TASTE RADOL’CA Taste Radol’ca is a union that connect restaurateurs in Radovljica and its surroundings. The recognisable brand, which is based on cooperation and collaboration in the local environment, unites restaurants that meet quality standards. Taste Radol’ca began in 2013, thus making it one of Slovenia’s longest-running destination culinary unions, whilst also being one of the most innovative, successful and authentic unions on the culinary scene. The restaurateurs don’t only collaborate on paper, rather they meet up, work together to meet challenges, and believe in each other. They place great importance on local and traceable ingredients, which they use regularly in their culinary creations. They respect farmers and other suppliers of local ingredients, as it is thanks to their dedicated work that chefs can cook and serve food to the best of their abilities. This is why farmers and suppliers are also part of the Taste Radol’ca union.


Taste Radol’ca:

Authentic and ‘clean’ cuisine Taste Radol’ca is a distinct culinary union. The excellent collaboration between partners is the number one reason for the success of the over a decade-long local collaboration. Four of Radol’ca’s chefs reveal how and why they achieve this. The collaboration between restaurants is most visible during the month of November, when set menus are available at a fixed price. However, Taste Radol’ca collaborates throughout the year. Special business as well as friendly ties have been made in the decade-long union under the joint brand name. We talked about this, and more, with Uroš Štefelin from Hiša Linhart (one Michelin Star), Aleš Tavčar from Gostišče Draga, Aleš Potočnik from Restavracija Šobec and Davor Krajnc, who, together with Simon Koštomaj run Baffi House of Pizza.

What is the essence of Taste Radol’ca? Uroš Štefelin: “Collaboration. All participating restaurants work with local farms, while we mainly work with those that are also ecological. Ingredients produced on their farm pair perfectly with our dishes, and, ultimately, we chefs also collaborate. We all strive to ensure

that Radovljica is a place of authentic and ‘clean’ cuisine. There’s no room for bluffing here.” Aleš Tavčar: “We work with local producers by telling them what we need in our kitchen. In our restaurant, we have a great advantage when it comes to fresh produce, because we grow the majority of our vegetables at home, i.e. at the Likozar Farm, which is run by my wife’s family.” 3


Uroš Štefelin from Hiša Linhart places local and organic ingredients at the top of the list of priorities. Thanks to the sustainable operation of the restaurant, in 2022 and 2023, in addition to a Michelin Star, it was awarded a Michelin Green Star for its commitment to sustainable practices.

Aleš Potočnik: “Our restaurant only recently joined Taste Radol’ca, but its is precisely in this area – cooperation and collaboration – where we see huge advantages as well as an exceptional opportunity to improve.”

Davor Krajnc: “Absolutely, we’re already waiting for you (friendly smile)! Our collaboration with chefs in the area began completely spontaneously in 2022, when Uroš Stefelin created the first specialka pizza. Then, in cooperation with Gostišče Tulipan, we made a pizza with garlic pesto, while Restavracija Tabor, which is known for its fish dishes, brought us its characteristic flavours which led to the creation of an excellent, new combination. As specialke pizzas reflect the seasons and local flavours, each one is only available for a limited time.”

Davor Krajnc: “I must admit that at the start I had a few doubts as to how we could be included in the local stories, after all we are a pizzeria, therefore we don’t serve traditional Slovenian food. But since it’s important to us to include locally produced Slovenian ingredients in our recipes, we are delighted to be part of Taste Radol’ca.”

Collaboration with other Taste Radol’ca chefs has also led to the creation of special, seasonal specialke pizzas, each of which is only on the menu for a month. Aleš Tavčar: “It’s true. It will soon be time for me to make a specialka pizza too!” 4

What tastes and flavours do the other three chefs offers in their restaurants? Uroš Štefelin: “In our restaurant, we preserve dishes and local ingredients for the future.” Aleš Tavčar: “My inspiration comes from traditional dishes, which I cook in my own way. They include fish from local fish farms, game, and Slovenian beef. We also offer vegetable-

Then the assessors, who every three years check the quality of the food at Taste Radol’ca restaurants, made us take a close look at ourselves and forced us to think about the future. We have learnt a lot during this time, therefore I hope that the future will continue to bring us a lot of new knowledge and connections.”

Aleš Potočnik: “Our restaurant is part of the Šobec Camp, therefore we tailor our menu to our guests, however, when choosing the ingredients, of course we also include local suppliers. In summer, when the camp is full, we have a lot more guests who come from all over the world, so at that time the menu is really varied. Then, at the end of October, we change our menu and somewhat adapt it to local guests. At that time there is also more room and inspiration for culinary creativity. Our location is very popular for walks and family outings, therefore our menu includes delicious family lunches and a wide range of desserts that are inspired by the local environment.”

What do you think the future holds for Taste Radol’ca? Aleš Tavčar: “If we hadn’t joined Taste Radol’ca some years ago, our restaurant would no longer

As a newcomer in this story, what I like above all is that I can call any of the participating chefs at any time and I know they will help me. Authentic tastes Honey Radovljica is known as the capital of Slovenian beekeeping. For more than 60 years it has been home to the Museum of Apiculture, which acquaints visitors with the exceptional world of bees and bee products, while neighbouring Lesce is home to the Beekeeping Education Centre of Gorenjska. There are numerous beekeepers in the countryside surrounding Radovljica, among them is Erik Luznar, who is one of just a few breeders of Carniolan queen bees.

Sunday lunch Sunday lunch has a special meaning in Slovenia. Not only due to the especially lovingly prepared and traditional food but also because of the family ties that are still formed and strengthened over this almost ritual weekly meeting of generations. Discover where you can go to enjoy traditional Sunday lunches.

Beans In the past, beans held a special place in the Radol’ca area and still do to this day. In the former ironworking villages of Kropa and Kamna Gorica, in addition to žganci (a polenta-like dish, most often made of buckwheat), one of the most traditional dishes is a bean soup called fržolovc. The Lesce-based Semenjalnica, which is an organic seed storage and exchange project, helps ensure that organic seeds of old Slovenian varieties of beans continue to grow.

Local cuisine along the way Food at Where to mountain huts for breakfast Radovljica is a popular hiking destination. Macadam roads lead to numerous mountain pastures that attract cyclists. When arriving on foot or by bike into the embrace of forests and views, in addition to friendly staff, good local food awaits. In addition to typical mountain food, such as žganci (a polenta-like dish, most often made of buckwheat), jota (cabbage and potato stew, served with or without Carniolan sausage) and ričet (barley and vegetable stew, served with or without Carniolan sausage), there are also farmers’ meat feasts and smoked ribs. Štruklji (a light, boiled dough with various fillings) are particularly popular and are available almost everywhere. In addition to classic curd cheese štruklji, in some places other types of štruklji are also available. 12

A quality breakfast is the best way to start the day. If breakfast isn’t available where you are staying, you can go to a nearby restaurant or pick up ingredients for a local breakfast in local farmshops. Click the link to see where breakfast is available in Radovljica and the surroundings.

The boutique Vegerila Farm A chat with a local produce supplier Excellent cuisine isn’t only dependent on excellent chefs; quality ingredients are key. Taste Radol’ca emphasises the importance of local and traceable ingredients. The Vegerila Farm is one of the suppliers to Taste Radol’ca restaurants.

The vegetables from my garden go to those who appreciate local and seasonal produce. That means Radovljica’s chefs as well as locals, who respect the method of farming closely connected to nature. explains Tilen Praprotnik, manager of the Vegerila Ecological Farm. We paid a visit to the central part of his cultivated land in the surroundings of the village of Hraše.

It would be hard to say that it’s a real farm, since we most often associate them with farm buildings and machinery. In the garden, which covers a third of an acre, there are none of these. However, the whole area is full of wonderful vegetables – beetroot here, leeks there, alongside garden beds with lettuce and tomatoes ripening in the greenhouse. Hens, meanwhile, take care of the accompanying soundtrack. The hens, together with a goose and a cockerel, grade daily in the immediate vicinity of the colourful garden. Not far away, 13


thirty indigenous Jezersko-Solčava sheep breed graze. They are there to maintain balance on the meadow. The animals have a wonderful view of the mighty peaks of the Karavanke mountains, while the skyline to the opposite side of the horizon is completed by the Julian Alps and the Jelovica plateau. Tilen also has a larger flock of sheep in other locations. Vegetables grow in the garden that is tended to by Tilen Praprotnik. What was initially amateur gardening eventually grew in farming. He swears by regenerative farming, explaining:

I see the farm as my own ecosystem in which balance must be maintained. The balance on the farm, where work is done without any modern provisions or mechanisation, helps Tilen to protect and care for all the aforementioned animals. In the past few years, the Vegerila Farm has been working closing with Radovljica’s chefs, which significantly facilitates Tilen Praprotnik’s gardening season:

In winter, we agree what the chefs need to create their dishes, then we meet their needs by tailoring what we produce on the farm. That way I can more easily and more more quickly plan what to plant in my garden the following season. In addition, when the vegetable season is at its peak in summer, on a weekly basis I discuss with Radovlijca’s restaurateurs what else I can offer them that is fresh and seasonal at that moment.


In 2023, in cooperation with the Radovljica Tourist Board, a unique tourist product was launched named The Farmer’s Table, which takes place on Tilen’s farm. Approximately onefifth of the vegetables grown at the Vegerila Farm find their way to Radovljica’s restaurants, while the rest are bought by locals who appreciate this method of farming. If you are in Lesce from early spring to late autumn, you can find some of the sixty types of vegetables grown in Tilen Praprotnik’s garden in the Dobra misel organic store (Železniška ulica 5). And to end: there is another interesting local story closed related to the Vegerila Farm, which puts beans in the foreground. Tilen grows three different varietes of this legume every year in his fields. The seeds from these beans then go, via the Semenjalnica seed storage facility, to nurseries far and wide. In addition to traditional varieties of Slovenian beans, the Semenjalnica also has peas that are also grown according to the principles of organic farming.

Tips for buying local

Buy local Produce and products from local farms can be bought in small farm shops in Radovljica and Lesce, as well as at weekly and monthly markets. Every week a farmers market takes place in front of the Agricultural Cooperative in Lesce, and every first Saturday in the month and a farmers and craft market takes place in Linhart Square in Radovljica.

Radol’ca’s food and bike tour Radovljica’s surroundings offer numerous options for circular bike trips on local and macadam roads, as well as field and forest trails. Nine circular bike are available on our website, among which the 30-kilometre-long Radol’ca Food and Bike Tour will specially appeal to lovers of local food. Radovljica is also included in the Green Gourmet Route long-distance bike route.

Small handicraft shops Small handicraft shops, where you can occasionally watch artisans at work, occupy a special place in Linhart Square. These shops are: Krona, which sells hand-stitched bags, Leseno, which offers a range of wooden products, the Lectar workshop, which is part of Gostilna Lectar, and the really special Biserna hiša, where attendees of the Radovljica Centre for Training, Work and Care create beautiful ceramicware.


MADE IN RADOL’CA Radol’ca has long been a source of inspiration for originality in the designing of practical as well as ornamental pieces. The village of Ljubno was once one of the biggest of Gorenjska’s pottery centres. Although the pottery trade wasn't preserved in Ljubno, various items made of clay are available in the Radol’ca area. On the opposite side of the Sava river – in Kropa and Kamna Gorica – the ironworking industry was alive for centuries and is continued to this day, albeit in the form of contemporary wrought iron decorative pieces made in a local workshop. In addition to iron and clay, Radol’ca’s artisans produce items made of wood, cloth, glass and other materials. The Made in Radol’ca brand unites artisans and artists who work in Radovljica and its surroundings. You can meet some of them at fairs in Radovljica Manor or even visit them in their workshops. Selected items are available at the Radovljica Tourist Information Centre, and items can also be made to order.


Culinary gifts from Radol’ca It can be hard to decide which among all the local goodies and products to take home with you from Radol’ca. A wide range is available at the Radovljica Tourist Information Centre and in small shops in the old town centre. Below we have focused on food-related products.

Honey and other bee-related products Radovljica has a long tradition of beekeeping and is also home to the Museum of Apiculture, while the Beekeeping Education Centre of Gorenjska is in neighbouring Lesce. Hence it’s not hard to guess what is at the top of our list of what to buy: a jar or two of honey from a local beekeeper! The biggest choice of honey and honey products can undoubtedly 22

be found at the shop at the aforementioned centre in Lesce, while various types of honey, honeybreads and honey liqueur are available at the Radovljica Tourist Information Centre. Contact one of Radovljica's beekeepers if you would like to buy pollen or propolis, or buy delicious honeybreads made from Slovenian honey at local farmshops.


Chocolate and pralines with local fillings The Radol’ca area is also closely connected to chocolate; it was here that over a century ago a chocolate factory opened in Slovenia, which, under the name Gorenjska, is still operating to this day. In recent times, boutique chocolatiers have appeared. In Radovljica, the Radolška cokolada chocolatier is located at the entrance to the old town centre, while Kropa is home to the Hiša čokolade Molinet chocolatier. Of course, the most chocolate is available every year in April when the Radovljica Chocolate Festival takes place.

Unique ceramicware Radovljica is also a town of artisans. Many of them make splendid items, which you will enjoy using at home. If you’d like a unique mug, plate or bowl, you can visit the Biserna hiša Gallery, where ceramics are made by attendees of the Radovljica Centre for Training, Work and Care. Vanja Bajt is another local potter with a workshop in Radovljica. Her colourful plates and bowls are on sale at the Radovljica Tourist Information Centre. And there’s one more authentic ceramicware story being written in one of the nearby villages

by Matejka Legat and Marko Milenkovič, under the name 6th Sense Art. Their stall at the Radol’ca Market is a real feast for the senses.

Wooden and metal products Cookery enthusiasts can purchase unique wooden products in Radovljica, such as special ‘spoons’ for honey or lovingly made chopping boards, under the brand Srečen dom (A Happy Home), which are made by the local artisan Teja Jesenko. The Kosmač family shop, which is located in the old town centre of Radovljica and via the website Leseno.org, sells handmade wooden items. To ensure your dining table is really special, you could adorn it with a wrought iron candle holder from Kropa, with a beeswax candle, of course, which you can also buy in Radol’ca. If you are in Radovljica on the first Saturday in the month, you can find local products at the Radol’ca Market, which takes place from 10am to 12noon in the old town centre.

EXPERIENCES IN RADOL’CA Radovljica is a town of real culinary experiences and a place where exceptional culinary events take place. You can also go on a guided gastronomic experience, some of which can be enjoyed individually on a date of your choosing, while others take place a couple of times a year, or upon prior arrangement, for groups of various sizes. Food is a part of music and other outdoor entertainment events in Radol’ca, hence it’s no surprise that the town's biggest festival is devoted to food – the Radovljica Chocolate Festival. For over 10 years the festival, held every April, has been attracting visitors from near and far. Local gastronomy is part of the summer events in Linhart Square, the heart of the medieval old town centre, in autumn you can visit farms, and the Month of Local Cuisine takes place in November, when Taste Radol’ca restaurants offer special menus. Unique themed culinary experiences lead you into the world of chocolate, honey, honeybreads and fine food. They unite Radovljica’s attractions and masterchefs, while drawing from the wonderful nature that provides us with ingredients for culinary creativity at the highest level.


Events that stimulate the taste buds Radol’ca-style street food Radol’ca is a destination of numerous events that revolve around food or which are complemented by the addition of food. The list of events is published on our website. Among the highlights are summer Thursday evenings and December concerts in the square, at which Taste Radol’ca provide the food.

In July and December, Taste Radol’ca street food accompanies great concerts in picturesque Linhart Square. In the same way that the music is carefully chosen to match the charming space, every bite of food reflects the soul of individual restaurants. The restaurateurs agree in advance which of them will be at the culinary evenings each week, so visitors have a chance to try something different every time. Thus, the emphasis is on variety on the one hand, and collaboration on the other. This means there is always something different to 26

try, as the restaurateurs have a desire to offer street food that isn’t just burgers. Radovljica’s chefs carefully plan the food they will offer each time in the old town.

When we cook for guests at Tulipan, as well as when we prepare what we will offer guests at Thursday Evenings in the Square, we have just one thing in mind – local. This means including as many local ingredients as possible.

We view Thursday evenings as an excellent opportunity to showcase our cuisine elsewhere. Gašper Kordež, head chef at Restavracija Tabor, which is known far and wide for its seafood dishes, is of the same opinion. “When we set about planning the food we will offer at social events in the square, we mainly focus on how we can showcase our excellent fish dishes in an attractive and simple way.” At the 2023 Radovljica Chocolate Festival, Restavracija Tabor offered a variety of street food – from small bites with smoked salmon to sardines, and mussels served in an olive oil, wine, garlic and herb sauce.

Seafood is at the forefront in our restaurant, which goes excellently with local ingredients, such as vegetables from nearby fields, or polenta, which we make using cornmeal produced at a local farm. elucidates Mateja Markič, manageress of Restavracija Tabor, referring to the harmony of seafood and local tastes and flavours. The best accompaniment to dishes made using local ingredients is, of course, a local drink. They include homemade iced tea, craft beer and the finest quality Slovenian wines. At events in Radol’ca, drinks are served in reusable glass or plastic glasses, which is yet another step in the sustainability of such events.

For over 10 years, members of the Taste Radol’ca union have been offering special menus in November, featuring local ingredients. The set price menus are available throughout the month, and the restaurateurs also draw visitors’ attention to promoting their local suppliers.

We festive season begins in Radovljica with the switch on of the Christmas lights, a concert and street food from all participating Taste Radol’ca restaurants. This brings culinary autumn in Radovljica to a close, however, street food is also available during other concerts in December in Linhart Square.

Radol’ca Market once a month A farmers, craft and antique market takes place in front of St. Peter’s church in the old town centre every first Saturday in the month. The event takes places from 10am to 12noon; in the event of rain it is held inside Radovljica Manor.
