This month we included recipes sweetened with delicious pure maple syrup.
Did You Know…
Maple syrup was invented by the Iroquois people who are indigenous to northeastern America. They pioneered the tapping technology that drew sap from the maple tree, as well as processing techniques for transforming it into syrup and sugar crystals.
Roughly two-thirds of the world’s maple syrup comes from Quebec.
In 2023, Vermont produced over two million gallons of syrup, making it the largest producer by far in the US, followed by NY, ME, WI, NH and PA.
Oh average, 180 million pounds of maple syrup is produced worldwide every year. Syrup is filled with antioxidants and healthy minerals like zinc, magnesium, calcium and potassium.
It takes roughly 40 gallons of maple tree sap to produce a single gallon of syrup!
Producers start tapping trees in early spring when the tree sap begins to thaw. In a good year, the sugaring season will last between four and six weeks.
There is a “terroir,” or taste of place, with maple syrup as there is with wine. The taste is affected by elevation, soil, and sun.
It takes about 40 years for a maple tree to be old enough to tap, and they grow for hundreds of years, so the soil has a significant effect on the taste of the syrup.
While many people envision maple sap being gathered by pails and spiles, this tradition is outdated, and since the 1970s most maple tree farms rely on systems using suction pumps and tubes.
A single maple tree is capable of producing anywhere between 5 to 15 gallons of sap per season, depending on weather, tree age, and health.
There are 4 grades of syrup, ranging from Grade: A: Golden Color & Delicate Flavor, the first to be tapped, to Grade A: Very Dark & Strong Taste, the last to be tapped.
You’re probably using Grade A: Amber Color & Rich Taste, the second to be tapped, on your pancakes.

WHY I LOVE NEW MEXICO, MY NEW HOME

Nestled at the base of the Sangre de Cristo Mountains, Santa Fe, New Mexico, is best known for its diverse culinary heritage, unique adobe architecture, and distinguished arts scene. When my husband received a job offer to move here five years ago, we jumped at the opportunity, packing up our Tampa home and making our way out west.
However, despite all of its charms, leaving behind the lush greenery of the Sunshine State for the
arid high desert of the Land of Enchantment was a challenging transition for me. The differences between these two places couldn’t be more pronounced!
It was only when I discovered the joys of hiking that I truly embraced this remarkable place and began to cherish the unparalleled rugged beauty of the Southwest. Here are three of my six favorite hikes that made me fall in love with New Mexico. Next month I'll share the other three!

The Picacho Peak Trail is a 3.8mile out-and-back trail, part of the extensive Dale Bell Trail System, located about 10 minutes from the Santa Fe Plaza. Navigating this trail system is extremely easy, thanks to numbered trail junctions and system maps.
Starting from the Cerro Gordo Trailhead, the Picacho Peak Trail ascends gradually through juniper scrub, ponderosa pine, and pinyon pine forests. When hiking in the summer look for pincushion cactus, yucca, and tiny horned lizards. If you smell something sweet like butterscotch, it’s the bark of a ponderosa pine. You may even find a fossil or two in the rocks along the way. The last mile is a series of steep switchbacks that reveal expansive 360-degree views of Santa Fe and the surrounding area.
After hiking, head back into town to grab an iced Santa Fe Fog tea latte at the Tea House and explore the many art galleries, like the Cielo Handcrafted, along Canyon Road.

The Chamisa Trail Loop is an excellent hike during any season, but is especially lovely in winter. It is easily accessed from downtown Santa Fe, and the trailhead is located right off Hyde Park Road. This 4.3-mile loop begins at the east end of the parking lot. The trail starts with a steep ascent up the canyon but soon levels out. Although there are no epic vistas, the trail offers a beautiful winter stroll through the serene snow-covered evergreens along the canyon ridge. If you do hike in winter, make sure to wear the proper shoes and winter traction gear.
After your snowy hike, head just two miles back down the road to Ten Thousand Waves, a Japanese onsen-inspired mountain hot spring resort, where you can soak in a hot tub and enjoy izakaya fare at the resort’s restaurant, Izanami.

Lake Katherine via Windsor Trail. Lake Katherine, found deep within the Pecos Wilderness and encircled by towering mountain peaks, is the ultimate destination for high-mountain solitude and pristine alpine beauty. This 14-mile out-and-back hike is not for the faint of heart and is best done as an overnight backcountry camping trip in summer or fall.
It begins on the Windsor Trail at the west end of the Santa Fe Ski Basin parking lot, takes you through dense spruce, fir, and aspen forests, up rocky terrain, and past clear mountain streams.
If you choose, you can summit Santa Fe Baldy before heading down steep switchbacks and past a large rock field to Lake Katherine. Camping along the lake’s edge promises the most incredible stargazing experience in the Santa Fe region. Ski Santa Fe Resort offers fall activities, including live music, food, and chairlift rides through the aspens from September to October, so make sure to partake in the festivities after your weekend excursion!
Tips for Hiking in the High Desert. With its diverse landscapes and challenging terrains, hiking in New Mexico can present extreme weather and trail conditions. Before hitting the trails, ensure you are well-prepared with appropriate clothing, water, sunscreen, and other essential gear. Always check weather forecasts and trail conditions, and let someone know your itinerary before leaving.
Stay on marked trails, watch for wildlife, and be mindful of quickly changing weather conditions, especially at higher elevations. Know potential hazards, like sudden thunderstorms, altitude sickness, and limited cell phone reception in remote areas. Above all, practice Leave No Trace principles, respecting and preserving the natural beauty of New Mexico’s wilderness for future generations. Look for Part 2 in our next issue!

Need hope? Perhaps I’m not the only one who felt encouraged after watching SuperSpreader. Rotten Tomatoes’ audience even gave it a 92% score. Although it was released a year ago, I thought now might be a good time to talk about it since it is said another round of the virus may be upon us.
SuperSpreader is a documentary about a Christian singer, Sean Feucht, who began the “Let Us Worship” tour after churches were told they could not gather and could not “sing” during the 2020 pandemic. The film follows what began as an outdoor worship event in California and spread through 36 cities across the United States, in the midst of much controversy and condemnation. It gives voice to both sides of the argument and makes a lot of good points.
When churches were not allowed to gather, yet casinos, bars, and abortion clinics were welcome to stay open, Feucht could not stay silent or still. Churches are essential to those in need, a haven for the hurting. And people were hurting and in need.
As the mental health crisis reached alarming heights, Feucht and his crew were seeing lives changed by the good news of the Gospel. Many who were deeply troubled were being set free, even from suicide. Yet Feucht’s team faced intimidation and resistance at every turn.
At times he didn’t know how they could continue, but people miraculously came into his path to encourage and support his efforts. For example, in Portland, Oregon, where they faced violence and terror, some Russian Christians came onto the scene and helped
protect them. Having lived through communism, these Russians were able to shed light on what they saw happening here in America. They told Feucht, “Americans don’t understand what communism is like.” Through tears they pleaded, “All the things that are happening is how it began for us. You have to wake them up.”
Sean Feucht was accused of spreading the virus through his outdoor gatherings. Instead, what he was superspreading was peace in the midst of fear. Hope in the grip of despair. Freedom for those with addictions and depression. Fulfillment to those hungry for love and purpose. Unity instead of division. Revivals in the middle of riots. God’s love amidst hate. Good triumphing over evil.

My Big Fat Greek Wedding 3 PG-13
Need a laugh?
During these trying days, laughter is good for the soul. My Big Fat Greek Wedding 3 does not disappoint. The third in the franchise by Nia Vardalos, which began in 2002 and continued in 2016, entered theaters on September 8.
Even though the father is now deceased and the mother has dementia, this film is lighthearted and heartwarming and has plenty of humor throughout. Perhaps you have a Greek, Italian, Hispanic, or other large family. A lot of us can relate to the

high-strung, spirited shenanigans of a big family; but if you can’t, you can be thankful you were not born into the crazy and just enjoy being entertained by those of us who were.
Toula (NiaVardalos), Ian (John Corbett), their daughter Paris (Elena Kampouris), and many of Toula’s big fat Greek Portokalos family go to Greece together. Gus, Toula’s father (Michael Constantine), made her promise to bring his journal of America and deliver it to his old friends. They stay in a remote village where Gus grew up, all sleeping in the same room. The film is full of laughs and adventure as the family searches for Gus’ friends. Will they show up for the reunion? Will they be able to deliver their father’s dying wish?
If you’re tired of the heaviness and darkness coming out of the film industry, you’ll find this movie fun and refreshing. You’ll also enjoy the scenery, as the film was filmed in Greece, although I wish there was more. Be aware there are some adult themes and some minor nudity, which is not too revealing.

Pumpkin, Spice & Everything Nice Pumpkin, Spice & Everything Nice
umpkins are an autumn fruit (yes, fruit), and attractive pumpkin displays at the grocery stores officially announce the arrival of my favorite season. With over 100 varieties of pumpkins grown in the United States, it’s not unusual to see different shapes, sizes, and colors. In addition to the traditional orange, there are white pumpkins, yellow, blue, golden, coral, turquoise, purple, plus stripes! By late October, the weather is finally starting to cool off, a refreshing change from the sweltering summer heat, and thoughts turn to the warm spices and flavors of fall.
Pumpkin Butter
I have two recipes here. The first one is dark, thick, and spicy, and contains no butter. The second is made with butter, is lighter, and includes maple syrup for a delicious maple-y cinnamon-y flavor. They’re both super simple to make. This first pumpkin butter is a spicy sweet fruit spread. Simmering the ingredients concentrates the flavors producing a deep flavorful spread. This recipe can be doubled and makes welcome gifts for the holidays. Pumpkin, spice, and everything nice!
MAKES 2 CUPS
INGREDIENTS
1 15-oz can 100% pure pumpkin
1/2 cup apple cider
2/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
Heaping 1/8 teaspoon salt
DIRECTIONS
Combine all the ingredients in a medium heavy saucepan. Bring to a boil over medium-high heat, stirring occasionally. (The mixture will be thick.) Reduce the heat to low and simmer, covered with the lid slightly ajar, continuing to stir occasionally so it doesn’t stick to the bottom. Simmer until thickened, about 20 minutes. Let cool completely. Transfer to a jar and refrigerate until ready to serve.
Note: Pumpkin butter will keep in a covered container in the refrigerator for up to two weeks, or frozen for up to 3 months.
Pumpkin Butter With Maple Syrup
This pumpkin butter contains butter and has a lighter and fluffy texture. This recipe can also be doubled.
INGREDIENTS
1/2 cup (1 stick) butter, room temperature
1 cup pure pumpkin puree
2 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon coarse salt
DIRECTIONS
1. Using a hand or stand mixer, whip the butter until it’s smooth and creamy.
2. Add the remaining ingredients and continue to whip until soft and fluffy.
3. Taste and adjust seasonings/ sweetness, if desired.

Pumpkin Spice Roll Cookies with Maple Glaze
INGREDIENTS
For the cookie
3/4 cup (12 tablespoons) unsalted butter
3/4 cup granulated sugar
6 tablespoons blotted (see note) pumpkin puree, (puree - not pie filling)
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour (spooned & leveled)
1 3/4 teaspoons store-bought or homemade pumpkin pie spice
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
For the filling
3 tablespoons unsalted butter, melted and slightly cooled
2/3 cup packed light or dark brown sugar
1 and 3/4 teaspoons store-bought or homemade pumpkin pie spice
1 teaspoon ground cinnamon
For the glaze
2 tablespoons unsalted butter
1/3 cup pure maple syrup
1 cup sifted confectioners’ sugar
Pinch of salt
INSTRUCTIONS
Note: Remove excess liquid from the pumpkin puree by blotting it as much as you can with a clean kitchen tea towel or paper towels. This dough will not turn out properly with the pumpkin’s excess moisture. After blotting excess liquid, you should have about 1/3 cup to use in the recipe.
1. Make the dough: In a large bowl using a mixer with paddle attachment, beat the butter and sugar on high speed until completely smooth and creamy, about 2 minutes. Add the pumpkin and vanilla; beat on high speed until combined, about 1 minute. Scrape down the sides and beat again as needed to combine. (It’s okay if the mixture looks curdled.) Add the flour and the spices. Beat on low speed until combined and a thick dough forms.
2. Shape and fill: Divide the dough into 2 equal parts. (If you’re weighing the dough, each half should weigh about 12 ounces each.) On a floured work surface using floured hands, pat each into a small rectangle. Using a lightly floured rolling pin, roll each portion of dough out into a 1/4”-thick 10×8 inch rectangle, using your hands to help keep the sides straight.
3. Spread about half of the melted butter onto each rectangle; it will be thick. Mix the brown sugar, pumpkin pie spice, and cinnamon together, then sprinkle evenly over each rectangle. Using the back of a spoon, pat the brown sugar and spices down into the butter to help it stick.
4. Working slowly, using your fingertips, tightly roll up each rectangle into a 10-inch log. If the dough is cracking at all, use your fingers to smooth it out. Wrap the dough logs in plastic wrap, parchment paper, or foil, and chill the dough logs for at least 2 hours and up to 3 days in the refrigerator.
5. Preheat oven to 350°. Line large baking sheets with parchment paper.
6. Remove dough logs from the refrigerator. Using a sharp knife, cut each into slices that are slightly less than 1/2 inch so you get 24-26 cookies per log. Arrange sliced cookies onto baking sheets 1.5 to 2 inches apart. If the slices have lost their round shape, use your fingers to help mold them into circles again.
7. Bake for 13-15 minutes or until very lightly browned around the bottoms. (As the cookies bake, make the glaze in the next step.) Remove finished cookies from the oven, allow to cool on the baking sheet for 10 full minutes, and then transfer to a wire rack.
8. Make the glaze. In a small saucepan over low heat, melt the butter with maple syrup, whisking occasionally. Remove from heat and whisk in the confectioners’ sugar. Drizzle over warm or room temperature cookies. Icing will set in 1 hour.
9. Cover plain or iced cookies and store at room temperature for up to 2 days or in the refrigerator for up to 1 week.
Golden Pumpkin Spice Granola (Gluten-Free and Vegan)
This pumpkin spice granola could not be easier to make. The addition of turmeric makes it “golden.” It uses ingredients you probably already have in your pantry. It’s quite forgiving, so feel free to swap ingredients as needed.
INGREDIENTS
6 tablespoons mild olive oil, or other mild oil
1/4 cup pumpkin puree
3 tablespoons maple syrup
3 tablespoons maple sugar, coconut sugar, or light brown sugar
3/4 teaspoon cinnamon
3/4 teaspoon ginger
1/4 teaspoon turmeric
1/4 teaspoon grated nutmeg
1/8 teaspoon allspice
3/4 teaspoon fine sea salt (not kosher salt)
2 1/2 cups old-fashioned rolled oats*
1 cup raw pecan halves **
1/2 cup raw pumpkin seeds
DIRECTIONS
1. Position a rack in the upper third of the oven and preheat to 325º. Line a rimmed baking sheet with parchment paper.
2. In a large bowl, whisk together the olive oil, pumpkin puree, maple syrup, sugar of choice, the pumpkin pie spices and salt.
3. Add the oats, pecans, and pumpkin seeds. Stir well.
4. Spread the oat mixture into the prepared pan, and carefully spread into an even layer with the edges slightly thicker than the middle so the granola will bake evenly.
5. Bake the granola without stirring until deeply golden, 35-50 minutes. If it’s browning too quickly, lower the oven temp by 25º. It will still be soft when hot but should crisp up as it cools.
6. Test for doneness by removing a small clump of granola, placing it on a plate to cool for a minute or two, and eating it. If it’s crisp when cool, it’s done. If it’s still soft, return to the oven for 5 more minutes and test again.
7. Remove from the oven and let cool to room temperature, about 30 minutes.
8. Break up into whatever size clusters you like and store in an airtight container for up to 1 month. If the granola softens as it sits, return it to a 250º oven for 10 minutes to crisp it up again.
* The oats are the star of this recipe. Use old-fashioned rolled oats, not instant or steel-cut. Oats do not contain gluten but may be processed in a facility that processes wheat. For gluten-sensitive, look for certified gluten-free oats, like Bob’s Red Mill gluten-free oats.
** Feel free to swap in other nuts – walnuts, hazelnuts, almonds and/or cashews. Or use other seeds such as sunflower, flax, hemp, and/or sesame seeds.

Creamy Pumpkin Soup with a Drizzle of Maple
This is a quick easy soup to make because it uses canned pumpkin. No sweet pie seasonings here; it’s savory and peppery. The canned pumpkin’s blandness is jazzed up with cumin, ginger, and cayenne. A drizzle of maple syrup provides a sweet and savory balance.
SERVES 4
INGREDIENTS
1 medium yellow onion
3 cloves garlic
1 large bunch fresh thyme
2 tablespoons olive oil
1 15-ounce can pumpkin purée (about 2 cups)
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground ginger
1/8 teaspoon cayenne pepper
2 cups low-sodium vegetable broth
2 tablespoons maple syrup
2 tablespoons heavy cream
Toasted pumpkin seeds or pecans and flaky sea salt, for garnish
DIRECTIONS
1. Very finely chop the onion and finely grate the garlic cloves.* Pick the leaves from 1 large bunch fresh thyme until you have 2 tablespoons, plus extra for garnishing.
2. Heat the olive oil in a medium saucepan over medium heat until shimmering. Add the onion and garlic and cook until fragrant, 3 to 4 minutes.
3. Add the thyme, pumpkin purée, salt, cumin, black pepper, ginger, and cayenne pepper. Cook over medium-low until steaming and fragrant, about 5 minutes.
4. Add the vegetable broth and cook, stirring constantly, for 3 to 4 minutes. The mixture should bubble.
5. Remove the pot from the heat. Add the maple syrup and heavy cream and stir to combine. For a creamier soup, use an immersion blender or transfer the soup to a blender to purée until it reaches a desired consistency. (Be careful when puréeing hot soup in the blender!)
6. Serve warm, garnished with the pumpkin seeds, flaky salt, fresh thyme leaves, a grinding of more black pepper, and a small drizzle of maple syrup if desired.
* If you plan to blend the soup, no need to grate the garlic – just finely chop.

Pumpkin Smoothie
A drinkable pumpkin pie, or maybe a guilt-less pumpkin milkshake? Make sure you have a powerful blender to easily whip this up.
INGREDIENTS
1 frozen banana
1 medium apple, skin on, chopped
1/2 cup vanilla Greek yogurt*
1/4 teaspoon ground cinnamon
1/2 cup skim milk**
1/4 teaspoon pumpkin pie spice***
2 tablespoons pure maple syrup
1/4 teaspoon vanilla extract
2/3 cup pumpkin puree
1 cup ice cubes
INSTRUCTIONS
1. Add all of the ingredients to the blender in the order listed. Blend on high for at least 3 minutes or until smooth. Stop and scrape down the sides of the blender as needed.
2. Add more milk to thin out if it’s too thick or add a couple more ice cubes for a thicker texture if desired. Taste, then add more spices if desired.
Enjoy immediately, or refrigerate up to 1 day.
* You can use regular non-Greek vanilla or plan Greek yogurt instead.
** Swap with whole milk, 2%, almond milk, coconut milk, or a nondairy
*** Make your own pumpkin pie spice if you don’t have any on hand! To make 1 tablespoon, combine: 1 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon cloves, 1/2 teaspoon allspice. Store unused spice in a small jar or airtight container.
You can top this with granola, Want to have this for dessert? Add dollop of whipped cream, or RediWip, and top with cinnamon and/or crushed graham crackers.

When you bring up the topic of human rights, the conversation will go in a number of directions. Often, the specifics on the subject will trend by cultural, social, economic, and political views. The conversation will steer itself toward race, gender, income, and/or ideology. While these dialogs may stimulate intellectually, few of them make a lasting difference to humanity. More often than not, they wind into a competition of who is right instead of what is righteous.
Bringing the topic closer to home, from what tyranny do you struggle personally? Do you put finances on the pedestal where God belongs? Does alcohol or drug addiction coerce you to lie, cheat, and steal the well-being of your loved ones? Does pornography rob your life partner of focus and satisfaction? Do you live in fear, unsure of what is coming or why this undefined anxiety claims your thoughts? Are you more concerned with what other people think of you instead of who you really are?
Unexamined lives are often trimming the sails of the ship of mankind. When rough seas erupt, we are carried off-course and fear explodes throughout society. We respond in harsh judgments, lack of team conscience, and faulty plans on how to tack back to safety. Disorder and division reign, and instead of seeking correction as a united front, we tie ourselves to the mast of whatever authority soothes our nerves.
When each individual becomes accountable for his thoughts and actions, emotions won’t command our response to catastrophe. Managing our fears by using our strengths, we will come together more succinctly and step into the roles needed with confidence. “Learning about yourself takes a lot of time, but it’s well worth the investment. The more you know about yourself, the better decisions you’ll make about the lifestyle you’ve always wanted to live,” says Steven Warley, a Work Coach at Life Skills That Matter. “Self-knowledge will enable you to use your energy more efficiently by aligning your habits with your purpose.”
Seasonally, many of us vow to do better. As we leave summer and enter fall, we make resolutions to improve. While this is good in theory, many of us haven’t done the work of determining what we value. We live our lives hoping that productivity will yield the results

we seek, but we have not defined our personal priorities. Will our new resolution serve them? Are we committing to church attendance when the problem is that our conversations with God have turned more “foxhole” than “faithful”? Are we going to work longer hours to create wealth when the better use of our will is to spend quality time with family? What wealth are we seeking? What makes our lives rich?
Self-examination is simple to begin. One straightforward method is a daily review. At the end of each day, ask yourself four questions: What did I do today for God? What did I do for others? What did I do today to make me a person of integrity? Finally, we add the fourth question: When did I miss the mark? When this becomes a habit, it opens the mind and heart to what is really important in life. This daily review improves your life by making you accountable to God, others, and self.
In addition to the daily review, some benefit from workshops, seminars, and retreats that dedicate quality time to pursue true motivations. A few hours or a few days with others seeking healing, transformation, and wellness allow the opportunity to grow, learn, and hone personal beliefs. Opening oneself to new strategies, ideas, and disciplines can shift old patterns that no longer serve. Try to plan one of these sessions once or twice annually.
As each human being becomes more accountable for himself and his beliefs, serenity can replace anxiety, and the love of our fellows can surpass self-interest. Instead of trying to correct society as a whole, let us each manage our own personal agendas. Let us become people of integrity and character, ready to come together with our fellows and to use our talents and gifts to live our best lives.

We may have external troubles and inward anxieties, but we can also bounce back with the Lord’s help.
We may feel squeezed, afflicted, pressed in, crowded in, distressed, crushed, perplexed, abandoned, destroyed, frustrated and in despair.
But when you trust the Lord you will have rest, peace, joy and hope.
Don’t give up! You will bounce back because there is hope: John 14:27; 16:33; Psalm 91; Psalm 56:3,4.
Also, read all of Psalm 34. Do not fear. Trust the Lord through it all.
