f you've ever been to one of those all-you-can-eat

steak houses, then I'm sure you're very familiar with those giant vats of dessert they put out on the dessert bar - usually some sort of chocolate and whipped cream cake, a pan of strawberry shortcake with yellow sponge cake, whipped cream and strawberries, and of course, banana cream pudding. I think all kids love being served a great big dollop of creamy pudding with whipped cream, bananas and those little wafer cookies. For that matter, adults love it, too. Caramelized bananas and apples were one of the few desserts available in restaurants in China - they came to the table piping hot and super sticky, so you had to eat them fast before the caramel hardened. One of the other desserts we sometimes ordered was just a simple fried bread, dipped in nothing more than sweetened condensed milk. Delicious. Melt the butter in a non-stick skillet over medium heat. Place the bananas in the butter in a single layer and sprinkle with the brown sugar. Cook bananas for 4 minutes on each side. Add the bourbon to the skillet and cook for about a minute to cook off the alcohol, swirling the pan around.

Meanwhile, combine the ricotta, honey, cream and nutmeg in a bowl until smooth and creamy and set aside. Set out two martini glasses or individual glass trifle dishes. Spoon half of the ricotta mixture into the bottom of each glass. Top with half of the crushed cookies. Add half of the bananas. Add another layer with the rest of the ricotta mixture, the crushed cookies and the bananas. Drizzle with any remaining caramelized bourbon liquid in the skillet, or with a teaspoon of honey. Sprinkle the crystallized ginger on top.

Ingredients 2 tablespoons unsalted butter 2 ripe bananas, peeled and sliced into 1-inch thick slices 2 tablespoons brown sugar 2 tablespoons good-quality Bourbon 1/2 cup part-skim ricotta (homemade or store-bought) 2 tablespoons honey 1 tablespoon light cream or fatfree half 'n' half 1/8 teaspoon ground nutmeg 1/4 cup crumbled cookies (wafer cookies, graham crackers, lady fingers, etc) pinch of crystallized ginger



Baileys Cheesecake Dark Chocolate Bites Recipe Directions Line muffin tray with liners. Grate the chocolate into small shavings, and place 1/4 of the shavings into the top of a double boiler. Over very low heat, begin to melt your chocolate, stirring slowly and frequently. Tip: Never melt chocolate over high heat, as you run the risk of ruining the consistency. Low heat is always best for chocolate melting. Also, be very careful not to get any water into your melting chocolate, as this will ruin it. As the chocolate melts, add the remaining chocolate bit by bit, continuing to stir until all the chocolate is melted. This may take about 20 minutes. Once the chocolate has melted, you can keep the double boiler on the stovetop where it is warm, but turn off the heat. Stir every once in awhile, and if the chocolate begins to harden, simply turn on the heat to very low again. Spoon 1 Tablespoon of chocolate into the bottom of the muffin liners. (It is easiest to work about 3 liners at a time, so that the chocolate does not harden). Use your pastry brush or paintbrush to gently paint the chocolate half way up the muffin liners. If the chocolate is too thin (meaning you can see through it and into the liner), just add a bit more chocolate. Repeat for all 12 liners, and then place in the freezer for 5-10 minutes. In the meanwhile prepare the filling: In a cold glass bowl, whip the heavy cream and vanilla until soft peaks form. In a separate bowl, cream together cream cheese and Baileys. Fold in whip cream and cream together until smooth. Remove chocolate cups from freezer. Sprinkle each chocolate cup with 1/2 teaspoon of chocolate covered coffee beans. Spoon 1 heaping teaspoon of cream cheese mixture into chocolate cups and use the back of spoon to press down and make even. Top with 1 Tablespoon of melted chocolate, tapping on counter to smooth out and using the back of a spoon to smooth the rest of the chocolate so there are no gaps. Garnish with chopped chocolate covered coffee bean pieces while the chocolate is still soft and transfer entire muffin tray to freezer for 5-10 minutes to harden. Remove and enjoy. Store in airtight container in fridge or freezer.

Ingredients Makes 12 large muffin cups 20 ounces dark chocolate, grated Filling: 1/2 cup chocolate covered coffee beans, chopped medium 1/2 cup heavy cream whipped 1 teaspoon vanilla 2 Tablespoons Baileys Liqueur 1/2 cup cream cheese, softened Tools: 12 hole muffin tray, 12 muffin liners, 1 silicon pastry brush (or a natural dye free paint brush)



Individual Tiramisu Parfaits Recipe

Ingredients 2 cups mascarpone cheese 3 1/2 tablespoons Bailey’s Irish Cream, divided 1/3 cup granulated sugar 1 1/2 cups heavy whipping cream 24 soft ladyfingers 1 1/4 cups espresso, cooled 1 Tablespoon vanilla 1/4 cup bittersweet chocolate, shaved Directions Have ready 6 dessert dishes. Combine mascarpone, 2 tablespoons of the Bailey’s Irish Cream, and sugar. Whisk together gently until combined. In mixer bowl with whisk attachment, beat the heavy whipping cream on medium high until stiff peaks form. Fold the whipped cream into the mascarpone mixture. Stir the vanilla and the remaining 1 1/2 tablespoons of Baileys into the cooled espresso coffee. ladyfingers into cubes. Place 6 cubes into the bottom of the dessert dish. Drizzle 2 tablespoons of espresso over the cubes. Repeat for the other 5 dishes. · Add 1/4 cup layer of mascarpone cheese mixture to each dish, Gently press down and spread to an even layer. · Repeat the process, cubed ladyfingers, espresso, mascarpone cheese, then shaved chocolate. · Cover the top of each one with plastic wrap and place in the refrigerator to chill until ready to serve.



Simple Puff Pastries With Fresh Fruit Recipe

Directions Preheat the oven to 400 degrees F. Prepare a baking sheet by lining it with parchment paper. Beat the egg and water in a small bowl with a fork; Set aside. Unfold 1 pastry sheet on a lightly floured surface. Cut the pastry sheet into 9 (3-inch) squares. Repeat with the remaining pastry sheet. Place half of the pastry suares onto a parchment lined baking sheet. Top each with a spoonful of jam of your choice. Brush the edges of the pastry circles with the egg wash. Place the remaining pastry squares over the filling. Press the edges firmly to seal. Using a sharp knife or a pair of kitchen shears, cut two small slits in the top of each filled pastry. Bake for 15 minutes or until the pastries are golden brown on the top and the bottoms. Let the pastries cool before eating. Serve with fresh fruit and maple syrup or honey

Free Durban Land, Sea & Air Festival will bring adrenalin accelerating action to Durban’s Beachfront Hang on to your seats – the first Durban Land, Sea and Air Festival coming to the Durban beachfront from the 20th till the 23rd of March promises some adrenaline accelerating, non-stop land, sea and air action for all. And it’s free to the public! The festival’s main attraction is the never-before-seen-in-South-Africa Sky Grand Prix of Aerobatics where the best South African and international pilots will perform heady aerial moves and races over the ocean to see who are the finest and fastest pilots. The planes will race, twist, turn and be pushed to the extreme as they blitz through multi-storey pylons placed on the beachfront piers to complete a flawless aerobatic routine. A ranking system using the National Championships score and a regional contest was conducted to choose the South African participants. So far the top six confirmed South African pilots are Nigel Hopkins, Patrick Davidson, Mark Hensman, Barrie Eales, Bertus Du Preez and Johnnie Smith. The last four positions will be filled after the final contest in Parys on the 2nd March. Festival-goers will also be treated to a variety of displays by the SA Navy and enforcement services as well as other water sport competitions. These include the navy brass band and a submarine demonstration. Live music, air-themed movies and other land activities will keep the crowds going well into the night. The free, three-day festival is proudly brought to the city by eThekwini Municipality and the KwaZulu-Natal government. “Due to the beachfront’s easy access and the fact that the festival is free, this event will provide the opportunity for all members of the community to experience the thrills and exciting action that makes it unique. The Royal Hotel Durban has stood at the centre of Durban and its history for more than 150 years. It has grown with the City and stands proud of its tradition of exceptional service and hospitality. On 12 December 1845 Durban’s first hotel announced itself open to the public. The story of McDonald’s Commercial Hotel, subsequently renamed the Masonic and finally the Royal, begins during the late 1830’s with the arrival at Port Natal of a Scottish sea captain, Hugh McDonald. Hugh McDonald was in Port Natal during the 1842 siege of Captain Smith’s British garrison by Boer soldiers led by Commandant Andries Pretorius. Despite the precarious situation of the small settlement at the Port, Hugh must have had faith in its future, for in November 1842, he persuaded another brother, Charles, to settle there. It was Charles McDonald who in January 1843, bought the Market Square property on which part of the Royal Hotel today stands, for the sum of £40. He erected a wattleand-daub thatch-roofed trading store and began selling such essential items as sugar, tea, tobacco, wine and brandy, conveniently supplied by the Pilot. It is possible that he also offered rudimentary accommodation to travellers. Residents of D’Urban (as the settlement at the Port had earlier been named) eagerly awaited the arrival of the ships and Hugh McDonald became well acquainted with many of the locals during his stays in the port. Charles McDonald moved to Pietermaritzburg at some time during 1845 and his brother Hugh was at sea on the Pilot when on 12 December 1845 an advertisement appeared in Natal’s first newspaper, de Natalier and True Pietermaritzburg Recorder, announcing the opening of the Commercial Hotel in Durban.

It may be assumed that Charles McDonald had leased the property to John Edwards, the first proprietor of the hotel. Little is known about Edwards, whose proprietorship of the Commercial lasted only a few months and in February 1846 Hugh McDonald gave up his life at sea to take over the hotel. He bought the property from his brother Charles, together with is adjoining plot, paying £40 for each. Between January 1849 and June 1952, almost 5000 British immigrants arrived in Natal. Hugh McDonald was not slow to take advantage of the influx of people requiring temporary accommodation. He consolidated his property by selling off two portions of his brother Charles’s original property and erected a new double-storeyed building on his undeveloped property adjacent to the original Commercial. Hugh McDonald died in June 1853 at the comparatively young age of 56. His death did not result in the closure or sale of McDonalds, for it was managed until 1857 by his capable widow, Ann. Besides being a busy mother of four young daughters, Ann McDonald continued to provide the ‘sumptuous’ public dinners to which Durbanites had become accustomed, as well as to accommodate government officials and many other visitors at the hotel.

Madikwe Game Reserve

Madikwe Game Reserve, one of South Africa’s foremost Big 5 malaria-free reserves, was envisaged not by conservationists, but by economists. They found conservation would create more income and jobs than the existing land-use, which was cattlefarming. This successful reserve is now a model that has inspired South African conservation. Madikwe Game Reserve, right up against the Botswana border in the North West province, is a strange anomaly in the world of conservation. It was transformed from a number of low-yield cattle farms to a high yield conservation area. This was not land chosen by ecologists for its rare vegetation or animals. It was chosen by economists because they found a game reserve here would generate more jobs and money than any other land use option, and is now a model of what the benefits of conservation can be. Another remarkable factor is that this was pioneered in 1991, within one of South Africa’s apartheid-era Bantustans – Bophuthatswana – which was reintegrated into the country in 1994. Bop Parks, as it was then called, created an initiative where the state would manage the land and wildlife, the private sector would profit through game lodges, and the surrounding community would benefit through sustainable jobs and income. On paper it seemed idealistic. Yet in practice it worked. Bop Parks launched Operation Phoenix in 1991. By 1997, it had brought in more than 8 000 individual animals, the largest translocation of its kind in the world. Several private companies set up very successful bush lodges within the 75 000 hectare park. And the 3 villages around Madikwe – Supingstad, Lekgophung and Molatedi – are doing very well. The super-regional 76,000sqm Cradlestone Mall is set to open its doors in Mogale City on 20 November 2013, with more than 200 stores offering unparalleled choice to shoppers, both local and from further afield. Developed by Sasol Pension Fund, Pivotal Property Fund and Retail Africa, the mall is located at the intersection of the N14/R28 highways and busy Hendrik Potgieter Road, west of Johannesburg. Signed-up anchor tenants include Woolworths, Pick n Pay, Checkers, Game, Dion Wired and the Edcon Group. “Major retailers were quick to seize the opportunity,” says Andries Schaap, General Manager Investment from Sasol Pension Fund. “The mall is positioned to attract middle- to high-income shoppers from neighbouring Krugersdorp, Roodepoort and Randpark Ridge – but also from North-West Province and even cross-border shoppers from Botswana.” In addition to national retailers, Cradlestone Mall offers specialty retailers like MBW Art West Rand and Apadana Rugs; and a diverse restaurant and fast food component, including Menchies, The Raj Express and Doppio Zero. A Food Lover’s Market and Dischem are scheduled to open in early 2014. Access and parking have been priorities for the developers, with a focus on ‘pop-in’ shopping for food and services, as well as longer shopping trips. “With easy commute times from the north and north-west suburbs, Cradlestone Mall has been designed to offer a range of shopping options for our consumers,” he adds.
