Here are the winners of the 2022 Growler craft Beer & Cider Awards 8

I

t’s always exciting to reveal the winners of our annual Readers’ Choice Awards (aka The Growlies), partially because it takes so long to get to this moment. First of all, there is a year of hard work performed by B.C.’s 220+ breweries.

Next, comes the tasting period—this is done by you and me and everybody else who samples the beers released by all those breweries. Then, with the help of a diverse panel of beer experts, we narrow down all those thousands of beers into categories with no more than 10 nominations to choose from. Finally, we ask readers to go online and vote for their favourites. By this point, the anticipation is almost excruciating!

So crack a beer and check the lists of winners below. There might be some surprises there. Did your favourite win? Maybe you’re inspired to try something new.

SILVER – Best New Brewery When Melanie MacInnes was young, her family’s farm was a dairy operation. Later, they boarded horses and hosted movie shoots (fans of the Hallmark TV series, When Calls the Heart might recognize the location), but always wondered what the future held.

Then, in 2016, MacInnes and her husband Andy Hamer had a “crazy idea” that maybe they should open a brewery there. First, they planted a test crop of barley, which they harvested with hand scythes. It proved to be brewing quality, so the next year they planted five acres and bought a 70-year-old thresher from Alberta. Hamer, who is an engineer by training, built a malthouse so they can malt their own grains—they even offer custom malting to other local farms.

All of this work culminated in Locality Brewing’s grand opening in the summer of 2021. Visitors can tour the working farm and sip tasty beers to pair with cheese and meat baskets at picnic areas spread around the “brewbarn” overlooking the

ponds or nestled among the hop bines. It’s all family-and pet-friendly, which makes it a fantastic destination for a weekend ride or a Sunday hike.

Best of all is the feeling you’ll get when you taste the terroir—the locality—of this farm in each and every glass you savour. You’ll realize that the malty backbone of the beer in your hand was planted, raised, harvested and malted right there, along with the bitter hops and other ingredients like honey and berries. It just doesn’t get much better than that.

After opening in 2013, this family-run brewery quickly made a name for itself,

As the brewery expanded, the Mills family always seemed to put great thought into each step. When they added a kitchen to their tasting room, the famous tacos themselves became a reason to travel to Delta. They have also faced great adversity, including the sudden death of Greg Mills, father of the siblings who created the brewery, as well as major setbacks to their plans to open a second brewery as part of the Southlands development in Tsawwassen—a project that is fortunately back on track.

Over the years, the accolades have poured in: Brewery of the Year at the 2015 Canadian Brewing Awards and Beer of the Year in 2016 (for Nectarous); a silver medal at the World Beer Cup; many, many BC Beer Awards and, of course, too many Growlies to count. This year, Four Wind’s haul includes eight awards in total, including six first place finishes. Congratulations!

I guess I have to stop describing Twin City Brewing as a “hidden gem.” After winning Best in Show at the 2018 BC Beer Awards, and the BC Ale Trail’s Best Brewery Experience award in 2020, I’m sure this Port Alberni pioneer got added to a whole lot of beer lovers’ bucket lists. And as so many of us embraced travel within our province as vaccinations started rolling out last year, I bet hotel and Airbnb bookings in Port Alberni went through the roof.

But, dear reader, if somehow this brewery has escaped your notice, let me extol its virtues one more time. First and foremost, the beer is excellent across the board—creative, occasionally boundary-pushing and always interesting. And then there’s the food: pizzas worth driving several hours for, brisket and other meats smoked on-site, fantastic sandwiches and more.

The vibe, both in the tasting room at the brewery as well as in Port Alberni itself, is also worth the drive. The Alberni Valley is building a new identity inspired by tourism, recreation and local businesses like Twin City Brewing and the two other local breweries that followed its lead. A hidden gem no longer.

GOLD – Best New Brewery SILVER – Best Tasting Room Best Branding/Packaging In an alternate universe, the City of North Vancouver never renamed itself after the English sea captain and explorer George Vancouver, but instead chose to make official its late 19th century nickname, Shaketown, in recognition of the local cedar logging industry.

Also in that alternate universe lives Shaketown Brewing Co., an active member of the Shaketown Business Association, along with the Shaketown General Store and Shakey’s Liquor & Convenience. The Shaketown Preservation Society, in conjunction with the Shaketown Artists’ Guild, has done tremendous work to ensure that alternative history hasn’t been lost to the sands of time.

In fact, you can read all about it in the Shaketown Gazette!

But, while the modern Shaketown lives only in the imagination of the good folks at Shaketown Brewing Co., the beers they brew are very real, and very good.

Located on the increasingly crowded craft beer row of East Esplanade in North Van Shaketown, the brewery’s tasting room overlooks the Vancouver harbour and manages to stick out in all the right ways.

Founded by Kim Scarrow and Jamie Armstrong, Banditry’s four-acre cider orchard includes 40 varietals of heritage fruit trees, including some rare perry pear trees, a large variety of semi-dwarf cider apple trees, plums, cherries, quince, and table apples. The property also has ducks and a pond with bridges and a tiny island—in other words, it’s a perfect outdoor sipping space.

Making the cider is Matt Cavers, an ex-brewer who has fallen hard for apples in recent years. His brewing background shows up a bit in hopped ciders like Bramble and Bine and Cheeky Pash, which won the Growlie for Best Specialty Cider.

Cavers says he chased tropical fruit notes in IPAs for so long that adding passionfruit juice to cider just seemed right. Plus, he adds Strata hops for a couple of days of cold infusion to enhance those tropical flavours even more. (You might remember his name as a regular writer in these pages—check out his article “Wild Fermentation 101” elsewhere in these pages.)

The cidery’s name is inspired by the farm’s flock—or “banditry”—of chickadees, resident pest controllers that sing beautifully and add even more charm to this idyllic spot.

SFU's new archive documents the history of craft beer in B.C.

raft beer” and “library archives”—two things not typically mentioned in the same breath.

But for the increasing number of people interested in craft beer’s history, archives are a place to start.

Simon Fraser University’s Archives and Record Management Department is meeting that need by assembling a craft beer collection that bears witness to the growth of the industry here in British Columbia. As a beer historian myself, I was eager to check it out.

SFU’s craft beer archive was the brainchild of Melanie Hardbattle, the university’s Acquisitions and Outreach Archivist, and Richard Dancy, Systems and University Records Archivist. Upon beginning her position in acquisitions and outreach early in 2020, Hardbattle knew she needed to create an archival strategy that would appeal to a population beyond academic researchers.

SFU houses archival collections documenting B.C.’s history of important cultural touchstones,

such as feminism and social activism, but food and drink are also elements of culture—and sometimes their histories are not as rigorously preserved.

Dancy thought the history of craft brewing from B.C. would be a good fit for a new archival project and together, they began the process of collecting craft beer records, focusing on materials from 1980 onwards.

“We’re beginning with Frank and John,” Hardbattle laughed, referring to Frank Appleton and John Mitchell, who jointly launched B.C.’s earliest craft breweries.

Of course, some of the province’s craft beer history is already housed in other institutional archives.

However, as Hardbattle points out, there is a great deal of the industry’s recent history that remains hard to find. Sometimes this is because the documents tend to be temporary and not stored in official repositories—like festival posters or handwritten notes—and sometimes it‘s simply because they’re owned by private individuals rather than public organizations. have begun the challenging work of contacting beer industry insiders and requesting donations to the collection. So far, they’ve seen success—craft beer folks have been enthusiastic supporters of the project.

In September 2021, the family of late beer historian Greg Evans donated approximately 20 boxes of his notes and research. A few months later, in February 2022, Hardbattle acquired the John Rowling collection (approximately 15 boxes). As the founder of the Great Canadian Beer Festival, Rowling kept the sorts of ephemeral material that

often gets lost to history—brewery coasters, beer festival posters, beer labels and old photographs and newsletters.

Other donors include Gerry Hieter, the co-founder and chairperson of the Great Canadian Beer festival, Kim Lawton, who has a collection of Okanagan brewing history memorabilia, Firehall Brewing in Oliver, Dave Smith of What’s Brewing? magazine, and the current and former owners of Tin Whistle Brewing, one of the oldest breweries in the Okanagan. And, as Hardbattle emphasized, the collecting continues—the archive is still growing.

Whether you’re interested in business notes from an early CAMRA (Campaign for Real Ale) meeting, beer labels and bottles from the 1980s, old tap handles, copies of beer-related government documents, or advertisements for brewery openings, this collection will have something to catch your attention. During the limited time of my visit, I barely scratched the surface. However, one memorable moment was holding an original Bay Ale bottle—the first craft beer made in B.C.!

THE GROWLER GUIDE TO

ome things in this world are universal. Beer (and beer-like beverages) are one of them.

Dating back to time immemorial, cultures in every part of the world have enjoyed getting their drink on. Some scholars even believe beer gave rise to civilization as we know it today.

Equally universal is the human inclination to attribute what isn’t immediately apparent or known, to one deity or another. Unsurprisingly, before Louis Pasteur cracked the code of microbiology to finally understand the science of fermentation, that hitherto mysterious process was the work of gods, angels or some such celestial being.

There are more than a dozen Catholic saints all competing for the coveted title of “Patron Saint of Beer.” Some represent brewers or hop-pickers. Some have seemingly no connection to beer whatsoever. Some don’t even exist.

So, in order to provide some canonical clarity, let’s have a look at some of the divine drinkers contending to be the preferred pietist of the pint.

The Catholics even have an official beer blessing recognizing the heavenly provenance of the pint, dating from the 17th-century liturgical tome Roman Ritual: “Bless, O Lord, this creature beer, which thou hast deigned to produce from the fat of grain: that it may be a salutary remedy to the human race, and grant through the invocation of thy holy name; that, whoever shall drink it, may gain health in body and peace in soul. Through Christ, our Lord. Amen.”

That’s a lot of words to just say “cheers!”

But whereas most cultures have historically designated a singular entity devoted to the brewing arts (with the notable exception of the Aztecs and their 400 Drunken Rabbit Gods), those contraceptive-hating Catholics naturally birthed a multitude of beer-loving benefactors.

SAINT BRIGID OF KILDARE (451-525)

One of Ireland’s three national saints, Brigid was a bad-ass bitch who didn’t take anyone’s shit. Born into slavery, she had a habit of giving away her master’s possessions to the poor, and her apparent holiness helped earn her freedom. After vowing a life of chastity, a man mocked her, saying the

beautiful Brigid would be taken as someone’s wife whether she wanted to, or not. To this, she responded by PULLING OUT HER OWN EYEBALL (don’t worry, it grew back) and said, “Would you love a blind woman as your wife?

Because God would.” Then she made his eyes explode. True story. Anyways, Brigid was attributed with more than 40 miracles, including turning water into beer. So, checkmate, Jesus!

KING GAMBRINUS

SAINT ARNOLD OF SOISSONS (1040-1087)

This fine Flemish fellow was a brewer at a Benedictine abbey in modern-day Belgium. Often depicted holding a mashing rake, Arnold 2.0 considered beer to be God’s “gift of health.” Much like Arnold No. 1, during an outbreak of plague, Arnold of Soissons implored the townsfolk of Oudenburg to drink beer instead of water and brewed enough beer for the entire town to drink, saving many lives.

King Gambrinus has long been celebrated as the patron saint of beer and is often depicted leaning against a keg with a full, frothy flagon of suds in his hand. Indeed, Gambrinus was well-known for his beer-drinking ability, and may or may not have bested Beelzebub himself in a drinking contest. There’s only one problem, though. Gambrinus was never venerated as a saint, and, in fact, never even existed.

SAINT ARNOLD OF METZ (580-640)

This French saint’s seventh-century decree that the masses should drink beer instead of water likely saved thousands of lives. He believed water was impure and beer was blessed and sent by God to nourish the devout. And he was partly right: Europe was reeling from the first plague pandemic, which ultimately killed 50 per cent of the population of Europe. Fouled water was helping to spread the disease and beer, because it was boiled, was demonstrably safer. According to Arnie, "From man's sweat and God's love, beer came into the world.” Well said.

SAINT WENCESLAUS OF BOHEMIA (907-935)

“Good King” Wenceslaus (AKA Svatý Václav in his native Czech) was actually a duke who was well known for his generosity and kindness, especially towards the poor and downtrodden. He also

banned the exportation of hops from Bohemia, ensuring locals would always have a steady supply of beer. He developed an almost cult-like following in the 1800s, resulting in the Christmas carol we know and love today.

SAINT HILDEGARD OF BINGEN (1098-1179)

This 12th century German abbess is responsible for the earliest surviving writings on the use of hops in beer, and for that she has been venerated as an unofficial patron saint of beer. The use of hops in beer prevents spoilage and its antimicrobial properties help kill off any pathogens present.

However, Hildegard’s writings may not have even been the first to recommend the use of hops in beer—hers are just the oldest historians have found.

He lived his 20s in a near persistent drunken stupor, made the acquaintance of many a concubine, and famously asked, “O Lord, grant me chastity and continence—but not yet!” After converting to Christianity at 31, he put away his “wicked” ways to follow God, but wrote extensively about his wild years in his autobiography, titled Confessions.

SAINT LUKE THE EVANGELIST (9-84)

Our man Luke is one of the OG saints, having written two books of the Bible, the Gospel of Luke and Acts of the Apostles, which make up a healthy chunk of the New Testament. As far as anyone can tell, Luke had nothing to do with beer and no beer-related miracles are attributed to him. Yet for some reason, someone, somewhere decided he should be a patron saint of brewers.

Go figure.

SAINT AUGUSTINE OF HIPPO (354-439)

Prior to finding God, this Tunisian saint had a penchant for the good life, to put it mildly. He was a hedonist’s hedonist, whose life was essentially

ST. NICHOLAS OF MYRA (270-343)

That’s right: Santa Claus is one of the patron saints of brewers. Why, you ask? Because during a famine an evil butcher killed three children and tried to sell them as pork and Jolly Old St. Nick found them in a pickling barrel and resurrected them, but medieval stained-glass depictions of this story that featured Saint Nicholas with a large wooden keg were misinterpreted by uneducated laypeople who then assumed he had something to do with beer and mistakenly made him a patron saint of brewers and the church just went with it.

Searching for Spruce Using spruce shoots in beer dates back as far as the Vikings

n the long history of brewing, basically every conceivable ingredient imaginable has been tried. While beer brewed with wormwood, mugwort or chicken (also known as “cock ale”) might not be pleasurable to the modern palate, one ingredient has shown itself to be thoroughly enjoyable and stands the test of time.

According to the Oxford Encyclopedia, using “spruce shoots in beer can be traced as far back as the ancient Scandinavians and their Viking descendants.”

There is also a likely reference to its use in brewing in the Finnish epic, The Kalevala.

It’s this long history of spruce tips in beer that intrigues Dan Van Netten of Howl Brewing. Van Netten has an abiding fascination with exploring and brewing historical ales.

“The biggest interest [for me] was the early settlers who arrived on the East Coast. A lot of them had scurvy and they learned from the First Nations that the spruce was high in vitamin C.” This benefit as an anti-scorbutic was famously exploited by Captain Cook, who gave spruce beer to his crews. The difficulty in sourcing barley and hops in colonial America lead to spruce tips being commonly used. Inspired by its history, Van Netten brewed a Virginia spruce ale he read about in a magazine dating back to the 1800s, which called for sarsaparilla, spruce tips and molasses.

This calls to mind Benjamin Franklin's famous homebrew recipe, which also used molasses as a source of fermentable sugar, and spruce tips, likely used to make the beer somewhat more palatable.

Fortunately, while the modern-day craft brewer doesn’t lack for grains or hops, many, specifically along the West Coast, are finding a place for spruce tips in their beers.

Sasha Howey, one of the brewers at Whistle Buoy in Victoria, B.C. has brewed two such beers. Her initial inspiration was one of the first spruce beers to be widely available in the province.

“My first spruce tip beer I ever had was from Tofino. I was living there after my degree and really, really liked it,” says Howey. “I always wanted to make a spruce tip beer after that.”

Whistle Buoy’s first kick at the can turned out so well they decided to more than double the amount of spruce they dry hopped with. This second spruce-tip beer sold out very quickly.

spruce tips are going to be a lot more sweet, older ones more bitter.”

While sourcing barley and hops has become relatively easy for breweries, sourcing spruce tips is remarkably less so. Brewing a spruce-tip beer typically requires someone to forage for them.

Other spruce-tip beers brewed in B.C. include select brews from Steel and Oak, Three Ranges, Île Sauvage, an award winner from Mount Arrowsmith, and a blackberry sour from Twin Cities, which Howey sums up succinctly as, “so good.”

Howl Brewing has also created a number of different recipes, including the aforementioned Virginia spruce ale, a recent IPA, some lagers and, their most popular, a chaga spruce ale. Chaga is a mushroom that grows on birch trees and provides a vanilla-like note to complement the spruce. Van Netten also really likes to combine it with blackberries.

Howl sources theirs from Forager for Dinner, a wildcrafting company based in Port Alberni, B.C., while many other breweries get a crew together and make a day of it, such as Whistle Buoy did for their first spruce-tip beer. For their second-time around, they were running out of time to collect the bright green springtime growths, so Howey spent an epic day around the Jordan River area collecting them.

“I spent the day picking by myself and it was honestly the loveliest day. Truly wonderful,” says Howey.

When talking about spruce-tip beers, much like wine grapes, it's hard to avoid the concept of terroir. Here is an ingredient that is different yet similar all over the world and can definitely signify “a sense of place.”

Having someone at the brewery, maybe even the brewer themself, forage for this ingredient cements the relationship between place, brewery, brewer, beer and, finally, you the drinker. Plus, who doesn’t want to drink a beer that tastes like walking through a sun-kissed forest in spring? j

How a brewer chooses to brew with spruce tips will have a notable effect on the flavour profile, in much the same way hops do. For example, Howey utilises the spruce tips in the whirlpool and as a dry hop.

Others use them throughout the boil much like bittering, flavour and aroma hops.

Van Netten has experimented with a variety of techniques, but favours what he calls a steep, or an even more unconventional method of adding spruce tips at the same time as he pitches the yeast.

This method creates a very particular flavour note he is looking for, which he describes as “Watermelon Nerds.” Van Netten notes that boiling the spruce tips completely changes this steep, into “more Norwegian sauna, more damp and earthy.”

He also used descriptors such as brightness, resiny and “citrusiness.”

When describing the flavour of spruce tips in beer, Howey points out the age of the spruce tips makes a difference.

“Definitely fresh and piney, but beyond what you think it is, it's pretty sweet and jammy. Younger

Winnipeg has more than a dozen breweries, along with other great ways to sip and sample craft beer in both indoor and outdoor settings.

lthough I love living on the West Coast, I have a soft spot for Winnipeg. My wife and I lived there for 18 months about 20 years ago (long story, best told over beer), and my mom and one of my sisters live there. That means I travel to the ‘Peg often—nearly annually—and have watched as the city’s craft beer scene slowly emerged.

After my last trip in 2019, the pandemic kept me away until this past July. It was fun to get reacquainted with the beer scene there, and what I discovered was pleasantly surprising. Currently, there is a robust collection of 14 brick-and-mortar breweries, as well as a handful of contract-brewed craft beer brands, most of which are building towards opening their own breweries or tap rooms.

AN (UN)COMMON BEER EXPERIENCE

But before I talk about the breweries, I want to highlight The Common, which can be described

as a craft beer and wine kiosk, but is so much more. Located in the central food hall of the touristy Forks Market (think Granville Island Market), the Common has 20 craft beers on tap, including local brands, alongside beer from the rest of North America and even Europe. They also open an outdoor bar when weather permits.

Buy food from any number of vendors in the Forks and then pair it with a flight or a glass of beer. What I love most about The Common is you can take your food and beer and sit pretty much anywhere you want, including outside at tables overlooking the river. It reminds me of the wonderful beer garden culture I found when I visited Germany.

And Winnipeg has many other examples of this beer garden culture. Cargo Bar is a converted shipping container at a pop-up patio near the duck pond in Assiniboine Park. The Beer Can is located at the Granite Curling Club beside the Assiniboine River. The Bijou Patio is a

Amber called 1919 (named after the famous Winnipeg General Strike). Today, 1919 is still the flagship beer, but the brewery now makes several others as well, all of which I quite enjoyed. While I was picking up some beers to go, I noticed the brewery’s patio was overflowing with people attending a literary reading, great evidence of Winnipeg’s strong and flourishing cultural scene.

Later on, I spent an evening on the patio at Sookram’s Brewing, which is located near Confusion Corner, the aptly named intersection of several streets that even Winnipeggers take years to figure out. Don’t let the location deter you from visiting, though, because the tasting room has a great vibe and the beer list is solid.

community patio in the heart of the artsy Exchange District. Blue Note Park is at the site of the old Blue Note Cafe on Main Street downtown. And, Le Patio 340 is on the French side of the river in St. Boniface. All feature local beer, with food options and frequent live music too.

My nephews, who have recently gotten interested in craft beer, invited me for pizza and beer at Trans Canada Brewing. I had low expectations based on its location in a part of the city filled with big box stores, but once we walked inside I was blown away by the enormous tasting room, filled with long tables well-suited for big groups (like the seven of us). The pizza was excellent, and I thought the creative beer list was quite good across the board. I was particularly impressed with the Portager Pilsner.

All of these outdoor patios reflect Winnipeggers’ love of summer—after enduring the long, hard winter, they want to enjoy every minute of warmth and sunshine they can.

BREWERIES

Winnipeg’s microbrewery scene started off in the 1990s, but only one of those early breweries, Fort Garry Brewing, is still around today (and it's actually owned by B.C.’s Russell Brewing), but does not have a tasting room. The city’s other OG brewery, Half Pints Brewing, which opened in 2006, does have an on-site taproom in its location near the airport.

My first brewery visit on this trip was a quick stop at Little Brown Jug, located at the north end of the Exchange District, the artsy downtown neighbourhood that straddles Main Street just north of its famous intersection with Portage Ave. LBJ was open the last time I visited, but back then, it only produced one beer, a very quaffable Belgian

under its Vessel brand, which is focused on more cutting-edge craft styles.

There are so many breweries in Winnipeg now, there was no way I could visit them all on this trip, but I was certainly impressed with the ones I checked out and I am already looking forward to my next visit to try a few more or return to some of these. j

Brazen Hall Kitchen and Brewery Afterwards, they took me to check out Kilter Brewing in St. Boniface. I’d heard some great things about it before my trip and I wasn’t disappointed—the industrial interior of the brewery is enlivened with plants, decorative lighting, and a variety of comfy seating options. We sat outside on the patio, tasting through flights of hazies, milkshake IPAs and sours.

My final brewery stop was the reward after a 70km bike ride with my nephews at Nonsuch Brewing, named after the famous ship that sailed to James Bay in 1668 and effectively launched the Hudson Bay Company. The brewery has a Belgian focus, but also offers a series of beers

Wild fermentation 101

The Growler has put together this simple guide to wild fermenting cider in the hopes of inspiring a few of you to give it a try.

Hint: by using wild fermentation, it’s easier than you think.

ure, there are plenty of refreshing, delicious, B.C. ciders to choose from, but why not try your hand at making it yourself ? It doesn’t get any more “craft” than that.

makers to control spoilage bacteria, “the juice just goes into whatever vessel I’m putting it in and I wait for the yeast to wake up and start eating the sugar.”

First, you press some apple juice. Next, you sterilize it somehow. If it were a beer wort, you’d boil it, but it’s juice and you don’t want it to taste cooked, so you add sulfites. Now you’re ready to rehydrate your yeast and add it per the manufacturer’s instructions. Not so simple, right?

For a few days the juice is quiet. But then something happens.

But what if you skip every step except the first?

What if you press the juice and then you just— wait? If that’s what you do, you’ve entered the world of wild fermentation. And, as it turns out, there are quite a few B.C.'s cider makers here already. In some ways, it’s a remarkably simple process.

“I don’t do anything,” explains Alyssa Hubert, cider maker at Penticton’s Creek & Gully Cider, who says after she adds a minimal dose of potassium metabisulfite, used by nearly all cider

“About twenty-four hours before the fermentation really kicks,” said Hubert, “you can actually see the yeast culture. You can see a foam on the top of the cider, and it’s a really good sign—the yeast are healthy and they’re starting to breed.”

And there’s nothing subtle about it, she says, adding: “You can hear the yeast.”

According to Claude Jolicoeur, author of The Complete Cider Maker’s Handbook, after apple juice is pressed, wild yeasts present on the skin and flesh will begin to ferment the juice within a few days of pressing, so long as the temperature is at least 10°C. A diversity of microflora is involved in this process, from the “apiculate” yeasts that appear at

the beginning of the fermentation, but cease to work once the alcohol content climbs north of four per cent, to wild strains of Saccharomyces cerevisiae—the stuff we typically use to make almost all beer and wine—that take over afterward.

All of this might sound a little daring and, well, it should. Wild fermentation represents a kind of radical trust the microorganisms that a cider maker likes will out-compete the ones they don’t.

But for some cider makers, wild fermentation yields results so reliable they use it exclusively. Hubert is one. So is Mike Harris, of Summerland’s Dominion Cider. Five years ago, about twenty percent of Dominion’s output was fermented with wild yeasts, and Harris used cultured yeasts for the remainder. But three years ago, says Harris, we said ‘let’s go for it,’ and since then all of Dominion’s ciders have been made with wild yeast. If there are drawbacks, for Harris, they’re minor and logistical in nature.

“One of the challenges for us,” he says, “is that wild ferments take longer.”

And you don’t have to go all in. Some cider makers use wild fermentation as just one of a number of approaches to cider production. For Clinton MacDougall, cider maker at Gibsons’ Sunday Cider, wild fermentation’s role is to express the hidden characteristics of his most unique cider-specific apples, as well as the specific microbiological personality of his cidery.

“We have our own house microbial terroir at Sunday Cider,” explains MacDougall, describing the aromas produced during wild fermentation with an array of descriptors including “banana cream pie” and “orange creamsicle.” After the first surge of fermentation is through, these notes mellow and cohere over months of resting in barrels and bottles. Eventually, the subtleties of the apples themselves begin to shine through, alongside hints of the notes produced in fermentation.

“It’s for that broad array of characteristics,” said MacDougall, “that we use wild fermentation."

So, if you have some apples and you want to make cider with them, go ahead and press them into juice. And, if you’re not in a hurry, you might want to think about just walking away at this point.

Be patient. Let the wild yeast do its work and see what comes of it. Maybe it feels a bit risky, but you’re in good company. j

As opposed to cultured yeasts that can ferment a cider to completion in a week or less, Dominion’s wild-fermented ciders can take four-to-six-weeks to reach dryness—the point at which all of the juice’s sugar has been converted to alcohol. “We had to buy some extra vessels to hold all the cider,” he notes.

But the advantages outweigh the drawbacks and, for both Harris and Hubert, a key advantage is that using wild fermentation helps to draw complexity from apples that were bred to be eaten, not drank. Proper “cider apples”—often particularly high in tannin and sugar—are difficult to find in B.C., and most cider makers use more readily available table apples for the bulk of their production.

The slow speed and microbial diversity of wild fermentation helps to add complexity to the flavour of the cider, which can highlight the under-appreciated nuances of humble, everyday apples. “Spartans have this cool, very silky-smooth caramel quality about them,” says Hubert.

ooking at the carefully designed landscaping, three-tired beer garden and large outdoor area that makes up Victoria-based Boomtown Burritos & Beer Garden, it’s hard to imagine that, not so long ago, the space was home to the parking lot of a former pot shop.

Boomtown’s kitchen manager Torin Egan adds the extra-large outdoor seating area was also initially born out of the Omicron surge of 2021/2022, when customers were eager to dine out and grab a beer, but still weren’t 100 per cent comfortable eating and drinking inside.

Christian Barnard, who co-owns Boomtown with Patrick Lynch, says the inspiration behind the concept of the popular eatery, which specializes in Mexican street food and B.C. beers, was his extensive travels through southern California. The name, “Boomtown,” was inspired by the fact it’s located on Yates Street in Victoria's Harris Green neighbourhood, the fastest growing community in the city.

The fact Boomtown is also family and dog-friendly means the eatery can act as a de facto gathering space for all of the new residents living in the high-rise buildings surrounding it.

“In California they have all of these casual outdoor beer gardens with a twist of European styling, so we went with that,” says Barnard. “We’re constantly getting feedback that people love the vibe of the place.”

“There are a lot of kids and dogs running around here,” says Egan.

He adds Boomtown’s burritos remain a top seller and stand out from the competition because they’re served with the meats’ braising liquids, which can be spooned on or used as a dip. Popular options include the Beef Birria, Green Chili Chicken Birria, Pork Chorizo, Fried Brussel

Sprouts & Cauliflower, and the Black Garlic Humboldt Squid. Egan notes, with the exception of the tortillas, the kitchen is gluten free.

Egan adds other menu favourites include the loaded tots, complete with pickled onions, jalapeños, cilantro, scallions and Boom sauce, and the extremely popular Street Corn Salad loaded with charred corn, pickled onion and cabbage, Boom sauce, cilantro, scallions, cheese and lime.

Boomtown’s beer selection has been carefully selected to pair well with the spice level of the food, but Egan says 33 Acres’ Mezcal Gose is a popular choice, especially paired with the Street Corn Salad.

Pickled Onions & Cabbage • 2 red onions, cut in half and sliced thin • ¼ head red cabbage, sliced thin • 2 cups white vinegar • 4 cups water • 1 tbsp salt • 1 tbsp sugar

2. Pour brine over the onions and cabbage and let cool.

Street Corn Salad 1. Cook shucked ears of corn in boiling salted water until tender, shock in cold water 2. Place corn on grill or gas elements to char or cut kernels off cob and char in a very hot pan (no oil!)—alternatively you can char frozen corn in a hot pan as well. Let cool.

3. Mix corn together with Boom Sauce, pickled onions and cabbage, grated cheese, green onions and cilantro. Garnish with lime and a dusting of Tajin. j
