With over 40 years of experience, Superior Catering, an independent family-owned business based in Widnes, has established itself as one of the North West’s leading corporate catering providers. We spoke with Dan Whitley, Operations Manager at Superior Catering, to learn more about their successful collaboration.

“Our food and its presentation – which very much includes the packaging – consistently receives great feedback from our customers.”

“Superior Catering is one of the North West’s largest and most well-known sandwich distributors, delivering thousands of high-quality sandwiches, pies and pastries to offices every day,” says Dan Whitley. “A major element of successfully delivering on-the-go and takeaway food is choosing the most appropriate packaging.

“We chose to work with Sabert, because they are a reliable supplier, and so easy to work with. Plus, they always seem to be one step ahead of other suppliers and they’re steadily introducing new packaging solutions which deliver great food presentation.

“We use a tremendous amount of sandwich platters and plates, plus bowls for salads and pastas. The Superior brand is very important to us, so the fact that the majority of Sabert’s packaging can be printed is a real bonus. We’re even now looking at getting our recyclable paper cutlery branded, as we take every opportunity to reinforce our image. First impressions count and this is a very competitive market, so a high level of consistent branding gives us a definite edge.

“Packaging has been through a difficult time, with single-use plastic bans and taxes, and our customers are smart and are well informed about sustainability and ethical issues. Working with Sabert has ensured we have always stayed ahead of changing legislation

and been able to offer our customers a consistently high-quality range of sustainable products.

“Operating in the most sustainable ways we can is a priority for Superior Catering and alongside choosing packaging which has material provenance – such as being FSC® approved – and ensuring that it can be either recycled or commercially composted, we have begun to focus on reducing food waste.

“Our food and its presentation – which very much includes the packaging –consistently receives great feedback from our customers, so we are also beginning to think about ways to involve them more in our sustainability story. So that’s another benefit of being able to print messages as well as branding on our packaging.

“Choosing the correct packaging is an operational necessity for all food service businesses. Food preparation and our whole back-of-house operation is where so much time can be saved. Wrapmaster® is offering chefs and foodservice operators the chance to claim a brand-new award-winning Wrapmaster® for free, when they recycle ANY end-of-life food wrap dispenser, regardless of brand.

Return to Recycle by Wrapmaster® provides a solution for responsible and reliable recycling at the end of a dispenser’s life, as they can be returned and reprocessed to create new products – such as white goods . While Wrapmaster® dispensers are robust, and designed to serve for many years, those that have reached their end of life can be recycled, as part of Cofresco Foodservice’s mission to be 100% circular.

In a UK facility, the returned dispensers themselves will be shredded, washed and separated into polymers and metals, which are reprocessed and made ready for recycling. École Ducasse to open a new culinary and pastry school in Cairo, as Les Roches and Jetex announce partnership

École Ducasse, in collaboration with Reliance Egypt, has announced a strategic partnership to bring the prestigious institution to Cairo.

An international network of schools founded by the world’s most Michelin-starred Chef, Alain Ducasse, École Ducasse is dedicated to training future generations of chefs in culinary and pastry arts. It runs three schools in France – Paris Studio, Paris Campus and École Nationale Supérieure de Pâtisserie – as well as international schools and studios in the Philippines, India, Thailand and UAE.

Now, as part of the strategic expansion of École Ducasse throughout the world, this partnership will result in the establishment of a new campus under the name of École Ducasse Cairo Studio by end of 2025. Ongoing success for men’s health initiative

Since the end of last year, as part of a major earlier cancer diagnosis drive, an NHS awareness campaign to encourage men to consult their GPs if they saw blood in their urine, has been delivered directly to those at risk through a special message featured on P-Wave’s Slant6 urinal screens.

Diagnosing cancer early means it is easier to treat and can save lives, which is why the NHS chose to collaborate with P-Wave to urge men to be aware of changes in their bodies and contact their GP practice if they notice symptoms that could be a sign of cancer.

Nuno Mendes encourages Brits connection between Portuguese

Forget the wine glass, seafood and whisky is the ultimate pairing.

Renowned Portuguese Michelin-star chef Nuno Mendes is on a culinary journey to highlight the surprising yet profound connections between Portuguese and Scottish coastal cuisines. In partnership with Old Pulteney, “The Maritime Malt,” Mendes is bringing to light the shared heritage of these two seafaring nations, with a particular focus on how whisky can elevate the seafood dishes traditionally paired with wine.

Mendes, known for his deep passion for Portuguese cuisine, draws intriguing parallels between the coastal regions of Porto, Portugal, and Wick, Scotland – the home of Old Pulteney. “Both regions are shaped by the sea,” Mendes notes, “and this connection is evident in the seafood we both enjoy. The same waters, the same salt – they give us remarkably similar ingredients, despite being miles apart.”

A shared coastal heritage Mendes is keen to showcase the rich maritime traditions that both Portugal and Scotland boast, particularly through their culinary offerings. He points out that while the seafood from both regions is often celebrated, the culinary ties between them are less well-known. “There’s a deep, unspoken bond between these coasts, united by the sea’s bounty,” says Mendes. “I want to encourage people to explore these connections, to see how our cuisines complement each other in surprising ways.”

To demonstrate this, Mendes advocates for pairing seafood dishes with whisky, an unconventional choice that reflects

the bold spirit of exploration both Portugal and Scotland share. “Whisky, especially one as rich and complex as Old Pulteney Port, can transform a seafood dish” Mendes explains. “The subtle saltiness and rich, fruity notes of the whisky enhance the natural flavours of the seafood, creating a dining experience that’s both unexpected and deeply satisfying.”

The unlikely pairing of seafood and whisky Old Pulteney Port, the latest expression in Old Pulteney’s limited edition Coastal Series, offers a unique opportunity to explore this unique pairing. Santa’s claws add a seafood table with his potted crayfish

Santa puts the claw and tail meat from eco-friendly, wild crayfish into this sumptuous new starter for his and your Christmas dinner this year. He’ll also use the shells to make a warming crayfish bisque for Boxing Day. Both dishes are recipes created by international food writer, chef and restaurateur Anna Fidler for The Kennet Crayfish Company. For busy Christmas Day cooks, both dishes can be made on Christmas Eve!

The Kennet Crayfish Company, one of three finalists for “Food Producer of the Year” in the BBC Food and Farming Awards 2024, provides wild crayfish from the crystal clear, nutrient rich waters of one of only 200 chalk streams in the world. The signal crayfish are an invasive species, which need to be culled to protect native crayfish, other wildlife and the river environment. Humanely processed in a unique bio-secure facility designed for high welfare, the crayfish can be ordered par-cooked or fully cooked from the company website at www.kennetcrayfish.com for next day delivery.

Christmas Potted Crayfish with Nutmeg and Sage Butter

Serves 4 as a starter

• 100g unsalted butter

• 2 pinches of cayenne pepper

• A generous grating of nutmeg

• 6-8 sage leaves, chopped

• Approximately 350g cooked crayfish meat (tail and claw)

• Salt and pepper to season

• 1 small loaf of your choice, sliced and toasted

Melt the butter in a small saucepan over a low heat and add the cayenne pepper, nutmeg and sage. Ideally, leave this to infuse the flavours for an hour or so. Add the cooked crayfish meat to the pan stir and gently warm through on a low heat, season to taste.

Using a large slotted spoon, remove the crayfish and press them into your 4 ramekins (or serving dishes of your choice). Then pour the melted butter from the saucepan over the crayfish to cover. Either serve immediately or pop in the fridge to set.

You can serve your potted crayfish cool, room temperature or warmed up. Cool, on hot toast, is my favourite because the heat of the toast melts the butter. I prefer to take them from the fridge and leave them out on the counter for an hour then toast the bread at the last minute, so the cooler crayfish/butter mix melts fast and you don’t end up with cold toast!

Potted crayfish are better the day after they’re made, so if you want to do that, pack them into ramekins (or a jar), pour the warm, seasoned butter over them and refrigerate. If the butter doesn’t cover the crayfish, that’s fine, as long as you eat them all in a day or so. If you want to store them for up to a month, you need to make sure the crayfish are totally covered by the butter.

Santa’s Boxing Day Crayfish Bisque

Make the most of the whole crayfish, this bisque uses the shells, heads and small claws that are left over from your Christmas potted crayfish!

The ingredient quantities are calculated for approximately 1kg of crayfish, so they can be increased or decreased, depending on how much shells you have left over.

Serves 4-6:

• 1 kg of leftover crayfish (heads, shells, small claws)

• 2 bay leaves

• Handful of fennel stalks (optional)

• 1 lemon, peeled and cut into quarters

• 50g butter

• 2 shallots, finely chopped

• 1 celery stick, finely chopped

• 1 large carrot, finely chopped

• 2 garlic cloves, crushed

• 250ml white wine

• Pinch of cayenne pepper

• 1 tbsp. tomato purée

• 2 tbsp. plain flour: or, traditionally chefs would thicken the soup by grinding some of the

• crustacean shells into ultra fine powder.

• 2 tbsp. Brandy (optional)

• A little double cream (optional)

Place the shells, bay leaves, fennel and lemon in a large pan, covering with cold water and boil for 20 minutes before straining and reserving the liquid. The bisque needs approximately 1.5 litres of stock so top up with boiling water, if needed.

Melt the butter in a large saucepan and cook the shallots, celery and carrot over a gentle heat until soft and fragrant. Stir in the garlic and cook for a minute or two before adding the wine. Cook until the wine is reduced by about half then stir in the cayenne and tomato purée, mixing well before sprinkling over the flour and whisking briskly to remove any lumps. Cook for a minute or two then add the crayfish stock a little at a time, mixing well to ensure no lumps are forming. Simmer gently until thickened, then blitz until smooth using a stick blender. Pour through a sieve in a large bowl, pressing down with the back of a spoon to push through as much as possible. Pour back into the pan and season to taste before reheating, adding the brandy and cream, if you fancy! Ladle the soup into bowls and serve.

*Traditionally chefs would thicken the soup by grinding some of the crustacean shells into an ultra fine powder.
