where Credit is Due “Never, ever underestimate the importance of having fun.” – Randy Pausch

Happy 2014! We bet you’ve made a list of sound resolutions. Ours are perhaps a bit less honourable. This year we have decided to relinquish the regular well-meaning intentions and rather commit to having fun in as many different ways as possible. From enjoying excellent game viewing at a renowned safari lodge and lazing around at a seaside spa to taking to the river for a rafting adventure, reading the latest local fiction and learning to cook up a storm in the kitchen, we tried out

all means of R&R in preparation for this edition. We hope that you are inspired to give up trying to be perfect and to create wonderful and fun-filled memories instead this year. We are certainly having a good time so far. Here’s to a great year!

Swap the red tape for the red carpet

“NAC’s VIP Charter service always makes me feel like a rock star! They think of everything I could possibly need and pay special attention to detail, when it comes to my safety, security, privacy and comfort. Wherever I’m headed, NAC’s fleet of long and medium range jets and twin turbine aircraft get me there on time, without the added aggravation of having to deal with check-in queues, waiting for baggage or having to wade through red tape at airport terminals.” So if you’re considering chartering a flight, speak to NAC, and they’ll make you feel like an A-lister on the red carpet!” – Gabby van Staden, frequent charter client.

T

ucked away within 64,800 acres in the pristine Manyeleti Reserve, Tintswalo Safari Lodge is a lavish and private sanctuary from which to experience the sights and sounds of Africa’s Big Five, as well as the area’s spectacular bird life. The lodge is situated on the western boundary of the Kruger National Park, and thanks to the area’s minimal vehicle density, guests are ensured of a peaceful, exclusive, and uniquely rewarding safari experience. Each of the lodge’s six exclusive suites has been inspired by the romantic bygone days of 19th century explorers. Each is unique and guests are guaranteed to find a suite perfectly suited to their tastes. The Baker Suite, for example, is named after Samuel and Florence Baker who travelled through the African wild together. It is one of the lodge’s most romantic, with a beautifully hand carved four-poster bed at its heart. The Livingstone Suite, which was inspired by David Livingstone, one of the most widely known explorers of Africa’s colonial period, is perfect for families with its twin or double luxury accommodation. The presidential suite, named after the famous engineer and artist, Thomas Baines, is the lodge’s most prominent and luxurious suite. It was designed for four guests, and its two complete suites (one double and one twin) are adjoined by a lavish private lounge and dining room area, as well as a kitchen. The blistering heat of the African sun is no match for

the blissful chill provided by each suite’s individual air conditioning, complemented by overhead fans and mosquito nets to keep away any unwanted nocturnal visitors. Comfort levels are taken to even greater heights with luxurious en suite bathrooms, indoor and outdoor showers, as well as supremely comfortable, extra-length double or twin beds. Guests can also look forward to being treated like royalty, with a private safari vehicle, guide and tracker, as well as a personal chef and butler at their service during their stay. The main lodge building overlooks a waterhole that is frequented by large herds of elephant and other wildlife. Here, guests can unwind from the vantage point of the private plunge pool, or recline on the deck and observe the large variety of animals that visit the seasonal river bed. Guests at Tintswalo Safari Lodge are guaranteed an authentic “on the ground” experience of the African bush, whether travelling on foot during a guided walk through the reserve, or enjoying an open vehicle game drive in search of the Big Five, accompanied by Tintswalo’s

professional and knowledgeable rangers. During both of these experiences, guests will be enlightened with information concerning the local wildlife and ecosystem, and will be captivated by the stories that the rangers reveal about local Shangaan traditions. For guests who enjoy a gentle adrenalin rush, hot air ballooning is an unforgettable experience which provides an awe-inspiring view of the natural fauna and flora of the Kruger National Park. One of the most satisfying aspects of staying at the Tintswalo Safari Lodge is that each day’s activities can be arranged according to guests’ particular needs. As such, visitors get to decide when they would like to depart for morning game viewing, and whether they would like to indulge in a scrumptious breakfast in the bush, or delight in al fresco dining or high tea at the lodge. “Tintswalo” in the Shangaan language means the intangible feeling of love, gratitude and peace that is bestowed upon someone who has given a meaningful and worthy gift. Once guests have indulged in a luxurious and stress relieving stay at Tintswalo Safari Lodge, they will leave with a new appreciation and understanding of this particular definition and this unique and beautiful place. The whites are available from Nederburg in Paarl for R95 a bottle and the reds for R110. The wines are also available from the Vinoteque, fine dining establishments and selected fine wine shops. he single-vineyard Gewürztraminer returns the varietal to the Nederburg portfolio after an interval of 15 years. The new wine is sourced from the same Stellenbosch farm used by Günter Brözel to produce the Gewürztraminer entry that earned him the title of Diners Club Winemaker of the Year in 1985. “The gracefully aromatic wine with a subtle sweetness is the ideal accompaniment to aromatic and spicy dishes,” says cellar master Razvan Macici. It also extends the food pairing repertoire of the Heritage Heroes line-up that includes two wooded whites and two red blends. The Beautiful Lady takes its name from a description of Ilse Graue, the wife of Johann Graue, a German immigrant who bought Nederburg in 1937. He is credited with introducing far-reaching wine-growing and winemaking changes at Nederburg. Ilse brought her own changes to Nederburg, remodelling the 1800 manor house to accommodate her Bechstein piano and to include a second storey for the bedrooms. “She brought a gracious sense of hospitality to Nederburg, planting a fine rose garden that still occupies pride of place in our garden,” says Macici. It was former winemaker Günter Brözel who called her “the beautiful lady”. She made him feel welcome when he joined Nederburg as winemaker in 1953. Ilse moved from Nederburg to Hermanus when she was widowed in 1959 and lived there until her own death 25 years later. Macici believes the elegant, fragrant and lively wine with a haunting, almost elusive sweetness is an apt tribute to Ilse. “The rose petal aromatics remind us of

H

appy New Year everyone! With the festivities now over, we all need to give our bodies a break from the lovely but no doubt overindulgent month gone by. I like to spend about a week on a detox and wellness kick to restore balance and energy levels at the beginning of a new year. My traditional detox consists mainly of eating a combination of negative calorie foods, particularly vegetables that are either lightly steamed or raw, and generously seasoned with strong and delicious flavours so my taste buds trick my body into thinking the festive season continues. Negative calorie foods are ingredients that have a lower calorie content per serving than the calories the body expends to digest the food. With this in mind I developed this month’s fusion recipe, which is based on one of my favourite African dishes - Morogo. Also known as African wild spinach, Morogo refers to a group of at least three different dark green leafy vegetables including but not limited to spinach, pumpkin leaves, wild plants and even beetroot tops. Considered a traditional South African dish, Morogo forms an important part of the staple diet of many rural communities.

Ingredients • 1 cup snow peas • 4 cups mixed green leaves (get creative and mix up any or all of the following: spinach, pumpkin leaves, beetroot tops, Chinese cabbage, etc.) • 300ml or ½ pint chicken or vegetable stock • 1 tbsp chopped fresh dill • 2 tbsp wholegrain mustard Preparation 1. Mix stock and whole grain mustard and heat over medium heat 2. Reduce the liquid by half 3. Roughly tear the green leaves after washing thoroughly 4. Add snow peas and gently steam on medium heat for 4 to 6 minutes 5. Place steamed vegetables in a shallow soup bowl 6. Add dill to stock and pour over vegetables

This dish is not only packed with flavour, but also has a protein content of up to 36% as well as being rich in iron, vitamin A and vitamin C. The mustard brings in the calcium and dill is a known anti-oxidant. Just what you need to kick start your new year in a healthy and delicious way!

Pick of the Best Why not learn more about South Africa, its people and its animals through some of the country’s most classic books, both old and new? Here’s our selection of the best this month… Text & Image: © Penguin Books SA

A Prisoner in the Garden – Opening Nelson Mandela’s Prison Archive

Jock of the Bushveld Sir Percy Fitzpatrick Before the turn of the twentieth century, when the lure of gold was bringing men from all corners of the earth to the Transvaal, a young man from Cape Town found himself a bull-terrier puppy who would become one of the most famous hunting dogs in South African history.

Nelson Mandela Centre of Memory A veritable South African tome, the collection constitutes a record of Mandela’s more than 27 years in prison. It includes rare photographs, Mandela’s handwritten notes to family, friends and the authorities, his personal diaries and notes, official records, medical records and legal documents, making it an extraordinary representation of prison life for a man who never gave up the fight for freedom.
