfectly prepared with artisanal skill; here in the inconspicuous Rua do Inverno, where nobody chooses their own menu, and all are delighted with what the kitchen puts on the table. And when it is lamprey (a jawless fishlike vertebrate) served in a blood sauce, then you have just enjoyed the quintessence of the traditional Alentejano cuisine on your very first evening, a style of cookery that earns praise for its liberalminded rusticality.

avid interest in the grape varieties and winegrowers of the Alentejo region. One simply has to order Queiroz’s octopus and his shrimp from the Algarve, as well as the duck breast.

But here it is in the vegetables where one finds the greatest pleasure: carrots, corn, and spring onions. You can dine here as a vegetarian – it is not only possible, but a true experience as well, one that leads the diner to the very roots of the Alentejo regional cuisine, which lay for a long time deeply buried under a mountain of meats.

Concepts like sustainability and regionality are not carried about like holy relics in Alentejo, but rather put into practice softly and quietly. Like at the Mercearia Gadanha in Estremoz. Or at L’AND in Montemor-oNovo, which has been awarded a star by the Michelin guide. Here the modern cuisine of Alentejo articulates itself in the grand manner; chef de cuisine Miguel Laffan works echoes of Asian styles and French traditions into his palette.

A bit of foie gras, then a shot of Yuzu juice?

Why not, when it elevates the meat terrine with its shrimp tartar, fennel and citrus aromas to a complex masterpiece, renders the tuna from the Azores so vivid of expression, and insomuch as the Iberian pork shoulder is cooked to such juicy tenderness as it is here. And if anyone characterises L‘AND as expensive, considers it too costly, then the complainer must be informed that gourmet restaurants like this one are indispensible for a region that is proud of its cuisine, a region that figures generally as up-and-coming. They spur the young culinary talent to return home, or to come here initially from elsewhere. Take Carlos Teixeira, for example, Alentejo’s newly arrived twenty-five year-old chef de cuisine of the restaurant Herdade do Esporão. Trained in London at the Michelin-starred Clove Club, he mainly utilises products of the region, and says that he prefers those grown on the restaurant’s own farm. Organic olive oil, the best vegetables imaginable – all cultivated on the spot. And fresh herbs.

And when it is lamprey (a jawless fishlike vertebrate) served in a blood sauce, then you have just enjoyed the quintessence of the traditional Alentejano cuisine on your very first evening, a style of cookery that earns praise for its liberal-minded rusticality.

And then there is José Júlio Vintém, the reinventor of the subtly modernised Alentejo cuisine. He is a quiet fellow who is now creating quite a stir in the restaurant Tomba Lobos. Exclusively for dyed-in-the wool gourmets, because the newly opened eatery is a) unprepossessing, and b) located in Portalegre, rather far off the beaten paths of tourism. Gimmicks are unknown here. The convivial chef, long since a star of national eminence, simply gathers the best available products.

Begriffe wie Nachhaltigkeit und Regionalität werden im Alentejo selten wie Heiligtümer hinausposaunt, aber immer öfter still und leise umgesetzt. Etwa in der Mercearia Gadanha in Estremoz. Oder im L’AND in Montemor-o-Novo, das mit einem Stern im Guide Michelin ausgezeichnet wurde. Hier läuft die moderne Alentejo-Küche zu großer Form auf; Küchenchef Miguel Laffan fügt in seine Menüs asiatische Anklänge und französische Traditionen ein.

Ein bisschen Foie gras, ein Schuss Yuzusaft?

Warum nicht, solange er die Fleischterrine mit Garnelentatar Fenchel- und Zitrusaromen zu einem komplexen Meisterwerk veredelt und der von den Azoren stammende Thunfisch so ausdrucksstark, die iberische Schweineschulter dermassen saftig gegart wird wie hier. Sollte jemand das L’AND für teuer halten, für zu teuer, dann sei ihm gesagt, dass Gourmetrestaurants wie dieses unverzichtbar sind für eine kulinarisch stolze und im Gesamten aufstrebende Region, beflügeln sie doch die jungen Kochtalente, wieder in ihre Gegend zurückzukehren oder sogar erstmalig anzureisen. Carlos Teixeira etwa, den gerade ins Alentejo geholten 25jährigen Küchenchef des Herdade do Esporão Restaurants. Er verwende hauptsächlich Produkte der Region, sagt der in Londons Sternerestaurant Clove Club geschulte Mann, natürlich am liebsten jene der betriebseigen Farm. Bio-Olivenöl, das beste, vorstellbare Gemüse, an Ort und Stelle angebaut. Und frische Kräuter.

Und dann ist da noch José Júlio Vintém, der Neuerfinder der dezent modernisierten Alentejo-Küche. Er ist ein ruhiger Typ, der nun im Restaurant Tomba Lobos für Aufsehen sorgt. Allerdings ausschließlich bei eingefleischten Gourmets, denn das neueröffnete Lokal ist erstens unscheinbar und zweitens in Portalegre, abseits der touristischen Trampelpfade angesiedelt.

Sperenzchen sind hier unbekannt, der gemütliche Koch, längst ein Star von landesweitem Ansehen, sucht einfach die besten Produkte zusammen. Wilder Spargel? Der wächst nicht weit von seinem Restaurant, gut versteckt. Wenn man weiß, wo man suchen soll, ein Kinderspiel. Und wenn man weiß, was man daraus machen kann, eine Fingerübung. Vintém schmort Wulstlinge, eine seltene Pilzsorte, schnippelt seinen Spargel ins Omelett oder lässt als Dessert gesüßten Spaghettikürbis reichen. Der Kellner ist die Herzlichkeit in Person, die Rechnung ist niedrig. Alentejo eben.

Nirgendwo erkennt man diesen Wandel besser als im Restaurant der Familie Queiroz, schließlich sind die Chefs des 2016 eröffneten Lokals namens Origens in ungewöhnlichem Maße an den Rebsorten und Winzern des Alentejo interessiert. Queiroz’ Oktopus muss man fast zwingend bestellen, ebenso seine Garnelen von der Algarve oder die Entenbrust. Aber es sind dann doch die Gemüse, die am meisten Vergnügen machen – Karotten, Mais, Frühlingszwiebeln. Sich hier vegetarisch zu ernähren, ist nicht nur möglich, sondern auch ein Erlebnis, das zu den Wurzeln der Alentejo-Küche hinführt, die lange unter Fleischbergen tief vergraben wurden.

BRINGING THE RICE TO A BOIL -Ganz heiÃ&#x; auf Reis

hef de cuisine Margarida Cabaço, famous throughout Portugal, invite's small groups to dine at her country house. There the rice commands centre stage, because Cabaço can prepare it like very few Portuguese chefs. A visit with four recipes.

Margarida Cabaço welcomes us to her country home on the outskirts of Estremoz. She is a prominent figure throughout Portugal for her passion-propelled cooking and winemaking. Up until a few years ago she ran the extremely popular restaurant São Rosas in Estremoz, which she opened in 1994 and where she served a refined expression of traditional Alentejano cuisine. Only two years after the restaurant’s début, São Rosas was chosen as ‘Restaurant of the Year’ by the renowned Portuguese daily newspaper Público.

After she closed her restaurant São Rosas – the work had over the years become just a bit monotonous as well as too strenuous – she bent her efforts exclusively toward winemaking.

But when a person has once stood in the kit-

But cooking was just not enough for Cabaço.

She wanted to connect her cuisine to its ‘own’ proper wines, and so in 2008 she founded her estate Monte dos Cabaços. When asked about the style of her wines, Cabaço comments, ‘When people ask me how I vinify my wines, I tell them that I do it the same way that I cook. For good wine you assemble the best grapes, which you harvest at the right point in time’.

‘I cook guided by my own passion, and not by following figures or the instructions in a recipe’, is the way that Ms Cabaço describes her philosophy. She began her culinary career cooking in a ‘Monte’, a little rustic structure out in the fields – with no electricity. This gave her the opportunity to take a good long look at the traditional Alentejano recipes of the farmers in the region. The cuisine of Alentejo could be regarded as poor-people’s cooking, because of the fantastic dishes it can make by combining a few good ingredients with lots of fresh herbs. This style of cuisine is currently very much in fashion, and despite its simplicity enjoys many adherents. Even in sophisticated circles, where cookery has become increasingly interlinked with ethical considerations.

These Portuguese rice dishes do not resemble the well-known risotto from Italy. They are more fluid, creamier, and manage quite well without butter or cheese. ‘Cheese or butter would only cloak the flavour of the dish’ explains Cabaço.

Cabaço works in an open, picturebookAlentejano country kitchen. The space with the small table, which is dedicated to preparation rather than to dining, contains a massive Swedish gas range with a griddle, and an expansive work-surface of marble from Estremoz. There are pans and herbs hanging everywhere, and an abundance of spices lies within easy reach. For us, Cabaço has prepared four recipes, all based on rice.

When we asked if we might note down the recipes, she answered, ‘Of course. Finally, somebody is writing something about our Portuguese rice tradition! We have wonderful rice dishes in our country – like Tomato Rice, Seafood Rice, Canja de Galinha (chicken soup with rice) – and even desserts made from rice. And what’s more, I cook our traditional dishes with ‘Carolino’, our own indigenous rice of the region’.

True of Cabaço as well: upon request she will cook for guests in her country residence, where visitors – filled to the brim – can also spend the night.

For the traditional ‘moist rice’, she uses the proportion 4:1. In Portugal, this ‘liquid rice’is called ‘Arroz malandro’. That means ‘rascal’s rice’ or ‘robber’s rice’. The name comes from its fluid consistency, which can be likened to ‘hard to get a handle on’ or ‘fleeting’ and so evokes thievish behaviours and thus worked its way into the vernacular. At the close of our visit, Margarida Cabaço lets us in on another Portuguese saying: ‘Rice waits for nobody.’ Which means: ‘Sit down immediately at the table, so we can enjoy the rice at its perfect consistency’.

Für guten Wein fügst du die besten Trauben zusammen, die du zum richtigen Zeitpunkt erntest“, so Cabaço über ihren Weinstil.

Nachdem sie ihr Restaurant São Rosas schloss – die Arbeit war ihr mit den Jahren zu eintönig und auch zu anstrengend geworden – widmete sie sich ausschließlich dem Weinmachen. Aber wenn man einmal in der Küche gestanden ist, und Menschen mit Essen glücklich machen konnte, so lässt einem der Ruf nicht los, wieder an den Herd zurückzukehren. So auch bei Cabaço: Auf Wunsch kocht sie heute für Gäste in ihrem Landhaus, in dem man, pappsatt, auch übernachten kann.

Der Raum mit kleinem Tisch, der eher zum Anrichten als zum Essen gedacht ist, beinhaltet einen massiven, schwedischen Gasherd mit Grillplatte und eine große Arbeitsfläche aus Estremoz-Marmor. Überall hängen Pfannen und Kräuter, Gewürze stehen en masse griffbereit. Für uns hat Margarida Cabaço vier Reis-Rezepte vorbereitet. Auf die Frage, ob wir die Rezepte mitschreiben dürfen, antwortet Cabaço: „Natürlich! Endlich schreibt jemand überhaupt mal über unsere portugiesische Reistradition. Wir haben wunderbare Reisgerichte in Portugal, etwa Tomatenreis, Meeresfrüchtereis, CanjaHühnersuppe mit Reis und auch Desserts mit Reis. Außerdem koche ich unsere traditionellen Gerichte mit 'Carolino', unserem eigenen, autochthonen Reis der Region.“ Die portugiesischen Reisgerichte ähneln nicht dem bekannten Risotto aus Italien. Sie sind flüssiger, cremiger und kommen ganz ohne Butter und Käse aus. „Käse oder Butter würden nur den Geschmack des Gerichts verdecken“, erklärt die Köchin.

Für den traditionellen nassen Reis verwendet sie das Verhältnis 4:1. In Portugal wird der flüssige Reis 'Arroz malandro' genannt. Das heißt 'Schlitzohr' oder 'diebischer Reis'. Dieser Name hat sich wegen seiner flüssigen Konsistenz, die als nicht zu fassen oder flüchtend mit diebischem Verhalten verglichen werden kann, eingebürgert. Am Ende des Besuches verrät uns Margarida Cabaço noch ein portugiesisches Sprichwort: „Der Reis wartet auf niemanden.“ Also schnell zu Tisch, damit wir ihn in perfekter Konsistenz genießen können.

Arroz de Tomate TOMATO RICE -Tomaten-Reis INGREDIENTS

ZUTATEN

750 g tomatoes (very ripe, skins removed) 1 small green pepper ◊ 3 cloves garlic ◊ 1 onion (diced) ◊ 50 cl olive oil ◊ 1 bay leaf ◊ oregano to taste ◊ 150 g rice (Carolino) ◊ .5 l water ◊ salt

Briefly brown the diced onion and the chopped garlic in a sauté pan.

Boil the chicken with the onion (leave the onion whole) and a few sprigs of parsley in 1.5 litres salted water until the chicken is tender.

uring the hot – blisteringly hot – summer, the open landscape of Alentejo is coloured yellow, ochre and brown. By contrast, from November to March – and distinctly different from central Europe – there are fifty shades of green that dominate the colour spectrum. The lushly verdant landscape looks almost like a film-set. Every now and then there is a bit of startling red erupting from private gardens, or a hedge growing out of control; the red sun in the mornings and evenings is a fireball like that on the Japanese flag. Yet here there is another red: the red of a round and spiny-looking fruit that hangs from the shrubbery. This is difficult to believe, but in Alentejo strawberries do indeed grow on trees.

The most famous of these is the distillate made from the fruit of the Medronho that is crafted predominately in Alentejo and in the Algarve. The ‘firewater’ called Aguardente de Medronho is a traditional fruit spirit, somewhat like those from central Europe.

The Arabs had already begun distilling alcohol from fruits in the region many years ago. Of course, only for medicinal purposes, since Islam takes a dim view of alcohol as a beverage.

The strawberry tree, Medronho in Portuguese, is a plant plant belonging to the heather family, and grows in warm climates. It feels quite at home in the Mediterranean environment, in south-western and southeastern Europe; it bursts out of the ground everywhere in the Portuguese countryside, and especially along the coast. It flourishes in widely different types of soil, and does quite well with meagre and stressful conditions.

CD: Marta, you are originally from Lisbon – how did you end up in Alentejo?

MC: Oh, that all started fifteen years ago, when I was still in Lisbon and read an employment advert from the network ‘Casas Brancas’. The job was in Aljezur, in the southwest of Portugal, out in the country. I thought to myself, well let’s have a look at this – since I already knew the region and loved it, thanks to many holidays and weekend excursions. And there was something else: I had made the decision to move to Alentejo after I applied, but even before being hired.

CD: What, then, is Casas Brancas exactly?

The name takes me in a few different directions.

MC: Casas Brancas is a highly creative

regional tourism network, in which members and folks who offer rental accommodations deliver a high standard of quality. While at the same time reinforcing a belief that the region has a soul.

And by ‘soul’ I mean the particular identity that the region reflects. This means utilisation of local products, as well as valuing and preserving local traditions and regional culture. Casas Brancas delivered authenticity. When we began with our website, there were no platforms online like Trip Advisor. That was our head start, which still benefits us today.

CD: But, you weren’t finished with just Casas Brancas, were you?

MC: No, we then got started on our followup project, ‘Rota Vicentina’, which was primarily focussed on international target markets. This was during the time of the finance and debt crisis crisis that followed 2008, which Portugal, rather differently from other countries, managed to master on its own. Rota Vicentina developed out of the Casas Brancas project, and has at the moment some two hundred members and hosts in its programme, primarily involved with agrotourism, bed-and-breakfasts and campgrounds – mostly local businesses, of course. And beyond that we offer tours of various lengths along well-marked hiking paths.

And by the way, Rota Vicentina is named after the coast line which is called Costa Vicentina.

CD: So then, walking and overnight accommodations?

MC: Exactly! But also restaurants, transport businesses, tour operators etc.

Our objective revolves around bringing international visitors to Alentejo, especially in the slow season – visitors who are looking for quality in tourism, rather than programs designed for mass consumption. And to be honest, the country around here would not be equipped for a mass onslaught of visitors.

Our focus is upon nature and sustainability. Hiking was an obvious choice, and we suspected that offering walking tours would succeed.

CD: Was there any sort of tradition in Portugal involving hiking? Before your initiative took hold, had the Portuguese established walking trails?

MC: There were absolutely none at all.

Portugal had no traditional fondness for hiking or trekking. There’s not even a word for it in the Portuguese language.

According to surveys, only one per cent of the Portuguese has gone hiking. At the moment this is changing, because many more citizens are travelling throughout their own country, and because fitness and activity are current trends. But we started Rota Vicentina with the intuition that hiking would become an important sector of global tourism. We opened our first walking trails in 2012, and since then I see many folks navigating our well-marked trails as if these had always been there.

CD: What lies along the Rota Vicentina trails to be discovered?

MC: Oh, the trails wind their ways past tiny little villages, and in between them one can spend an entire day in the wondrous wilds of nature without setting eyes on another human being.

This is quite rare in Europe. It is also a singular development that this year, an estimated more than fifteen per cent of Portuguese hikers are out on our trails. So it’s not just international tourists.

And we are mightily proud of this.

CD: You’re sitting here at your desk, which has a number of maps on it.

Do you have any new projects in mind?

MC: We are working intensively on developing our circular trails. Imagining that folks would stay longer at one location, and from there set out to pursue various different activities. Occasionally, hiking is not enough of a programme.

What do you do, for example, when the weather is bad? Or if a member of the family doesn’t enjoy hiking, or is not in good enough physical condition. We are bundling new ideas into packages for these target groups.

CD: And what are they like?

MC: Quite diverse. Our first concern is for the local populace. Most residents of a town are unaware of the role they can play as potential hosts, and rarely have an idea of the services they are able to provide. And as a tourist, one needs somebody with whom they can interact.

Yes, the landscape is important. But far more important still are the individuals who fill out the culture of a municipality, and communicate this culture to others.

CD: And how do you put your ideas for tourists into practice?

MC: In that we, as previously stated, become involved with the local residents and their range of products or services. Our new project doesn’t involve any companies, or any tourist business professionals. We don’t offer anything that has to do with tourism per se, or is created especially for tourists. We want to find a way in which tourists can interact with the locals, without disturbing the day-to-day life of the residents.

We have engaged Madalena Vitorino for the implementation of this project; she lives in the region, worked previously as a choreographer and had already organised a number of public festivals. Together with the local association (CACO) she develops what we call ‘cultural experiences’.

Like the project called ‘Touro Azul’.

Madalena is very experienced in creating something with and for local communities.

CD: And what does the name Touro Azul mean?

MC: Touro Azul is ‘the blue bull.’ This is a fairy tale that a generation of grandparents in the remote coastal region – folks who could barely read or write – handed down orally to the next generation.

CD: And what is in store for visitors on the trail of the blue bull?

MC: There are a number of encounters that we offer. Like with Odete, an old peasant woman who lives on her farm.

Over many years she has transformed her house into a little museum, and can

tell wonderful stories about it. Folks can also visit a fishing village, speak with the fishermen there and hear them spin yarns about the stormy Atlantic, or observe how the people there in the village still produce beautiful handcrafts like ceramics. And on the more cosmopolitan side, we offer an evening spent with a local family of artists in their little private home, where traditional and international dishes from around the world are prepared.

CD: So here we have three possibilities, three tours, let’s say. How many do you plan to organise in all?

MC: We imagine offering fifteen experiences and tours in the coming seasons.

CD: In which countries does this find the most resonance?

MC: We have received quite favourable reactions and a good number of bookings from Germany and the Netherlands.

We present our project at trade fairs and the feedback is always quite convincing.

This above all, because the tours are truly structured in a different way from everything else that one has on offer. We want to develop a viable and trusted brand with Touro Azul. And this for all those involved. For the local residents. And for the tourists.

CD: So, to sit the entire day at your desk and think? It’s very lovely out here, in such a remote location. But that alone does not suffice to bring about inspiration. Where do the ideas come from, that then become concepts?

MC: You’re right. It can’t all happen just sitting at my desk. I enjoy travelling to international tourism conferences, and to identify the gaps that we can fill here in Alentejo. My objective is to build an international network of similar projects, in which folks offer reciprocal support for one another. Because the tasks and the problems are always similar.

One further inspiration is the feedback from the tourists. We conduct quantitative and qualitative studies in cooperation with the local university and the anthropologists who teach there. In these studies the tourists and the local populace – along with the businesses and individuals in the network – are asked to provide feedback on our work. You hear quite a lot from this, things that you never imagined at first.

CD: This all sounds like a plan that stands just before its ultimate realisation.

What remains to be done in the future?

MC: Oh, there is plenty yet to do. At present we have arrived at a very specific juncture in tourism. On the one hand, many people want to promote and develop tourism further, while others think that there are enough tourists coming here already. And the majority of tourists quite openly hope that the

Der Job war in Aljezur, im Südwesten Portugals, am Land. Ich dachte mir, das sehe ich mir mal an, denn ich kannte und liebte die Region schon von vielen Urlauben und Wochenendreisen her. Und da war noch was: Noch bevor ich eine Zusage von Casas Brancas bekam, hatte ich mich schon entschieden, ins Alentejo umzuziehen.

Egal, ob die ja oder nein gesagt hätten.

CD: Was ist Casas Brancas eigentlich genau? Der Name lässt ja auf vieles schließen.

MC: Casas Brancas ist ein sehr regionales und kreatives Tourismus-Netzwerk, in dem Mitglieder und Hausvermieter ein hohes Level an Qualität liefern. Dazu auch die Idee einer Seele der Region. Mit Seele meine ich jene Identität, die die Region widerspiegelt. Das bedeutet die Verwendung von lokalen Produkten und das Wertschätzen hiesiger Traditionen und regionaler Kultur. Casas Brancas lieferte Authentizität. Als wir mit unserer Website begannen, gab es noch keine Plattformen wie etwa Trip-Advisor. Das war unser Startvorteil, der bis heute seine Gültigkeit hat.

CD: Mit Casas Brancas allein war

MC: Genau! Aber auch Restaurants, Transportunternehmen, Touranbieter etc.

Unser Ziel ist es internationale Gäste ins Alentejo zu bringen, die hochwertigen Qualitätstourismus statt Massentourismus suchen. Zudem: Die Gegend hier wäre für einen Massenansturm auch nicht gerüstet.

Unser Schwerpunkt liegt auf Natur und Nachhaltigkeit. Wandern lag dabei eigentlich auf der Hand und wir ahnten, dass das Anbieten von Wanderungen funktionieren wird.

MC: Nein, wir haben danach unser Folgeprojekt 'Rota Vicentina' ins Leben gerufen – primär fokussiert auf ausländische Zielmärkte. Das war in der Zeit der Finanz-Schuldenkrise nach 2008, die Portugal, anders als andere Länder, aus eigener Kraft gemeistert hat.

Rota Vicentina entwickelte sich aus dem Casas-Brancas-Projekt und und besteht zur Zeit aus etwa zweihundert Mitgliedern und Vermietern: hauptsächlich Agrotourismen, Bed & Breakfasts und Campingplätze – mehrheitlich natürlich lokale Unternehmen. Darüber hinaus bieten wir unterschiedlich lange Touren entlang von gut ausgeschilderten Wanderwegen an. Rota Vicentina ist übrigens nach dem Namen der Küste (Costa Vicentina) benannt.

CD: Hat Wandern in Portugal überhaupt Tradition? Gab es in Portugal vor Ihrer Initiative bereits Wanderwege?

MC: Es gab gar keine. Portugal hat überhaupt keine Wandertradition. Es existiert nicht einmal ein Wort für wandern.

Nur ein Prozent der Portugiesen, so sagen Umfragen, ist jemals gewandert.

Momentan ändert sich das gerade, weil viel mehr Portugiesen durch das eigene Land reisen und Fitness und Bewegung im Trend liegen. Das Wandern wurde uns zu Beginn von Rota Vicentina als weltweit boomender Markt prognostiziert.

Und die Prognose ist aufgegangen. 2012 haben wir die ersten Wanderwege eröffnet und seither sehe ich viele Leute auf unseren markierten Wegen gehen, als wären diese schon immer dagewesen.

MC: Vielfältig. Die lokale Bevölkerung steht für uns an erster Stelle. Die Einwohner eines Ortes wissen meist gar nichts über ihre Rolle als mögliche Gastgeber und haben auch selten eine Ahnung, welche Leistungen sie anbieten können. Als Tourist braucht man ja jemanden, mit dem man interagieren kann.

CD: Was gibt es auf den Routen der Rota Vicentina zu entdecken?

MC: Wir entwickeln gerade verstärkt die Rundwege, die wir anbieten.

Wir sehen zu, dass die Leute länger an einem Ort bleiben und von dort aus zu unterschiedlichen Aktivitäten aufbrechen. Wandern ist mitunter nicht immer genug Angebot. Was macht man zum Beispiel bei Schlechtwetter? Oder wenn ein Familienmitglied nicht gerne wandert oder nicht fit genug ist? Für diese Zielgruppe schnüren wir gerade neue Ideen zu Paketen zusammen.

CD: Und wie sehen die aus?

CD: Sie sitzen hier an ihrem Arbeitstisch vor einigen Plänen. Gibt es denn schon neue Projekte?

MC: Es gibt entlang der Wege winzige Dörfer und dazwischen kann man einen ganzen Tag, ohne einen Menschen zu sehen, in der wunderschönen, wilden Natur einfach nur wandern. Das ist selten in Europa. Einzigartig ist auch, dass dieses Jahr geschätzt mehr als 15 Prozent portugiesische Wanderer auf unseren Wanderrouten unterwegs sind. Und nicht nur ausländische Touristen. Darauf sind wir mächtig stolz.

Ja, die Landschaft ist wichtig. Aber viel wichtiger noch sind die Menschen, die die Kultur des Ortes prägen und sie anderen vermitteln.

CD: Und wie setzen Sie ihre Ideen für Touristen um?

MC: Indem wir uns, wie schon gesagt, um die lokalen Einwohner und ihre Angebote kümmern. Unser neues Projekt involviert keine Firmen oder Tourismus-Profis. Wir bieten nichts an, das mit Tourismus per se zu tun hat oder für Touristen extra erschaffen wurde. Wir wollen einen Weg finden, bei dem Touristen mit der lokalen Bevölkerung zusammen agieren, ohne

dass dabei das normale Alltagsleben der Einheimischen gestört wird. Zur Umsetzung dieses Projekts haben wir Madalena Vitorino engagiert, eine frühere Choreographin, die in der Region lebt

MC: Es sind ja mehrere Begegnungen, die wir anbieten. Etwa die mit Odete, einer alten Bäuerin, die auf ihrem Hof lebt. Sie hat ihr Haus über die Jahre hinweg zu einem kleinen Museum umgestaltet und kann darüber wunderbare Geschichten erzählen. Sie können auch ein Fischerdorf besuchen, dortmit den Fischern reden und sich vom stürmischen Atlantik berichten lassen oder zusehen, wie sie dort, im Ort, Keramik und anderes traditionelles Handwerk herstellen.

Etwas weltläufiger ist dann der Abend bei einer hiesigen Künstlerfamilie in ihrem privaten, kleinen Haus, wo dann typisch alentejanisch gekocht wird.

CD: Das sind mal Ereignisse, drei Touren sozusagen. Wie viele planen Sie insgesamt einzurichten?

und schon einige öffentliche Festivals organisiert hat. Sie kennt also Land und Leute und entwickelt zusmmen mit der lokalen Organisation 'CACO' sogenannte kulturelle Ereignisse. Etwa ein Projekt namens 'Touro Azul'.

CD: Und was bedeutet Touro Azul?

MC: Touro Azul bedeutet: 'Der blaue Bulle'.

Das ist ein Kindermärchen, das in der entlegenen Küstengegend von der Generation der Großeltern, die ja kaum Lesen und Schreiben konnte, mündlich an die nächste Generation weitergegeben wurde.

CD: Und was erlebt man auf dem Weg des

blauen Bullen?

MC: Wir denken, in den kommenden Saisonen fünfzehn Ereignisse und Touren anbieten zu können.

CD: In welchen Ländern kommt das besonders gut an?

MC: Aus Deutschland und den Niederlanden haben wir sehr gute Reaktionen und viele Buchungen. Wir stellen unser Projekt auf Messen vor und das Feedback ist stets überzeugend. Das vor allem, weil die Touren wirklich anders gestaltet sind als all das, was man sonst angeboten bekommt. Wir wollen mit Touro Azul eine vertrauenswürdige Marke erschaffen.

Und zwar für alle Seiten. Für die lokale Bevölkerung. Und für die Touristen.

CD: Den ganzen Tag am Schreibtisch sitzen und denken? Es ist zwar sehr schön hier in der Abgeschiedenheit, doch wird das allein zur Inspiration nicht reichen.

Woher kommen die Gedanken, die dann zu Konzepten werden?

CD: Das klingt alles nach einem Plan, der vor seiner endgültigen Realisation steht.

Was bleibt da in Zukunft noch zu tun?

MC: Oh, da bleibt viel zu tun. Wir sind momentan im Tourismus hier an einem sehr speziellen Punkt angelangt. Einerseits wollen viele den Tourismus weiter fördern und ausbauen, andererseits aber denken einige, dass schon genug Touristen hierher kommen. Die Mehrheit der Touristen zudem hofft freilich auch, dass sich die Region nicht verändert. Sollen also der Alentejo und unsere Region hier an der Küste weiter ein Geheimtipp bleiben?

Oder nicht? Und wie werden wir reagieren, wenn uns die ganze Welt entdeckt?

Darüber gibt es auch in den kommenden Jahren genug nachzudenken.

DR JOSÉ PEDRO SALEMA, CEO OF EDIA (THE CONCERN RESPONSIBLE FOR THE DESIGN, IMPLEMENTATION AND PROMOTION OF THE ALQUEVA PROJECT), SPEAKING ABOUT THE IMPACT OF HIS PROJECT, AND THE CHANGES IT BRINGS TO AGRICULTURE IN ALENTEJO. AND WHAT HE HIMSELF LIKES TO DO BEST AT THE LAKE.

Dr. José Pedro Salema, we have just driven over the bridge of the Alqueva Reservoir, one of the largest artificial bodies of water in Europe. How did this project come into being? And why is there so much water being accumulated in Alentejo?

CD:

CD:

But the dam doesn’t look that old …

It was astounding in those times, that water rights with respect to the rivers were settled fairly and justly, since neither country was in the EU and both were ruled by dictators. Portugal received the international rights to the resources of the Guadiana River. So then, the project that was waiting to be developed was pulled out of the desk drawer. In 1974, Portugal experienced the comparatively bloodless Revolution of 25 April, but as is so often the case, the economy collapsed for a time. Even after business got back on hits feet, as well as after

CD: Where does the water for the reservoir come from?

From the Guadiana River that we’ve already mentioned. The water resources of this river fluctuate greatly. In practical terms, now and then comes a time, every two to three years, that the water barely flows at all – and then there will be huge volumes crashing against the walls.

But with the construction of the dam, continuity in ‘harvesting the water’ is possible, which naturally is very important in the summertime.

JPS:

The matter of drought and statistics is a thing unto itself. For example, compare the rainfall volume for Paris, France with that of the city of Beja in southern Alentejo – they both have nearly the same amount of annual rainfall. But in Beja, it does not rain for a single minute in August. The oak trees here in Alentejo make it through this arid phase without difficulty – as do the olive trees and the grapevines, although not so handily.

The rest of agriculture here, hardly at all. The dam and the water are here now for all of them.

CD: Now we’re getting down to business.

What are the objectives with the dam?

The Alqueva project has a number of dimensions to it. One of these is distribution of water for farming.

Another involves generating of energy, and then comes that of supplying water for the general public. You must imagine: in the summer months during the 1980s and 90s there were regular droughts in Alentejo, and the residents had to be supplied with water by means of tankers.

JPS:

Correct. It wasn’t until 1993/94 that the government decided to readdress the Alqueva project. That was also because until 1968 there was no regulation concerning the water that flowed from Spain into Portugal. First an agreement had to be concluded and signed with our neighbour Spain, where the sources of the water are located.

JPS:

In 1995, the company EDIA (Empresa de Desenvolvimento e Infraestruturas do Alqueva, the ‘Alqueva Development and Infrastructure Company’) was founded and immediately went to work building the dam. The dam was finally completed in 2002. Late, but indeed completed.

Oh, the reservoir here is an old project, that according to records originated some 110 years ago, back when Portugal was still a kingdom and getting a late start at modernisation. Even back then folks had the dream of a dam and a secure water supply; these have always been subjects of discussion in the south of Portugal. It is very dry, quite arid here.

So in the 1950s folks began to work on the idea of building a dam.

JPS:

joining the EU, the project was kept on ice in Portugal, even though there was no lack of necessity.

And then finally, tourism and infrastructure provide an important aspect.

General economic development in the region has been enhanced, where before, southern Alentejo fell prey to emigration, a declining economy, hopelessness and not much in the way of possibilities.

One task for the reservoir that has become very important, just in recent years, involves combatting the forest fires that have become a more regular occurrence in the south of Portugal; they start because of the heat, but thanks to water from the Alqueva can be efficiently extinguished. So the dam and the water serve quite a range of objectives.

that consists of twenty-five interconnected dams and reservoirs. It serves sixty-nine hydroelectric power plants that are all interconnected with one another, plus about 120,000 hectares of irrigation.

And the lake offers many opportunities for tourism. In addition, agricultural practices have changed.

CD:

And how, please?

What is the current status of the project?

Let’s take olive oil production as an example. Half of the area that has come under cultivation because of the dam is used for growing olive trees, and some two thirds of Portugal’s total production of olive oil comes from these newly developed tracts. In 2017 Portugal enjoyed its highest-ever volume of olive oil production, which had only become possible because of the Alqueva project.

The Alqueva dam, we can say, has solved many of the region’s difficulties.

We now have a water system in Alentejo

And in addition to olives, the agricultural sector is now getting started with the production of almonds and of legumes.

CD:

JPS:

We are witnessing a true revolution in regional agriculture. And the progress continues.

But there are also problems and anxieties connected with any revolution brought about by industrialisation in agriculture. Do you not have any concerns, that it could lead to a monocultural economy, to ruthless exploitation of the soils and neglect of environmental issues?

CD:

Swimming, sailing, water-skiing or just enjoying the peace and quiet! And I can highly recommend the houseboats on the Alqueva reservoir, with which one can make lovely two-hour tours. And you don’t even need a boating licence to do it. After thirty minutes of instruction, you can cast off. And with GPS, navigation is easy.

JPS:

On the lake itself things are very calm.

You can cruise for hours along the shoreline without seeing another person, far and wide. This aspect is quite important for those tourists seeking rest and relaxation. And then there are the intriguing cultural opportunities afforded by the village of Monsaraz or the town of MourĂŁo on the shores of the lake. The view from Monsaraz over the land and the lake is fantastic.

To wind up our talk: what is the greatest challenge in the future of the project?

CD:

CD: How important is Alqueva for tourism?

CD: Now a personal question, if I may: what do you do with friends at the reservoir?

No, I am not worried about that sort of thing. It is less than ten per cent of the total area in the province of Alentejo, that we are irrigating. We are very glad that we have created this infrastructure.

We utilise the water very efficiently and above all in a sustainable manner.

For example, there is more progress being made toward fortifying the soil by planting legumes. One observes a general trend toward sustainable projects in agriculture, which we are propagating, like agroforestry, which combines elements of farming with elements of forestry. The EsporĂŁo Winery in Alentejo is leading the trend with a good example here, and has in the meantime become the largest producer of fava beans, which they plant in between their olive trees and their grapevines.

JPS:

Unfortunately, tourism is still limping a ways behind agriculture, but does have enormous potential. The originally planned hotel project was temporarily put on hold because of the financial crisis that followed the banking crash of 2008.

JPS:

We are very happy with the current state of development, regarding the lake and its environment. It is our objective to attain certification for the region in the area of sustainability. Sort of to put the crown on the whole affair. And then we would be glad if more producers of agricultural products would sell directly to consumers. And not just supply their wares to distribution channels.

Der See hier ist ein altes Projekt, das laut Aufzeichnungen schon vor 110 Jahren seinen Ursprung genommen hat, als Portugal noch ein Königreich und auf den späten Sprung in die Moderne war. Schon damals gab es den Traum von einem Damm beziehungsweise einer Wassergarantie, die im Süden Portugals immer Thema sein wird. Es ist ja sehr trocken hier. In den 50er-Jahren wurde dann an der Idee eines Wasserstaudammes gearbeitet.

JPS:

CD: So alt sieht der Damm aber nicht aus.

CD: Woher kommt das Wasser für den Damm?

JPS: Aus dem schon oben erwähnten Guadiana. Die Wasserressourcen des Flusses fallen sehr unregelmäßig aus.

Das bedeutet, dass manchmal zwei bis drei Jahre kaum Wasser fließt, dann aber wieder sehr große Mengen an die Mauern prallen. Doch mit der Errichtung des Dammes ist Kontinuität beim Ernten von Wasser möglich, was logischerweise im Sommer sehr wichtig ist.

Das mit der Trockenheit und den Statistiken ist so ein eigenes Ding: Vergleicht man zum Beispiel die Niederschlagsmenge von Paris und der Stadt Beja im südlichen Alentejo, so haben beide nahezu dieselbe Menge an jährlichem Regenfall. In Beja aber regnet es im August nicht eine einzige Minute. Die

Wie kam es überhaupt zu dem Projekt?

Und warum staut man so viel Wasser im Alentejo auf?

CD:

1995 wurde dann die Gesellschaft EDIA gegründet und gleichzeitig auch mit dem Bau des Staudammes begonnen. 2002 wurde der Damm endlich fertiggestellt.

Spät, aber doch.

Die Wassernutzung der Flüsse wurde, für damalige Zeiten erstaunlich, denn beide Länder waren ja nicht in der EU und wurden von Diktatoren regiert, fair und gerecht aufgeteilt. Portugal bekam die internationalen Rechte zur Nutzung des Guadiana Flusses. Da wurde das in der Entwicklung stehende Projekt wieder aus der Schublade geholt. 1974 kam es dann in Portugal zur sanften Revolution, doch die Wirtschaft brach – wie oft in solchen Fällen – kurzzeitig zusammen. Auch nachdem sie sich wieder erholte und auch nach dem EU-Beitritt Portugals lag das Projekt noch lange auf Eis, obwohl es ja der Notwendigkeit nicht entbehrte.

Eichenbäume hier im Alentejo schaffen diese Dürre-Phase problemlos zu überstehen, Oliven und Reben auch, aber im geringeren Maße. Der Rest der Landwirtschaft leider kaum. Für all die sind der Damm und das Wasser jetzt da.

CD: Da sind wir ja beim Thema. Welche Ziele werden mit dem Damm verfolgt?

JPS: Das Projekt Alqueva hat mehrere Dimensionen. Eine davon ist die Distribution von Wasser für die Landwirtschaft. Eine weitere ist die Energiegewinnung und die öffentliche Versorgung mit Wasser. Sie müssen sich vorstellen: In den Sommermonaten der 80er- und 90er-Jahre gab es regelmäßig Wassernöte im Alentejo, in welchen die Bevölkerung mit Tankwägen versorgt werden musste. Schlussendlich sind aber auch Tourismus und Infrastruktur ein wichtiger Aspekt. Durch Wasser wird die wirtschaftliche Entwicklung der Region gefördert, die ja davor von Abwanderung, einer rückläufigen Wirtschaft, Hoffnungslosigkeit und nur wenigen Möglichkeiten geprägt ist.

Ein erst in den letzten Jahren sehr wichtiger Auftrag für den Stausee sind die immer häufiger werdenden Waldfeuer im Süden Portugals, die aufgrund der Hitze entstehen und die mit dem Wasser aus dem Alqueva effizient gelöscht werden können. Der Damm und das Wasser erfüllen also viele Ziele.

Wie ist der aktuelle Status des Projekts?

CD:

Der Alqueva Staudamm, das kann man so sagen, hat viele Probleme der

Region gelöst. Momentan haben wir im Alentejo ein Wasser-System, das aus 25 verbundenen Dämmen und Reservoirs besteht. Das bedient 69 Wasserkraftanlagen, die alle miteinander verbunden sind und rund 120.000 Hektar Bewässerungsfläche. Und der See bietet dem Tourismus viele Möglichkeiten. Zudem hat sich die Landwirtschaft verändert.

CD:

Und wie?

Zum Beispiel bei der Olivenölproduktion. Die Hälfte der durch den Staudamm neu bewirtschafteten Fläche wird für Olivenbäume genutzt und rund zwei Drittel der gesamten portugiesischen Olivenölproduktion entstammt dieser neu entwickelten Fläche. 2017 gab es die höchste Produktionsmenge an Olivenöl in Portugal, die aufgrund des Alqueva Projekts erst möglich wurde.

JPS:

Neben Oliven startet die Landwirtschaft jetzt auch mit der Produktion von Mandeln und Hülsenfrüchten durch.

Wir sehen eine echte Revolution in der regionalen Landwirtschaft. Und die schreitet weiter voran.

CD: Aus der industriellen Revolution in der Landwirtschaft entstehen aber auch Probleme und Ängste. Haben Sie keine Sorge, dass es zu Monokultur, zur Ausbeutung der Böden und Vernachlässigung der Umwelt kommt?

Nein, diese Sorge habe ich nicht. Es sind weniger als zehn Prozent der Gesamtfläche im Alentejo, die von uns bewässert werden. Wir sind froh darüber, dass wir diese Infrastruktur geschaffen haben.

Das Wasser nutzen wir sehr effizient und JPS:

überaus nachhaltig. Es wird zum Beispiel vermehrt mit dem Anbau von Hülsenfrüchten zur Bodenstärkung gearbeitet.

Der Trend geht hin zu nachhaltigen Projekten in der Landwirtschaft, die wir auch propagieren. Zum Beispiel die Agroforstwirtschaft, bei der Elemente der Landwirtschaft mit Elementen der Forstwirtschaft kombiniert werden. Das Weingut Esporão im Alentejo geht hier mit gutem Bespiel voran und ist mittlerweile der größte Produzent von Fava-Bohnen, die sie zwischen ihre Olivenbäume und Weinreben setzen.

Am See selbst ist es sehr ruhig. Man fährt Stunden mit dem Boot am Ufer entlang, ohne einen Menschen weit und breit zu begegnen. Dieser Aspekt ist für ruhesuchende Touristen überaus interessant. Und dann gibt es noch die kulturell hochwertigen Orte Monsaraz oder Mourão im Süden des Sees. Von Monsaraz aus ist der Ausblick über das Land und den See fantastisch.

CD: Wie wichtig ist Alqueva für den Tourismus?

Wir sind sehr glücklich mit der aktuellen Entwicklung des Sees und seiner Umgebung. Unser Ziel ist, eine Zertifizierung der Region im Bereich Nachhaltigkeit zu bekommen. Sozusagen als Krone des Ganzen. Und dann würden wir uns freuen, wenn mehr Produzenten landwirtschaftlicher Produkte hier direkt an den Endverbraucher verkaufen würden. Und nicht in Bausch und Bogen an die Industrie.

CD: Mal eine private Frage: Was machen Sie mit Freunden am Stausee?

Schwimmen, Segeln, Wasserski oder einfach nur die Ruhe genießen. Sehr empfehlen kann ich auch die Hausboote am Alqueva Stausee, mit welchen man wunderschöne Zwei-Tages-Touren machen kann. Dazu braucht man nicht mal eine Bootslizenz. Nach einer 30-Minuten-Einschulung darf man schon loslegen. Das funktioniert über GPS ganz easy.

Der Tourismus hinkt der Landwirtschaft leider noch etwas hinterher, hat aber enormes Potenzial. Die ursprünglich geplanten Hotelprojekte wurden kurzfristig aufgrund der Wirtschaftskrise nach dem Bankencrash von 2008 auf on hold gestellt.

JPS:

CD: Abschließend: Was ist die größte Herausforderung in der Zukunft des Projekts?

THE DOLLS ARE DANCING IN ESTREMOZ -In Estremoz tanzen die Puppen

Maria Pires. For thirty-three years she has been creating «Bonecos de Estremoz».

We have come to visit Maria Pires at her private residence in Estremoz. She is one of only six ceramic artists who breathe life into the famous Bonecos de Estremoz, the dolls of Estremoz.

Concerning the history of the dolls of Estremoz, Maria Pires tells us: ‘The people of the region used to have very little money, and so could not afford to purchase figurines of the saints from the famous artists. Wood was far too costly, and so they formed the figures out of inexpensive clay’.

Production of the dolls reaches back into the 17th century. In 2007, the «Bonecos de Estremoz» were declared an immaterial world cultural heritage by UNESCO. The unique nature of the dolls lies on one hand in the art of modelling the figures, but from another perspective in the diversity of the characters – their naïve aesthetics and unusually vivid colours.

Figures that are particularly popular include allegorical images and ensembles such as «Amor é Cego» (love is blind) or «Primavera» (springtime).

aria Pires’s atelier is small, strewn with coloured glass and brushes, with an electric kiln. Spread out around her studio, clay figures watch over the proceedings, figurines that depict either sacred or everyday male and female figures at work or at play. The manufacture of these famous dolls is closely connected with the Alentejo region, as this craft reflects the locally popular categories nature, belief, local colour, artisanal occupations and traditions. The accessories of the dolls make it easy to assign them to the various categories and subjects. And a good number of them are quite humorous in nature.

Maria Pires. Seit 33 Jahren formt sie Bonecos de Estremoz.

Wir besuchen Maria Pires in ihrem privaten Wohnhaus in Estremoz. Sie ist eine von insgesamt sechs Keramik-KünstlerInnen, die den berühmten Bonecos de Estremoz, den Puppen von Estremoz Leben einhauchen.

aria Pires Atelier ist klein, gespickt mit Farbgläsern, Pinseln und einem elektrischen Brennofen. Verteilt auf das ganze Atelier wachen Ton-Figuren über das Geschehen, die entweder sakrale, oder alltägliche Frauen- und Männerfiguren bei der Arbeit oder in ihrer Freizeit darstellen.

Die Herstellung dieser berühmten Puppen ist eng mit der Region Alentejo verbunden, da dieses Handwerk die hier populären Kategorien Naturelemente, Glaube, lokale handwerkliche Berufe und Traditionen widerspiegelt. Die Accessoires der Puppen machen sie den unterschiedlichen Kategorien und Themen leicht zuordenbar. Und nicht wenige haben viel Humor. Besonders beliebte Figuren sind allegorische Gestalten und Ensembles wie: 'Amor é Cego' (Liebe ist blind) oder 'Primavera' (Frühling).

Maria Pires über die Geschichte der Puppen von Estremoz: „Die Menschen der Region hatten früher nicht viel Geld und konnten sich keine Heiligenfiguren von berühmten Künstlern leisten. Holz war viel zu teuer und so fertigten sie die Figuren aus billigem Ton.“ Die Herstellung der Puppen geht bis ins 17. Jahrhundert zurück. Die Bonecos de Estremoz wurden 2007 von UNESCO zum immatriellen Weltkulturerbe erklärt. Die Besonderheit der Puppen liegt einerseits in der Kunst der Modellierung der Figuren, aber auch in ihrer Diversität der Charaktere, ihrer naiven Ästhetik und außergewöhnlichen Buntheit. ◊ Text: Caroline Derler Photos: © Manfred Klimek

And at the same time enhance the reputation of our oils.

CD: I have recently heard about a record

olive harvest in 2018. Was this record contingent upon the weather?

Ceepal means: Centro de Estudos e Promoção do Azeite do Alentejo. And one must first pronounce it correctly in one breath. That’s the reason behind our abbreviation.

GTM:

CD: How long has this organisation been in existence, and what are its objectives?

GTM: Cepaal was founded in 1999 as a non-profit-organisation; the name stands for The Research and Promotion Centre for Alentejano Olive Oil.

Oh yes! True, that Alentejo is already the region within Portugal where 79 % of all the olive oil in the country is produced, and even with Portugal being the seventh-largest olive oil producer in the world. Nevertheless, one can fine-tune matters of quality and also of volume, by means of focussed promotional programmes.

CD: Does olive oil from the Alentejo region even need promotion?

GTM:

CD: 79 %

Then Cepaal would have hundreds of members, if not thousands. Yes, no?

GTM: Well, you missed it by a mile. All told we have, thanks to the economic structures in Alentejo, only thirty-nine members. Among these are the twentysix larger olive oil producers in the region, and thirteen institutions: governmental agencies, communes and universities. All members pursue the same objective: we

No. Many individuals certainly believe that, but the climate has nothing to do with it. The actual reason is: after ten years, this year for the first time, our recently planted olive groves – beautifully supplied with water by the new Alqueva Reservoir – have come fully into production.

The great olive boom occurred with the construction of the dam, which attracted big investors from Portugal and abroad as well. They invested in modern olive oil production with new and very modern plantings.

GTM:

CD: What

distinguished these new plantations of olive trees from the other and older plantings?

On the new sites, we can plant more than two thousand trees per hectare.

This is quite a contrast with the older olive groves, which have an average population of 100 trees per hectare.

The new olive groves are laid out like modern vineyards, so that the harvest from October to December can be taken over by machines.

GTM:

CD: That

sounds rather like ‘intensive’ cultivation. Is the also a movement in the direction of ‘extensive cultivation’ or biodynamic farming?

Yes, you are correct – the cultivation is of the intensive character. But the technology is the very latest. And state-ofthe-art technology seeks to conserve resources, rather than placing a strain upon them. Interest is biodynamic farming is growing, true; but at the moment there are only a few producers who are climbing aboard that train. And, to answer your question, there are many smaller and older olive groves that are cultivated in an ‘extensive’ manner.

CD: You

have producers that offer top quality. But the consumers unfortunately know very little about this. How do you increase the popularity of your olive oils?

This lack of popularity is truly our greatest problem. Portugal is not very well known as an olive oil-producing country. People only think of Portugal in terms of football, about Cristiano Ronaldo. I would like it very much if Ronaldo had olive trees planted in Alentejo and would press his own oil from them. That would be super!

GTM:

CD: I

fear that Mr Ronaldo has other problems on his mind at the moment, and cannot invest his money in olive trees. So let me ask once more: how do you enhance the popularity of your olive oils?

With more in the way of collaboration. I wish that we in Alentejo – and Portugal in general – availed ourselves more effectively of synergies and cooperative efforts. One is simply stronger and more effective working together with others. It matters little, whether with businesses in the tourist industry, or with winegrowers or with other trading partners.

But the networking and cooperative systems in Portugal do not work adequately, even though the process creates clearly recognisable win-win situations for both sides.

GTM:

CD: Where does the search for synergies work the best?

GTM: We have had the best experiences with the collaborative marketing of olive oil and wine. In addition, we work together with Alentejo’s viticultural commission (CVRA). Certainly, the wine estates are quite a bit ahead of us, since they recognised quite-early on that it is better to develop and market their own brands than it is to sell the wine in tank as a product without a name.

CD: Which

are the most important export markets for olive oil from Alentejo?

GTM: Brazil, Canada and the USA. There are a great many expatriate Portuguese living in those countries, people who have immigrated and like to have a connexion to their former homeland. And it‘s especially the Brazilians, who love the mild and sweet oil from Alentejo.

CD: And how does the situation in Portugal itself look these days?

here is a question, that you are certainly not hearing for the first time. What is it that makes olive oil from Alentejo special?

GTM: We have here in Alentejo, compared with other oil-producing regions, a majority of very high quality olive oils and very modern pressing facilities.

Our olive oil from our own indigenous varieties of olive distinguishes itself for its intensity of fruit, slightly elevated sweetness and a slightly nutty almondlike flavour.

CD: In the food industry, olive oil has for

quite a while now been considered a component of the so-called superfood, included among those foodstuffs that strengthen the body and the soul, and are thus indispensable in modern nutrition.

Is this true? What do you think?

GTM: It’s different here because, surprisingly enough, the Mediterranean regions are steadily consuming less olive oil.

For us this means that we have a lot of work to do in communications, within Portugal as well. So we are working together with Portuguese chefs and sommeliers, so that these folks get to know and recognise Alentejano olive oil and the different varieties of olive oil.

Their newly acquired knowledge will soon be applied to the creation of new dishes. And for the sommeliers we are producers about whom good stories can be told. This has been successful with the wines from Alentejo for some time now, but the Portuguese are not yet proud enough of their own olive oil.

The relationship between olive oil and good health is certainly an important topic, and arrived with the hype concerning the Mediterranean lifestyle thirty years ago. But I have not yet thought about the concept ‘superfood’.

We don’t have to explain again here that olive oil is good for you. We are glad that we can appeal more to younger folks, and to some truly young segments of society.

GTM:

CD: Can

you finish up with some tips for us, where folks can explore, discover and taste olive oil?

Of course! One really good idea for an excursion would be a visit to the olive oil museum in Moura. That is a charming little house that up until seventy years ago was a functioning olive oil press. I also recommend guided tours directly at the olive oil producers’ establishments. It’s best to arrange these beforehand with a telephone call or an email. Olivenöl aus dem Alentejo überhaupt eine Förderung?

GTM: Oh

ja! Zwar ist der Alentejo heute schon innerhalb Portugals jene Region, in der 79 % aller Olivenöle des Landes produziert werden und Portugal der siebtgrößte Olivenölproduzent der Welt.

Dennoch kann man in Sachen Qualität und auch Quantität mit gezielten Förderprogrammen noch an den Stellschrauben drehen.

CD: 79 % des portugiesischen Olivenöls?

Da wird Cepaal ja hunderte, wenn nicht tausende Mitglieder haben, oder?

GTM: Weit

GTM: Nein.

Das denken sicher viele, aber das Klima hat nichts damit zu tun. Der eigentliche Grund ist: Nach zehn Jahren stehen heuer erstmals zeitnah angelegte und durch den neuen Alqueva-Staudamm großzügig bewässerte Olivenbaumhaine voll im Ertrag. Der große Olivenboom kam erst mit dem Bau des Dammes, der große Investoren aus Portugal und dem Ausland anlockte. Die investierten in die moderne Olivenölproduktion mit neuen, und sehr modernen Anlagen.

CD: Was unterscheidet diese neuen Olivenbaum-Anlagen von anderen, alten Anlagen?

CD: Ich habe von einer Oliven-Rekordernte in 2018 gehört. Ist dieser Ernterekord klimatisch bedingt?

Insgesamt haben wir aufgrund der wirtschaftlichen Strukturen im Alentejo nur 39 Mitglieder, darunter die lediglich 26 größeren Olivenölproduzenten der Region und 13 Institutionen, also staatliche Einrichtungen, Gemeinden und Universitäten. Alle Mitglieder verfolgen das gleiche Ziel: Wir möchten unser Olivenöl aus dem Alentejo nicht nur national, sondern auch international bekannter machen. Und gleichzeitig auch das Ansehen unseres Öls steigern.

GTM: Auf

den neuen Anlagen können etwa 2.000 Bäume pro Hektar gepflanzt werden. Ältere Olivenhaine haben hingegen nur durchschnittlich 100 Bäume pro Hektar. Die neuen Olivenanlagen sind wie moderne Weinberge angelegt, bei denen die Ernte von Oktober bis Dezember auch von Maschinen übernommen werden kann.

GTM: Die besten Erfahrungen haben wir bei der gemeinsamen Vermarktung von Olivenöl und Wein. Dazu arbeiten wir mit der alentejanischen Weinbaukommission (CVRA) zusammen. Die Weingüter sind uns freilich schon etwas voraus, da sie schon früh begriffen haben, dass es besser ist, eigene Marken zu entwickeln und zu vermarkten, als die Weine im Tank als No-Name-Produkt zu verkaufen.

klingt nach intensiver Bewirtschaftung. Gibt es auch eine Bewegung hin in Richtung extensive Bewirtschaftung und biodynamischer Landwirtschaft?

GTM: Ja, Sie haben recht, die Bewirtschaftung ist intensiv. Doch die Technik ist auf dem neuesten Stand. Und der neueste Stand der Technik schont die Ressourcen, anstatt sie zu belasten. Das Interesse an biodynamischer Bewirtschaftung steigt zwar, es sind aber momentan nur wenige Produzenten, die auf diesen Zug aufspringen. Und, um auch die eigentliche Frage zu beantworten: Natürlich gibt es auch noch viele kleinere, ältere Olivenhaine, die extensiv bewirtschaftet werden.

CD: Wo

klappt die Suche nach Synergien am besten?

CD: Welche sind denn die wichtigsten Exportmärkte für Olivenöl aus dem Alentejo?

CD: Sie haben Betriebe mit Top-Qualität.

Nur wissen leider die Konsumenten wenig davon. Wie steigern Sie die Popularität Ihrer Olivenöle?

Kanada und USA. Dort leben viele Portugiesen, die ausgewandert sind und einen Bezug zu ihrer alten Heimat haben. Vor allem die Brasilianer lieben das milde, süße Öl aus dem Alentejo.

GTM: Mangelnde

CD: Wie

Popularität ist wirklich unser Hauptproblem. Portugal ist als olivenproduzierendes Land leider nicht groß bekannt. Jeder denkt bei Portugal nur an Fußball, an Cristiano Ronaldo.

Ich würde mir wünschen, Ronaldo hätte Olivenbäume im Alentejo und würde sein eigenes Öl daraus pressen. Das wäre super!

GTM: Brasilien,

GTM: Anders, denn der mediterrane Raum konsumiert erstaunlicherweise immer weniger Olivenöl. Das heißt für uns, dass wir auch innerhalb Portugals viel Kommunikationsarbeit zu leisten haben.

Unser Olivenöl aus unseren autochthonen Olivensorten unterscheidet sich von anderen Olivenölen durch seine Fruchtintensität, seine etwas gehobene Süße und seinen leicht nussigen, mandelartigen Geschmack.

CD: In der Lebensmittelbranche gilt Olivenöl schon länger als Bestandteil des so genannten 'Superfood', zählt zu jenen Lebensmitteln, die Körper und Geist stärken und folglich in der modernen Ernährung unerlässlich sind. Stimmt das? Was denken Sie? GTM: Die

something to do with the cultural and social values of the environment, the region and the land. And additionally, we like to bring a contemporary approach to the building process.

The author Orlando Ribeiro once said: There are two Portugals. One is built of stone, and the other of clay. Oporto and environs, for example, is more dominated by granite and slate, Alentejo by clay.

CD: Earth, clay – what else?

In the past we had already built a few smaller projects with clay. The folks from Esporão saw these works of ours, and gave us the assignment of using this environmentally friendly old technology from the region for their new aboveground wine cellar. The clay for the walls comes 100 % from the estate’s own property.

Along with the aspect of sustainability, the ready availability and the negligible costs, the properties of clay that make it a natural climatic regulator were a deciding factor. Temperatures inside the structure remain constant. Which is a very important factor in preparing and maturing wine.

Pedro Jervell: We have a substantial interest in surplus or leftover material that we can repurpose in a new direction, and create an alternative application for it. Before the oil industry grew to exert such an influence on our ways of building, all construction materials were composed from mineral, organic or animal resources. Today one encounters only a very few of these materials, perhaps linseed oil or Carnaúba oil.

CD: What is Carnaúba oil?

Pedro Jervell: A Brazilian wood oil, which permeates wood and strengthens it, without sealing it.

CD: Why have we come to Esporão today? What would you like to show us here at the winery?

Pedro Jervell: I want to show you how our principle looks as completed construction.

With our new processing hall here at Esporão, we have not only worked with packed clay, but with other natural materials as well. For example, with olive and grape pomace that is dried and used for plastering and for insulation material.

CD: How did Francisco and you arrive at building walls of tamped-down clay?

And what advantages does it offer?

Pedro Jervell: I’ve got to reach back a bit here... We create designs and build structures in different regions of Portugal.

The northern and southern parts of the country are completely different, with respect to the landscape, the inhabitants, the customs and the culinary traditions.

Few people know this, but it’s true.

CD: How does one proceed, arriving at a construction site and wanting to begin work with the local materials?

Pedro Jervell: The first order of business is the research into the composition and the quality of the soil. We have to quickly generate a body of knowledge.

And that is what it was like here at Esporão. But the curious thing is, fifty years ago most of the construction work in the region was executed with this technology. And to tell the truth, without a great deal of research. That was in the time before the building industry and their concrete.

CD: How exactly does one produce packed clay?

Pedro Jervell: The clay is made in wooden moulds. To start with, the raw material is put on in layers and stamped down until it has the proper consistency, has become resistant and exhibits a firm structure. The amazing thing is, that the experienced workers of the region can determine the perfect consistency of the clay in the packing process by using their ears. For them the clay is ready when it sounds ready.

CD: And to finish up, one more – no – THE typical architect question. Does function follow design with your company, or is it the other way around?

Pedro Jervell: Oh yes, that is the question of all questions. But: whenever we begin work on a new project, our first question is not about the design, but rather, how can we build the project according to our core values... Then comes the question, what is important for the structure? This means: we begin with the material, or with the procedure that produces the material, and only then do we consider the design. In short: design follows function.

CD: Ah, stopp!

Was sind low-processed-materials?

Pedro Jervell: Ich will Ihnen zeigen, wie unser Prinzip als fertiger Bau aussieht.

Wir haben bei unserer neuen Verarbeitungshalle auf Esporão nicht nur mit gestampftem Lehm gearbeitet, sondern auch mit anderen natürlichen Materialien. Zum Beispiel mit Oliven- und Traubentrester, die getrocknet zum Verputzen, beziehungsweise als Dämmmaterial verwendet wurden.

Pedro Jervell: Die meisten dieser Materialien basieren auf Erde oder Lehm. Francisco, mein Partner bei Skrei, hatte während seines Studiums in Amsterdam in diesem Bereich geforscht und damit zu arbeiten begonnen.

Ich habe dann thematisch nachgezogen.

Die Themen unserer damaligen Nachforschungen haben uns beide nachhaltig geprägt. Wir widmen uns seither intensiv dem Arbeiten mit lokalen, unbehandelten und natürlichen Baumaterialien.

CD: Wie wirken sich die Materialien auf Stil und Design Ihrer Architektur aus?

Pedro Jervell: Nun, wir sind nicht daran interessiert, Spezialisten einer bestimmten Bauweise zu sein. Was unser Studio ausmacht ist die Vielfalt, die Neugier und vor allem die Herausforderung an einem Ort anzukommen und zu versuchen an diesem Ort, aus den dort vorhandenen Materialien, ein Gebäude zu bauen. Diese Materialien haben auch immer mit den kulturellen und sozialen Werten der Umgebung, der Region und des Landes zu tun. Wir versuchen dem Bauwerk zudem stets einen kontemporären Ansatz zu verleihen.

CD: Erde, Lehm, was noch?

Pedro Jervell: Uns interessiert überschüssiges oder übergebliebenes Material, dem wir eine neue Richtung und eine Gebrauchsalternative geben können. Bevor die Ölindustrie unsere Bauweisen beeinflusst hat, waren alle Baumaterialien ausschließlich aus mineralischen, organischen oder tierischen Ressourcen.

Man findet heutzutage nur mehr wenige dieser Materialien, etwa Leinöl oder Carnaúba-Öl.

CD: Wie sind Francisco und Sie zum Mauerbau durch gestampften Lehm gekommen?

Und welche Vorteile hat der?

Pedro Jervell: Da muss ich etwas ausholen.

Wir bauen und designen in unterschiedlichen Gebieten Portugals. Der Norden und der Süden des Landes sind komplett unter-

CD: Wie geht man vor, wenn man an einem Bauort eintrifft und mit den lokalen Materialien zu arbeiten beginnen will?

Pedro Jervell: Die erste Aufgabe ist die Recherche über die Zusammensetzung und die Qualität des Bodens. Wir müssen schnell eine Expertise erstellen. So war es auch hier bei Esporão. Das Kuriose: Vor 50 Jahren wurden noch die meisten Bauwerke der Region mit dieser Technik gefertigt. Freilich ohne große Recherche. Das war die Zeit vor der Baubranche-Industrie und ihrem Zement.

Pedro Jervell: Der Lehm entsteht in Holzformen. Zu Beginn wird das Rohmaterial in Schichten aufgetragen und gestampft, bis es die richtige Dichte hat, die resistent ist und eine feste Struktur aufweist. Erstaunlich ist, dass die erfahrenen Handwerker der Region die perfekte Dichte des Lehms beim Stampfen mit ihren Ohren wahrnehmen.

Für sie ist der Lehm fertig, wenn er fertig klingt.

CD: Zum Abschluss noch eine, nein DIE typische Architektenfrage. Folgt bei Ihnen Funktion dem Design? Oder umgekehrt?

Pedro Jervell: Oh ja, die Frage der Fragen.

Also: Wann immer wir ein neues Projekt starten ist unsere erste Frage nicht das Design, sondern die Frage, wie man das Projekt nach unseren Werten bauen kann.

Dann kommt die Frage, was für das Gebäude wichtig ist. Das heißt: Wir starten mit dem Material oder jener Technik, mit der das Material hergestellt werden und überdenken dann erst das Design.

Fazit: Das Design folgt der Funktion.

Wir hatten in der Vergangenheit bereits einige kleinere Projekte mit Lehm gebaut.

Die Leute von Esporão haben diese Arbeiten gesehen und uns beauftragt, diese umweltschonende, alte Technik aus der Region für ihren neuen, oberirdischen Weinkeller zu verwenden. Der Lehm der Mauern stammt zu hundert Prozent vom Grundstück des Weingutes. Neben dem Aspekten der Nachhaltigkeit, der Verfügbarkeit und der geringen Kosten war sicherlich auch die Eigenschaft des Lehms, ein natürlicher Klimaregulator zu sein mit entscheidend.

Die Temperaturen im Gebäude bleiben konstant. Was ja das Wichtigste bei der Weinbereitung und Lagerung ist.

CD: Wie stellt man Stampflehm eigentlich her?

AN OLD FLAME REKINDLED -Der Tonkünstler

António Manuel Henriques Rocha

His name is Senhor António. And his passion is for firing amphoras. The tale of a construction worker who took up an old handicraft in order to save it from the scrap heap of history…

W

e are driving in the car. On a nicely developed highway in Alentejo. Arriving at the entrance to the town of Vidiguiera we turn off – a short curve to the left – into a sort of a small light-industry neighbourhood, where we stop briefly before a large commercial building with an open gate. We start the motor once again and proceed through the entrance. There is so much dust here that it feels like we have driven into the Sahara! There’s red dust, red earth, clay, terracotta – which translated from the Italian means ‘cooked earth’. We have arrived. To meet the fellow who cooks the earth. His name: António Manuel Henriques Rocha.

But that’s too long for us. From now one we just call him Senhor António.

movement, and the amphoras themselves have enjoyed a proper revival; so much so that in 2010 a dedicated DOC for Vinho de Talha – the local Portuguese amphora wine – was introduced. For many years, growers were obliged just to work with old and reconditioned amphoras. But that ultimately proved inadequate. Then, Senhor António rented this hall, where he began moulding and firing.

Senhor António was expecting us and has gotten himself all dolled-up for the occasion.

He is wearing a bandbox-bright blue & white checked shirt and dark blue trousers.

Such visitors as we are a rarity for this simple man. Because only a very few are aware of what Senhor António is doing here: he moulds and fires amphoras. Once upon a time, many men did this in Alentejo. Now he is the only one who still practises the craft.

But his pursuit is rewarded with commissions: it is now once more in fashion to manufacture amphoras here in Alentejo, and not to have them delivered from Italy or Georgia.

Senhor António is a hip start-up. But without any investors.

The currently promising state of Senhor António’s business affairs has a solid basis: worldwide demand for amphora wines has risen appreciably thanks to the ‘natural’ wine

Senhor António is in his mid-fifties – as is typical here, his face tanned by the Alentejo sun – with mottled grey hair and a full beard. He is small and wiry, moves quickly and speaks at a similar tempo. Fortunately, we have Maria Amélia, our local guide, with us, who can translate the rapid-fire slang just as quickly.

Senhor António showed us around his workshop, his studio, in which his newly made amphoras stand displayed on small pedestals. Senhor António is 100 % self-taught, a construction worker who lost his job in the economic crisis of 2008, because nothing new was being constructed. He became unemployed and at his age, shall we say, put out to pasture. With the prospect of an early retirement.

But a man with so much energy cannot sit still for long. Since he had always had a fondness for working with clay, he began to

experiment. Initially this just meant clay tiles for flooring, but then when a clay pitcher belonging to a friend was broken – one that had served as a container for lime – he began to fashion small amphoras.

These became larger and larger, as did his ambition. So he soon fired his first big amphoras, in which wine could be fermented and matured. Senhor António himself makes wine. Up to this point, however, like so many of the part-time winegrowers here, just in simple plastic containers. But now, Senhor António has changed over to clay amphoras.

He sits, one may say, here at the source.

This year is his first amphora vintage.

Senhor António’s amphoras are marvellous artisanry, and lovely to behold.

His method of operation is the time-honoured ‘trial and error’. This means that some amphoras still end up coming to grief, even after nearly a year of solid professional achievement. ‘Every day I learn a little bit more about it’, comments Senhor António, referring to the way his capabilities are developing. To make a large amphora two metres in height, he needs about four months. Also, it must then dry for fifteen days. After this, it sits in the workshop where each day Senhor António makes multiple orbits ’round about his vessel. To discover potential flaws. But these grow steadily fewer...

Senhor António’s amphoras are marvellous artisanry, and lovely to behold. There are perhaps ten of them standing now in the workshop. These are not earmarked for the wine industry, but rather are decorative pieces for the local regional museum.

The clay that Senhor António uses comes from his own land. In choosing the earth for his clay he was initially obliged to experiment, and by experimenting determine which sort of earthen mixtures were best suited.

And this all has absolutely nothing to do with the modern ceramic factories of the region. Purely out of then need to create something, Senhor António has created his own atelier. The hard work does not bother him. But he has one wish: ‘I would like to have a bit of support – an intern perhaps, who would like to learn as much as I still would’. ir fahren Auto. Auf einer gut ausgebauten Landstraße im Alentejo. An der Ortseinfahrt von Vidigueira angelangt biegen wir ab, kurven kurz nach links, hinein in eine Art kleines Industriegelände und bleiben vor einer großen Halle mit offenem Tor kurz stehen. Dann lassen wir den Motor wieder an und rollen durch die Einfahrt. Es staubt um das Auto, als wären wir in die Sahara eigefahren. Es staubt rot, rote Erde, Tonerde, Terracotta, aus dem Italienischen übersetzt gekochte Erde. Wir sind angekommen. Beim Koch der Erde.

Sein Name: António Manuel Henriques Rocha. Das ist uns zu lange. Wir nennen ihn von nun an Senhor António.

Die gute Wirtschaftslage Senhor Antónios hat einen Grund: Die weltweite Nachfrage nach Amphorenweinen steigt aufgrund der Naturweinbewegung stark an. Die Amphore erlebt seit einigen Jahren ein regelrechtes Revival, sodass 2010 sogar eine eigene DOC für 'Vinho de Talha', so heißt der Amphorenwein in Portugal, eingeführt wurde.

Senhor António zeigt uns seine Werkstatt, sein Atelier, in dem seine neuen Amphoren aufgebockt auf kleinen Podesten stehen.

Senhor António ist ein hundertprozentiger Autodidakt, ein Bauarbeiter, der in der Wirtschaftskrise nach 2008 seine Arbeit verlor, weil nichts mehr gebaut wurde. Und in seinem Alter quasi ausgesteuert. Mit Aussicht auf baldige Frühpension.

Senhor António, Mitte 50, hat die hier typische, von der Sonne Alentejos gegerbte Gesichtshaut, dazu grau melierte Haare und einen Vollbart. Er ist klein und drahtig, bewegt sich schnell und spricht im Tempo seiner Bewegungen. Zum Glück haben wir Maria Amélia, unseren lokalen Guide, die das schnelle Kauderwelsch ebenso schnell übersetzen kann. Senhor António wusste von unserem Besuch und hat sich regelrecht herausgeputzt. Er trägt ein blitzsauberes, blau-weiß kariertes Hemd und eine dunkelblaue Hose. Wir sind seltener Besuch für diesen einfachen Mann. Denn es erkennen nur wenige, was Senhor António hier macht: Er formt und brennt Amphoren. Das haben früher viele gemacht im Alentejo. Heute ist er der einzige, der sich das noch antut. Doch das wird mit Aufträgen belohnt. Es ist wieder in, Amphoren vor Ort herzustellen und nicht aus Italien oder Georgien anliefern zu lassen. Senhor António ist ein hippes Start-Up. Ohne Investor.

Lange Jahre arbeiteten die Winzer bloß mit revitalisierten, alten Amphoren. Doch das reichte nicht aus. Dann mietete Senhor António die Halle. Und begann zu formen und zu brennen.

Doch ein Mann mit soviel Energie kann nicht lange ruhig sitzen. Da ihn das Arbeiten mit Erde immer schon begeistert hat, begann er mit Ton zu experimentieren. Zuerst waren es nur Tonziegel für Böden, erst als der Tonkrug eines Freundes zerbrach, der zur Aufbewahrung von Kalk diente, begann er mit dem Herstellen von kleinen Amphoren. Diese wurden dann größer und größer und sein Ehrgeiz auch. So kam es bald zur ersten großen Amphore, in der man Wein herstellen kann. Senhor António macht auch selber Wein. Bisher aber, so wie viele der Nebenerwerbswinzer hier, lediglich in einfachen Plastikgebinden. Nun ist Senhor António auf Tonamphoren umgestiegen. Er

sitzt ja quasi an der Quelle. Dieses Jahr ist sein erster Amphorenjahrgang.

Senhor Antónios Amphoren sind bewundernswertes Handwerk und wunderschön.

Soll heißen: Manche Amphore geht auch nach knapp einem Jahr professionellen Schaffens immer noch schief. „Jeden Tag lerne ich ein bisschen dazu“, kommentiert Senhor António das Wachsen seiner Fähigkeiten. Für eine große Amphore von etwa zwei Metern braucht er rund vier Monate. Sie muss ja auch fünfzehn Tage trocken. Dann steht sie rum und Senhor António dreht jeden Tag mehrere Runden um sein Gefäß. Eventuelle Fehler entdecken. Die werden weniger.

Senhor Antónios Amphoren sind bewundernswertes Handwerk und wunderschön.

Zirka zehn Stück stehen gerade in der Werkstatt. Sie kommen aber nicht in den Weinbau, sondern sollen das lokale Museum der Region dekorieren.

Der Ton, den Senhor António verwendet, kommt vom eigenen Land. Bei der Wahl seiner Tonerde musste er anfangs noch experimentieren und im Experiment herausfinden, welche Art Erdgemisch sich am besten eignet. Senhor António führt uns ins Freie und zeigt uns seinen gemauerten

Brennofen. Ein ganz und gar archaischer Platz, wo der Tonkünstler sowohl seine Ziegel als auch die Amphoren brennt. Alles ohne Hilfe, alles ganz allein.

Das Feuerholz ist nicht speziell; Senhor António holt, was er in der Gegend findet.

Den Ofen hat er selbst gebaut, er ist groß, begehbar und beeindruckend.

Senhor António erklärt uns den Brennvorgang und dass die Amphoren mittels eines Krans in die Brenngrube gesenkt werden müssen. Auch den Kran bedient er selber.

Das alles hat mit den modernen Keramikfabriken der Region absolut nichts gemein.

Aus purem Schaffensdrang hat sich Senhór Antonio seine eigene Arbeitsstätte geschaffen. Die harte Arbeit stört ihn nicht. Doch einen Wunsch hat er doch: „Ich würde mir schon Unterstützung wünschen, vielleicht einen Praktikanten, der so wie ich noch viel lernen möchte.“ Falls wer mitliest, einfach bei Senhor António melden.

IN THE LAND OF THE BLACK PIG -Im Land des Schwarzen Schweins

A special breed of pig is bred in Alentejo. We went to visit the pig farmer Mr. Salgado, and made some inquiries concerning the distinctive nature of the ‘black pig’.

In the keeping of black pigs, there are two factors that bear particular weight. The first of these is the nature of the nourishment inherent to the free-range husbandry. In the months (April–September) when there are no acorns in the oak forests, the diet of the black pig is based on grain, protein-rich plants and pasture grass. Then comes the robust genetic character of the breed. This makes possible a widely extensive sort of husbandry that is hardly possible with other breeds of swine – one could say that these animals can be left on their own quite effectively.

The Sus ibericus, in Portugal simply known as the ‘black pig’ (Porco Preto) in the colloquial language, is an indigenous breed that makes its home in southern Alentejo.

These black pigs are fed and fattened in an extensively natural fashion here in the oak forests. They grow free-range between eighteen and twenty-four months here, where each animal is given two to three hectares of space to develop its natural way of life – quite a handsome bit of territory for any sort of livestock. One important item to note: pigs for the large Spanish market are mostly raised in Portugal, because they enjoy perfect conditions here in southern Alentejo. The Spaniards are simply crazy over black-pig hams, and market them quite often and very successfully as a Spanish product, without any credit being given to Alentejo. The Portuguese, on the other hand, don’t make a big deal about the finer cuts of meat like the hock or shoulder, but value the diversely spiced sausages (for example, the chouriços) that can be produced from the flesh of the Porco Preto.

of the black pig contains a high proportion of simple unsaturated fatty acids. Another notable characteristic is that the hams, without any smoke processing, are simply salted and air-dried.

The quality of the black pig’s flesh

The quality of the products that can be made from Alentejano swine differentiates itself from other meats by way of its sensory characteristics and nutritional value – particularly in the composition of the fats. These signs of quality are specific to the breed and to the local husbandry. The breed makes it possible that the fat of the pig distributes itself predominately in the muscle tissue.

This in turn makes for meat with distinctive flavour in a delicate texture. The marbling of fat in the meat, somewhat reminiscent of Japanese Kobe beef, is genetically related, since the pig can, as we have mentioned, put on more fat within its musculature. This capability has been preserved because no crossings were made with other breeds.

Montado, a unique ecological system

‘Montado’: that is the word for the ecological system of the region, characterised by oak trees, scrub brush and the lush pastures of springtime. The oak trees, which cast down the nourishment of the pigs, are cork oaks and holm oaks – the two species being distinctly different trees, bearing acorns that have appreciably different flavour. The pigs spend the time when they are fattening-up in

Montado, and spend from two to three hours every day feeding on acorns and pasture grass.

This fattening period (between October and March) is called ‘Montanheira’, when the Porco Preto doubles its body weight during this time of intense feeding. The pig moves about quite a bit, wallows happily in the mud and devours between 7–10 kg of acorns every day, putting on a kilogramme every 20–30 hours, until he tips the scales at approximately 160 kilos.

The seal of quality

Since the meats of the black pig are so unique, a certification has been developed – along with the application of a European designation of origin – in order to both guarantee and protect the quality of the products. This certification of ‘protected designation of origin’ and ‘protected geographic indicator’ is provided by the organisation ACPA, the association of black Alentejo pig breeders.

The certification also guarantees that proper procedures have been followed in the processing and maturing.

PROTECTED DESIGNATION OF ORIGIN (PDO OR DOP) Stringent: the protected designation of origin indicates that production, processing and manufacture of a product may only take place in a specified geographic area, according to a recognised and prescribed process.

PROTECTED GEOGRAPHIC INDICATOR (PGI OR IGP) Less strict: for a protected geographic indicator it is sufficient when one of the steps in manufacture (production, processing or manufacture) has taken place in a particular area of origin.

Im Alentejo züchtet man eine besondere Schweinerasse. Wir waren bei Schweinebauer Ing. Salgado zu Besuch und haben nachgefragt, was denn das Besondere des Schwarzen Schweins ist.

Das Schwarze Schwein ist eine autochthone Schweinerasse

Das Sus Ibericus, in Portugal umgangssprachlich nur Schwarzes Schwein (Porco Preto) genannt, ist eine autochthone Schweinerasse, die im südlichen Alentejo beheimatet ist. Die Schwarzen Schweine werden extensiv auf natürliche Art und Weise in den Eichenwäldern gemästet. Sie wachsen zwischen 18 und 24 Monaten in Freigehegen heran; jedes Schwein bekommt dabei zwei bis drei Hektar zur Entfaltung seiner natürlichen Lebensweise zur Verfügung – eine für Nutztiere einzigartige Fläche. Das Besondere: Die Schweine für den großen, spanischen Markt werden meistens auch in Portugal aufgezogen, da sie im südlichen Alentejo die perfektesten Bedingungen vorfinden. Die Spanier sind verrückt nach dem Schwarz-schwein-Schinken und vermarkten ihn weltweit sehr erfolgreich – oft als spanisches Produkt, ohne auf den Alentejo Bezug zu nehmen. Die Portugiesen hingegen machen nicht viel Wind um die edlen Teile, wie Fuß oder Schulter, sondern schätzen vielmehr die vielfältig gewürzten Würste (z.B: Chouriços), die aus dem Porco-Preto-Fleisch hergestellt werden.

Die Qualität des Schwarzen-Schwein-Fleisches

Die Qualität der Produkte, die aus dem Alentejo-Schwein gewonnen werden, unterscheidet sich von anderem Fleisch durch ihre sensorischen Eigenschaften und dem Nährwert – insbesondere in der Zusammensetzung der Fette. Diese Qualitätsmerkmale rühren von der Rasse und der Aufzucht her.

Die Rasse ermöglicht es, dass das Fett der Schweine sich mehrheitlich in den Muskeln ablagert. Das wiederum ergibt einen singulären Geschmack bei große Zartheit der Fleischtextur. Die an japanisches Kobe-Beef erinnernde Fettmarmorierung im Fleisch ist genetisch bedingt. Das Schwein kann, wie schon erwähnt, mehr Fett in seinen Muskeln

aufnehmen: eine Fähigkeit, die erhalten wurde, da es keine Einkreuzungen anderer Rassen gab. Im Gegensatz zu anderen tierischen Fetten enthält das Fleisch der Schwarzen Schweine einen hohen Anteil an einfach ungesättigten Fettsäuren. Besonders ist zudem, dass die Schinken, ohne jeglichen Räucherprozess, nur gesalzen und luftgetrocknet werden.

Bei der Haltung der Schwarzen Schweine fallen zwei Punkte besonders ins Gewicht.

Erstens: Die Ernährung in der Freilandhaltung. Solange es keine Eicheln in den Eichenwäldern gibt (in den Monaten April bis September), basiert die Ernährung der Schwarzen Schweine auf Getreide, proteinhaltigen Pflanzen und Weidegras.

Zweitens: Die genetische Robustheit der Rasse. Jene ermöglicht eine extensive Haltung wie bei wenigen Schweinerassen – man kann sie sozusagen gut allein lassen.

Diese Periode der Anspeckzeit (zwischen Oktober und März) heißt 'Montanheira' und das Porco Preto verdoppelt in dieser Zeit intensiven Fressens sein Gewicht. Das

Da die Fleischprodukte vom Schwarzen Schwein einzigartig sind, liegt eine Zertifizierung, beziehungsweise der Einsatz einer europäischen Ursprungsbezeichnung vor, um die Echtheit und Qualität der Produkte sowohl zu garantieren als auch zu schützen.

Diese Zertifizierung zur 'geschützten Ursprungsbezeichnung' und 'geschützten geografischen Angabe' wird von der Organisation ACPA, der Vereinigung der SchwarzenAlentejo-Schweinezüchter durchgeführt. Die Zertifizierung garantiert auch den richtigen Verarbeitungs- und Reifeprozess.

'Montado', so heißt das durch Eichen, Gestrüpp und satte Frühjahrswiesen geprägte Ökosystem der Region. Die Eichen, die die Nahrung der Schweine abwerfen, sind Korkund Steineichen; beide letztlich sehr unterschiedliche Bäume, mit unterschiedlich schmeckenden Eicheln. Im Montado verbringen die Schweine ihre so genannte Anspeckzeit und suchen jeden Tag zwei bis drei Stunden nach Eicheln und Weidegras.

Schwein bewegt sich viel, suhlt sich gerne im Schlamm, frisst zwischen sieben bis zehn Kilogramm Eicheln pro Tag und nimmt dabei alle 20–30 Stunden rund ein Kilo an Körpergewicht zu, bis es etwa 160 Kilogramm auf die Waage bringt.
