• Kitty reminded him of the powdered gelatin and wondered if he couldn’t market a powdered drink mix. He experimented with removing all liquid from the fruit syrup, and by 1927 had invented a water soluble powdered drink. It went on the market for 10 cents per packet.

• During the Great Depression, the price dropped to a nickel a packet and business boomed. By 1950 he had 350 employees at his plant in Chicago. He was 64 years old when he sold out to General Foods in 1953.

Out of the Red: How to Keep Your Finances and Attitude in the Black Everyday When I am not writing about personal CHEAPSKATE ®

again. I got caught from time to time but cleverly concluded I wasn’t really overdrawn -- I was just underdeposited.

In time, I moved my antics from my checking account to a bevy of credit cards. I allowed myself to believe that as long as I could get away with it, it was OK to spend now, and pay and pay later.

Here’s my point: I didn’t start out in the red. But that one small mistake repeated over and again led to debilitating debt that changed my life. Had I corrected my thinking early on, I could have saved myself from the disastrous results that were to follow.

Many people -- the majority, in fact -aren’t in particularly serious financial trouble.

They flirt with the red zone from time to time, teetering between red and black and spending all that they make. For them, being in the red is more of a mindset that keeps them from making financial progress.

Take buying a house, for example: Pushing to get the biggest house for which you can qualify rather than a home you can comfortably afford is to have a kind of “in the red” mindset. Buying a brand-new car with six years of payments would be more of a red way of thinking than opting for a late-model used car with 36 comfortable payments. Feeling entitled to the biggest and the best without regard for the financial toll that decision will make is to think in the red.

Here are some practical ways to change your attitude from red to black:

 Instead of accepting every credit card offer that washes up in your mailbox, shred them.

 Don’t look at available credit as additional income. It’s not your money!

 If you carry a revolving balance on a credit card, picture it in red until it reaches zero and turns black.

 Waiting is a concept we are careful to teach our children. Too bad so few of us practice what we teach. Simply doing nothing -- waiting -- is likely the most efficient way to change your mind from red to black.

We all make mistakes, but the secret to staying out of the red is correcting the little mistakes before they lead to disastrous results. In both knitting and money management, the more you practice, the fewer mistakes you’ll make -- and the more success you’ll enjoy.

If you’ve ever found yourself in the red, it is likely that you didn’t land in that position overnight. Rather, it was a series of small uncorrected mistakes that escalated to the crimson condition over time.

Dog Talk with Uncle Matty

Harry Truman said, “If you want a friend in Washington, get a dog.” But what if it’s your dog that wants a friend? Take him to the dog park, right?

One of the greatest myths about dog parks is that they are Ground Zero for the socialization of dogs. But the proper socialization of a dog requires a highly structured environment, something a dog park is far from. Just imagine a playground full of children ages 3 months to 15 years, with rules posted on a sign, but no one responsible for enforcing them. Scary, isn’t it?

The reality of dog parks is that they are fenced-in areas that allow for the unsupervised mingling of dogs of all ages, sizes, temperaments and obedience levels. They are frequently carpeted in feces, as people enter the dog zone and surreptitiously break from the good habit of picking up after their pooch. They contribute to the spread of disease as a result of the unclean grounds and the willy-nilly union of healthy and unhealthy dogs.

And they often serve as an arena for impromptu dogfights.

As is probably obvious by now, I am not a fan. But don’t take my word for it; consider this recent letter from a reader:

“I read your column frequently and am always gratified to hear your advice for owners of dogs who are already aggressive. I often go to the park with my dog, Maya, who always minds me. But there is inevitably a person there with an aggressive dog. I can’t tell you how many times an owner like that has laughed and said, ‘Oh, he just thinks he’s tough’ or ‘He’s not being aggressive, he’s just playing rough’ after their dog has bitten or even taken down my dog.”

This is why schools group kids in classrooms according to age, development and learning ability.

This is why children, in order to attend public schools, have to show proof of vaccination from certain diseases that would otherwise spread like wildfire.

I figure I must be doing something right when I get back-to-back emails from readers criticizing me for allegedly voicing diametrically opposite viewpoints. First, there was this little gem.

Q:

You just think the Social Security Administration is perfect in ever y way, don’t you? I just want you to know that there is a lot of bad information out there. Recently, I applied for widow’s benefits, and I won’t even get into what they put me through. The first young gal I talked to was clueless. Then she called an old bat for backup and this bat was criticizing me for waiting too long to file. She finally backed down. I just want you to know I read your column for laughs, not for information.

And then the next email I opened -- and I’m not exaggerating, it really was the very next email -- went like this.

What I want to know is this: Why are you always so critical of an agency you spent most of your life working for? I think you should know that when I signed up for my retirement benefits recently, the local Social Security office people were ver y efficient and courteous. And I think a lot of this has to do with training. When I started working for the SSA in 1973, I went to a highly intensive and vigorous 3-month class that was taught by expert trainers -- front-line supervisory people who had been with the agency for decades. And they passed all this knowledge on to us neophytes -- comprehensive facts and information that carried us through our careers. Regrettably, that’s not the way things work anymore. Today, new SSA hires get about six weeks of mostly online training. That’s just not the way to teach raw recruits about complicated Social Security rules and regulations.

What Could Cause Voice to Change?

DEAR DR. ROACH: Over the past year, my voice has become hoarse or raspy.

I find that I often have to clear my throat while speaking. I’ve had a stomach endoscopy and a colonoscopy done, the results of which were noted as “normal.” Nothing has changed in my life, such as climate, diet, clothing, furnishings, etc. I have never smoked.

I suspect it may be allergies, since antihistamines seem to help somewhat. Is this the best solution? -- N.G. ANSWER: Vocal changes can be the result of many common conditions. Voice changes lasting more than two or three weeks should be evaluated by an ENT doctor, since there are serious conditions that can manifest in voice changes. In particular, anyone with a history of smoking needs a prompt and thorough evaluation for voice changes, since the nerve to the vocal cord is commonly damaged by lung cancer.

Fortunately, alternate diagnoses, such as chronic laryngitis and benign vocal fold lesions (such as polyps) are more common. Reflux disease can affect the vocal cords, which may be why you had the upper endoscopy.

Chronic sinusitis with postnasal drip is one cause of hoarseness that can be improved with antihistamines. However, I would not be comfortable treating this long-term with antihistamines without a more thorough evaluation than you have reported. ***

DEAR DR. ROACH: My wife works in the operating room of a local hospital. She came down with a Staph infection, and has been treated. Do only certain blood types catch a Staph infection? She is type A, and I am O positive. -- R.S.

ANSWER: The best data I can find on this still show that whole fruit, such as apples, do not adversely affect blood-sugar control if eaten in reasonable quantities (i.e., up to four a day).

An apple a day is still good advice. Please don’t stay away from the doctor, though.

Is Your Blood Pressure Too High?

DEAR SAVVY SENIOR: What numbers constitute high blood pressure? I once was diagnosed as pre-hypertensive, but they keep changing the guideline charts. Now I’m not sure where I fit in. Can you shed any light on this for me? -- Approaching 60

Dear Approaching: If you’re unsure what your blood pressure levels should be, you’re certainly not alone. Recent changes in the hypertension guidelines made by the American Heart Association and the American College Cardiology mean that roughly 30 million more Americans than previously thought are now considered to have high blood pressure (hypertension).

According to the new guidelines, anyone with a blood pressure reading above 130/80 is considered to have reached the high blood pressure zone.

Previously, those with a blood pressure reading between 120/80 and 139/89 would have been put in the prehypertension category and wouldn’t have been considered hypertensive until they got to 140/90.

But the new guidelines eliminate the prehypertension category, putting everyone with systolic pressure readings (top number) between 120 and 129 and a diastolic reading (bottom number) below 80 in a new “elevated” category.

And those with a reading of 130/80 or higher fall in some stage of hypertension. Here’s a complete rundown of the new five category blood pressure ranges:

 Normal: A top number less than 120 and a bottom number less than 80.

 Elevated: A top number between 120 and 129, and a bottom number less than 80.

 Stage 1: A top number between 130 and 139, or a bottom number between 80 and 89.

If you find that your blood pressure numbers fall in the “elevated” category, you should take steps now to get it under control. Lifestyle changes like eating a healthy diet, losing weight, exercising, watching your salt intake, quitting smoking, and cutting back on alcohol is often all you need to get it back to normal.

Drinking Scenes Popular Motif Carved on Chairs

I am enclosing a picture of a chair my parents bought in Philadelphia prior to 1926. I am 91 years old and can remember vividly my struggle to climb up and sit in the chair at the age of 3.

The width across the arms is 24 inches; the height at the back is 36 inches; and the depth of the seat is 19 inches.

The car ved scene on the back appears to be two people Chairs decorated with carved scenes drinking in were popular around 1900. a medieval setting. There are no markings on it to indicate the maker.

I would like to be able to give my son, who will inherit it, some information on its background. What can you tell me?

You have a circa-1900 wood chair depicting a drinking scene in a tavern or a pub. Wood chairs decorated with carved scenes were popular in the late 1800s and early 1900s.

The back with a carved pub scene, turned legs, supports and stretchers, and double-ring wood seat are typical of these chairs. They were usually oak and had carved scenes of kings, religious themes, dogs, the north wind and pubs.

Although the chairs were usually stationary, an occasional rocker can be found in antiques shops. Many were made in Grand Rapids, Michigan, and some earlier chairs were made in Germany.
