My Journey as a Chef My earliest food memory is probably of an orangy orange ice cream as a young child in England. When did I first cook it was probably eggs and burgers for myself after school. No interest really at a young age I wandered almost accidently into this industry. As a 17 year old in this country I entered into basic training in the South African Navy. Food was at the fore front of most of our minds not for taste but for fuel, and believe me this was some rough fuel. Towards the end of basic training I was given the advice that would change my life. I was advised to do the chefs course “you are a growing lad and need the food and everyone will be your friend� words that changed my career path.

So I embarked on a six week course of basic principles of cookery which stood me in good stead for the rest of my national service. After this I returned home to England for a period of 6 years, having only been trained in cooking I continued an apprenticeship through various jobs each time trying to move up a level with regards to standards. Upon my return to South Africa I started a seasonal job under Garth Stroebel.. I love my job and food and pleasing people with food. It is a totally different lifestyle compared to what I call normal folk. You get to shop when there is less queues, most of your friends are from this industry and some of them become very strong bonds. Trying to get together with normal folk on weekends can end often with last minute cancellations because something has come up at work, but I wouldn’t change it for the world. The adrenalin rush of a busy service, the job satisfaction from an ecstatic customer make it all worthwhile.

200g fresh mussels 1 onion 3 cloves of garlic 1 cup of white wine 2 punnets cherry tomatoes 100g shemeji mushrooms 300g baby calamari tubes A sprig of fresh basil Olive oil Seasoning

Method Roast the tomatoes in a little olive oil in the oven, cool & chop. Finely chop the onion& mince the garlic In a hot pan sauté the onion in olive oil, add the garlic & mussels & toss. Add the white wine & tomatoes and cook. As the mussels open add the calamari & basil toss a few times until calamari is cooked & serve.

More top retailers to open in La Lucia Mall, KZN

Leading retailers Cape Union Mart, Old Khaki, Mr Price Sport and Havaiana’s will all open stores at KZN’s iconic La Lucia Mall before the end of the year. The shopping centre’s popular Dis-Chem is also expanding and La Lucia Mall recently introduced a Sorbet salon. La Lucia Mall announced it has agreed leases valued at R125 million over the past six months, meeting the retail needs of the growing prosperous consumer market in the Durban North communities and tourists alike.
