Herb Roasted Sweet Potatoes
from Fresh Recipes
Serves: 4-6
Ready In: 55 minutes
INGREDIENTS:
• 4 medium Wild Harvest Organic Orange Sweet Potatoes
• 1 tablespoon fresh Wild Harvest Organic Thyme, chopped
• 1 tablespoon fresh Wild Harvest Organic Rosemary, chopped
• 1 tablespoon fresh Wild Harvest Organic Sage, chopped
• 3 -5 sprigs thyme (to garnish)
• 3 garlic cloves, minced or 3 tablespoons minced garlic
• 1⁄2 teaspoon crushed red pepper flakes
• 3 tablespoons olive oil

INSTRUCTIONS:
1. Preheat the oven to 400° F.
2. Peel and cut sweet potatoes into 1 – 1 1⁄2 inch cubes.
3. In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes.
4. Transfer to a rimmed cookie sheet.
5. Garnish with thyme sprigs and bake until tender, approximately 40 - 45 minutes.
6. Serve hot.
