As we welcome the month of November and the season of Thanksgiving, I’d like to take a moment to express my sincere gratitude to each of you for being a valued part of the Escambia River Electric Cooperative community. Your support and engagement are what make this cooperative strong and vibrant.

I also want to give a heartfelt thank you to our dedicated office employees. This year, they chose to use Columbus Day as a time to roll up their sleeves and give our office and grounds a much-needed refresh. From trimming hedges and pulling weeds outside, to painting hallways and cleaning windows and floors inside, their efforts made a noticeable difference in just one day We take great pride in maintaining a clean, welcoming environment, for both our team and the members we serve

Looking ahead, I encourage you to visit our website under the Community tab for details about our upcoming Silent Auction, running November 3–14 We’re doing a bit of fall cleaning and will be accepting silent bids on various items Photos, videos, and all the information you need to participate will be posted there. If you'd like to see any of the items in person, we welcome you to schedule a time or stop by during normal office hours. You’ll also be able to place your bid easily online or in person.

Applications are now open for EREC’s Annual Youth Tour Leadership Program! This exciting journey starts with a twoday trip to Tallahassee, February 4–5, where students will tour the State Capitol, meet state legislators, and get a firsthand look at how our government works From there, two students will be selected to represent EREC on the National Youth Tour to Washington, D C in June, an unforgettable, all-expensespaid leadership experience

But it doesn’t stop there Participants may also qualify for future leadership programs, internships, and scholarship opportunities

HEARTY, HEALTHY, & OH-SO-HOMEY!

TURKEY & SWEET POTATO HASH

Ingredients

1 lb (450 g) lean ground turkey

2 medium sweet potatoes, peeled and diced (about 3 cups)

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

2 tbsp olive oil (or avocado oil)

1 tsp smoked paprika

½ tsp cumin

Salt and black pepper, to taste

Optional toppings: chopped

green onions, fried egg, hot sauce

Cook the sweet potatoes: In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften

Brown the turkey: Push the sweet potatoes to one side of the skillet

Add the remaining 1 tbsp of oil and the ground turkey Cook until browned, breaking it up with a spoon (about 6–8 minutes)

Add the veggies: Add the onion, bell pepper, and garlic Cook until the vegetables are tender and the turkey is fully cooked, about 5–7 minutes.

Season: Stir in smoked paprika, cumin, salt, and pepper. Toss everything together and cook for another 2 minutes so the flavors blend

Serve: Top with green onions, a fried egg, or hot sauce if desired

Currently, some members receive their bills both by mail and electronically Starting at the end of this month, if you’re signed up for both, you’ll be switched to e-bill delivery only. If you'd prefer to keep receiving a paper bill, just give us a call.
