18 Years of Giving To U.S. Troops
or the eighteenth consecutive year, the Military Moms Prayer Group’s Holidays for Heroes gift-box drive for the troops is in full swing. Through December 15, residents of Indian River County can pick up “mailing kits” at 30 locations throughout Vero Beach, Sebastian, and Fort Pierce to pack and ship boxes of snacks to our warfighters. Since 2006, tens of thousands of Holidays for Heroes gift boxes have been sent to our servicemen and women. Among past recipients are two hometown heroes: Air Force Tech Sgt. Bryce Saint-Vincent, and Navy Chief George Voyles. Over the years as they’ve been deployed, they’ve shared packages far and wide among the men and women in their units, to make sure, as the military slogan goes, “No one [is] left behind” without some holiday cheer. ••• Bryce Saint-Vincent, 30, who graduated from Vero Beach High School in 2011 with a dual AA degree with honors from Indian River State College, never doubted what he’d do next: serve his country. A member of ROTC at VBHS, Bryce joined the Air Force after graduation and quickly rose through the noncommissioned ranks to become a Tech Sergeant. He was deployed to Afghanistan, then to Germany for four years; he was most recently stationed at Osan Air Base in South Korea.

George Voyles, 35, a former kicker for the Fighting Indians football team, graduated from VBHS in 2006. He joined the Navy two years later, after earning an AA degree with honors from the Indian River State College Police Academy. Deployed twice to the Middle East, first with the Naval Security Force Bahrain from 2011-2012, and again in Bahrain with the Naval Central Command/U.S. Fifth Fleet from 2015-2016, he is currently stationed in Italy with U.S. Naval Support Activity Naples.

t surprised me this star-studded Oscar-worthy film is free to watch (for Prime members). We’ve paid for movies not nearly as good. It drew me in from the start and kept me engrossed all the way to the end. The Burial is based on a true story of successful Stuart, Florida trial attorney Willie Gary (Jamie Fox), and an actual court case that took place in the mid 90s. Jeremiah O’Keefe (Tommy Lee Jones) is a Mississippi small-town businessman who inherited his father’s business of eight funeral homes and desires to pass the legacy on to his own thirteen children. However, due to a bad business decision, he is in financial trouble. His lawyer of 30 years, Mike Allred (Alan Ruck), convinces him to sell off a few of the homes to a large corporation. O’Keefe brings on a new, sharp young lawyer, Hal Dockins (Mamoudou Athie), who is a friend of his son. The three travel to Canada to meet with Raymond Loewen (Bill Camp) of the Loewen Group, who has made his fortune acquiring funeral homes. While meeting on Loewen’s yacht, they make a deal for the purchase of three of the homes. Several months pass and Loewen still hasn’t signed the agreement. It becomes evident to Dockins that Loewen is holding out on purpose. If he stalls long enough, O’Keefe will have to go bankrupt, which will enable him to purchase the remaining homes for almost nothing. Dockins convinces O’Keefe and Allred they need to file a lawsuit. He then convinces them to consider the charismatic flawless-trial-record attorney Willie Gary. They fly to Florida to attend one of his trials, and meet with him afterward. But Gary refuses the case. His reason? He doesn’t feel he’d have the upper hand; he only takes cases he knows he can win, and it’s just “not a Willie Gary case.”
Nevertheless, that keen young Dockins marches back into Gary’s office and convinces him this would be the case that puts him on the map. However, in court, the case is dying. People are going to proverbial sleep, aside from the verbally-charged questioning by ruthless defense attorney Mame Downes (Jurnee Smollett). She destroys O’Keefe on the stand, then annihilates Allred on the stand. Members of the counsel are quitting, and O’Keefe knows he’s defeated. Though he truly believed justice would be served, he resolves to drop the case. Disheartened, he visits Gary in Florida to tell him his decision. Meanwhile back in Mississippi, Dockins discovers something that could be a miraculous turnaround for the case. From this you will hear the best line in the movie, a response to: “How does it feel to give up more money than you’ll ever see in your life?” This story is full of ups and downs and moves right along. You won’t be bored for a second. It is suspenseful and engaging, even if you know how the trial ended (which many in the Stuart area do). The Burial has a good mix of humor and heart, tension-raising drama, top dog versus underdog, some racism, along with family and friendship. You can sense the fondness between O’Keefe and Gary, who remain friends to this day. The performances are so believable I almost forgot I was watching actors. That’s no surprise with the all-star cast, which includes Amanda Warren as Gary’s wife, Pamela Reed as O’Keefe’s wife, and more. ou can watch The Burial with your family, but be aware there is some language. Even if you don’t have Prime, this film would be well worth the cost to rent, or own, as you would likely enjoy watching it again. I know I will!

I don't know about you, but I get stuck in the "same old" side dishes rut each holiday. Here are a few ideas to change up and jazz up your special meals. Have them ready to go and pop them in the oven while the turkey rests.

DRY-BRINED TURKEY
With Honey Glaze
Dry brining is the easiest way to get a moist and flavorful turkey, but plan ahead because you’ll need a day or two for the brine. The dry brine produces a beautifully browned skin and is much easier than brining a large turkey in water. INGREDIENTS 1 12–14-pound turkey, giblets removed, rinsed and patted dry 8 tablespoons unsalted butter, room temperature For the Dry Brine 1/2 cup Diamond Crystal salt, OR 1/4 cup plus 1 and1/2 teaspoons Morton kosher salt (Morton is denser and saltier than Diamond so you use less) 1 tablespoon light brown sugar For the Glaze 1/4 cup sherry vinegar or red wine vinegar 2 tablespoons honey 4 teaspoons Worcestershire sauce 3 sprigs rosemary 3 garlic cloves, smashed 2 2x1” strips orange zest 4 tablespoons unsalted butter
DIRECTIONS 1. Prepare and Dry Brine Turkey. Add the salt and brown sugar in a medium bowl and mix together with your fingers. Place the turkey on a wire rack set inside a rimmed baking sheet (or use a V-shape rack inside a large roasting pan). Liberally sprinkle the dry brine mixture all over the outside and lightly on the inside of the turkey, patting it to stick as much as possible. Refrigerate the turkey, uncovered, at least 12 hours and up to two days. (All the salt will dissolve and penetrate the skin.) 2. Remove turkey from refrigerator and discard the liquid in the sheet. Wash and dry the baking sheet and rack, line the sheet with 3 layers of foil, and place the rack back on the foil-lined sheet. Place the turkey, breast side up, on rack and tuck wings underneath. Let turkey sit at room temperature 3 hours.

3. Make the Glaze. Heat vinegar, honey, Worcestershire sauce, rosemary, garlic, orange zest, and remaining 4 tablespoons butter in a small saucepan over medium heat until bubbling and slightly thickened, about 5 minutes. Reduce heat to lowest setting keep glaze warm. 4. Prepare and Brown the Turkey. Preheat to 450 degrees. Using your fingers, carefully loosen the skin on the breast and work in 4 tablespoons of the butter under the skin, spreading evenly over both breasts, using 2 tablespoons per breast. Smear the outside of the turkey all over with the remaining 4 tablespoons of butter. Tie the legs together with kitchen twine and pour 1 cup water into the pan. 5. Roast turkey, rotating pan halfway through, until skin is mostly golden brown all over, about 30 minutes. Remove from oven and reduce temperature to 300°. 6. Brush the turkey liberally with the glaze and return to the oven. Continue to roast, brushing with glaze every 30 minutes and adding more water by 1/2-cupfuls as needed to maintain some liquid in baking sheet, until an instant-read thermometer inserted into the thickest part of breast near the neck registers 150°, 65–85 minutes longer. (Don’t worry; the temperature will continue to climb while the bird rests.) Skin should be deep golden brown, shiny, and crisp. 7. Transfer turkey to a cutting board and let rest at least 30 minutes and up to 1 hour before carving.
ROASTED BUTTERNUT SQUASH
Cubed butternut squash roasts in a hot oven until tender and crispy producing a deliciously sweet caramelized flavor. It’s a simple healthy and delicious addition to any holiday meal. 4 servings INGREDIENTS 1 large butternut squash, about 3 pounds, peeled, seeded, and cut into 1-inch cubes 1 1/2 tablespoons olive or avocado oil 2 teaspoons pure maple syrup 1/2 teaspoon ground cinnamon 1 teaspoon sea salt, or to taste 1/2 teaspoon ground black pepper, or to taste Optional seasonings: 1/2 to 1 teaspoon dried or fresh rosemary, thyme, garlic powder, Italian seasoning or oregano Fresh chopped parsley, thyme and/or sage, for garnish INSTRUCTIONS 1. Preheat oven to 400 degrees and line a large baking sheet (or 2 as needed) with parchment paper. 2. Peel the butternut squash with a vegetable peeler, cut the squash down the middle, lengthwise, and remove the seeds and pulp. Then cut into 1-inch cubes. (Publix does some of this work for you…check out what’s available in the produce section.) 3. Add the cubes to a large baking sheet or a large mixing bowl. Drizzle with oil and syrup, then sprinkle with cinnamon, salt and pepper, and any extra seasonings, to taste. Toss all the ingredients together using your hands, ensuring all the cubes are coated. Arrange in an even layer (being careful not to overlap - working in batches as needed) on the lined baking sheet. 4. Roast about 30-35 minutes (or more depending on the size of your squash) until the squash is tender and golden brown with caramelized edges, using tongs to flip the squash and rotating pan half-way through. Season with more salt and black pepper, to taste. 5. Transfer to a serving bowl and garnish with fresh herbs.
ROASTED BRUSSELS SPROUTS
with Bacon, Pecans and Cranberries
A colorful side dish for your holiday turkey. A blend of sweet and savory, soft and crispy. Roasting in a hot oven caramelizes the sprouts and brings out their sweet flavor. Serves 6 INGREDIENTS 1 pound Brussels sprouts, ends trimmed 3 tablespoons olive oil 1/4 teaspoon sea salt 4 slices bacon raw 1 cup pecans, halves or pieces 1/2 cup dried cranberries INSTRUCTIONS 1. Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper. 2. Halve the Brussels sprouts lengthwise through the stem (use a sharp knife!). 3. In a large bowl, gently combine the sprouts, olive oil, and sea salt. 4. Place the Brussels sprouts, cut side down, on the lined baking sheet. Bake for 15 minutes. 5. Remove from the oven and flip to the other side. Bake an additional 10 minutes. 6. Line a small baking sheet with foil. Arrange the bacon strips onto the sheet and bake until crispy, about 20 minutes. Let cool for a few minutes, then chop the bacon into bits. Place the sprouts and bacon in a large bowl. 7. Reduce oven heat to 350 degrees and roast the pecans for 5 minutes, or until lightly toasted. 8. Gently toss the roasted Brussels sprouts, bacon bits, toasted pecans, and dried cranberries in a large bowl. Serve warm. Perception and Awareness “Our minds are incredible machines, and as they sort through data and information, they can be fooled by emotion, memory, desire, and fallacy.”
T
wo words that decipher what we see in the world around us claim title to this page. How are they the same, and how do they differ? Do we need both to have a clear hold on reality? What happens when either one of them gets clouded or misguided? Perception, as defined by Webster, means “apprehending by means of the senses or of the mind; cognition; understanding.” To perceive we utilize our senses of sight, sound, touch, taste, or smell to discern the things and happenings around us. Some that are more skilled than others may understand something more fully just by the merit of their superior abilities, like a chef with a sense of taste or a birdwatcher with quick vision. Awareness by dictionary terms is “having knowledge; consciousness.” To be aware means we are informed or alert. It may come from information given to us by our five senses, or we can pick up evidence from conversations, media, and experience. Both perception and awareness can be inaccurate. Our minds are incredible machines, and as they sort through data and information, they can be fooled by emotion, memory, desire, and fallacy. For example, a walk by a bakery may evoke the memory of our grandmother’s kitchen and we may be affected by sensory remembrance. We may be comforted or agitated, depending on our previous experiences in that remembered kitchen. In this case, our perception was fooled. To bring ourselves back to reality, we employ awareness. We will alert ourselves to our current situation. We “talk ourselves” back into the present moment. Throughout our life journeys, both perception and awareness affect our interpersonal relationships with other people, too.
An erroneous perception may direct us to a false belief. We can “jump to a conclusion” that is unjustified, and armed with misinformation we can approach another person with anger, distrust, disdain, or outright malice. In this way, relationships are injured or broken. Loved ones are kept at a distance based on fallacy. Surety of our perception separates with each flawed memory. Only awareness can combat this broken and isolated stance. Sadly, the insulated one wards off new information, afraid that the guilty party or any in their alliance will peddle deception. Cut off to truth, he suffers in cynicism. First, we must become aware of our stance. Though we are all entitled to our perspectives, have we tied ourselves so tightly to our understanding that we become unwilling to allow others to disagree with our views? Are we pretending we are not aware of the rift that separates us and keeps our dear ones away? With courage, each of us can take an objective look at our situation. Where has our closed mind or sense of certainty kept others from enjoying our company? Have we made it clear that we are averse to considering another viewpoint? Can we table a topic on which we disagree and move forward with tolerance? Or, has our judgment created a break too deep to bridge? Have our rigid attitudes made us lose sight of our true priorities? erception and awareness are gifts that allow us to participate in life at its fullest. Sometimes, however, they become stepping stones to separation and loneliness. We must take stock regularly to be sure that our desire to be right hasn’t replaced our desire to be loved. Surely, we will gain greater rewards from the latter.

hile watching the news recently we were utterly shocked to see the results of the attack on Israel. There were images of the slaughter in every imaginable and unimaginable way of innocent people. The photos of infants riddled with bullets and babies burned in their beds left a sickening blow in our guts. More than a thousand dead from an onslaught that lasted only a few hours. How depraved and lacking of sensibility to human life can anyone get, we asked ourselves. So much destruction and human life lost. What is this doing to the children in our lives? After reflecting on what we had just seen, we prayed for the victims, for the families of the victims, for the perpetrators of this massacre, and for the leaders of the world. We prayed for those leaders who have the responsibility of responding to the barbaric actions of a terrorist group. Thinking about the loss of innocence in the world today, I was reminded of a conversation that my wife had with our five-year-old niece Tess following the pandemic. It had been a year since we had been together. My wife asked her what she had been doing during the Covid shutdown. Her response was, “I have been very kind.” And she said, “You know, Aunt Jo, there’s enough love in this world to go around for everyone.” How did she learn that, she was asked. “I learned it from my mother.” This is a reminder to us as parents, aunts, uncles, and teachers as we respond to the many issues in our own lives. How do we treat the difficult person in our neighborhood? How do we respond to people who
hold a different perspective than we do? How do we respond to a child in our life who has done something that they were not supposed to do? And how do we respond to the world situation that is surrounding us today? What are our children learning from us about respecting others in their world? What are we doing to teach them the core values that will support them in the days ahead? My wife continued to probe and asked her if it was easy for her to always be kind. Tess responded that it is not easy, especially when someone has been mean or hurtful. But we have to keep trying and not give up, she said. ut of the mouths of babes! Is it possible that we could learn a thing or two from the little ones? In Mark’s gospel we hear these words: [And people were bringing their children to him that he might touch them, but the disciples rebuked them. When Jesus saw this he became indignant and said to them, “Let the children come to me; do not prevent them, for the kingdom of God belongs to such as these. Amen, I say to you, whoever does not accept the kingdom of God like a child will not enter it. Then he embraced them and blessed them, placing his hands on them.] Mark 10:13-16 Thus, let us pray that Our Lord help us to be more like a child – not childish, but like a child.
