W

ith Verbier is now full of people with aching leg muscles and smiling faces after incredible powder-fuelled days up on the mountain. After a worrying lack of snow at the beginning of the season, the conditions have certainly changed for the better, with some of the best snow conditions the region has seen in years.

Our monthly contributor ‘Grumpy’ has however still managed to something to gripe about, find out the object of his vitriol on page 48.

Verbier is certainly the best place to be at the moment for winter sports, but when the snow melts, some people are still searching for more. Gilbert Crettaz travels to remote regions of Greenland in this February issue of Verbier Life.

Also in this edition, Sebastien Albert shares his photos of a nearby hideaway, a ‘Montagne Alternative’, Altitude Ski School celebrates its tenth birthday and Sylvie Weibel adds a cultural element to the magazine with an introduction to some of the artists on display at the Laforet Gallery. Eileen Smith, as always, can be relied on to tempt us to try out a new winter-warming recipe.

erbier compte de nombreuses personnes aux muscles endoloris et aux visages souriants ayant passé de belles journées dans la poudreuse. Après le manque de neige plutôt inquiétant en début de saison, les conditions se sont certes améliorées; la région n’avait pas eu de si bonnes conditions de neige depuis plusieurs années.

‘Grincheux’, notre collaborateur mensuel, a quand-même trouvé de quoi ronchonner, découvrez l’objet contre lequel il a tourné son vitriol à la page 48.

En effet, Verbier est le meilleur endroit pour les sports d’hiver, mais une fois que la neige fond, certaines personnes en veulent plus encore. Gilbert Crettaz voyage aux endroits les plus reculés du Groenland dans cette édition de Verbier Life.

Aussi à retrouver dans cette édition, Sébastien Albert partage avec nous ses photos d’une retraite cachée à proximité de Verbier, une ‘Montagne Alternative’, Altitude Ski School fête ses dix ans d’existence et Sylvie Weibel ajoute un élément culturel au magazine en nous introduisant à certains des artistes présentant leurs œuvres à la Galerie Laforet. SPORTS CENTRE UPGRADE

Verbier’s Sports Centre is set to undergo an ambitious CHF45 million facelift. There will be nine major changes to current facilities: a multi-purpose sports hall with covered courts, a climbing wall and squash courts; a four-sheet curling rink; a new restaurant and health centre building; a new welcome zone; a big new gym; waterslides; a welcome pavilion and conference rooms; the outside pool will be completely re-built; a new children’s play area for the inside pool. The rest of the Sports Centre will also be modernised, enlarged and refurbished. Building and renovation work will take place in and around the Sports Centre between the autumns of 2012 to 2015 but it will remain in use. During some periods the Centre will only be partially open. RENOVATION DU CENTRE SPORTIF

Le Centre Sportif de Verbier sera l’objet d’un ambitieux projet de rénovation qui coûtera 45 millions. Il y aura neuf changements majeurs dans l’offre du Centre sportif : salle omnisports avec courts couverts, mur de grimpe et courts de squash ; halle de curling de quatre pistes ; nouveau bâtiment pour abriter le restaurant et le centre de wellness ; nouvelle zone d’accueil ; grand fitness ; construction de toboggans ; pavillon d’accueil et salles de séminaires ; nouveau bassin pour la piscine extérieure ; nouvel espace récréatif pour les enfants dans la piscine intérieure. Les autres parties du Centre sportif seront également rénovées, agrandies et rénovées. Les constructions et rénovations qui se dérouleront dans et autour du Centre Sportif de l’automne 2012 à 2015 n’empêcheront pas le fonctionnement des installations. A certaines périodes des travaux, le centre sera fonctionnel en partie seulement. NEW SECONDARY SCHOOL FOR ST GEORGE’S

St. George’s School in Verbier, part of the St. George’s School Group, opened its doors for the first time in September 2010. Based in the Mascotte building, opposite the Nevaï hotel, the bilingual French-English international primary school welcomes children from three to eleven years of age, following the English National Curriculum with German for children from Year Four. The school offers a broad and balanced curriculum and a wide range of sports including ice skating and tennis, with skiing twice a week in the spring term, as well as music and I.T. Children are able to benefit from both excellent academic instruction in small groups, compatible with English schools, and the wonderful environment on their doorstep. In response to demand and the whole school policy, St. George’s School in Verbier will open a new Secondary School in September 2012, dedicated to children aged 12 to 14 years old (years seven, eight and nine). The curriculum will broadly follow the English National Curriculum, Key Stage Three, with certain subjects delivered in French. NOUVELLE ECOLE SECONDAIRE POUR LE GROUPE ST. GEORGE

L’école St. George à Verbier, rattachée au groupe scolaire St. George, a ouvert ses portes pour la première fois en septembre 2010. Installée dans l’immeuble la Mascotte, en face de l’hôtel Nevaï, l’école primaire internationale bilingue français-anglais accueille les enfants âgés de trois à sept ans, en se basant sur le curriculum national anglais avec allemand dès la 4ème année. L’école propose un curriculum étendu et varié et inclu une large sélection de sports, y compris le patin à glace, le tennis, ainsi que deux sorties à ski par semaine au printemps, et des cours de musique et d’informatique. Les enfants profitent en parallèle d’une excellente formation académique en petits groupes, compatible avec les écoles anglaises, et du superbe cadre sur leur palier de porte. Pour répondre à la demande et en accord avec ses réglements, l’école St. George de Verbier ouvrira une nouvelle école secondaire en septembre 2012, dédiée aux enfants âgés de douze à quatorze ans (7ème, 8ème et 9ème année). CONCERT HALL

Discussions continue on plans for a concert hall at Médran beneath the ski slopes arrival point, between the Téléverbier station and the Trois Rocs complex. In the configuration “concert hall with balcony”, the total number of seats would be 1,100. The project will be presented for public inquiry in the first half of 2012.

Discussions continuent au sujet du projet de la salle de spectacle de Médran prévue sous l’arrivée des pistes, entre la gare de Téléverbier et le complexe hôtelier des Trois Rocs. En configuration «salle de concert avec balcon», le nombre de places total serait de 1’100 spectateurs. La mise à l’enquête publique se fera au premier semestre 2012.

BRUSON DAHU FREERIDE February 11

The Dahu Bruson Freeride competition, taking place in Bruson, allows riders from all around the world to do battle on two faces prepared by DahuShaper. Snowboarders, skiers and telemarkers, the Dahu Bruson Freeride brings around one hundred riders together, men and women, and aims to provide a springboard for the qualifying rounds of the World Tour. The event will take place on Saturday, February 11, with a possibility of a postponement to Sunday, in case of bad weather. The runs will begin at 10.30 am and will then go on non-stop until the middle of the afternoon. Stalls, music and other activities.

After the competition, awards ceremony at the Dzardy’s bar in Le Châble with stalls, a freeride movie and traditional Dahu BBQ. For more information www.dahushaper.ch

BRUSON DAHU FREERIDE 11 février

La Dahu Bruson Freeride, compétition de freeride ayant lieu à Bruson, permet aux riders de tout horizon d’en découdre sur deux faces préparées par le collectif DahuShaper. Que ce soit en snowboard, en ski ou en télémark, la Dahu Bruson Freeride réunit une centaine de participants, hommes et femmes, et se veut un tremplin pour les étapes qualificatives du World Tour. La compétition se déroulera le samedi 11 février, avec une possibilité de report au dimanche, en cas de mauvaises conditions météo. Les runs commenceront dès 10h30 pour se poursuivre sans interruption jusqu’au milieu de l’après-midi. Village d’animations, musique et divers activités. SNOWDAY 4 BIKES February 4

A great event for mountain bikers who like a bit of excitement: The 10-km-long La Tzoumaz toboggan run will be open exclusively for them all afternoon and evening until 6pm. Everyone is welcome, just for fun! With a marked slope and staff placed at important intersections with the ski slopes plus some special jumps – every effort will be made to give you a unique experience! After the event the Savoleyres restaurant will be serving a cheese fondue to all participants, followed by a night-time descent at around 8pm to La Tzoumaz or Verbier under starry skies. For the benefit of local residents and faithful members of the Association of Friends of Verbier Festival, the Friends’ Winter Concert will take place on February 17 at 7pm, at Le Châble church. All spectators and bar groupies are welcome and things kick off from 11pm. Coup d’état itself has undergone a few changes this season with 7pm opening Thursday to Saturday for your pre-dinner cocktails, one of the finest collections of rum in Switzerland including the very rare (and expensive) Havana Club Maximo, a more funky direction of the music and a new 2012 cocktail menu. www.coupdetat.ch

SHOOTING EXPERIENCE

Switzerland still retains compulsory, military service for young men and voluntary, military service for women. Four adventurers from Verbier’s Bureau des Guides Adrenaline discover a paradise beneath their skis in Greenland

or each of us, our lives contain extraordinary moments which we experience with greater intensity. On occasion, those moments can lift us onto a totally new and different plane.

It all began with an invaluable tip-off from one of Gilbert’s friends.

He reported having seen an remarkable sight whilst flying his small propeller plane over a lunar-like landscape on the Arctic Circle.

Somewhere, on the west coast of Greenland, close to the village of Sisimiut, he had spotted deep fjords surrounded by astounding mountains and glaciers, appearing to lead towards endless, virgin slopes. His description of this supposed “ski paradise” left Gilbert to wonder and dream.

In May 2011 Gilbert Crettaz with colleagues and friends from the Adrenaline mountain guides bureau, Christophe Rey, Luca Voisin and AnneFrançoise Rosset, set off to seek out this unknown spot, like explorers on a quest for lost treasure.

After a short stop at Sisimiut, the second largest town in Greenland, It was the dream they boarded a small fishing boat location for which carried them to Itilleq, a village of 80 souls where the establishing base occupations of the local inhabitants camp and setting concentrate largely on fishing and hunting and where man’s best friend off to conquer the is the husky. Our four friends, with all their ski gear, were greeted like aliens by the locals and with great enthusiasm by the curious and grinning children. Sampling the local fare, mainly of seafood and caribou, was an unmissable experience and a total contrast to Raclette and fondue.

Their plan was to do reconnaissance of one of the most remote and untamed regions of the planet, a little corner of paradise where the elements of snow, ice, rock and water meet and marry in perfect harmony.

From the mountain top, the freeride possibilties span a radius of 360 degrees and stretch for as far as the eye can see; an almost impertinent amount of virgin runs to discover and investigate.

In this region, situated exactly on the Arctic Circle, the mountains scarcely know the freerider. Our four explorers had to spend many days planning and studying the topography of the area, and the exposures, gradients and snow cover tendencies of the slopes so as to identify the best combinations for ski touring and heli-skiing. They put all their knowledge and experience to full use towards their research and exploration of a far-away and unknown environment, which added a further dimension to the adventure for them.

There is no infrastructure for snowsports in this region and so everything had to be minutely planned before embarking upon their journey.

April and May appear to be the best months for ski touring and heli-skiing in Greenland. The snow cover is stable due to the oceanic microclimate. The

ans chacune de nos vies, il existe des moments extraordinaires que nous vivons de manière plus ou moins intense, il arrive quelques fois que ces instants nous permettent d’accéder à un univers incomparable et sublime.

Tout a commencé par la précieuse information d’un ami de Gilbert qui lui dit avoir eu une vision étrange en survolant avec son petit avion à hélice une région quasi lunaire à la hauteur du cercle polaire.

Quelque part sur la côte ouest du Groenland, à proximité du village de Sisimiut, il aurait aperçu de profonds fjords entourés d’impressionnantes montagnes et glaciers, desservant semble t’il des pentes vierges à perte de vue. La description qu’il lui fait de cette présumée « région paradisiaque pour le ski » le laisse autant perplexe que rêveur.

En mai 2011 Gilbert Crettaz avec ses collègues et amis du bureau des guides Adrenaline, Christophe Rey, Luca Voisin et Anne-Françoise Rosset partent donc à la recherche de ce spot inconnu, comme des aventuriers partiraient à la recherche C’est l’endroit rêvé d’un trésor perdu.

Avec leurs équipements de ski, nos quatre amis ont été accueillis comme des extra-terrestres par les autochtones et avec beaucoup d’enthousiasme par des enfants curieux et souriants. La dégustation de spécialités locales à base de poisson ou de viande de caribou était une expérience incontournable et un virage à 180 degrés de la raclette et de la fondue!

Leur objectif était de mener une mission de reconnaissance dans une des régions les plus éloignées et sauvages de la planète, un coin de paradis où les quatre éléments neige, glace, roche et eau s’entremêlent et se mélangent harmonieusement.

Du sommet de la montagne les possibilités de freeride s’étirent à perte de vue sur 360 degrés ; de quoi repérer et explorer de nombreux runs à la virginité bien insolente!

Dans cette région, située exactement sur le cercle arctique, les montagnes n’ont quasiment jamais rencontré de freeriders. Il a fallu des jours de préparation à nos quatre aventuriers pour étudier la topographie du terrain, l’exposition, l’inclinaison et les tendances d’enneigement des pentes afin d’identifier les meilleures combinaisons pour la randonnée à ski et l’héliski. Ils ont mis à profit leurs connaissances et leurs expériences dans l’étude et l’exploration d’un environnement lointain et inconnu, une dimension supplémentaire à leur aventure. Aucune structure pour les sports de glisse n’existe dans cette région, tout était à prévoir et à organiser minutieusement avant le départ.

snow structure is changeable and varies from beautiful powder on the northfacing slopes to spring snow, which is a joy to ski, on the slopes facing other directions. It isn’t unusual, whilst cruising down these awesome inclines, to spot whales breaching or basking in the sea!

When we read accounts of adventures with their glorious photos in glossy magazines, most of us think that expeditions like this are only for an elite few and that we can only experience them vicariously. Well, think again!

This adventure is within the reach of any competent skier in good physical condition and looking to experience new sensations.

Our four friends experienced something here which took them beyond what they had previously experienced through pursuing their respective passions, and they drew, from the experience, the wealth of an entire region.

Avril et mai paraissent être les meilleurs mois pour la pratique du ski de randonnée et de l’héliski au Groenland. Le manteau neigeux est très stable grâce au microclimat océanique. La neige est changeante et passe de la belle poudreuse dans les expositions au nord à de la neige de printemps si agréable à skier dans les autres expositions. Il n’est pas rare d’apercevoir des baleines barboter et se languir dans la mer en dévalant ces magnifiques pentes !

Lorsque l’on lit des récits d’aventures, illustrés par de magnifiques photos que l’on admire dans les magazines spécialisés, la plupart des gens pensent que ces expéditions sont à la portée d’une élite et qu’ils ne peuvent les vivre que de manière indirecte.

Stepping outside the ‘Bubble’

With everything Verbier has to offer, it’s no wonder it attracts visitors from all over the world. Whether a regular visitor for years, a permanent or seasonal resident, or on holiday here for the first time, most will agree that Verbier has something for everyone: fantastic skiing, exceptional weather with sun-drenched terraces, contemporary alpine luxury living, and a unique buzz when it comes to après-ski and nightlife. Sadly however, very few, during their stay here, venture out of the Verbier ‘bubble’ to discover the abundant riches of the immediate region.

or photographer Sébastien Albert, long-time resident of Val de Bagnes, it was almost inconceivable that people would visit Verbier without exploring the natural beauties of the area. So, together with Activefusion, he developed a range of seasonal photography workshops, with the aim not only to teach participants the ins and outs of photography, but also help them discover the unspoiled beauty of the region surrounding Verbier.

the workshops, classroom instruction is kept to a minimum. Emphasis is put on time spent outdoors, putting theory into practice, gaining as much ‘handson’ experience as possible. Furthermore, groups limited to six participants ensure individual attention is given to all.

“The programme’s excursions are essentially a patchwork of all my favorite places, discovered through my countless outings over the years” says Sébastien. “It’s a ‘best of’ the region’s landscapes in sorts, which I’m now delighted to share with photo enthusiasts of all levels. And, as each season has its particularities, all workshops are unique. For example, during the spring workshop, we capture the valleys’ rebirth, and take in the cultural spectacle of the “Combats de Reines”. The winter workshop encompasses ski touring with a guide and an overnight stay in an authentic mountain hut, while, in the summer, we focus on the myriad of wildflowers in the high alpine. And, come autumn, we turn our lenses towards the amazing palette of colours which Mother Nature grants us”.

The workshops include excursions to Val Ferret, the Haut Val de Bagnes nature reserve, Val d’Hérens, and Val d’Hérémence’s ‘Val des Dix’ nature reserve. Participants also journey to Emosson to catch the last rays of light on the massif of the Mont Blanc, and discover the Gorges du Durnand, a local hidden gem.

“In fact, the outings are so varied and interesting, that the participants’ partners and friends can tag along and have a great time also, without even delving into the wonderful world of photography. For them, the excursion’s goal is purely about relaxing, and resourcing themselves whilst capturing nature’s energy and beauty and enjoying the views. A mini-holiday of sorts”.

Durant les ateliers, les leçons en ‘salle de classe’ sont gardées à un minimum de façon à allouer le plus de temps et d’expérience possibles sur le terrain. L’accent est donc mis sur la pratique, en pleine nature, des connaissances nouvellement acquises. De plus, les groupes sont limités à six participants afin que chacun puisse recevoir une attention particulière et bénéficier pleinement du cours. « Les excursions au programme sont, en fait, un ‘patchwork’ de mes endroits préférés, découverts au fil des ans, lors d’innombrables sorties », explique Sébastien. « C’est un ‘best of’ des paysages de la région en quelque sorte, que je suis ravi de partager avec des amateurs de photo de tous les niveaux. Et puisque chaque saison a ses particularités, chaque atelier est unique. Par exemple, lors de l’atelier du printemps, nous captons des images du renouveau dans les vallées, ainsi que du spectacle culturel des ‘Combats de Reines’. L’atelier d’hiver comprend de la randonnée à ski avec un guide de montagne ainsi qu’une nuitée dans une cabane, tandis qu’à l’été, nous mettons l’accent sur la myriade de fleurs sauvages qui parsèment les pâturages alpins. Celebration at Altitude.

Many people come to Verbier with the intention of staying for one season - before they know it, years have passed. As Altitude celebrates its tenth birthday, here are a couple of stories from past instructors who have set up successful lives in Verbier after extending their ‘one’ season…

De nombreuses personnes se rendent à Verbier dans le but d’y rester pendant une saison - tout à coup, ils réalisent que les années ont passé. Alors qu’Altitude célèbre ses dix ans, voici deux récits d’anciens instructeurs qui ont réussi à se créer une situation à Verbier après avoir prolongé leur « unique » saison …

A

ltitude Ski and Snowboard School celebrates its ten-year anniversary this season. The school was established in 2002 by former British Freestyle Team member, Chris David, sponsored rider Andre Sommer along with Swiss skier Yves Guyot and entrepreneur John Gardner.

“Altitude initially consisted of just 12 instructors, mainly from the UK, but by providing quality lessons, paying attention to customer service and having great instructors it has grown to the point where it now employs over 80 instructors a season. Since its humble beginnings Altitude has employed many instructors from around the world and over time has become a lot more international, currently there are instructors from Switzerland, Britain, Sweden, Holland, Italy, Spain, France and Russia” commented Jon West. “Many of the instructors return to Altitude each season and from the original team, five are still working for Altitude”.

Like any business, some staff move on to new pastures to pursue new careers and interests, some return to their native countries, others establish a more permanent life in Verbier. Two who decided to stay are Anthony Gent, now running Contact Estate Agency and Simon Billeness who is the manager of the T-Bar. Several romances have also flourished over the years; snowboard instructors Andre and Sophia married in 2009 and Domenic is now engaged to one of the students who was on the Altitude Futures gap course. With excellent snow conditions this season everyone from Altitude is enjoying the snow, hoping this will be the best season yet and looking forward to the next ten years ahead.

L’école a été fondée en 2002 par Chris David, un ancien membre de l’équipe anglaise de Freestyle, le rider sponsorisé Andre Sommer, le skieur Suisse Yves Guyot et l’entrepreneur John Gardner. « Altitude était composée au début d’à peine 12 instructeurs, principalement originaires du Royaume-Uni. En proposant un enseignement de qualité, en portant une attention particulière au service client et en engageant d’excellents moniteurs, l’école a grandi au point d’employer aujourd’hui plus de 80 instructeurs par saison. Depuis ses modestes débuts, Altitude a employé de nombreux moniteurs du monde entier et est devenue beaucoup plus internationale avec le temps. Aujourd’hui, on y trouve des moniteurs originaires de Suisse, Grande-Bretagne, Suède, Hollande, Italie, Espagne, France et Russie » précise Jon West. « Beaucoup d’instructeurs retournent chez Altitude chaque saison et cinq personnes ayant fait partie de la première équipe y travaillent toujours aujourd’hui ».

Comme dans toute entreprise, certains employés changent de voie pour poursuivre d’autres carrières ou d’autres intérêts. Certains rentrent dans leur pays d’origine, d’autres s’installent de manière plus permanente à Verbier. Deux personnes qui ont décidé de rester sont Anthony Gent, qui gère aujourd’hui l’agence immobilière Contact Estate Agency et Simon Billeness, gérant du T-Bar. Plusieurs histoires d’amour se sont aussi développées au cours des années; les moniteurs de snowboard André et Sofia se sont mariés en 2009 et Domenic est aujourd’hui fiancé à une des étudiantes du stage de formation de moniteurs « Gap Altitude Futures ». Avec d’excellentes conditions de neige cette saison, toute l’équipe d’Altitude en profite et espère que cette saison sera la meilleure jusqu’à présent, tout en se réjouissant des dix prochaines années à venir.

Name: Simon Billeness What year did you first come to Verbier? December 2003 What first brought you here? I was skiing in Tignes in November that year when I met Chris David who owned Altitude at the time and offered me a job for the winter – I arrived two weeks later.

When did you work at Altitude? 2003 – 2007.

What was the best aspect of being a ski instructor? I enjoyed most aspects of teaching, obviously to be paid for something you enjoy doing is always going to be a bonus.

And the worst? All jobs have their ups and downs but I have nothing that sticks in my mind as being that terrible. I do miss some of the good friends I have made over the years who have since moved on.

Favourite memory from your time working at Altitude? It was a great introduction to Verbier being part of the Altitude team and I met many great like-minded people. I suppose one of the best memories was putting together the `Altitude band` with Jon West, Hannah Lake, Rachel Tugwell and, later on, Robin Kennedy. We later become known as White Lines and played a few gigs at T-Bar and Farinet. Encouraged by Chris and Dom I wrote the Altitude Song, probably the worst lyric I ever came up with – but it gave everyone a bit of a laugh at the time.

Many people come to Verbier with the intention of only spending one or two seasons working here - was that your intention? I guess really it was going to be for one season and even that was a last minute decision. After returning for a second winter season I have lived in Verbier year-round ever since.

Where do you work now? I am currently managing the Central Hotel and T-Bar. I started with the bar five years ago and having been looking after the hotel since the end of last season. What first brought you here? Mostly chance, the Swiss Ski School offered me a job before any other of resorts replied. I knew no one and nothing about its fabulous terrain.

What was the best aspect of being a ski instructor? Après-ski.

And the worst? Having to wake up in the morning after après-ski.

Favourite memory from your time working at Altitude? Fond memories of the weekly ski school meetings come a close second to meeting my future wife.

Many people come to Verbier with the intention of only spending one or two seasons working here - was that your intention? I planned to do a season before returning to England to get a “real job”. Fortunately Verbier taught me that man needs only fresh powder, sunshine and molten cheese to be content.

Where do you work now? Ten years later I am running the estate agency “Contact” (www.contact-immobilier.ch) in Verbier. It is similar to teaching skiing but the lessons are more expensive.

Je suis arrivé à Verbier deux semaines plus tard.

Quand avez-vous travaillé pour Altitude ? De 2003 à 2007.

Quel a été le meilleur côté de l’activité de moniteur de ski ? J’ai apprécié la plupart des côtés de l’enseignement. Il est clair qu’être payé pour une activité qui vous plaît est toujours un plus.

Et le pire ? Tout travail a ses avantages et ses inconvénients, mais je n’ai aucun souvenir vraiment terrible. Certains bons amis rencontrés au fil des saisons et qui ont depuis changé de voie.

Votre meilleur souvenir de votre travail avec Altitude ? Faire partie de l’équipe d’Altitude a été un excellent moyen de découvrir Verbier, et j’ai rencontré beaucoup de personnes ayant le même état d’esprit. Mon idée était de faire une saison avant de rentrer en Angleterre et de trouver un « vrai travail ». Heureusement, Verbier m’a appris qu’il suffit de neige fraîche, de soleil et de fromage fondu pour être heureux.

Où travaillez-vous aujourd’hui ? Dix ans plus tard, je dirige l’agence immobilière « Contact » (www.contact-immobilier.ch) à Verbier. Ca ressemble à l’enseignement du ski mais les leçons sont plus chères.

The overnight marrying of flavours makes this a dish that just keeps giving and is perfect to prepare ahead of time without any worry. I hope it creates lovely memories for you too!

Je pense que ce ragoût est encore meilleur réchauffé le lendemain. En l’espace d’une nuit les saveurs se marient à merveille rendant ce plat inestimable et idéal à préparer à l’avance, sans aucun souci.

Heart-Warming Beef Stew (Serves 8)

Ragoût de Bœuf Réconfort (pour 8 personnes)

1 kg lean stewing beef, boneless and cut into roughly 1-inch (3cm) cubes 50g white flour 2 tbsp vegetable oil 3 tbsp butter 5 garlic cloves, finely sliced 1 tbsp sea salt 2 tsp freshly-ground black pepper 4 bay leaves 1 bunch of fresh thyme and rosemary, stalks removed and chopped 1l water or chicken stock ½ bottle of red wine, such as Pinot Noir, Gamay or Shiraz 8 small shallots, peeled and left whole 1 leek, thinly sliced (white part only) 2 sweet potatoes, peeled and cut into large dice 8 carrots, peeled and cut into 1-inch (3cm) rounds 1 small rutabaga or 1 medium white turnip, peeled and cut into medium dice 3 parsnips or 1 large celeriac, peeled and cut into medium dice 1 medium-sized can of diced tomatoes 1 cup frozen peas ½ cup fresh parsley, roughly chopped

1kg de viande de bœuf maigre pour ragoût, sans os et coupée grossièrement en cubes 50g de farine 2 c. à soupe d’huile végétale 3 c. à soupe de beurre 5 gousses d’ail, finement tranchées 1 c. à soupe de sel de mer 2 c. à café de poivre noir fraîchement moulu 4 feuilles de laurier 1 bouquet de thym et de romarin frais, sans tiges et hachés 1l d’eau ou de bouillon de poulet ½ bouteille de vin rouge tel que le Pinot Noir, le Gamay ou le Shiraz 8 petites échalotes, pelées et entières 1 poireau, finement tranché (seulement la partie blanche) 2 pommes de terre douces, pelées et coupées en gros dés 2 pommes de terre douces, pelées et coupées en gros dés 1 petit rutabaga ou un navet blanc de taille moyenne, pelé et coupé en dés moyens 3 panais ou 1 grand céleri-rave, pelé(s) et coupé(s) en dés moyens 1 boîte moyenne de tomates concassées 1 tasse de petits pois congelés ½ tasse de persil, grossièrement haché

In a medium-sized bowl, add flour and season with a generous pinch of salt and pepper. Dredge one piece of beef at a time making sure to coat it well and shake off any excess flour. Heat vegetable oil and butter in a large casserole pan (that has a fitted lid) and sear over medium heat the pieces of beef. You want to get a nice, golden brown colour on each piece. You may need to do this step a few times, so that you don’t crowd the pan with too many pieces at once. Remove meat and set aside. Quickly add garlic, leeks, bay leaves and shallots. Stir until they begin to brown a little. Reduce heat if the brown bits left by the beef begin to get too dark. Add wine, thyme and rosemary. Use a wooden spoon to scrape the bottom of the pan clean, incorporating all of that delicious toasted dripping into the sauce. When the wine is simmering, add the water (or stock) and tomatoes. Bring to a simmer and return the meat to the casserole. Place lid on and reduce to low. Simmer for at least 2, preferably 3 hours. Check a piece of meat, if ready it should pull apart easily. Once you’ve reached that stage, add in your vegetables (not the peas) and cook for an additional 30-45 minutes. When the veggies are tender (but not overcooked!) add your peas and parsley. Heat through, check and adjust seasoning. Serve with a big chunk of fresh bread!

Mettre la farine dans un bol de taille moyenne et assaisonner généreusement avec une pincée de sel et de poivre. Recouvrir de farine les morceaux de boeuf en s’assurant que chacun soit bien enrobé et que l’excédent de farine soit éliminé. Chauffer l’huile végétale et le beurre dans une grande cocotte (avec couvercle ajusté) et saisir à feu moyen les morceaux de boeuf. S’assurer que chaque morceau ait une couleur brune dorée. Cette partie de la recette se fait en plusieurs lots afin de ne pas encombrer la cocotte avec un trop grand nombre de morceaux de viande. Retirer la viande et la mettre de côté. Ajouter au plus vite l’ail, les poireaux, les feuilles de laurier et les échalotes. Remuer jusqu’à ce que tout se dore légèrement. Réduire le feu si les petits bouts de boeuf restant au fond de la cocotte deviennent trop foncés. Ajouter le vin, le thym et le romarin. Avec une cuillère en bois, racler le fond de la casserole afin d’incorporer le délicieux gras de viande dans la sauce. Dès que le vin se met à frémir, ajouter l’eau (ou le bouillon) et les tomates. Porter doucement à ébullition et remettre la viande dans la cocotte. Mettre le couvercle et réduire le feu à doux. Laisser mijoter pendant au moins 2 heures, de préférence 3. Vérifier la viande, elle devrait s’émietter facilement. Une fois parvenu à ce stade, ajouter les légumes (mais pas les petits pois) et laisser cuire 30 à 45 minutes de plus. Quand les légumes sont tendres (mais pas trop cuits!), ajouter les petits pois et le persil. Chauffer puis vérifier et rectifier l’assaisonnement. Servir avec un gros quignon de pain frais!

As one navigates the pitfalls and fortunes of the current economic roller coaster that we are riding on, one could not be blamed for occasionally drowning one’s sorrows in a glass (or three) of good wine to sooth the frayed nerves and leave worries for the next day.

Alors que nous traversons les écueils et le destin de la tourmente économique actuelle, on ne saurait nous reprocher de vouloir noyer de temps en temps nos chagrins dans un ou plusieurs verres de bon vin pour apaiser nos nerfs à fleur de peau et oublier nos soucis jusqu’au lendemain.

I

n fact, wine has proved to have additional soothing qualities that have amazingly given its owners more than superficial solace. Over the past decade quality wines have proved to be a recession-proof investment that continues to surpass pre-crisis prices and demand ever-increasing bids in the auction room.

Whether the need to wallow in self-pity with a great bottle of wine has become so great that the demand has outstripped supply or simply that the non crisis-ridden parts of the world have decided to gloat and consume our luxury bottles in our place I am not sure but auction houses are showing record returns for major vintages. A well-placed purchase back in 2000 is now worth several times its initial value.

Some interesting and mouth-watering examples: Château Lafite Rothschild, from the Pauillac region in Bordeaux. This stunning first growth (Premier cru) belonging to the Domains of the Barons de Rothschild is produced in 210’000 bottles every year. 70% Cabernet Sauvignon, 25% Merlot it is an imposing wine with sumptuous aromas and intense flavours. This wine was sold en primeur (Wine Futures) in 2000 for €320 and at auction at the end of 2010 it achieved the heady price of €1400!!

Enough to send one reaching for a glass of water instead of the corkscrew. That amounts to approximately 34% per year increase. Tell that to your portfolio manager.Another nice example, perhaps less spectacular, is the world class Château Margaux, from the Margaux region, obviously, and produced in 150’000 bottles every year. Similarly 75% Cabernet Sauvignon, 20% Merlot and 5% Petit Verdot, a stunning wine for any table. The 2000 vintage was sold en primeur for €354 and recently fetched over €700 which clocks in at a steady 10% rise per year, comforting stuff when I think of my UBS shares.

But the most spectacular price increase was the less known Carruades de Lafite, second wine of Lafite in Pauillac 230’000 bottles of Cabernet/Merlot and sold en primeur for an affordable €35 in 2000. It recently reached the tidy sum of €230 at auction which is a stunning 550% increase!

I rest my case and wish you all a happy day contemplating your next wine purchase.

alentine’s Day! I loathe it with a vengeance! Am I the only person on this planet to think this the most absurd of all celebrations? I think not. It is nothing to do with being a bloke, or not being romantic; I can be as romantic as any other person if I feel so inclined. My main gripe is that I may not necessarily feel so inclined on February 14 every year and I resent being

told I have to!

I do not appreciate feeling under pressure to pay for dinner at some fancy restaurant where the tables for two have been packed as closely together as possible so as to maximise the profit-making potential of the occasion but consequently killing any possibility of intimate conversation and where a specially-hiked menu prepared to fleece the deluded lovers to their maximum potential is the only option. It’s enough to send my blood pressure crashing through the ceiling! And don’t talk to me about scentless roses imported from Kenya where the underpaid workers spend their days breathing in fungicides and insecticides banned in Europe. No, this is all just madness, and yet it is so expected of us. So Ladies, I have a message to send you this Valentine’s Day; real romance is not champagne, roses and posh dinners. The guy that really cares about you is the one that buys you an ARVA because he doesn’t want to lose you Backside Mont Fort (and at the beginning of the season- NOT halfway through it in February); the guy that really cares about you is the one that picks up your ski halfway down Tortin even though it wrecks his line and totally ruins his descent; the guy that really cares is the one who watches you safely down the Vallon d’Arby without letting on so you don’t feel inferior and even though you take forever; the guy that really cares about you is the one that skies with you on a powder day even though he could have gone to Bruson with the gang! AND if you ski better than him, the guy who really loves you, is the one that can admit it. In your position I would be much more suspicious of the guy who only pulls out all the stops on one day of the year.

This doesn’t mean he loves you, nor does it clean the slate of any bad behaviour during the other 364 (or 365) days of the year, it just means he felt he had no choice. And gentlemen, if you really want to make some grand gesture on February 14 and you can’t afford an AVS backpack or made-to measure skis, then just make up a picnic, put in a bottle of cava, download some romantic songs on your iPhone (no not Alice Cooper) and take your girl to a quiet spot where you can be as soppy as you like without the rest of us having to witness it. Thank you!

a Saint-Valentin! Je la déteste de toutes mes forces! Suis-je la seule personne sur cette planète qui la considère comme la fête la plus absurde ? Je ne crois pas. Rien à voir avec le fait d’être un mec ou ne pas être romantique. Je peux être aussi romantique que toute autre personne si j’en ai envie. Ma plainte principale est que je n’aurai pas nécessairement envie de l’être le 14 février de chaque année et je n’apprécie pas qu’on me l’impose !

Je n’aime pas me sentir obligé de payer un souper dans un restaurant chic où les tables pour deux sont aussi serrées que possible pour maximiser la rentabilité de l’événement, tuant ainsi toute possibilité d’une conversation intime, où la seule option est une carte « spéciale » spécialement haussée pour dépouiller les amants dupes. Cela suffit à faire exploser mon taux de pression artérielle ! Et ne me parlez pas des roses sans parfum importées du Kenya où les ouvriers mal payés sont exposés quotidiennement aux fongicides et pesticides bannis en Europe. Non, ce n’est que de la folie, pourtant on attend cela de nous. Alors Mesdames, cette SaintValentin, j’aimerais vous transmettre un message; le vrai amour ne se trouve pas dans le champagne, les roses et les soupers chics. Le mec qui a de vrais sentiments pour vous est le mec qui vous offre un ARVA pour ne pas vous perdre dans le Backside Mont Fort - et au début de la saison NON PAS au milieu au mois de février; le mec qui a de vrais sentiments pour vous est celui qui ramasse votre ski en mi-descente du Tortin quitte à couper sa ligne et ruiner sa descente ; le mec qui a de vrais sentiments pour vous est celui qui surveille votre descente du Vallon D’Arby sans que vous le remarquiez –même quand vous prenez une éternité - pour ne pas vous faire sentir inférieure; le mec qui a de vrais sentiments pour vous est celui qui skie avec vous un jour de poudreuse quand il aurait pu aller à Bruson avec ses potes !

ET si vous skiez mieux que lui, le mec qui vous aime vraiment est celui qui arrive à l’avouer. A votre place je me méfierais plutôt du gars qui sort le grand jeu un jour par an, ceci n’est ni preuve de son amour ni une raison d’excuser son mauvais comportement pendant les autres 364 – ou 365 - jours de l’année, ça veux juste dire qu’il s’y est senti obligé. Et messieurs, si vous souhaitez absolument faire quelque grande geste le 14 février et vous n’avez pas les moyens d’offrir un sac ABS ou des skis sur mesure à votre amoureuse, préparez un pique-nique, mettez une bouteille de cava dans votre sac à dos, chargez quelques chansons romantiques sur votre iPhone (non, pas Alice Cooper) et amenez votre copine dans un endroit tranquille où vous oserez être aussi romantique que vous le voulez et où nous n’aurons pas besoin de vous voir. Merci !
