Baileys and Chocolate Cheesecake

Ingredients 100g Butter 250g Digestive Biscuits, crumbled 600g Baileys 100g Icing Sugar 300ml Double Cream, whipped 100g Grated Chocolate

To Garnish 200ml Double Cream, whipped Cocoa Powder to dust

Melt the butter in a pan and add the crushed biscuits. Mix well until the biscuits have absorbed all the butter.

Press the mixture into the bottom of a 7� spring form cake tin. Put in the fridge and leave to set for 1 hour.

Prepare the filling by lightly whipping the cream cheese, beat in the Baileys and icing sugar, fold in the whipped cream and grated chocolate. Spoon evenly over the biscuits.

Refrigerate and allow to set for 2 hours.

Decorate with the whipped cream and cocoa powder.

Enjoy!!

Daisy Nook Fair

Daisy Nook Easter Fair from a photograph taken by Mr Will Clough in the early 1950’s. To the right in the photo, you can follow the course of the River Medlock towards the aqueduct, a sight now almost obscured by the tree planting that took place in the 1970’s and 80’s.

In the centre of the photo is the pumping station and lock keepers house that supplied the water to maintain the lock levels. This station was known as “Pumping Ned” and stood above the reservoir area commonly known as “Sam’s Basin”.

The pump house was demolished in the mid 1960’s and the locks filled in shortly afterwards.

Solar electricity modules contain solar cells. When exposed to light these cells generate electricity. The cells are encapsulated between a glass front and a backing sheet to form a module.
