WELCOME MESSAGE FROM THE FOUNDER Welcome to the 27th Annual Graduate Education and Graduate Student Research Conference in Hospitality and Tourism! We are very honoured to have your participation in the Conference, held virtually once again to accommodate the needs of everyone in consideration of the impact of the COVID-19 pandemic. Despite the ongoing challenges posed by COVID-19, we have been able to deploy online technology to continue to organise the Conference for the benefit of the entire sector. I am particularly grateful to the Conrad N. Hilton College of Hotel and Restaurant Management at the University of Houston for having organised the Conference for two years in a row. Founded in 1996, the Annual Graduate Education and Graduate Student Research Conference in Hospitality and Tourism has been instrumental in promoting academic and research exchange and furthering research development in the hospitality and tourism field for more than two decades. The Conference has four specific objectives: (1) providing a platform for the exchange of cutting-edge research in the field of hospitality and tourism; (2) fostering a healthy research culture in the field of hospitality and tourism; (3) providing a forum for networking among and between graduate students and faculty members in hospitality and tourism; and (4) serving as a career mart for graduate students who are completing their terminal degrees. Over the years, the Conference has developed into an important research and networking forum for graduate students and faculty in hospitality and tourism. The Annual Graduate Conference is administered by a Standing Committee chaired by myself as the Founding Chairman. Members of the Standing Committee consist of representatives from all sponsoring institutions who are responsible for soliciting and selecting the destination of the Conference each year. WELCOME MESSAGE FROM THE PLANNING & PAPER CHAIRS A sincere virtual welcome to the 27th Annual Graduate Education and Graduate Student Research Conference in Hospitality and Tourism! For a second consecutive year, we are meeting virtually to continue the tradition of this important annual conference hosted again this year by the University of Houston Conrad N. Hilton College of Hotel and Restaurant Management and The Hong Kong Polytechnic University. In addition to the always important and insightful student research presentations, keynote and general sessions, this year’s event includes two new pre-conference components: the “Networking Session” for graduate students and the “Meet with the Editors” session for all attendees. Also new this year during the first full day of the conference is a “Game Session” for all attendees to enjoy. With the vision of our Founding Chair, Professor Kaye Chon, this conference has been tremendously successful in sharing knowledge among graduate/undergraduate honor students and faculty from throughout the world. Many of the former student attendees who have participated in this rigorous – and friendly spirited – event return as our colleagues and have come full circle to bring their own graduate students to this experience. It’s rewarding to see! Before things get started, we would like to take this opportunity to thank all of our academic and corporate sponsors who have contributed greatly in myriad ways to make this conference possible. OUR KEYNOTE SPEAKER

Steve Rushmore Hospitality Consulting Services, LLC Steve Rushmore, MAI, CHA is the Founder of HVS – a global hotel consulting organization with more than 50 offices around the world. He has provided consultation services for more than 15,000 hotels during his 50–year career and specializes in complex issues involving hotel feasibility, valuation and financing. He was one of the creators of the Microtel concept and was instrumental in its IPO. Steve is a partner in HEI Hospitality, LLC, a hotel investment fund. As a leading authority and prolific author on the topic of hotel feasibility studies and appraisals, Steve has written all five textbooks and two seminars for the Appraisal Institute covering this subject. He has also authored three reference books on hotel investing and has published more than 300 articles. Steve developed Hotel Market Analysis & Valuation Software which is used by HVS and thousands of hotel consultants, owners and lenders throughout the world. Steve lectures extensively on hotel trends and has taught hundreds of classes and seminars to more than 20,000 industry professionals. He is also a frequent lecturer at major hotel schools and universities around the world including Cornell, Glion, Hong Kong Polytechnic, EHL, Florida International University, IMHI, Michigan State, Penn State, Houston, NYU and the Harvard Business School. Steve is currently a trustee at the Culinary Institute of America, Chairman of the International Advisory Board at Hong Kong Polytechnic University and Member of the International Advisory Board at Ecole hôtelière de Lausanne. During his 50–year career Steve has been on the Boards and provided guidance for many hotel schools, including Cornell, Michigan State, Penn State, NYU, University of Houston, Florida International University, and Johnson and Wales. Recently, Steve has started an online platform to train hotel school students and industry professionals. His first course, “How to Perform a Hotel Market Analysis, Make Financial Projections and Value a Hotel Using Hotel Market Analysis and Valuation Software,” contains over 75 lessons and takes students step–by–step through the process of performing a hotel market study and valuation. Graduates of Steve’s course receive the prestigious Certified Hotel Valuation Software Consultant (CHVSC) certification acknowledging their expertise in the use of these powerful software models. Steve has a BS degree from the Cornell Hotel School, an MBA from the University of Buffalo and attended the OPM program at the Harvard Business School. He holds MAI and FRICS appraisal designations and is a CHA (certified hotel administrator). Previously, he was a member of the Counselors of Real Estate (CRE) and the International Society of Hospitality Consultants (ISHC). He is a member of numerous hotel industry boards and committees, including the Industry Real Estate Financing Advisory Council (IREFAC). In his free time Steve enjoys tennis, skiing, hiking, diving, sailing, and cooking with his wife (who is a trained Chef). He holds a commercial pilot’s license with instrument, multi–engine, and seaplane ratings.
