case coco peat – coconut husk that has been composted and treated – is used. All the nutrients are supplied directly to the coco peat through a drip irrigation system. Allée Bleue hosts herb tours every Friday. The guided explorations offer visitors insight into what it takes to nurture herbs from seedlings to fully grown, harvest-ready plants. The Allée Bleue farm also produces olives, cold-pressed extra virgin olive oil and export fruit. ilderness Safaris Savuti Camp has introduced a unique sleep-out option for adventurous guests on outdoor decks overlooking the wildlife-rich Savute Channel in Botswana’s Linyanti Swamps. Situated a 20-minute drive or 45-minute boat trip away from the camp, the two new ‘sleep-out’ decks offer guests a truly secluded, up-close-and-personal wilderness experience and the exceptional opportunity of sleeping under the stars. Famous for the fact that it simply stopped flowing between 1980 and 2008, the Savute Channel is now a deep, clear waterway that attracts a variety of wildlife, and anything can be seen from the deck, including hippo, kudu, buffalo, waterbuck, impala, baboon and abundant birdlife. Guests enjoying the sleep-out experience will be treated to a range of night sounds as they drift off to sleep, and to an array of sightings as they wake up to a beautiful sunrise over the channel. The two sleep-out decks, which accommodate up to

four people each, come complete with comfortable beds, mosquito nets and basic ablution facilities nearby. A highly qualified guide will be on standby to ensure the safety of guests and assist them with their needs during the night. A cosy dinner around the campfire and a delicious breakfast the next morning complete the surreal experience. Savuti Camp offers front-row seats for viewing the abundant game that has congregated and adapted to the returning waters of the Savute Channel. Accommodation comprises seven large en-suite canvas-and-thatch walkin tents that are raised off the ground and face onto the Channel. From the thatched dining area, a plunge pool and large viewing area with a fire pit extend outwards on raised wooden decks towards the new waters that flow past the Camp. Hartmann says these highlights, as well as the day-to-day performance of former students, contributes to the overall image of the SA Chefs Academy. “This year has seen a marked increase in block release students, which shows the faith that the industry puts in us. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. This is very important to us and we hope to continue to work closely with hotels and restuarants at this level.” The reputation of the SA Chefs Academy has also attracted significant partnerships with leading companies, including Bosch, Patleys, Rialto, Ecolab, Tydstroom, Nulaid, Kerry (formerly Orley Products) and Olive Pride. H

artenberg Wine Estate in Stellenbosch has continued its recent winning streak by being awarded The International Trophy for Best Bordeaux Varietals (under £15) at the 2014 Decanter World Wine Awards (DWWA). A Gold medal was also awarded to the estate’s Stork Shiraz 2010. The DWWA is the world’s largest wine industry competition, with representation from wine countries across the globe. This year the panel judging the South African wines was chaired by Lynne Sherriff MW leading a team of influential judges from across the wine industry. The International Trophy taste-off was presided over by Competition Chairman Steven Spurrier, who was joined by the Vice-Chair Gerard Basset OBE MS MW, as well as three Regional Chairs. Winning an International Trophy at the DWWA is regarded as the crème de la crème in the industry. This year only 33 wines out of the 15007 entered were awarded International Trophies. When the Hartenberg Cabernet 2010 was awarded a Gold medal in the main tasting it was re-tasted against other Gold medals in the same category from South Africa, where it was awarded the DWWA Regional Trophy. It was then re-tasted against other countries’ Regional Trophy winners, ultimately scooping its status as one of the 2014 DWWA International Trophy winners. Last year the Cabernet Sauvignon 2010 collected a Veritas Gold medal. The tasting panel described it as “bursting with cassis, dark berries and plums, with plenty of fruit sweetness - a wine with no hard edges and a world away from leafy, green Bordeaux blends at this price level.” The Cabernet Sauvignon is the perfect wine to enjoy during the cold winter months, either on its own or with hearty comfort food such as rich casseroles, springbok fillet and other venison dishes or beef fillet. This month we read Zelda la Grange’s Good Morning, Mr Mandela. The former assistant of the late President writes frankly and insightfully about the man behind the legend, allowing the world an insider’s glimpse into the more subtle nuances of his venerable character. The following is our favourite section of the book, and expresses a sentiment that runs throughout Zelda’s narrative: “When in trouble, one cannot ask for a better friend than Nelson Mandela. The President was never going to condone what had happened, but he had a way to put things in perspective of one’s humanity. You would still feel guilty, but he made you feel safe and in a gentle way persuaded you to take responsibility without feeling humiliated. Observing this over time I realized how my thinking had changed and how I assessed things I would feel very opinionated about before. President Mandela was never scared to admit his own mistakes and then almost jump at the opportunity of apologizing and then to move on. He consistently told people whenever they wanted to sing his praises that ‘a saint is a sinner who keeps on trying’. That doesn’t imply that he ever justified something that was without integrity or honesty but he inherently believed that people always had the best intentions and that they stumbled occasionally as all human beings do. What was important to him, and became clear to me, was that those who faltered, sinned or stumbled didn’t feel alienated because they made mistakes. ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
