“And so with the sunshine and the great bursts of leaves growing on the trees, just as things grow in fast movies, I had that familiar conviction that life was beginning over again with the summer.” – F. Scott Fitzgerald, The Great Gatsby I think it’s finally safe to say that summer has officially reached Africa. Ice-cream cones, beach bats, suntan lotion, sandals, garden parties, G&T’s, caravans, kites, barbecues (or ‘braais’, as we call them here in South Africa)… whatever you associate with summer, it’s bound to relate largely to the great outdoors. There really are few better places to spend summer than in Southern Africa, and for this month’s edition we have selected only properties that allow guests to immerse themselves in the natural world as well as to relax in comfort and luxury. What better way to enjoy the seaside than at a discreet luxury resort in Mauritius? Nestled on the silver sands of its own private peninsula, One&Only Le Saint Géran is an exclusive hideaway perfectly located in a wonderland of beach and ocean activities. Prefer a safari summer escape, in true African style? Sanbona Wildlife Reserve offers spectacular Big Five game viewing just three hours from Cape Town. Or, if you’re looking to spot the majestic mammals of

the ocean, nearby De Hoop Nature Reserve offers unrivalled land-based whale watching opportunities. If you would like to experience a summer countryside atmosphere but prefer to remain in the city, the elegant Cricklewood Boutique Hotel in Pretoria will surely appeal to you. While its riverside setting overlooking a lush green kloof offers a tranquil ambience, it is situated just minutes from the city’s major business and entertainment centres. Summer can certainly also be sipped and savoured, and we show you some of the best wine and dine offerings of the season in this edition too. To summer!

ocated near Cape Town on the renowned Route 62 (the longest wine route in the world), Sanbona - part of the Shamwari Group - is a 54,000 hectare Big Five wilderness reserve offering five star accommodation at three beautifully appointed lodges –Tilney Manor, Gondwana Lodge and the recently refurbished Dwyka Tented Lodge. For a unique walking safari there is also the seasonal Sanbona Explorer Camp. Dwyka Lodge is a luxury safari tent experience set on a horseshoe riverine area hidden between breathtaking rock formations. It has just re-opened in time for summer, and offers guests a fresh new look and feel. Gondwana Lodge offers family fun, with a large swimming pool, a children’s entertainment room, and a Kids on Safari programme. The lodge overlooks the vast plains of the Karoo and the Bellair Dam, which also offers a unique boat safari. Tilney Manor is the original Manor House, which is designed in true Karoo-Cape Georgian Manor House style and offers six large bedrooms. The emphasis at Sanbona is on conserving a vanishing way of life. Over the years the reserve has rehabilitated the land and saved it from the previous overgrazing in an attempt to preserve the magnificent flora and fauna for future generations. 20

The area boasts some of the world’s most rare plant life. Around 600 species of plants can be found, with various species flowering at different times throughout the year. The various floral kingdoms include Acacia Thickets, Nama, Karoo, Renosterveld, Succulent Karoo and Central Mountain Fynbos. The succulents are especially varied. The animals that once roamed the area freely, living amongst the San, have been successfully reintroduced, and the Big Five once again live in harmony with the land and its other inhabitants. Inspired by the surrounding natural elements, the Relaxation Retreat at Sanbona overlooks the ancient rock formations and undulating mountains and plains of the reserve. Using organic African Healing Earth skin- and body care products, the spa offers a range of world-class treatments and holistic modalities to balance and energise body and mind. From healing African massages to nourishing botanical facial therapies, the Relaxation Retreat aims to harness the restorative powers of the area’s rich natural landscape. There is no doubt that visitors to Sanbona Wildlife Reserve will enjoy the refreshing humility and perspective gained from immersing themselves in its vast expanse of pristine wilderness. ituated just three hours’ drive from Cape Town, the 36 000 hectare De Hoop conservation area forms part of a World Heritage site. The Marine Protected area, one of the largest in Africa, extends a further three nautical miles (5 km) out to sea. The shoreline offers some of the best whale viewing opportunities in the world, with 40 % of the global Southern Right Whale population using it as an annual breeding ground. In peak season (June to November) between 80 to 300 whales can be seen in the bay.

De Hoop Nature Reserve also forms part of the world’s smallest and most threatened plant kingdom – the Cape Floral Kingdom. The Bredasdorp/Agulhas and Infanta area, of which De Hoop forms a part, has an estimated 1500 of the approximately 9000 plant species found in the Cape Floristic Region. Of these 1500 species, 108 are rare or threatened, 34 occur only in De Hoop Nature Reserve, and 14 are recently discovered and thus still un-described. The reserve’s many terrestrial habitats support a diversity of animal groups. It is home to 86 mammal species - most notably the rare bontebok and the Cape mountain zebra, as well as eland, grey rhebuck, baboon, yellow mongoose, caracal and the occasional leopard. De Hoop is famous for its variety of resident and migratory birds, and more than 260 species have been recorded on the reserve. Among the 260 bird species are the endemic African black oystercatcher, the rare Damara and Caspian terns, the vulnerable Cape griffon vulture and Stanley’s bustard, and the globally threatened blue crane. The De Hoop Vlei, which spreads between 17 and 19 kilometres when full, is a Ramsar site of international importance, where aquatic birds such as the pelican and flamingo as well as other organisms can breed and feed

without disturbance. The reserve is also the only remaining Western Cape breeding colony of the rare Cape vulture. De Hoop Nature Reserve has great scientific value as a research centre, as it one of the country’s last remaining natural areas and serves as a benchmark for measuring environmental change elsewhere. From camping and caravanning sites and affordable self-catering chalets to more luxurious self-catering cottages and upmarket fully catered lodges, the De Hoop Collection accommodation offers something for everyone. Activities on the reserve include hiking, mountain biking, eco quad biking, land-based whale watching, bird watching and star gazing, to name a few. The De Hoop Collection caters for weddings, conferences, team-building weekends and other bespoke events. With all this and more on offer, De Hoop can only be described as a nature lover’s paradise. hop, skip and jump from Johannesburg aboard SAA’s direct flight to Sir Seewoosagur Ramgoolam International Airport, Mauritius beckons the weary to its revitalising shores. Although a popular destination for African and European tourists for decades, the time has come for Mauritius to be experienced as a tranquil home-away-from-home by a wider audience. And what better way to relax, unwind and explore the area than from its most iconic resort, the One&Only Le Saint Géran? One of the crown jewels in the Kerzner' International hotel empire, the ‘Saint Géran’ – as the locals affectionately call it – beckons all to its pristine sheltered beaches and immaculately managed facilities with the promise of Coco Loco rum cocktails and sumptuous seafood feasts. Situated on the northeastern seaboard, the Saint Géran is more than a hotel; it is a decades-old institution of indulgent Mauritian hospitality that habitually hosts the world’s most famous, who enjoy the privacy and luxury for which the One&Only is renowned. As an epicurean destination, One&Only Le Saint Géran stands head and shoulders above the norm on the island. The three restaurants at the resort cater for every palate and offer an intercontinental assortment of cuisine options. The Indian Pavilion, featuring authentic Indian cuisine offers signature Indian and Mauritian-inspired dishes in a romantic seaside location just a short walk from the main hotel building. With a view of the green sugarcane fields across the bay, the chef team under the helm of recently appointed chef de cuisine Faizan Ali has made many a honeymooner’s dinner dreams come true. From signature live cooking shows to an Indian Tepanyaki-style grill (known as TAK-A-TAK) and an open Tandoor, the Indian Pavilion dazzles and delights. Wines are also carefully selected to match the complex and intense flavours of Vineet’s cooking, and the resident sommelier. A stunning variety of accommodation choices are on offer. The resort’s 162 suites and signature villa feature a private terrace or balcony facing either the ocean or the cove. Personalised with hand-selected furniture and decorated with artful colours, each suite is a tranquil haven and a home-away-from-home. As a family-friendly resort, with 76 interconnecting Junior Suites, One&Only Le Saint Géran makes no pretences that its exclusive ambience should exclude anyone. With facilities that will put any urban equivalent to shame, the One&Only Le Saint Géran is a definite bucket list destination for those who have not yet had the privilege of experiencing this Indian Ocean paradise. 30

Another Unwooded Pinot Noir from Haute Cabrière

Text: Elizmari Theron Images: © Haute Cabrière

T

he latest vintage of Haute Cabrière’s Unwooded Pinot Noir, famous for its elegance and accessibility, has just been released. “We’re very excited about the 2014 vintage,” says Haute Cabrière Cellar Master Takuan von Arnim. “We’re constantly working towards perfection in everything we do, and the 2014 vintage of the Unwooded Pinot Noir is another step in the adventure.” Originally launched in 2011, the Unwooded Pinot Noir is still revolutionary in style. The latest edition, with its typical deep ruby clarity, displays even greater structure and depth than before. “It has amazing colour and fruit,” says Von Arnim. “As always, the wine has an alcohol content lower than most Pinot Noirs, which is one of the reasons it’s so popular – it’s a thirst-quencher with wine character. Served with rare fillet and rough salt, it’s fantastic!” Often described as a “red white wine”,

the Unwooded Pinot Noir by Haute Cabrière offers the perfect introduction for non-red wine drinkers to the pleasure of Pinot Noir. It is best enjoyed chilled and, as a great wine that can be savoured with food, is an ideal match for pastas and salads, roast beef, lamb or duck. Haute Cabrière is one of Franschhoek’s most exquisite food and wine destinations. Known as the home of Pierre Jourdan Cap Classique, the cellar is committed to producing wines and Cap Classiques exclusively from the noble Chardonnay and Pinot Noir cultivars. Founded by Achim von Arnim, Haute Cabrière’s fundamental wine growing philosophy – the harmony of “sun, soil, vine, and man” – remains a cornerstone of the cellar and its pursuit of perfection. The 2014 Unwooded Pinot Noir is available from the cellar and selected restaurants and retailers countrywide. For more information visit www.cabriere.co.za.

Stellenzicht Plum Pudding Hill Makes a New Entrance

Celebrated Stellenbosch wine farm Stellenzicht has launched the 2007 vintage of its Plum Pudding Hill Syrah, a new single vineyard addition to its highly regarded portfolio. Text: Tiffany Lovemore Images: © Stellenzicht

“O

ur wines are the products of our unique terroirs, farmed with care and made with subtlety. This is the very DNA of the Plum Pudding Hill Syrah,” says Stellenzicht Winemaker Guy Webber. Stellenzicht is situated on the slopes of the Helderberg Mountain between Stellenbosch and Somerset West. It lies in a prime wine-growing area just a few kilometres from False Bay, at altitudes that ensure slow ripening and exposure to soils that impart complexity to the wines. The sophistication of this Syrah stems from a vintage that Webber describes as close to ideal. “Ample autumnal rainfall translated into wonderfully even ripeness of fruit, while the coolness of the ripening period resulted in this wine’s 34

balanced structure and finesse.” The wine boasts an inkish blue/garnet depth of colour, a refined mouth feel and flavours of ripe, dark fruit with hints of pepper and violets. Supple tannins and a lingering aftertaste finish on the palate. Bottled as Stellenzicht Syrah since 1994, the Plum Pudding Hill Syrah has its origins as one of only two Shiraz vineyards on the farm in those days. Its name hails from local folklore, in which a trailer-load of plums once overturned nearby, making a most memorable mess. While several new Shiraz vineyards have been planted at Stellenzicht over the years, none have shown the characteristics of Plum Pudding Hill. The 2007 vintage of the wine is the first officially registered as a single vineyard. Plum Pudding Hill Syrah 2007 is available from the wine shop at Stellenzicht, the Vinoteque at Bergkelder and selected wine boutiques and leading restaurants nationwide. Stellenzicht is part of the Cape Legends stable, an extensive collection of award-winning wineries and estates situated in and around the Cape Winelands. Summer Dining at

Makaron Restaurant Summer at Majeka House in Stellenbosch is set to be both entertaining and delicious. The boutique hotel’s Makaron Restaurant recently introduced an interactive Kitchen Table, designed just for two, and a new summer menu characterized by the creative stamp of Head Chef Tanja Kruger. Text: Tiffany Lovemore Images: Š Majeka House

M

ore than ever before, Chef Tanja strives to express her personality through the creations on the menu. The restaurant’s front-of-house team, managed by Dean Cole and sommelier Esmé Groenewald, continues to add personalized, informal service excellence to the dining experience, which is complemented by sophisticated interiors and an intimate ambience. Interior designer Etienne Hanekom, responsible for the interiors of the hotel and restaurant, was tasked with injecting some creativity into Makaron’s new kitchen in order to inspire culinary genius in a traditionally hardworking, utilitarian space. Most striking are the New York subway-style tiled walls in charcoal grey, olive-green and cream. A linear window between the kitchen and restaurant allows diners a glimpse into the busy pastry and cold-starter kitchen while giving chefs a perspective on the activity in the restaurant. Informal and close to the action, the Kitchen Table is literally a table for two in the kitchen – like front-row seats in a culinary theatre, where diners can take in all the action that happens during a typical dinner service. Guests at the Kitchen Table are served a five-course tasting menu by the chefs in the kitchen, and the sommelier comes into the kitchen to offer wine pairings with each course. The Kitchen Table is only available for those ordering the tasting menu, and needs to be booked in advance. Makaron’s new-season menu was inspired by Chef Tanja’s sabbatical earlier this year. Instead of cooking in

famous kitchens in Europe as she did last year, she chose to walk the full 800 kilometres of the famous Camino de Santiago pilgrimage route – and came back a changed person. “The process of persevering day after day, sometimes just putting one foot in front of the other, was physically and mentally tough. The experience has given me a sense of balance and a newfound confidence in my ability to face fear head on,” she shares. This balance and honesty is reflected in increasingly pared-down dishes, in which the provenance of the ingredients is paramount. Examples include a starter of ancient grains with miniature vegetables and a cauliflower veloute; a main course such as dry-aged ribeye and marrow with parsley crumble and onion; and a dessert of fresh fruit with passion fruit marshmallows and lemongrass. Chef Tanja’s love of Asian flavours is highlighted in dishes such as Akamiso seared tuna, dragon cracker crumble and smoked tofu; and Mauritian sea bass with laksa foam, carrots, cashew and coconut. The fun side of her personality is responsible for desserts like the decadently rich Fifty Shades of Chocolate or the clever take on salted caramel popcorn. The new menu is available for dinner only, and can be enjoyed à la carte or as a four- or six-course tasting menu, with or without wines. “Every year we celebrate with our graduates as they complete their training and establish this milestone in their careers,” says SA Chefs Academy owner Paul Hartmann, a renowned international chef in his own right. “For us at the Academy, this year is however especially significant. We are proud of the contribution we have been able to make to the industry over the past decade.” The new branding that will be rolled out across the organisation takes its lead from the re-invented logo. The new logo incorporates creativity and professionalism among its design themes along with the green hue signifying growth and prosperity. “When we launched the school in 2004, our vision was to create a world-class training facility, built on our own personal experiences, to equip students to be the best in their chosen fields. Looking back now, I think we can safely say we are achieving our goal.” Past students of the SA Chefs Academy have achieved a variety of positions and recognition. Among them are: • Food Editor, House and Leisure magazine: Raphaella Frame-Tolmie • Head Chef, Test Kitchen restaurant: Ivor Jones • Executive Chef, Cavalli Estate: Henrico Grobbelaar • Owner, The Creamery: Kate Schrire • Owner, Woodstock Bakery: Paul Cremer • Owner, Gusto Cafeteria: Melisa Clayton • Owner, The Lucky Baker (Pretoria): Pauli Coetzee In addition, the Academy’s first development student, Elias Kafi, is employed at the five-star Table Bay Hotel. In 2014 the Academy will take on four new development students. In terms of student achievements this year alone, these include: • Lauran Case and Josh Wiid, winners in the One&Only Reaching for Young Stars competition; • Kirsten Helleman winning the Unilever Junior Chef competition and representing SA on the National Culinary Team; and • Sven Adams taking third place in the Unilever Chef of the Year (senior category). Hartmann says these highlights, as well as the day-to-day performance of former students, contributes to the overall image of the SA Chefs Academy. “This year has seen a marked increase in block release students, which shows the faith that the industry puts in us. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. This is very important to us and we hope to continue to work closely with hotels and restuarants at this level.” The reputation of the SA Chefs Academy has also attracted significant partnerships with leading companies, including Bosch, Patleys, Rialto, Ecolab, Tydstroom, Nulaid, Kerry (formerly Orley Products) and Olive Pride. The SA Chefs Academy incorporates a catering division and offers courses including: 1. Full time Diploma in Culinary Arts and Pastry through City and Guilds International 2. Block Release Courses (Aimed at industry chefs that wish to gain a formal qualification) 3. Certificate in Culinary Arts 4. Diploma in Food Preparation and Culinary Arts 5. Diploma in Pastry The SA Chefs Academy is based in Black River Park, Fir Street, Observatory, Cape Town where it trains professional chefs for the industry, including hotels, restaurants, cruise ships, food product developers and food stylists. B

en Trovato has fooled us all for years. The man behind the dark glasses, under the black Fedora and inside the trench coat isn’t who we thought he was. Or is he? One thing we do know – his name isn’t really Ben Trovato. For well over a decade, Mark Verbaan has been writing as Trovato. The curious story of why he chose to use a nom de guerre is told for the first time inside this book. While Mark Verbaan might not be a familiar name, Ben Tovato certainly is. Regarded as one of South Africa’s foremost satirists, he is the author of ten books, including one on golf, a sport he has never played. His trilogy of audacious letters to the rich and powerful remains unique in the annals of South African literature. And as a columnist, he has disgraced the pages of several major newspapers and magazines. Incognito lays bare the meat, bones and gristle of Ben Trovato’s life. Which is also Mark Verbnaan’s life. See how this works? It is a bittersweet memoir: sweet when the beer is free and the surf is up; bitter when the women in his life turn on him and he has to get a job. Mark fights for his country from an office in Pretoria… He drags journalism even further into the gutter… He drums poorly for Durban’s punk bands… He lives among the squatters of London’s East End… He appears in a Kajagoogoo music video… He gets arrested on drug charges… He is almost assassinated in Namibia… He is nearly killed by e.tv… And much more! 39

Kapama Karula

Kapama Private Game Reserve occupies a vast area between the northern Drakensberg Mountains and the Greater Kruger National Park, in the north east of South Africa. It spans 13 000 hectares of magnificent African bushveld, and is teeming with wildlife. The most secluded and prestigious of four luxury lodges on the reserve, Kapama Karula is set on the banks of the perennial Klaserie River. Meaning ‘place of peace’ in the local language, Kapama Karula exudes calmness and depicts the pinnacle of luxury five-star safari accommodation. Five spacious suites are each equipped with a full range of luxury comforts and amenities. For an experience that’s closer to nature and authentically African, Kapama Karula offers guests the opportunity to sleep in one of two traditional Meru tents. While the lodge’s open-plan lounge and bar are spacious yet cosy, the African sunshine can really be enjoyed on the outside wooden deck, with views over the meandering river. A new addition to the lodge, the multipurpose library is equipped with audiovisual equipment.

01 Health sunburn is a potential health hazard

S

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. If you plan to be sexually active during your stay in South Africa, be sure to take necessary precautions. Check out www.redribbon.co.za for more information. Visit www.brillianttan.co.za for a safer way to obtain that holiday tan.

02 Safety • Do not to walk alone at night. • Do not flaunt your possessions when you are out in public. • Only allow clearly uniformed guards and personnel to handle your possessions. • Be aware of what is happening around you. • If anything should happen do not hesitate to phone the police.

03 Travel Options Air

There are several domestic airlines in South Africa, including South African Airways, South African Express, Interlink, Airlink and British Airways. Low-cost carriers include: 1time, Kulula and Mango.

Bus

Greyhound (+27 83 915 9000), InterCape (+27 21 380 4400) and Translux (+27 861 589 282) are the three main bus services in South Africa. All flights and bus tickets can be booked via Computicket at www.computicket.com or by calling +27 83 915 8000.

Trains

For budget trips across the country, Shosholoza Meyl is the best service available. Book online at www.shosholozameyl.co.za and enquiries can be directed to +27 86 000 8888. If you decide to splurge, though, there are three outstanding options. The famous Blue Train (+27 12 334 8459), Rovos Rail (+27 12 315 8242) and Premier Classe (+27 86 000 8888) are luxurious liners with all the bells and whistles.

Cars

Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. Foreign members of the Automobile Association (AA) can register as a temporary member in South Africa at any local AA branch. For more information, phone +27 83 843 2222.

A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
