fter stepping into his first kitchen at age 16, Jeff Batt’s course had been set…fast forward 20 years to find the now Executive Chef Jeff Batt, who has risen in tandem with what is now a global culinary scene in the city of Vancouver. Over the years Chef Batt has earned respect from a community of loyal local clientele…those same people will now spot him shopping the Granville Island market in search of inspiration for his current menus at The Dockside Restaurant in the Granville Island Hotel, where he has been sharpening his knife for the last year. Although professionally trained in classical and international cuisines, Jeff’s love of Vancouver and the Westcoast keeps his focus here….highlighting local cuisine and keeping local restaurants on the global map.

CHILLED SEAFOOD SALAD INGREDIENTS -

high quality olive oil garlic/shallots/Italian parsley/capers julienne eggplant & roasted red pepper pinch of chilies white wine, lemon juice, fish sauce saltspring island mussels/manila clams poached tiger prawns, small pieces of pickled octopus salt and pepper to taste

METHOD - Combine all ingredients except poached prawns and pickled octopus in a large saucepan. - Add prawns and octopus towards the end of the cooking process. BAGNOLET COCKTAIL (Shaun Layton, L’Abattoir) Ingredients: 1.5 oz Hennessy VSOP or VS cognac 3/4 oz Tio Pepe fino sherry 1 oz Giffard fig syrup 1 oz freshly squeezed lemon juice 2 dashes Fee Brothers Old Fashion Bitters 1 egg white Add all ingredients except bitters into a mixing glass. Shake first without ice — this lets the egg white create a nice froth. Add ice and shake very hard. Strain into a chilled cocktail glass or a footed sour glass. Drip bitters onto the froth to finish.

WINTER PUNCH (Wendy McGuinness, Chambar) Ingredients: 1 oz 5-year Flor de Cane aged rum (or any dark rum) 1/4 oz Green Chartreuse 5 ml Giffard Apricot Brandy 1 oz pineapple juice 1/4 oz cinnamon syrup (available at fine grocers, or ake your own by adding a little ground cinnamon to simple syrup) 2 oz Prosecco Add all ingredients into a mixing glass and shake. Pour into glass and top with Prosecco to finish.
