Pedro Capó y Ester Servera have been the owners and the managers of the Blarney Stone, the famous Irish Pub in Cala Blanca since 1999, where you can eat a tasty Minorcan veal hamburger while watching your favourite football team play or sip a cocktail while watching one of the most beautiful sunsets on the island.

Este año se lanza a la aventura hotelera en Es Mercadal, el pueblo más céntrico de la isla...a 20 minutos de todo. ¿Por qué te decidiste por abrir en Es Mercadal este hotel?

Nosotros llevábamos años con una idea en la cabeza: montar un hotel. Y, aunque en Menorca hay lugares preciosos donde iniciar una aventura, ninguno nos llamaba más la atención que el corazón de la isla, Es Mercadal. Esta discreta y coqueta población nos tiene enamorados desde hace años. Y siempre que podemos nos escapamos a pasear por su mercado semanal.

This year they have decided to be adventurous and open a hotel in Mercadal, situated in the centre of island which is practically 20 minutes from all the interesting points of the island. Why did you decide to open a hotel in Es Mercadal?

We had been considering the idea for a number of years, and although the island has a lot of beautiful places to offer suitable for a hotel we thought that the best option would be in the centre of the island.

And Mercadal is just perfect, mainly because it is a discreet and picturesque little village which we love to visit whenever we can.

The building you have chosen is a quite quaint...

Yes it is, and we were immediately attracted to the façade of the building of S’Antiga, with its

atención. Amplia, con detalles en marés en las cornisas y un vistoso balcón central, como si fuera una casa señorial, la presencia del edificio nos cautivó. Era el lugar con carisma que estábamos buscando. Pero la fachada solo contaba una parte de su apasionante historia, que comenzó con su construcción, en 1892. Para convertir S’Antiga en el hotel que es hoy, remodelamos la parte interior, aprovechando espacios y respetando varias estructuras, como el gran muro de marés central.

Un lucernario interior ilumina durante el día el muro y la escalera de acceso a las habitaciones.

La idea era que la arquitectura de S’Antiga fuera totalmente mediterránea, aportando luminosidad y respetando elementos y materiales ya existentes. Por eso no faltaron en la remodelación el marés, las vigas de madera vista, los perfiles suaves, y el uso del color blanco, entre otros. La paz de Es Mercadal se respira en el patio interior, que hemos equipado con piscina y zona de descanso.

We immediately fell in love with it as it was just the type of building we were looking for, and we discovered that the façade formed only part of its passionate history, which began with its construction in 1892.

We have refurbished the total interior of the building but at the same time have respected all the structural details such as the large limestone wall, which is illuminated together with grand staircase, which leads to the rooms, by rays of light entering through the skylight. Our idea was that the architecture of S’Antiga should be totally Mediterranean, bringing in light but at the same time respecting the existing elements and materials. That is why we used limestone, wooden beams, soft outlines and the colour white, as well as other details. The tranquility of Mercadal can be found in our interior courtyard, in which we have installed a swimming pool and leisure area.

¿Qué puede esperar y encontrar el cliente en tu hotel?

Nuestra intención es que el cliente se encuentre desde el primer momento como en casa, en una atmósfera relajante y con un servicio esmerado.

Ofreciendo una atención individualizada queremos conseguir que nuestros huéspedes se lleven experiencias inolvidables de Menorca. Las personas que trabajamos en el hotel conocemos a fondo nuestra isla, esto nos permite guiar y aconsejar a nuestros huéspedes sobre lugares, actividades y detalles de Menorca que harán sin duda su estancia más rica e interesante.

Este año se prevé muy buena temporada. ¿Cómo ves el modelo turístico en la isla?

El modelo de turismo que desde hace 6 o 7 años se hace en Menorca va muy bien. Mirar por un modelo de turismo de más calidad y menos cantidad. Pero para esto es necesario que se mejoren las urbanizaciones, las carreteras... para conseguir esto es necesario ir todos de la mano. ¿Alguna novedad en Blarney Stone?

Bueno, la verdad es que este año al hacer el hotel nos ha absorbido mucho tiempo para poder hacer cosas en el Irlandés. Así que hemos dejado todas las novedades para el año que viene, que vamos a hacer algunas reformas. Aunque eso no quita que en la carta se hagan algunas modificaciones, siempre siguiendo nuestra línea. Sobre todo con el producto Km0 y procurando dar un buen servicio.

What can your clients expect to find at the hotel?

Our aim is to offer our clients a relaxing ambience with great service, which makes them feel at home.

We want to offer personalised attention to each client so that they can experiment unforgettable experiences here in Minorca. All our staff have a great knowledge of our island this helps enables us to inform our clients about interesting places they can visit and activities they can do thus making their stay more interesting and more enjoyable.

It looks like we will have a good season this year ¿what is your opinion about the tourist model of the island?

The tourist model of the island for the last 6 or 7 years has worked really well. The idea of a higher quality and less quantity is really interesting, but in order to carry this out there should be more improvements made in urbanisations, and roads..and in order to achieve this we should all work together.

Any new things happening at the Blarney Stone?

To be honest with you the hotel project has taken up a lot of our time so we haven’t been able to organise any changes in the Irish bar. Next year we are planning some new changes and remodelling, but for this year we will limit any changes we make to our menu. But above all we will carry on using local produce and make sure that we offer a good service.

Pau Sintes Juanico European Young Chef Award Pau Sintes Juanico (Alaior, 2000) será el representante de Menorca en el certamen “European Young Chef Award” que tendrá lugar en noviembre en Trondheim (Noruega) organizado por el Instituto de Gastronomía, Cultura, Arte y Turismo (IGCAT) entre las Regiones Europeas de la Gastronomía.

Pau Sintes Juanico ( born in Alaior, 2000)will represent Minorca at the ‘European Young Chef Contest’ which takes place in Trondheim Trondelag (Norway), organised by the Institute (IGCAT) amongst the European Gastronomy Regions.

Pau fue elegido Joven Chef Menorquín 2022 en la final del certamen que se celebró el sábado día 12 de marzo en el Instituto Mª Àngels Cardona de Ciutadella, al imponerse a otros tres jóvenes cocineros, José Maria Borrás, Abel González y Pere Quim Coll.

Todos ellos tuvieron que preparar una Panadera de Pescado, en versión tradicional e innovadora.

Pau was chosen to represent the island after winning the culinary contest which was held on the 12th of March at the MªAngles High School in Ciutadella, when he received the title of the best Young Minorcan Chef of 2022. He was joined in the competition by three other aspiring young chefs, José Maria Borrás, Abel González and Quim Coll. The competitors’ task was to prepare a dish of baked fish and potatoes using a traditional or innovative recipe.

Para el plato innovador, Sintes se inspiró en el poema “En aquesta cala” de Gumersind Riera Sans, recordando los veranos de la infancia en Fornells. La elaboración incluyó la recreación de un velero elaborado con pescado de roca aderezado con hinojo marino de Menorca y alcaparras, con una vela hecha con piel de cabracho deshidratada y suflada que aportó un toque crujiente.

The dish was a recreation of a sailing boat made from rock fish and decorated with Minorcan sea fennel and capers, the sail was made from the dehydrated skin of a Scorpion fish and souffled in order to make it really crispy. The dish was completed with fish cooked at a low temperature and fried fish cooked in flour made from the fish bones,

El plato se completó con un pescado cocinado a baja temperatura, más meloso, y un pescado frito con harina hecha con sus propias espinas, además de una base de verduras, alcachofa y patata.

El conjunto fue presentado en una base de pizarra cortada con la silueta de Menorca y los miembros del jurado lo degustaron con un vino de la bodega Torralbenc.

El jurado destacó el alto nivel demostrado por los cocineros y la gran dificultad para escoger el ganador de entre los cuatro aspirantes a conseguir esta plaza como “embajador” de Menorca Región Europea de Gastronomía 2022 y representar a la isla.

Emocionado y agradecido, Sintes destacó el alto nivel de la gastronomía de Menorca, sus buenos cocineros y buenos restaurantes; y aseguró que será un orgullo ir a Noruega a representar a Menorca. Quiso dedicar el premio a su abuela quien, junto con su madre y su tío, siguieron todo el concurso en directo desde el comedor del Mª Àngels Cardona.

He dedicated this first award to his grandmother who he said together with his mother and uncle had been sitting in the dining room of Mª Angels Cardona throughout the long hours of competition.

Pau Sintes is 21 years old and is studying a degree in Culinary Sciences at the University of Barcelona. His passion is cooking, and he believes that he has inherited his culinary vocation from his grandmother and his mother. “My grandmother is ‘the daughter’ of the well known family bakery Can Barro in Alaior, and she showed me her passion for baking, her favorites are the

Unos días después hablo con Pau Sintes. Pau es estudiante del Grado en Ciencias Culinarias y Gastronómicas en la Universitat de Barcelona, y su vocación por la cocina le viene de su abuela y de su madre. “Mi abuela es hija del popular horno de Can Barro de Alaior, que siempre estuvo vinculado a mi familia, y me transmitió el amor a la repostería menorquina, de temporada, vinculada a las fiestas... La gente de Alaior llevaba las cosas a cocer al horno. Además, he pasado los veranos en Fornells, con lo que siempre había pescado y marisco en la mesa de mi casa. También teníamos un huerto, con lo que el producto de Menorca y de temporada siempre ha estado presente”.

Por esto, su estilo, su manera de entender la cocina, es respetar al máximo el producto, su calidad, su origen, sus características, pero sin renunciar a la creatividad y la innovación, sino todo lo contrario “Innovar, ser creativo en la cocina, es necesario, además de divertido, a mí me gusta, pero siempre lo hago respetando el producto, la base” Considera que en Menorca mucha gente, joven

y no tan joven, con iniciativa, con ganas de hacerlo bien. “En nuestra isla hay restauradores y cocineros muy buenos, Menorca está alcanzando un gran nivel gastronómico, por esto, entre otras cosas, se nos ha distinguido como Región Europea de la Gastronomía 2022. Para mí es muy importante que, además de trabajar bien durante la temporada turística, los cocineros y restauradores hagan lo posible para ofrecer su cocina durante todo el año, también para los residentes”.

Al preguntarle sobre cuáles son sus planes de futuro me cuenta que, después del período de formación, en el que todavía está, le gustaría montar un pequeño restaurante en Alaior, su pueblo, donde considera que falta oferta culinaria. Además, quiere dedicarse también a la docencia. “Me encanta enseñar lo que sé, ayudar a los que quieran aprender cocina, compartir mis conocimientos.

Todavía soy joven, pero a la larga me encantaría ser profesor de cocina, compaginando la docencia con el ejercicio profesional como cocinero”.

Antes de despedirme de Pau me cuenta que ahora estará en Menorca hasta final de año, preparando el concurso europeo de Noruega. Después, de enero a abril, hará un stage en el Celler de Can Roca, y al empezar la temporada turística volverá a Menorca para trabajar y seguir creciendo como cocinero.

I am still young but in the future I would love to become a culinary teacher and at the same time become a professional chef”.

Before I say goodbye to Pau he tells me that he is now in Minorca until the end of the year, where he is preparing himself for European Young Chef contest in Norway. And then from January to April he will carry out a stage at the Celler de Can Roca, and then return to Minorca for the summer season in order to gain more experience as a chef.

Paseando por la Cuesta Marina, entre bajos acantilados de piedra y locales de copas, se extiende la gran terraza de Aquarium Port. El olor a pescado fresco y mar ya da una idea de por dónde van los tiros en la cocina de este encantador local en uno de los lugares más bonitos para descubrir la gastronomía menorquina: el puerto de Ciutadella. Juaneda come con Estelamaca Estelamaca (@estelamaca) es una mujer con mucho gusto, y le encanta la decoración. En 2017 abrió un canal en YouTube en el que subía videos del proceso de decoración, paso a paso, de su casa, y poco a poco fue consiguiendo seguidores. Y es que su estilo rústico, farmhouse, es muy sugerente y atractivo.

Con el auge de Instagram se abrió una cuenta en esta popular red social y los seguidores subieron como la espuma en poco tiempo. Hoy tiene casi 54.000 personas que miran, disfrutan y aprenden con las excelentes fotos que publica (las hace su pareja, fotógrafo aventajado) y sus posts tienen miles de megustas y comentarios.

Hasta tal punto tuvo éxito su Instagram que hace un par de años dejó su trabajo en el sector de la banca y ahora se dedica plenamente a su pasión, la decoración. Y es que toda esta movida le ha llevado a abrir una tienda de decoración online, que es su modus vivendi.

Empezamos a hablar de cocina, de gastronomía, y lo primero que nos dice es que le flipa el

She became so successful that a couple of years ago she decided to leave her job at a bank and dedicate all of her time to her passion which is decoration. She then opened a online shop and now makes her living from her sales.

We are at Restaurant Sa Punta and begin our converesation talking about cuisine, gastronomy, and the first thing that she tells me is that she loves

Sa Punta es una de las novedades del mundillo de la restauración del año pasado, un excelente restaurante, tanto por la ubicación, con vistas 270 grados a la bocana del puerto de Mahón, la Fortaleza de La Mola, el Lazareto, como por la propuesta gastronómica, a cargo de Robert Sarrió, con un servicio excelente.

Volvemos a la conversación con Estela. Nos confiesa que no le gusta mucho cocinar (será porque su pareja cocina muy bien y ella se relaja, sabiendo que va a comer bien?), pero le encanta la estética de la gastronomía, tanto de los platos, su composición, la disposición de los ingredientes en el plato... como la forma de poner una mesa para ocasiones especiales, o para cualquier momento

Sa Punta is a new restaurant which opened last year. It is an excellent restaurant not only because of its location with a 270 degree view of the entrance of the port of Mahón, the Mola fortress and Lazareto, but also for its gastronomical offer. Their chef Robert Sarrió has elaborated a delicious menu and the restaurant offers a fantastic service.

But getting back to Estela, she tells me that she doesn’t like cooking and doesn’t cook much (probably because her partner is a really good cook) so she doesn’t have to worry about food. However,she adds that she loves the aesthetics related to the elaboration of dishes, the way food is served, the plates on which it is served and the table

I asked her about her opinion about Minorca hosting the European Gastronomy Region of 2022 and I must admit I was quite surprised by her reply which was that she had no idea whatsoever about this fact. I wonder if this is because she isn’t into cooking or that the organisation responsible for this event haven’t promoted it enough. Perhaps this question should be taken into consideration.

We carried on chatting and I asked her about her favourite dish and she answered that she loves any of the rice dishes her partner prepares with whatever he can find in the fridge, which she considers sustainable cooking, because they never have to throw away food because it has gone off.

plato con lo que tiene a mano, por lo que supone de cocina de aprovechamiento, con lo que evitas desperdiciar comida que es estropea. Sobre que plato es el que se le da mejor para cocinar, nos responde que el Tiramisú, para el que siempre ha tenido una maña especial La sobremesa la pasamos con el chef de Sa Punta, Robert Sarrió, y con la responsable de comunicación, Sandra Debón, que nos transmiten toda la ilusión que han puesto en esta nueva temporada, en consolidarse como uno de los restaurantes referentes de la buena cocina en Menorca. Sa Punta hace una apuesta decidida por la cocina de proximidad, dando mucho valor al producto local, haciendo solo concesiones al producto de fuera de la isla cuando en Menorca no hay disponibilidad.

En unas semanas van a incorporar nuevos platos a la carta, pero los que probamos nosotros fueron excelentes: Ensalada de naranja y bacalao con granola salada y yogur de remolacha; Escabeche de navajas y algas; Láminas de presa ibérica marinada, tahina, almendras y tapenade; Buñuelos de calabacín, remolacha y queso feta con salsa de yogur (vegetariano); Setas salteadas con nuestro sofrito y humus de garrofón (vegano); Rodaballo alla putanesca; Terrina de cordero con berenjena ahumada y tzatziki; Carrilleras de cerdo ibérico, boniato y tfaya; Bavarois de chocolate Guanaja al 70% con salsa Caramelia; Torrija de coco con sorbete de piña asada; y Tarta de queso Sa Punta.

Todo termina con un delicioso chupito de licores menorquines de Biniarbolla, lo mejor de Menorca.

And she also loves her own homemade Tiramisu, a dessert which she makes and says that lucklily always turns out great.

After lunch we had a chat with Robert and the communications manager of the restaurant Sandra Debón who both agree that they are really excited about this coming season and hope to become established as one the best restaurants on the island. Sa Punta gives great importance to local produce and only makes concessions and uses products outside the island when local produce is unavailable.

In a few weeks time Robert will add some new dishes to the menu, but I must admit the ones we tried were exqusite: the Salad with Cod,cereals and a beetroot and yogurt sauce, Pickled razor clams and algae, Slices of marinated Iberian pork with a tahina and almonds tapenade, Fried squash fritters with beetroot, feta cheese and a yogurt sauce (vegetarian dish), Sauteed Wild Mushrooms with fried vegetables and hummus (vegetarian dish), Turbot with Putanesca sauce, Terrine of Lamb with smoked aubergine and tzatziki, Iberian Pork cheeks with sweet potato and tfaya sweet sauce, Chocolate Bavarois with Guanaja 70% dark chocolate and caramel sauce, A CocunutTorrija (bread soaked in milk and fried in batter) on a slice of roast pineapple and Sa Punta homemade cheescake.

Everything ends with a delicious shot of Menorcan liqueurs from Biniarbolla, the best of Menorca.

Entrevista a Patricia Menéndez Interview to Patricia Menéndez Charlamos con Patricia Menéndez, una de las caras visibles de Bodegas Binifadet en Sant LLuís y que desde hace un par de años gestiona otros restaurantes como son La Cantina en la Isla del Rey, donde está la galería de arte Hauser&Wirth, Los Bucaneros, mítico chiringuito de la playa de Binibeca y el American Bar de Mahón, un clásico de la capital menorquina, y todo esto a través de la nueva empresa Bonita Menorca, con una filosofía muy marcada... ¿Cuál es esta filosofía?

Bonita nace con vocación de crear espacios que hablen de Menorca: de su estilo de vida, de sus gentes y de su cultura. Somos una empresa menorquina con foco en lo local y con un marcado propósito de potenciar y compartir lo que aquí tenemos. Nuestro objetivo es crear espacios donde el entorno, la gastronomía y el servicio estén en perfecta armonía.

We recently interviewed Patricia Menéndez who is one of the visible faces of Bodegas Binifadet in Sant Lluís and their new company Bonita Menorca which follows a well defined philosophy. For the last couple of years she has been in charge of the company’s restaurants, La Cantina on the Isla del Rey, where the Hauser & Wirth Gallery is also situated, Los Bucaneros, the emblematic beach bar on Binibeca beach, and the American Bar in Mahón, a historical bar in the centre of the town.

What is the philosophy of the company?

Bonita was founded with the vocation of creating spaces which relate to Minorca, to its lifestyle, its people, and its culture. We are a Minorcan company which gives great importance to everything local, and our objective is to promote and share with visitors and locals all that we have. Our main aim is to create places where the surroundings,

¿Bajo qué criterios seleccionáis vuestros espacios?

Bonita gestiona espacios emblemáticos de la isla alrededor de tres conceptos: el campo y el sector productivo, el mar y la cultura. Creemos firmemente que nuestra isla tiene en esos tres pilares mucho que decir como destino.

El sector productivo y el campo es un gran desconocido, pero sin duda en él radica una parte importante del encanto de la isla. Su paisaje, el saber hacer y el cuidado con el que producimos aquí va en sintonía con los valores de la isla. Binifadet lleva 18 años elaborando vino en la isla, es un trabajo sacrificado que nos ha dado muchas alegrías.

Tenemos la vocación de compartir nuestra pasión por esta tierra y así poder hacer más accesible esta parte de la isla a clientes locales y visitantes.

El mar es otro de los valores de Menorca. Su costa, tan distinta si hablamos de la zona norte y la zona sur, su diversidad marina, sus aguas, sus playas, la riqueza de su paisaje, las posibilidades que da la isla a los que practican la navegación o el kayak… Un proyecto como el nuestro no puede obviar este aspecto de la isla. Crear espacios frente al mar al puro estilo Menorca fue desde el inicio una prioridad. Bucaneros era la mejor ubicación para hablar del verano menorquín. Una clásica construcción menorquina sobre la playa de Binibeca con una dilatada historia, recibiendo a clientes de todas las partes del mundo.

La cultura es otro de los aspectos que sorprenden de nuestra isla. La inquietud de sus gentes por el arte, la música, la historia y las tradiciones nos ha hecho un destino rico en ubicaciones y actividad artística. Sobre este valor es para nosotros un orgullo recibir en La Cantina de la isla del rey a los visitantes a la Galería de Hauser & Wirth. Por otro lado, el American Bar, en el centro de la ciudad de Mahón, es un bar emblemático con casi cien años de historia.

What guide lines do you follow in order to choose your spaces?

Bonita follows three concepts in order to manage these emblematic spaces on the island, which are local farming and its productive sector, the sea and the culture. We firmly believe that our island with these three factors has a lot to offer as a touristic destination.

The productive sector and local farming are both unknown sectors to many people, but without a doubt play an important role on the island. The surroundings, expertise and care are the main factors we take into account when producing local produce, and all three in accordance with the values of the island. Binifadet has been producing wine for 18 years, which envolves a lot of hard work but at the same time the finished products give us great satisfaction. Our vocation is to share our passion for this land and make this part of the island more accesible to both locals and visitors.

41 The sea is another great valuable aspect of Minorca. Its coastline, which is so different along the North in comparison to the South, its marine diversity, its crystal clear waters, its beaches and scenic beauty, makes it a true paradise for all those who enjoy sea sports such as sailing or kayaking.

Therefore a project such as ours can not disregard this fact,and this is why one of our priorities was to create a typical Minorcan space with sea views, hence our choice of the Bucaneros, one of the best places to enjoy a Minorcan summer. It is a classical Minorcan building situated on the beach of Binibeca which boasts an extensive history and welcomes guests from all over the world.

Sabemos que estáis con una nueva propuesta. ¿Cuál es vuestro próximo proyecto?

Tamarindos en Es Grau, un emblemático restaurante sobre el mar y cerca de la illa d´en Colom con el incomparable marco de la Albufera.

Para nosotros Es Grau es uno de los sitios más mágicos de la isla. Allí convive la playa con el que viene a hacer cami de cavalls, a practicar kayak o a navegar. Es Grau representa a la perfección la pureza y naturalidad de Menorca, siendo un entorno donde el tiempo se ha parado. Estamos ilusionados por formar parte de este rincón de la isla con un espacio pensado para disfrutar del entorno y la gastronomía. Tenemos previsto abrir durante el mes de junio y el concepto de restauración incluirá los clásicos que a todos nos gusta comer frente al mar: arroces, pescados y entrantes de toda la vida actualizados. ¿Qué novedades podemos encontrar esta temporada en vuestros locales?

The Minorcan culture is another surprising aspect of our island. The passion the local people have for art, music, history and traditions has helped to convert the island into the perfect place for many artisitc spaces. And this is the reason why we are proud to welcome visitors of the Hauser & Wirth gallery to our bar/restaurant La Cantina situated on the Isla del Rey, and also to the American Bar in the centre of Mahón, which has been an emblematic meeting place for over a century for both locals and visitors.

Can you tell us a little bit about it?

Tamarindos in Es Grau is and traditional restaurant by the sea, near the illa d’en Colom and framed by the wonderful Albufera. Our company thinks Es Grau is one of the most magical places on the island, where people visiting the beach or walking along the Cami de Cavalls, or those who practise kayaking or sailing enjoy visiting. Es Grau represents the pure essence of Minorca, and it is where time seems to have stopped. We are really excited to become part of this small nook of the island with a space in which you can enjoy the scenery and the gastronomy. We are hoping to open in the month of June, and our menu will include many

traditional dishes one loves to eat by the sea such as rice dishes, fresh fish and some typical starters which have been given a new twist.

Bucaneros abre sus puertas a principio de mayo, en su carta este año proponemos una evolución sobre la propuesta que estrenamos el año pasado y que tan buena acogida tuvo.

American bar sigue apostando por una amplia oferta durante todo el día: desayunos, platos del día, carta de raciones con recetas de todo el mundo, coctelería…. Una oferta que cambia para adaptarse a los cambios de la ciudad.

La Cantina sigue fiel a su concepto de bistró de mar, una carta donde el producto y la brasa son los grandes protagonistas. Producto local y cocina sin maquillaje.

Se prevé una gran temporada, a la altura de la pasada ¿Está Menorca de moda? ¿Crees que estamos en el camino correcto de turismo?

Menorca ha sido un destino que ha sido fiel a sus principios. El trabajo bien hecho y la coherencia ha hecho que nos descubra un cliente que puede elegir y elige Menorca. No creo que se trate de una moda, las modas pasan y estoy convencida que los valores de esta isla están muy lejos de ser efímeros. Nosotros, al igual que la mayoría de los empresarios de la isla, tenemos como objetivo ofrecer productos y servicios que vayan alineados con lo que esta isla ofrece y con cómo vivimos aquí.

What novelties can we find this summer in your establishments?

Binifadet will be the first restaurant to open on the 8th of April, and our new additions will be our signature wine tasting sessions with wines from the Tanca range, and our orange wine called Pieles as well as our selection of sparkling and rosé wines, and many new dishes will be added to our menu.

Bucaneros opens at the beginning of May, and on the menu this summer we will be adding some new dishes to the ones which were so successful last year.

The American Bar will continue to offer a wide selection of different dishes for breakfasts, lunches, and small portions of food based on recipes from all over the world, as well as a selection of cocktails. We want to offer a innovated menu which adapts to the changes made in the town.

La Cantina continues with its concept of a bistro near the sea, with a menu in which local produce, grilled ingredients and home cooking are the principal factors.

It is said that this season will be a very good season, even better than last year. Do you think Minorca is the new trend? Do you think we are on the right track as far as tourism is concerned?

Minorca has always been a destination which has protected its tourism and thanks to the work well done many visitors have discovered and and chosen the island for their visit. I don’t think it is a trend, because trends pass, moreover, I am convinced that the values of the island are far from becoming short lived. Our company objective as well as that of many other companies on the island is to offer products and services which align with what the island has to offer and our way of life.

El Priorat Vinos/Wines “LICORELLA” Y CLIMA

LICORELLA SLATE AND THE CLIMATE

Los primeros en creer, reconocer y valorar las cualidades de la zona del Priorat para la elaboración del vino fueron los monjes cartujos que provenían de la zona de la Provenza, allá en el s. XII al pie de la sierra del Montsant. Allá fundaron la Cartuja de Scala Dei, un icono de la zona y punto cero de la región. Tierras en un lugar silencioso, lleno de soledad y naturaleza, perfecto para el recogimiento en los siete pueblos que forman parte del dominio del prior de la abadía. Los cartujos tenían claro que allá podrían fomentar la expansión del cultivo de la vid y descubrir las excelentes aptitudes de la zona, conociendo perfectamente los terrenos ideales para cada variedad.

The pioneers who valued the qualities of the area of the Priorat for the elaboration of wine were the Carthusian monks who came from the Provence area in the XII century and built the Carthusian monastery and abbey Scala Dei near the mountain range of Montsant. An emblematic construction surrounded by silence and nature and seven villages whose villagers’ religious needs could be attended by the priory at the abbey. The Carthusians were convinced that they could expand the cultivation of vines and discover the excellent conditions of the land as they already possesed a great knowledge of the necessities needed to cultivate each different variety of vine.

This region situated in the heart of Tarragona along the mountain range of Montsant, below the summits of El Loar and the Figuera and the pituresque mountain range of Molló, through which the river Siurana flows, has become one of the most prestigious places for winemaking in the world, largely because of the great effort put into the area by a group of great winemakers who arrived there and cultivated their vines.

This group of winemakers was colloquially known as the ‘five magnificent of the Priorat’ and they were the ones who placed the Priorat on the map in the world of wine. In the 80’s other great winemakers like René Barbier, Alvaro Palacios, Josep Lluís Pérez, Carlos Pastrana and Daphne Glorian-Solomon revolutionised the world of wine. There are many positive factors for growing wines in the Priorat.

49 tes en el Priorat, el clima particular con el relativo aislamiento de la zona respecto a la influencia del mar y la otra, la protección de la sierra del Montsant a los vientos fríos del norte. Así el clima, marcado por las notables oscilaciones térmicas entre el día y la noche. Junto a estas condiciones climáticas se une una particular geografía. La viña se cultiva en las cuestas de pendientes muy pronunciadas que llevan a construir las conocidas terrazas.

En el territorio de la licorella, que pasa súbitamente de las montañas con suaves cumbres, a unas laderas de pendientes impracticables. Unos terrenos relativamente ácidos, con un bajo contenido de materia orgánica, formados mayoritariamente por pizarras. Reciben el nombre de licorelles.

Son unas piedras planas y quebradizas de color oscuro entre las que penetran las raíces de las cepas en búsqueda del agua y los nutrientes.

En el Priorat las dos variedades de uva más comunes son las tradicionales garnacha tinta y la cariñena. Por detrás la cabernet sauvignon, la syrah y la merlot en tintas y la garnacha blanca y macabeu en variedades blancas.

First of all, its particular climate with notable daytime and evening temperature fluctuations due to the relative seclusion of the area. Secondly, its privileged situation near the Montsant mountain range which protects it from the sea and the north winds. And last but not least its geographical position is perfect for vines which are grown in terraces on very steep slopes. This is a territory of slate which varies from soft summits to inaccesible peaks. Its terrain is covered by flat slates with a relatively acid soil which contains a low content of organic material.

These dark brittle flat pieces of slate are called licorellas, and the vines push their roots through them in search of water and nutrients. The most two common types of grapes which can be found in the Priorat are red granache and carigan, as well as cabernet suavignon, syrah, merlot for red wines and white granache and macabeu for white wines.

And finally ‘Denominació d’origen qualificada’ ‘the protected denominations of origin’ a qualification of proof of origin given to the wine produced in the Priorat, and also to the wine produced in the Rioja.

Para finalizar, la “Denominació d’origen qualificada” Priorat es una de las dos zonas nacionales, junto a la DOC Rioja que tienen la distinción de Calificada, que le da un mayor impacto de calidad a la zona.

Andreu Genestar The Barman Andreu Genestar Femenías (Ciutadella, 1973) se considera barman y camarero, y le encanta decirlo, porque ama su oficio y lo ejerce con pasión.

Desde el hotel Príncep de Palma, en el bar durante todo el año o en su exclusiva terraza en verano, prepara deliciosos cócteles con un estilo muy personal. Elegancia, refinamiento y precisión caracterizan su manera de trabajar, es una gozada verlo en acción.

Ha sido dos veces campeón de Menorca de coctelería. En una ocasión ganó el campeonato de la Asociación de Barmans de Baleares y fue ganador de la World Class Competition España, uno de los certámenes de coctelería más importantes y prestigiosos del mundo. Entre 2015 y 2016 fue considerado uno de los 10 mejores barmans de España.

Andreu empezó a trabajar a los 16 años en el restaurante Es Racó des Palau, un veterano del centro histórico de Ciutadella, como aprendiz de camarero, y le gusta recordar este detalle, se acuerda perfectamente del contrato.

Andreu Genestar Femenías (Ciutadella, 1973) considers himself both a barman and a waiter and he is delighted to tell everyone about his career, which he is passionate about. He works during the summer in the outdoor terrace bar and for the rest of the year in the interior bar of the Hotel Princep in Palma, where he prepares delicious cocktails in his own unique style.

He works with great elegance, precision and refinement, and it is a really enjoyable experience to watch him at work. He has won the award for champion cocktail maker of Menorca twice, and on one occasion won the Balearic Barmen’s Association championship and a was also the winner of the Spanish World Class Contest, one of the most important and prestigious cocktail contests in the world. From 2015 to 2016 he was considered one of the best barmen in Spain.

Andreu started working as an assistant waiter when he was 16 years old in the restaurant Es Racó des Palau, a well known restaurant situated in the centre of Ciutadella. He remembers his first

Aquí descubrió su vocación. Después pasó por diversos establecimientos de Ciutadella, siempre compaginando trabajo y estudios en el Instituto Maria Àngels Cardona, entre 1990 y 1995.

“Estuve dos años en El Puerto de Chus, un popular y concurrido bar de copas - discoteca del puerto de Ciutadella, donde me di cuenta que lo que me gustaba era estar detrás de la barra. Allí supe que me dedicaría a esto, y hasta hoy”.

Destaca también su faceta como docente, impartiendo clases de servicios de restaurante y bar durante más de 23 años, desde 1999. En 2004 aprobó las oposiciones, ejerciendo en el Maria Àngels Cardona de Ciutadella y en 2016 consiguió plaza definitiva en el Centro Integrado de Formación Profesional Juníper Serra de Palma, un referente en la formación profesional en turismo, hostelería y restauración.

Vino a Mallorca en 2015 con la idea de tener más oportunidades, de ampliar el horizonte profesional y tener la posibilidad de crecer profesionalmente, y la sensación que tiene es que está siendo así; está muy contento con lo que hace y mantiene la ilusión intacta para seguir trabajando en este apasionante mundo de la coctelería.

“Empecé en el Convent de la Missió, un antiguo convento en pleno centro de Palma, rehabilitado como hotel y restaurante, una maravilla. El restaurante de “la Missió” lo regentaba Marc Fosh, un reconocidísimo chef que contaba con una estrella Michelín, y a mí me tocó inaugurar el cóctel bar, diseñando los cócteles y haciendo todos los preparativos para la apertura, y allí estuve casi dos años”.

Después Andreu Genestra le propuso hacerse cargo del bar del hotel Princep, también en Palma, y allí sigue Andreu, dándolo todo desde Gremium, la nueva coctelería del hotel, y desde el Roof Top,

“I worked for two years in El Puerto de Chus, a well known and popular bar in the port of Ciutadella, and it was there that I discovered that I really enjoyed working behind a bar and that I wanted a career as a barman and I have been working in the industry since then”. He highlights his facet as a teacher and tells us that he began teaching in 1999 and gave classes for 23 years. In 2004 he got his teaching degree and became a teacher at Maria Angles Cardona High School in Ciutadella, and then in 2016 he obtained a permanent teaching post at the Juníper Serra College in Palma, a distinguished school for studies in the hotel, catering and tourism sector.

He came to Mallorca in 2015 with the idea of gaining more experience and expanding his professional career and he is convinced that he made the right decision. One can tell that he loves his work and is passionate about the world of cocktails. “I began at the Convent de la Missió, an old convent in the centre of Palma, which had been converted into a hotel and restaurant, a wonderful place. The head chef at the restaurant La Missió was Marc Fosh, a well known chef who had a Michelin star, and I was put in charge of opening the cocktail bar, where I invented new signature cocktails, and I was there for nearly two years”.

After that he was offered the position as head barman at the Hotel Princep which is also situated in Palma and he still works there today. He can be found preparing his delicious cocktails for friends and clients, either in the Gremium cocktail lounge or at the Roof Top terrace bar, which boasts of a magnificent terrace with views of the historical centre of the town and the bay of Palma.

Le pregunto cuáles son sus cócteles preferidos, con qué tipo de coctelería se identifica, y me comenta que “soy un apasionado de la coctelería internacional, los cócteles clásicos como el Dry Martini o el Daiquiri, porque considero que es la base de todos los cócteles que se han hecho después. Es fundamental conocer la base para poder innovar y hacer cócteles de autor y elaboraciones más creativas”.

Le pido que haga un cóctel dedicado a Menorca, y nos dice que ya lo tiene, que lo sirve en el hotel Príncep con mucho éxito. Es el “Capricho de Menorca”, con base de Gin Xoriguer, recordando el muy ciutadallenc “Gin amb llimonada” pero actualizado y con un toque más fresco y carbónico.

Al Xoriguer le pone limón natural y sirope de azúcar, pero le añade refresco de genjibre y sirope de lima, y lo acaba con una espuma de clara de huevo con unas gotas de angostura y una hoja de hierbabuena.

Saboreando este magnífico cóctel dejamos a Andreu con sus ocupaciones, unos clientes le reclaman!

I asked him to tell me about his favourite cocktails, and with what type of cocktail making he prefers best.

He answered that he is passionate about the international style of cocktail making and prefers the classic ones, for example a Dry Martini or a Daquiri, because the classic cocktails are really the base on which all the others have been invented after.

He says that it is fundamental to know the base of a cocktail in order to innovate and create new unique signature ones. I asked him to prepare a cocktail dedicated to Minorca, and he said he already had a very successful one called the Capricho de Menorca (Minorcan Desire), very similar to the popular Minorcan drink of gin and lemon, but with a twist.

He uses a base of Gin Xoriguer, then adds fresh lemon juice , some sugar syrup and some lime syrup and stirs,and then pours in a ginger ale, he then tops it with a beaten egg white and a few drops of angostura bitter and a leaf of mint.

Andreu then left us to attend some other clients, while we enjoyed his delicious cocktail.

La historia del gin de Menorca The story of gin in Menorca Por casi todos es conocida la relación entre Menorca y la ginebra, el famoso “GIN”. Sus fiestas locales son inconcebibles sin refrescarse con este licor acompañado de limonada, llamado popularmente en la parte de Mahon como “pomada”, Y “ginet o gin amb llimonada” en la parte de Ciutadella. Respeta sus nombres en cada zona, puede que te miren un poco mal, e incluso que en Ciutadella tengan preparada una pomada, pero de farmacia. Siempre con humor, que para eso estas en Menorca.

Almost everybody is familiar with the relationship between Menorca and its famous " GIN " .

Its local festivals are inconceivable without this liquor being accompanied by refreshing lemonade, popularly known in the part of Mahon as " pomada" and " ginet o gin amb llimonada" in the part of Ciutadella. You need to get the names right in each area as you may get a strange look if you ask for a “pomada” in Ciutadella as they could offer you an ointment prepared in the chemist. But always with humour, that's why you're in Menorca.

Menorca perteneció a la corona Británica, hace más de doscientos años, durante casi todo el siglo XVIII. Estuvo ocupada por Gran Bretaña en virtud del Tratado de Utrecht.

Menorca belonged to the British crown, over two hundred years ago, during most of the eighteenth century. It was occupied by Britain under the Treaty of Utrecht.

Miles de marineros y soldados ingleses guarnecían la isla y eran clientes de las tabernas, donde no encontraban el aguardiente entonces de moda en su patria: el GIN.

Thousands of British soldiers and sailors manning the island and were customers of the taverns, but they couldn’t get the liquor that was fashionable at that time in their country: GIN .

Pronto unos artesanos mahoneses hallaron la solución al problema: importar bayas de enebro y fabricar gin en la isla a partir del alcohol viníco propio del mediterráneo. Aunque en 1802 los ingleses abandonan Menorca, la ginebra continuó consumiéndose entre los ciudadanos menorquines.

De este modo el GIN, bebida nórdica, se aclimató con éxito en Menorca. El Gin a lo largo de los siglos XVIII y XIX se fue consolidando como bebida popular y se hizo inseparable de todo evento remarcable tanto familiar como público. Ya entrado el siglo XX, de las más puras raíces familiares y artesanas surgió una marca: Xoriguer, que comenzó a embotellar y a comercializar con rigor el producto que hasta entonces se había movido en un ámbito poco más que local.

En 1997, recibe la denominación geográfica "Gin de Menorca" que otorga el Consejo Insular de Menorca, por lo que esta bebida posee la Indicación Geográfica. En noviembre de 2010, se publica la Orden por la cual se reconoce la indicación geográfica "Gin de Mahón".

El Gin de Mahón tradicional se elabora por destilación de alcohol etílico de origen agrícola y bayas de enebro en alambiques de cobre, utilizando como combustible el fuego directo de leña. Sus ingredientes son bayas de enebro, alcohol etílico de orden agrícola y agua. Al poseer denominación de origen, queda expresamente prohibido añadir aditivos, extractos y aromas artificiales.

Los destilados presentan un grado alcohólico de entre el 30% y el 43%. Se evita hacer líquidos-base concentrados que se conviertan en el producto final por adición de una mezcla agua-alcohol. De esta forma se evitan perdidas y cambios en los aromas y sabores propios de los procesos de concentración.

El ginebra se conserva en barricas de roble blanco, de tipo americano, para que absorba un poco de sabor a madera, hasta al momento del embotellado.

Soon Menorcan artisans found a solution to the problem: importing juniper berries and making gin from wine alcohol peculiar to the Mediterranean.

Although in 1802 the British left Menorca , Gin continued to be drunk by the Menorcan citizens.

Thus GIN, Nordic drink, was successfully launched in Menorca. Gin throughout the eighteenth and nineteenth centuries was established as a popular drink and inseparable from any special event, private or public. Well into the twentieth century, from one of the purest family of craftsmen, a brand emerged: Xoriguer, which began to be bottled and marketed rigorously. Up until then it had only circulated in a small local area.

In 1997, it received the geographical name "Gin de Menorca" awarded by the Insular Council of Menorca , for this the drink has a Geographical Indication .The Order for which the geographical indication " Mahon Gin " is recognized was published in November 2010.

The traditional Mahon Gin is made by distilling ethyl alcohol of agricultural origin and juniper berries in copper stills, using direct wood fire as combustion.

Its ingredients are juniper berries, agricultural ethyl alcohol and water. As it has a Denomination of Origen is expressly forbidden to add additives, extracts or artificial flavourings.

The distillates have an alcohol content of between 30% and 43%. They avoid concentrated liquid -base to achieve the final product by adding a water - alcohol mixture. Thus avoiding the loss and changes of aromas and flavours, concentration processes are avoided. The gin is kept in white oak American type barrels, to absorb a little of the wood flavour, until the time of bottling.

La historia del Tiffany's The story of Tiffany's Los más mayores del lugar y que hayan recorrido España dándose alguna vuelta nocturna, seguro que recuerdan la discoteca que tenía como emblema a tres misteriosas mujeres de media melena con bombín, y que tomaba su nombre de la joyería preferida de Audrey Hepburn en Desayuno con diamantes.

Hablamos de Tiffany´s, un referente en la noche, inaugurada en 1965, pionera en ser una sala donde no solo había actuaciones en directo, sino donde una persona se encargaba de lanzar música grabada. Lo que hoy conocemos como deejays, aunque ya antes hay referencias de que había un pinchadiscos en la sala Bikini de Barcelona. Aunque el Sindicato de Músicos consiguió prohibirlo durante unos años.

Tiffany´s fue la inspiración para muchas discotecas que vendrían después, por ejemplo Ricardo Urgell se inspiró en Tiffany´s para crear poco después, la famosa discoteca de las dos cerezas, la archiconocida Pacha, en Sitges, y que se extendió por todo el mundo, creando una red de discotecas

People of a certain age on the island can without a doubt remember dancing the night away at the disco, and especially at those discos whose emblematic logo showed three mysterious women with a bob hair cut wearing bowler hats. These popular discos were named Tiffany’s, after the famous jewellery store visited by the actress Audrey Hepburn in the film Breakfast at Tiffany’s, Tiffany’s was the pioneer of the modern discotheque and was opened in 1965, it was a place where not only could you listen to live music but also dance to dj’s. However, this was not the first place where djs played music,the very first nightclub to have djs was at the Sala Bikini Barcelona. Unfortunately, it was only for a short period of time as the Sindicato de Músicos (the syndicate of Musicians) prohibited them from playing recorded music for a number of years.

Tiffany’s was the inspiration for many discotheques which opened after, for example the famous disco called Pacha,which was opened by Ricardo Urgell in Sitges and whose logo portrayed two cherries. This discotheque became famous and because of this Ricardo later opened a chain of

enorme, aparte de merchandising, recopilatorios, etc... una marca muy potente y vendida hace unos años a un grupo americano por 500 millones de euros.

Tiffany´s nació de la mano de dos suizos,Raito Ganzoni i Werner Straub, en Platja d´Aro, en Girona, que era lo más VIP que había en esos finales de los 60 y principios de los 70, aunque después vino el fervor de Ibiza y le ganó la partida. En aquellos años en Platja d´Aro se llegaban a congregar más de 20.000 personas, y había muchas discotecas como Palladium o Maddox. Venían extranjeros a bailar sin parar. En tiempos oscuros eran bocanada de aire fresco. Y creíamos que la Movida Madrileña o la Ruta del Bakalao eran transgresoras...

La discoteca salió hasta en Interviú por acoger los primeros topless de la Costa Brava, en una especie de jardín tropical con piscina que montaron dentro. Tiffany´s fue un oasis de tolerancia y desinhibición dentro de la oscuridad de la dictadura franquista. Allí te podías encontrar al mismísimo Dalí. A saber si alguno de sus cuadros no saldría de noches locas bajo la luna de Platja d´Aro...

Hubo y hay, muchos Tiffanys, dos en activo son los de Baqueira y Menorca, pero hubo prácticamente por toda la geografía española: Platja d´Aro, Laredo, Torremolinos, Madrid, San Sebastián, Bilbao y fuera de nuestras fronteras: Tel Aviv, Munich, Montpellier, Tolouse... Algunos siguen con la icónica cara de mujer y bombín y otros solo siguen con el nombre, como es la de Madrid. Los fundadores suizos murieron hace algunos años pero su legado continúa ...

The founders of Tiffany’s were two Swiss businessmen Raito Ganzoni and Werner Straub who opened their first disco at the Platja d’Aro in Gerona, which became the most popular VIP place to go at the end of the 60’s and the beginning of the 70’s.

In their heyday they received more than 20.000 visitors,many of which were foreigners. This nightlife was a breath of fresh air to the people who were living difficult times under the Francoist dictatorship in Spain. But then Ibiza became the ‘in’ place to go and so the popularity of Tiffany’s,the Palladium and the Maddox at the Platja d’Aro decreased.This period was later followed by the transgressive music scene of the Movida Madrileña and the Ruta del Bakalao.

Tiffany’s was an oasis of tolerance and disinhibition and was famous for its interior swimming pool surrounded by a tropical garden where the first adventurous women went topless. It was featured on the cover of the famous Spanish magazine ‘Interviú’. Many famous people visited the disco, such as Dalí. And who knows perhaps some of his pictures were inspired by scenes of these crazy nights under the moonlight of the Platja d’Aro….

There were and still are many Tiffany’s discos, there are two running discos in Baqueira and Minorca, and in the past there were Tiffany’s in many places in Spain, such as Laredo, Torremolinos, Madrid, San Sebastián, Bilbao as well as abroad in towns like Tel Aviv, Munich Montpellier, and Tolouse. Some of them still portray the iconic face of a woman in a bowler hat, others for example in Madrid continue only with the name. The founders passed away some years ago buy their legacy lives on…..

Somos energía, tierra y mar We are energy, land and sea El 2021 fue un año desafiante para todos, de eso no cabe ninguna duda. Sin embargo, a pesar de las dificultades, el pasado año nos regaló la oportunidad de apoyar y participar en proyectos muy interesantes, y queremos compartir con algunos de los más destacados.

2021 was without a doubt a challenging year for all of us, however, in spite of the difficulties we encountered we also had the opportunity to participate and support some very interesting projects, and we would like to share some of the most outstanding with you.

Desde Menorca Preservation llevamos a cabo proyectos relacionados con el mar, como trabajar codo con codo con la alianza Plastic Free Menorca, buscando activamente soluciones a la contaminación por plásticos y certificando los primeros restaurantes y hoteles que siguen una política de minimización del residuo plástico en sus establecimientos, de la mano de Plastic Free Balearics.

En esta misma línea, trabajamos con la UICN (Unión Internacional para la Conservación de la Naturaleza) en la elaboración de planes de acción para reducir la contaminación por plásticos en los sectores de pesca, turismo y gestión de residuos.

At Menorca Preservation we carry out projects related to the sea, for example working together with the Alliance Plastic Free Menorca and Plastic Free Balearics both of which actively search for solutions in order to lesson the pollution caused by plastics and award certificates to the hotels and restaurants which follow the plan and thus reduce the level of plastic contamination in their establishments. We continue along this same line by working with the UCIN (International Union for the Protection of the Environment) who put into practice action plans to reduce plastic contamination in the fishing, tourist and waste management sectors.

Menorca recorrieron 4.000km y se produjeron 44 vídeos proponiendo soluciones a la problemática de los plásticos en nuestras islas y que en 2022 se ampliará a incluir también Ibiza y Formentera.

Además, lanzamos la App Zero Plastic, que consiste en retos gamificados aplicados a la reducción de residuos.

142 young people from Mallorca and Minorca covered 4.000kms and produced 44 videos in which they proposed solutions on how to resolve the problem of plastics on our islands, and in 2022 this iniciative will also include Ibiza and Formentera. We also, lauched the App Zero Plastic, which consists in a game with challenges in reducing waste.

También apoyamos a la asociación TURSIOPS para llevar a cabo un estudio en la zona de cría de cachalotes al norte de Menorca, gracias al cual se detectaron 20 cachalotes en contexto social.

La segunda fase de este proyecto tendrá lugar en 2022 y anhelamos que sirva como punto de partida para la protección de la zona. Además, llevamos a cabo diferentes campañas de educación y sensibilización ambiental, como la de Surf&Clean, en la que se sensibilizó a 160 alumnos y se capacitó a un monitor local, y cuya segunda fase tendrá lugar este verano.

Furthermore, we gave support to the TURSIOPS association so that they could carry out studies of the breeding area of sperm whales on the North coast of Minorca, thanks to which they were able to detect 20 whales in this social context. The second stage of this project will take place in 2022 and we hope that it will be the starting point for the protection of the area. We also carried out several different educational and awareness programmes to protect the environment, such as Surf & Clean, which raised awareness amongst 160 pupils and trained a local monitor.

Siguiendo con nuestro pilar estratégico de conservación marina, apoyamos la segunda y última fase del estudio de impactos, presiones y amenazas marinas, desarrollado por el Obsam, y se concedió a la Sociedad Ornitológica de Menorca el apoyo necesario para desarrollo de un proyecto sobre la Isla del Aire y su colonia de aves marinas europeas paíños.

The second phase of this objective will take place this summer. Following our strategic plan of marine conservation we supported the last phase of studies devolped by Obsam about the impact, pressures and hazards on marine life. Furthermore,we gave the necessary funds for the devolpement of a project about the Isla del Aire and the protection of its colony of European sea birds.

En cuanto a energía, estamos apoyando activamente la creación de la primera comunidad de energía verde de Baleares, en el polígono industrial de Sant Lluís. Este proyecto nos hace especial ilusión, porque es la demostración de que es posible y muy positivo un proyecto que aúna la colaboración de empresas, entidades públicas y privadas para impulsar proyectos de autoconsumo compartido de renovables. La comunidad se ha constituido legalmente y esperamos que la instalación sea una realidad a finales de año.

Esperamos que sirva también de ejemplo para replicarlo y escalarlo a otras localidades.

As far as energy is concerned we are actively supporting the creation of the first green energy community of the Balearics situated in the industrial estate of Sant Lluis. We are really excited about this project because it verifies that use of green energy is possible and motivates projects of a shared self supply of renewable energy. This project unites a number of companies and public and prívate entities as collaborators. The community was legally constituted and we hope that by the end of the year we will have completed the necessary installations. We also hope that it will be an example to other localities and will be copied by them.

71 En cuanto a los proyectos de tierra, se llevó a cabo el segundo proyecto de emergencia Covid-19 y 140 familias accedieron a productos frescos y de Menorca a través de tiendas locales, durante 9 semanas. Adicionalmente, se plantaron 86 árboles, e instalaron 6 colmenas en 4 fincas del programa Custodia Agraria del GOB.

With reference to land projects, a second project of emergency Covid-19 was carried out which provided 140 families with fresh Minorcan produce distribuited through local shops during 9 weeks.

Moreover, through the programme Custodia Agraria set up by the GOB 86 trees were planted and 6 bee farms installed in 4 different farms.

Por otro lado, en enero lanzamos uno de nuestros proyectos más ambiciosos cuando pusimos en marcha “MENORCA PRESERVADA”. Un programa de formación continua - cursos para la viabilidad y sostenibilidad del campo menorquín que busca apoyar al sector primario de la isla a seguir formándose y avanzando y ayudar a que este sector sea sostenible tanto económica como medioambientalmente. Se trata de una serie de cursos gratuitos, dirigidos a profesionales del campo y a cualquier persona interesada en las diferentes temáticas, que se desarrolla a lo largo de este año y de 2023. ¡Puedes encontrar más información en nuestra web!

Last January we launched one of our most ambitious projects when we set up ‘MENORCA PRESERVADA’ a continuing educational programme with courses about the viability and sustainibilty of Minorcan farming which gives support to the primary sector of the island and help members of this sector learn and advance and thus become more sustainable both economically and evironmentally. The programme consists of a selection of free courses directed towards local farmers but are also available for those who are interested in the offer of different subjects. These courses will take place this year and in 2023. You can find more information on our website!

Por último, estas semanas estamos cerrando algunos nuevos proyectos que tendrán un impacto positivo en la conservación y mejora del medio ambiente en Menorca. ¡No paramos!

La moda que viene Spring & Summer fashion QUERIDOS AMIGOS, ¡YA ESTAMOS DE VUELTA!

MY DEAR FRIENDS WE ARE BACK!

Hemos pasado las Fiestas Navideñas, el frío invierno y por fin tenemos aquí la primavera, ¡la ansiada primavera! Y con ella los preciosos meses de Abril y Mayo, que además acompaña el inicio de temporada de Mondo Menorca.

Christmas has long gone and so have the cold winter months and at last spring has arrived, wonderful spring with its beautiful months of April and May and accompanied by the first edition of Mondo Menorca.

Vuelven los días de sol y las ganas de paseos, de aperitivos en terrazas, de noches de brindis y hasta los primeros baños en el mar. La isla se llena de flores amarillas entre sus verdes campos. Viene también la deseada Semana Santa.

Con ella empiezan las aperturas de temporada en Menorca. Abren hoteles, restaurantes, bares y tiendas. Urbanizaciones de playa empiezan a llenarse y los centros de Ciutadella y Mahón van cobrando vida y ajetreo.

We can once again take long walks, have apertifs and evening drinks on a terrace, and sunbathe and swim in the sea. The island is filled with yellow flowers and green pastures. Easter is also upon us, and so is the beginning of the summer season in Minorca when hotels,restaurants,bars and shops open in order to welcome new clients, and when the streets of Ciutadella and Mahon will once again be busy with tourists and locals.

Además, esta nueva temporada viene cargada de novedades. Nuevos establecimientos, nuevos Festivales, eventos preciosos… que iremos desvelando y disfrutando en los próximos números, para mostraros con todo detalle. ¡Estad atentos!

Pero en este número me apetece contaros sobre moda, para que podamos ir soñando y preparando nuestros looks de primavera – verano. Acabo de aterrizar de la “Mercedes Benz Fashion Week” que se realiza en Madrid y ¡traigo las ideas frescas!

Siempre es ilusionante ver desfiles, ¡inspirador! Se apagan las luces, música a todo volumen, un foco ilumina el centro de la pasarela y… ¡Comienza el desfile! Un sinfín de colores, tejidos y diseños que te ayudan a tele-transportarte a aquellos lugares donde te pondrías las prendas que pasan delante de ti: - ‘Con este vestido me imagino en una fiesta en un Palacio, este bañador sería ideal un día de travesía por Menorca, me pido los blancos para pasear por el puerto…’ y así me paso todo el rato que dura el desfile.

Abril es un buen momento para empezar a visitar nuestras tiendas y marcas favoritas, cotillear por internet y revisar publicaciones de tendencias. La finalidad es acercarnos al ansiado verano, a las vacaciones y al disfrute de los planes que más nos apetecen. ¡Visualizarnos con prendas favorecedoras nos sube el ánimo!

Os comparto algunas de las tendencias que vienen con fuerza esta nueva temporada y con las que deseo animaros a visualizaros en los días maravillosos de primavera y de verano en nuestra querida isla de Menorca. El color volverá a ser el gran protagonista de los looks primaverales, en concreto hay un color que viene con fuerza y es el morado, en su tono de Pantone “Very Peri”, elegido como color del año 2022, ¿lo sabíais? Es un tono ideal para todo tipo de celebraciones: bodas, bautizos comuniones y ¡fiestas de guardar!

Combínalo con negro o blanco y será un acierto seguro. Y otro tono que ya vino para quedarse y me chifla es el rosa. De hecho, ya se escucha la frase de “el rosa es el nuevo negro” casi como un mantra. Busca prendas que vayan con tu estilo y resáltalas con los complementos adecuados.

In this edition I would like to talk about fashion, so that we can get an idea of what looks we will need for this spring-summer. I have just arrived from the ‘Mercedes Benz Fashion Week’ which took place in Madrid and have a selection of great ideas to share with you.

It is always exciting when the lights go out and the music begins to play and a spotlight iluminates the catwalk and so inspiring when you see the new designs. An endless number of colours and materials and designs flash before your eyes, which take you to a place in your imagination where you can picture yourself wearing these great outfits. - As I contemplate the designs I begin to imagine where and when I could wear them, for example with that white dress I can imagine myself at an event at a Palace, and that swimming costume would be just perfect for a day on a boat in Minorca, and I love all the white pieces which would be fantastic for walks along the port.

April is a great month for shopping in our local shops and brands, to surf the net and read fashion magazines in order to discover the new trends. We are really looking forward to the summer months, our holidays and having a good time. And when you imagine yourself in flattering outfits it always makes you feel happier! Here are a selection of new trends for the coming season, which I hope will inspire you to visualise the marvellous days of spring and summer that await us on our beloved island of Minorca. Colour once again plays an important part in all these looks, and especially the colour purple in its Pantone tone of ‘Very Peri’ and FYI it was chosen as the colour of the year for 2022. It is the perfect colour to wear at weddings, christenings, communions and other events and when combined with black or white will make a great total look.

Vuelven las rayas, pero ojo, no vale cualquiera, las rayas en vertical. Que además vienen fenomenal porque estilizan. Un vestido o camiseta de rayas verticales será una buena inversión para la temporada.

Las minifaldas bien cortas y ajustadas son otra de las tendencias esta primavera–verano. Se admiten en colores llamativos, donde las combinaremos con prendas más suaves en su parte de arriba o por el contrario, minifalda en tonos cálidos y damos color en la parte superior.

Y los total looks monocolor son lo más visto en las pasarelas, así que no os olvidéis de haceros con algún conjunto de varias prendas, todas en el mismo tono.

Si queréis ver maravillosas prendas y dejaros asesorar por verdaderas profesionales de la moda, os recomiendo algunas de mis tiendas favoritas en Menorca, como son: “Drees Code” en Mahón, “Samoa Moda” en Ferreries, “Idò” y “Lady Flash” en Ciutadella.

And my favourite colour which is really in style is pink, and in the fashion business you can hear comments that pink is the new black. Choose an outfit which suits your style in this colour and the necessary accesories to get the perfect total look.

Stripes are also back in fashion, but only vertical ones, which by the way help to slenderise one’s figure. A striped dress or t-shirt would be and ideal addition to your wardrobe for this season.

Another trend is the mini skirt, short and tight, in bright colours and we can combine them with pastel colours for our tops or vice a versa, pastel toned mini skirts with bright coloured tops.

Nevertheless the most popular total looks on the catwalk were monotoned, and we should all have at least one of these looks in our wardrobe.

El turismo activo es uno de los tipos de turismo más demandados últimamente. ¿En qué consiste el turismo activo? ¿Por qué se ha convertido en el gran triunfador entre los viajeros de todo el mundo? ¿Qué ofrece Menorca de este tipo de turismo?

El turismo activo es una forma de viajar en la cual el objetivo principal es realizar actividades en ambientes naturales. Incluyen actividades deportivas de riesgo controlado y con diferente intensidad física.

Adventure holidays give the client the opportunity to practise a selection of controlled sportive activities with different levels of physical exercise in natural surroundings. Not only is being in contact with nature an important factor, it is also a great way to experience new sensations during your stay.

Ese contacto con los medios naturales es una de sus características principales. De igual manera lo son involucrarse en actividades deportivas y experimentar el destino de manera diferente.

A partir de este concepto podemos determinar las diferentes clases de turismo activo que existen. Dentro de la clasificación encontraremos actividades recreativas, deportivas y de aventura. Incluso involucra algunas relacionadas con el turismo rural.

Taking this concept into account we can discover a selection of different types of active tourism that exist, which include leisure activities, sports and extreme sports activities and also some activities that are related to rural tourism.

This touristic trend consists in looking for trips and activities in which the main factor is to practise physical outdoor exercises such as running, jumping, climbing, hiking and swimming.

Es una tendencia turística que consiste en buscar viajes y actividades donde la actividad física sea la auténtica protagonista. Así, dentro del turismo activo podríamos colocar actividades al aire libre.

Cualquier actividad que implique moverse, correr, saltar, trepar, escalar, caminar, subir, bajar, nadar…Todos tenemos claro que aquí en Menorca el mar es lo que más pesa en este tipo de turismo, como son, kayaks, buceo, paddle, surf...

Posidonia es vida Posidonia is life Posidonia Es Vida es el lema elegido por la ONG Posidonia Menorca para su campaña de verano del 2022, con la finalidad de incrementar la concienciación sobre la necesidad de conservar las praderas de Posidonia oceanica entre los usuarios del mar y las playas. La Posidonia oceanica es una planta que se ha adaptado a vivir en el mar hace millones de años atrás. Ésta planta crece formando praderas que se extienden por kilómetros constituyendo un hábitat sin igual en el Mar Mediterráneo, ya que esta especie no se encuentra en otros mares. En las praderas marinas de Posidonia podemos encontrar y disfrutar una biodiversidad única, pues los peces, moluscos y crustáceos eligen este hábitat para refugiarse, alimentarse y reproducirse.

Las praderas marinas son indispensables en la lucha contra el cambio climático. Esto es porque las plantas producen oxígeno y almacenan carbono mediante el proceso de fotosíntesis a partir del exceso de dióxido de carbono (CO2) que producen las actividades humanas. Por esto, las praderas de Posidonia oceanica son consideradas

Posidonia Is Life is the chosen motto by the NGO Posidonia Menorca for the 2022 summer campaign. The goal of this campaign is to increase awareness on the importance of the preservation of the Posidonia oceanica meadows among the users of the beaches and the sea. Posidonia oceanica is the name of a plant that has been adapted to live at the sea millions of years ago. This plant grows forming extended meadows of several kilometres creating a unique habitat in the Mediterranean Sea, as this plant species is not found in another sea. At the Posidonia meadows, we can find and enjoy unique marine biodiversity, because fishes, molluscs, and crustacean choose this habitat for hiding, feeding, and reproduction.

Seagrass meadows are essential in the fight against climate change. It is because by means the process of photosynthesis the plants produce oxygen and sequester carbon from the excess of carbon dioxide (CO2) produced by human activities. For this reason, Posidonia meadows are considered the lung of the Mediterranean Sea, as they produces the oxygen needed to allow and keep life

Además el carbono queda almacenado dentro de las praderas marinas por mucho más tiempo que en los bosques terrestres, en donde los cada vez más frecuentes incendios vuelven a liberar el CO2 a la atmosfera. Investigaciones científicas recientes han demostrado que la cantidad de carbono almacenada por una hectárea de pradera marina es diez veces mayor que la almacenada en la misma superficie de bosque terrestre.

Esta maravillosa planta tiene también funciones en la costa, ya que las hojas que se desprenden en otoño dan soporte a la arena de las playas, formando barreras, y evitando la degradación de las mismas por efecto de los temporales de invierno, los cuales también se están volviendo más intensos y frecuentes por el cambio climático.

This wonderful plant named Posidonia oceanica in honour for the God of the Sea Poseidon has also very important tasks in the terrestrial coastal ecosystems. The accumulation of the leaves falling in autumn create barriers which help fixing the sand of the beaches and thus reducing the erosion produced by the storms in winter, which unfortunately are also becoming more intense and frequent due to climate change.

Hecho en Menorca Made in Menorca El llaüt es la embarcación tradicional de las Islas Baleares para la pesca de arrastre, aunque la aparición de los barcos motorizados y la concentración de bañistas en las playas provocaron su declive en el empleo profesional. Por ello, hoy en día representa una obra de artesanía reservada a los aficionados y su presencia en la flota es casi testimonial.

Aunque en la actualidad encontramos diseños evolucionados a motor, el llaüt tradicional es un pequeño barco de vela latina, de aproximadamente cuatro metros de eslora, que sostiene tres mástiles y que puede alcanzar los siete nudos de velocidad. Su consistencia y estabilidad en el agua hacen de él una embarcación perfecta para todo tipo de actividades, como la navegación de recreo o la pesca deportiva, y resistente acondiciones meteorológicas adversas.

Se necesita el título de Patrón de Embarcaciones de Recreo (PER) para navegar.

A 'llaut' skiff is traditional sailing boat used in the Balearics for trawling,although nowadays with the beaches occupied by tourists and motorised boats there is a declive in their profesional use, and only a few remain which are now used by boat enthusiasts.

The traditional skiff is a small lateen sailing boat approximately four metres in length with three masts and can reach up to 7 knots, although nowadays many are fitted with motors. Their stability on the water makes them the perfect vessel for leisure sailing and fishing and they are sturdy in adverse weather conditions A PER sailing licence (for recreational boats) is needed in order to sail these boats.

The first boats were made by craft boatmakers 'mestres d'aixa' who used local wood in their construction. Nowadays new types of materials are used such as fiberglass, mainly because it is

Los primeros constructores de llaüts eran conocidos como “mestres d’aixa” y utilizaban maderas autóctonas para su elaboración. Hoy la mayoría de las embarcaciones se construyen con nuevos materiales, como la fibra de vidrio, cuyo precio es sensiblemente inferior, y con acabados de altísima calidad, como cualquier yate de lujo.

En la actualidad, el número de mestres ha descendido notablemente y su dedicación se centra sobre todo en la restauración de viejos ejemplares.

De todos modos, aún existen cursos de formación para evitar que el oficio caiga definitivamente en el olvido.

La tradición menorquina de llaüts se conserva gracias a la actividad de una pequeña asociación de marineros, que desde la década de los ochenta ha recuperado y restaurado más de un centenar de embarcaciones. La Asociación Amigos del Mar, con medio centenar de miembros, es la encargada de preservar este patrimonio cultural.

Entre sus objetivos, figura la creación de un museo del mar, con especial atención a las embarcaciones tradicionales, y una escuela de carpinteros para la conservación del oficio.

Nevertheless, there are courses in order to learn this craft and hopefully because of this training this profession will not become forgotten.

In Menorca these traditional boats are still very popular and this is mainly thanks to the dedication to the craft carried out by a small asociation of amateur sailors called ' Amigos del Mar' (Friends of the sea) who since the eighties have rescued and restored over 100 skiffs. One of their objectives was to create a naval museum in which they could exhibit some of these traditional boats, and they have also created a Carpentry School so as to preserve this traditional craft in Minorca.
