hink back to when you were a child. What were your three least favorite places to go on errands with your parents?

Here’s my list, in no particular order: 1. Laundromat.

2. Plant nursery.

3. Auto repair shop.

I had to search the depths of my memory a bit for No. 1 and No. 3, but plant nursery definitely stood out. We went A LOT. It was hot. I didn’t get it and I wanted to go home.

And growing up with that outlook, I didn’t exactly sprout a green thumb.

So it the irony Nicole wasn’t lost on Marshall me that — of Middleton my own free will — I went to Tulsa World the neighborhood Magazine plant nursery more Editor than any other place last year. It was a safe, outdoor activity — check.

It gave me a project to do when a I got home — check. I didn’t have to spend a ton — check.

And once I got home and put everything in the ground, it gave me something different to look at in our stay-at-home universe. Check.

Things change. People change, priorities change — especially during a pandemic.

And it wasn’t just landscaping. My husband and I dug into a host of home projects last year, many long overdue.

We had contractors who came to our house tell us they were working seven days a week. Many had to hire more staff. Some even seemed apologetic at the success their industry was having while so many other industries were struggling.

But I can attest, they filled a need, a very important one, in fact. Those projects gave me a focus with a positive outcome during a time when it was easy to lose sight and dwell on the negative.

And they made our home, our safe space, better.

For this edition, we talked with contractors about the effects of the pandemic on the industry and some of the ways people made changes at their own homes last year. As most homeowners know, one project just leads to the next one so home renovations are continuing to trend in 2021. Need some ideas for fun home projects? We’ve got them in this edition.

And it’s spring! For this edition, we spotlight the seasonal Native American tradition of collecting wild onions, share some healthy recipes, visited a historic Oklahoma dairy and took a stroll through a trending entertainment district with some of Tulsa’s oldest and newest restaurants and businesses.

We also have a college guide highlighting the best parts of area universities.

I’ll leave you with another thought.

Don’t want to do a big home project?

No problem. Think small.

One of the smallest projects my husband and I did last year paid off in the most satisfying way.

For more than 27 years I’ve worked in the middle of a big room at the Tulsa World with no windows nearby. Working from home offered an opportunity at window access. The view isn’t much, but I made it better.

I asked my husband to make window boxes. Inside those window boxes, I planted flowers that drew hummingbirds and butterflies. View improved.

And, I might add, while watching those sweet and beautiful creatures, my outlook on the world outside my window improved, too.

ake a stroll along 11th Street, from Peoria Avenue to Utica Avenue, and you’ll catch a glimpse of Tulsa’s past, present and future.

The present is immediately visible in the array of businesses operating along this stretch of Route 66. They range from art galleries and tattoo studios to restaurants, mini-museums, boutique retailers and dog trainers.

But the city’s past is equally visible — most obviously in the gigantic, neon-fueled sign that gives the Meadow Gold District its name. Built in the 1930s, this porcelain-and-metal advertisement had stood at the corner of 11th Street and Lewis Avenue until 2004, when it was dismantled and stored away as a collection of nonprofit organizations determined to preserve and promote Tulsa’s history and close connection to Route 66 raised the funds and find the place to provide this Tulsa icon with a new home.

It would take five years and fundraising efforts from the Tulsa Foundation for Architecture, a grant from the National Park Service and funds from the city’s Vision 2025 campaign to relocate the Meadow Gold sign atop a new plaza at 1324 E. 11th St. “It was just one of those icons — of Tulsa and of Route 66 — that a lot of people didn’t want to be lost to history,” said Ken Busby, president and CEO of the Route 66 Alliance.

But the past is also present in places such as Ike’s Chili, the city’s oldest restaurant, which has been in continuous operation since 1908. Once a downtown landmark, Ike’s set up shop at 1503 E. 11th St. in 2014, just up the road from El Rancho Grande, 1629 E. 11th St. This bastion of Tex-Mex in Tulsa hasn’t been around quite as long as Ike’s — it opened in 1953 — but it has managed to stay in one place throughout all the years of boom and bust that what is now the Meadow Gold District has seen.

One can even visit a bit of Tulsa’s past at one of the newest tenants of the district. Decopolis, 1401 E. 11th St., is a cabinet of curiosities that contains a space devoted to images of Tulsa’s Art Deco architecture; if you want to go back even farther in time, an over-sized and surprisingly life-like dinosaur occupies one of the main areas.

cowboy namesake gazing watchfully at the tourists who regularly crowd around his booted feet.

As for the future, that’s evident in a relatively recent influx of new businesses into the area, and the

revitalization of the neighborhood adjacent to it, that points to Meadow Gold District as one of Tulsa’s burgeoning destination locations, for locals as well as outof-towners.

Aaron Meek has been working at creating a new future for this part of Tulsa for more than a decade. It’s a place he knows well — he grew up in this neighborhood, where his family-owned Meek’s Furniture occupied a corner at 11th Street and Peoria Avenue until the mid-1980s.

“It was almost a self-contained neighborhood,” he said. “There were all kinds of shops at street level, and upstairs would be the people like your dentist. I remember there being a Kip’s Big Boy where you could get lunch and dinner.”

But the neighborhood that Meek remembers was already beginning to go downhill when he was a youngster, and by the late 1970s, it had transformed into one of

Tulsa’s most nefarious areas, a place through which everyday people wouldn’t think to drive, much less stroll the sidewalks, especially after dark.

Kimberly Norman had decided to go into real estate “as a lark” about 16 years ago, after she retired from a career in the health care field, and her first purchase was two buildings near 12th Street and Quincy Avenue that she bought sight unseen.

“And it turned out I bought what was basically a drug dealer’s drive-through,” Norman said. “I had signed the huge mortgage and realized I had to do something to try to fix this because I really couldn’t fail.”

Norman helped to establish the Forest Orchard neighborhood association, which encompasses the residential areas just south of 11th Street and which began slowly to transform the area from a place where most of the buildings were owned by investors to a true neighborhood, occupied by people who owned the places where they lived.

That, along with entrepreneurs such as Meek working to buy up abandoned buildings and working to bring in new businesses, has turned the Meadow Gold District from a red-light area to ... well, a golden one.

And that golden glow — literal and metaphorical — continues to attract people to the district.

Tulsa artist Michelle Firment Reid recently opened Atelier MFR, which serves as her personal studio, as well as a place for her to conduct classes and workshops.

“I wanted to have a storefront location, something with north light,” Reid said. “I considered 15th Street, but I really wanted to be on 11th Street because I saw all these things happening here. There is a real cool vibe to the neighborhood, and it’s a very

friendly place. There’s a good mix of the upscale and the funky.”

Reid opened her establishment in April 2020, at the beginning of the COVID-19 pandemic and when 11th Street was still undergoing construction.

“I figured if I can survive Tulsa road construction and a pandemic, I can face anything,” she said, laughing.

Anchoring the 11th Street and Peoria Avenue intersection is the new Meadow Gold Shops and Lofts, one of Meek’s projects.

The upper level of the building, which once housed the Corner Cafe, has been turned into luxury efficiency apartments.

The lower level is being shaped into a range of businesses, including the storefront of chefs Joel Bein’s and Amanda Simcoe’s The Meat and Cheese Show; a new location for Angry Axe, the Tulsa business that lets people entertain themselves by throwing axes at targets; and a new restaurant, the Wildflower Cafe, which is set to open in late March.

Owner Heather Linville said she was initially uncertain about the location, as “it’s such a busy corner, and this is my first shot at opening a place of my own.

But after meeting with Aaron (Meek and Group M Investments team), I knew this was the spot.

“I hope Wildflower Cafe brings a little more brightness into this already amazing and historic Meadow Gold District,” Linville said.

Busby said the idea that prompted the relocation of the Meadow Gold sign — that it could help jumpstart the revitalization of this area of town — has proven to be a worthy one.

“But the truth is,” Busby said, “the great things that are happening in this area isn’t because of the sign. The sign certainly helped because restoring it and placing it here was a way of saying this neighborhood is a place of value. And that was the catalyst for all the visionaries who are making the Meadow Gold District into a true Tulsa destination.”

e are only a few weeks away from the official beginning of vegetable gardening season. If you haven’t already, it’s time to make a plan.

The first thing you need to remember is that April 15 is more than just Tax Day. It is also the average last day for freezes in our neck of the woods. This means, on or about April 15, there will be a lot of vegetable plants going in the ground in Tulsa.

To that end, you can purchase plants or start your plants from seed. If you are going to start them from seed, you will need to get started pretty quickly because most seedlings need several weeks of growth before they are ready to go in the ground.

Here are some general tips for greater success in the garden:

GET A SOIL SAMPLE

It’s a good idea to get your soil sampled every three or four years. A soil sample will tell you the nutrient levels of nitrogen, phosphorus and potassium, as well as your soil pH. In addition, the soil sample results will tell you how much of each nutrient you need to add and how to adjust your soil pH, if necessary. Without good information like this, it is impossible to know how much and what

kind of fertilizer to add to your soil during the growing season. There are instructions for getting a soil test on the Tulsa Master Gardener website, tulsamastergardeners.org.

The test is only $10, which is considerably less than most fertilizers.

MANAGE NUTRITION

Once you get your soil sample, add nutrients at the recommended rate. When adding supplements to your soil, it is best to avoid a “more is better” strategy because too much can be just as detrimental as too little.

MULCH

Mulch is a relatively inexpensive way to help you improve your garden conditions.

Mulch helps retain moisture, minimizes the need for weeding, helps maintain a more constant soil temperature and helps minimize a variety of plant diseases. Many people use mulched leaves from their yard as garden mulch. But if you don’t have access to that, residents of the city of Tulsa can pick up unlimited free wood chips at the city’s mulch site, 2100 N. 145th East Ave. The site is open seven days a week, excluding city holidays. Be sure to bring a driver’s license or utility bill to verify you are a Tulsa resident.

WATER

Make it your habit to water your vegetable garden in the morning if at all possible.

When you water in the morning, the moisture on the leaves and plants has a chance to evaporate. When you water in the evening, your plants tend to stay wet all night, which makes them more vulnerable to fungal diseases. So just by watering in the morning, you are reducing your risk of plant disease.

Also, try to only water the roots. The leaves do not need to be watered. There are a variety of drip irrigation systems you can get, but personally, I like to hand water. I always find it kind of therapeutic standing out there in the garden, watching the pollinators and keeping an eye out for insects and disease on my plants.

PLANTING TIMES

Some plants do better at certain times of the year, while others do not. Many gardeners began their garden adventures by planting what they wanted, when they wanted. However, there are cool-season crops, warm summer-season crops and fall crops. There are even winter crops.

My neighbor, Priscilla Iba, shared a cookbook of her recipes with me. “Scilla’s Soups and Salads — And One Dessert” is loaded with delicious veggie-forward dishes. I have always been a fan of her carrot salads. “Carrot Salad #2” has a zesty dressing and serves as a great side dish for almost anything.

1 garlic clove 1 teaspoon kosher salt, plus more for seasoning 2 tablespoons olive oil 2 tablespoons lemon juice 1 tablespoon grated ginger ½ teaspoon cumin Freshly ground black pepper

5 large carrots, grated on the large holes of a box grater or in a food processor (Alternately, use a bag of grated carrots) ½ cup chopped cilantro ½ cup roasted almonds, chopped

1. Mince the garlic clove with 1 teaspoon kosher salt, mashing into a paste as you go.

Add to a medium-sized bowl and whisk in olive oil, lemon juice, ginger and cumin. Add a generous pinch of black pepper and whisk until combined.

2. Add carrots to the dressing, along with the cilantro and almonds. Sprinkle with additional salt and pepper to taste.

e all know the old adage “April showers bring May flowers,” but the saying really applies to the garden as well. Spring rains will help produce a rainbow of colorful vegetables over the next few months.

These dishes are inspired by the rainbow-hued offerings of fruits and vegetables and are sure to brighten up your table, as well as your diet.

ROASTED CURRY TOMATO PIE Serves 6 to 8

Turmeric gives the rustic crust of this tomato pie a glorious golden glow, but the real star (other than the ripe summer tomatoes) is the sweet and tangy tamarind onions, which complement the spiced, cheesy filling beautifully.

For the crust: 1½ cups all-purpose flour, plus more for work surface 1 teaspoon kosher salt ½ teaspoon ground turmeric ½ teaspoon black pepper ½ cup cold unsalted butter (1 stick), cubed 4-5 tablespoons ice water For tamarind onions:

Pink and red Pink and red foods contain powerful antioxidants like lycopene, flavonoids and anthocyanins, phytonutrients that can reduce the risk of certain cancers, reduce inflammation and decrease your risk of heart disease. Lycopene is a carotenoid — a family of pigments that gives fruits and vegetables their brilliant red, orange and yellow coloring. Lycopene is also a powerful antioxidant that eliminates dangerous free radicals that can damage DNA and other fragile cell structures.

Foods to eat: tomatoes, beets, red peppers, strawberries, raspberries, cherries, grapefruit, watermelon, cranberries, pomegranate

Orange Carotenoids like beta-carotene, found in orange-hued foods, can be converted into vitamin A in the body, which is good for eye, skin and bone health. Carotenoids may also reduce the risk of cancer and heart disease. Orange foods are also high in vitamin C. Foods to eat: carrots, pumpkins, butternut squash, sweet potatoes, orange peppers, apricots, mangoes, nectarines and peaches, turmeric

2 tablespoons canola oil ½ large red onion, thinly sliced into halfmoons (about 1¾ cups) ½ teaspoon kosher salt ½ teaspoon black pepper ½ teaspoon crushed red pepper 1 tablespoon tamarind concentrate (Alternatively, use either pomegranate molasses or a mixture of 1 tablespoon lime juice and 1 tablespoon brown sugar)

Filling: 2 pounds ripe, red medium-sized and cherry tomatoes ½ tablespoon Madras curry powder 1 teaspoon kosher salt, divided 8 ounces low-moisture mozzarella cheese, shredded (about 2 cups) 2 ounces sharp white cheddar cheese, shredded (about ½ cup) ½ medium red onion, finely chopped ½ cup mayonnaise 1 serrano or jalapeno chile, stemmed, seeded and finely chopped ¼-½ teaspoon crushed red pepper 1 tablespoon olive oil 1 large egg, lightly beaten

1. Make the pastry crust: Pulse flour, salt, turmeric and black pepper in a food processor until combined. Add butter, and pulse until mixture is crumbly and butter is cut into small bits, about 10 times. Slowly add 4 tablespoons of ice water while pulsing, adding up to 1 more tablespoon of ice water, 1 teaspoon at a time, until the dough comes together and forms a ball. Wrap in plastic wrap, and refrigerate until chilled, about 30 minutes.

2. Make the tamarind onions: Heat canola oil in a large skillet over medium-high until shimmering. Stir in onion, salt, black pepper and red pepper. Cook, stirring often, until onion is translucent, about 10 minutes. Stir in tamarind concentrate until combined. Remove from heat and set aside.

3. Make the filling: Preheat oven to 400 degrees. Line a large, rimmed baking sheet with two layers of paper towels. Cut medium-sized tomatoes into ½-inch-thick slices; cut cherry tomatoes in half. Place tomatoes on paper towels; sprinkle one side with curry powder and ½ teaspoon salt; flip and sprinkle the other side with remaining ½ teaspoon salt. Let stand 10 minutes.

4. Stir together cheeses, onion, mayonnaise, serrano and red pepper in a large bowl.

On a floured surface, roll pastry dough into a 12-inch circle or oval, trimming edges, if needed — transfer dough to a parchment paper-lined baking sheet. Spread cheese mixture over dough, leaving a 2½-inch border around the edge. (You may not need all of the cheese mixture.) Layer sliced tomatoes, curry side down, on cheese mixture; fill in with cherry tomatoes. Top with tamarind onions. Fold the exposed border of the dough circle toward the center, pleating as necessary. Drizzle tomatoes and onions with olive oil and brush the exposed crust with egg.

5. Bake in the preheated oven until filling is bubbling and crust is golden brown, 30 to 35 minutes. Let cool for 10 minutes before slicing.

YELLOW COCONUT CHICKEN CURRY WITH PINEAPPLE Serves 6 to 8

This hearty soup is chock full of bright vegetables — bell peppers, carrots and onion — as well as sweet and tart pineapple. Add more or less curry paste, depending on the depth of heat you desire.

2 tablespoons canola oil 1½ pounds chicken breasts, cut into 1-inch pieces 1 yellow bell pepper, cut into bite-size pieces 1 red or orange bell pepper, cut into bite-size pieces 1 yellow onion, cut into bitesize pieces 2 large carrots, peeled and sliced into ¼-inch coins 4 cloves garlic, minced 1-2 tablespoons yellow curry paste 2 teaspoons freshly grated ginger

1 tablespoon sugar 1½ teaspoons kosher salt 2 (14.5-ounce) cans unsweetened coconut milk 1 (20-ounce) can pineapple chunks, reserve juice ¼ cup pineapple juice, from the can of pineapple chunks 1¾ cups chicken broth (15-ounce can) ½ cup chopped cilantro 2 tablespoons lime juice Steamed rice, for serving Chopped salt-roasted peanuts or cashews, for serving

1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until cooked through, about 3 minutes. Transfer the chicken to a bowl or plate and set aside.

2. Heat the remaining tablespoon of oil in the skillet. Add in peppers, onion and carrots. Cook, stirring occasionally, until just tender, about 5 minutes. Stir in garlic and cook for about 30 seconds, until fragrant.

3. Add chicken back into the pan, along with curry paste, ginger, sugar and salt. Cook, stirring constantly, for 30 seconds.

Add the coconut milk, pineapple chunks, pineapple juice and chicken broth. Bring to a boil, reduce heat to a simmer, and cook for 10 minutes. Stir in the cilantro and lime juice and serve with steamed rice and a sprinkling of chopped peanuts.

RED WINE-MARINATED STEAK WITH CABBAGE SALAD Serves 4

Reducing the red wine concentrates its flavor and takes away its bite, making for a delicious, flavorful marinade. The salad is beautiful, inspired by the colors of purple cabbage, red onion and blueberries.

2 cups dry red wine 1 tablespoon fennel seeds 1 teaspoon crushed red pepper 3 thyme sprigs 1 (2-pound) flat-iron or flank steak, trimmed 2 teaspoons kosher salt 1¼ teaspoons freshly ground black pepper

½ head red cabbage, shredded 1 small red onion, thinly sliced 4 ounces goat cheese, crumbled 1 cup blueberries ¼ cup pumpkin seeds, toasted 4 tablespoons olive oil 2 tablespoons sherry or balsamic vinegar

1. Place red wine, fennel seeds, crushed red pepper and thyme sprigs in a small saucepan; bring to a boil over high heat. Reduce heat to a gentle simmer and cook, stirring occasionally, until reduced to ¾ cup, about 10 minutes.

Cool completely, about 10 minutes. Pour wine mixture through a fine wire-mesh strainer, discarding the solids.

Place steak in a large ziptop plastic bag and add wine mixture. Seal the bag and turn to coat steak with the marinade. Refrigerate, turning occasionally, 4 hours or overnight.

2. Combine cabbage in a bowl with onion, goat cheese, blueberries, pumpkin seeds, olive oil and vinegar. Mix well and season with ½ teaspoon salt and ¼ teaspoon pepper. Set aside while cooking steak.

3. Preheat grill or grill pan to high (450 degrees to 550 degrees).

4. Remove steak from marinade; discard marinade. Sprinkle steak with remaining 1½ teaspoons salt and 1 teaspoon black pepper. Place steak on oiled grill grates, and grill, uncovered, until the desired degree of doneness, 5 to 6 minutes per side. Let stand 5 minutes. Slice steak crosswise against the grain and serve with cabbage salad.

Spring onions are smaller and sweeter than regular white onions.

These pickled onions are delicious when tucked into your favorite sandwich. I also scatter these into tacos, over a big salad or into a steaming bowl of soup.

2 slices hearty sandwich bread Green goddess mayonnaise (recipe follows) ½ small, ripe avocado, sliced 2 thick slices fresh mozzarella cheese 1 medium-sized green zebra tomato (or other green heirloom tomato), sliced A few thin slices cucumber Pickled spring onions (recipe follows) A handful of sprouts (such as broccoli sprouts) A few lettuce leaves (butter, arugula or romaine) Toast the bread and spread both slices with a thick layer of mayonnaise. Top with the avocado, mozzarella, tomato, cucumber, pickled onion, sprouts and lettuce. Sandwich with the other bread slice. Secure with toothpicks or wrap in parchment paper before slicing in half.

y only hope was my Facebook Messenger account wasn’t being monitored too closely by legal authorities.

Me: Is it cut? Is it clean? What size bag? I’ll be driving through that side of town and can pick it up. How much?

This wasn’t a script for a drug deal, I promise. It was a conversation with my friend about how to purchase wild onions, a Native American delicacy that bonds a culture each spring.

My friend Kendall Bread came through for me a few years ago with two gallon-sized bags of fresh, clean, cut wild onions. Each gallon was $20 and well worth the price.

When the grass greens up each spring, it is wild onion season. The harvest begins with the picking process, continues with cleaning, cutting and — my favorite part — eating. With a March 12 birthday, my mom always tried to have a wild onion meal ready for me.

It’s not only the family table that is bonded by wild onions. There are Native American churches across the state that offer Saturday dinners that are important fundraisers.

Kelly “Kritter” Deere of Bristow got a jump start on selling onions this season. He’s already had heavy demand from buyers of his $25 gallon bags. He’s already reserved 50 bundles at a discounted price to a local church’s sale.

Deere, a member of the Creek tribe, has

eaten wild onions “as long as I can remember.” He has friends in the Eufaula area who pick and bag them. The group shares in the profit from sales.

“This is the first time that the onions came out early, and everyone is saying they taste better than (the spring onions),” Deere said.

Wild onions are part of the allium plant family. Their growth begins in early spring.

Picking onions isn’t easy work. The best place to harvest sometimes comes from the dampest, muddiest places. Onions can also be found alongside roads. When I was a little boy, I remember going to Mohawk Park and looking for them with family.

Like a good angler with the perfect fishing hole, some who annually harvest onions do not share their favorite spots.

Britteny Cuevas (Creek/Quapaw) of Muskogee began picking onions a few years ago after learning of a secret spot from her uncle William Briggs.

Cuevas said out of respect for the land that she picks, the owner is provided some of the onions that they harvest.

“The cleaning is dirty,” Cuevas said, laughing. “You have to mess with all the mud.”

Cuevas gives plenty of her onions away, she said, to “share what the Creator has given us.”

Her goal this spring is to have an “Indigenous diet,” which will include onions and fresh fish exclusively.

Wild onions are part of the native history, Cuevas said. “They followed us here, and they are a part of our spirit as our food and

The cleaning can be messy. There’s plenty of dirt to be scraped off the onions, but it must be done tenderly so as not to destroy the onions.

Sunrise Ross (Creek/OtoeMissouria) is the pastor of New Hope Indian United Methodist Church in Dewey. Her home church — Haikey Chapel United Methodist Church in south Tulsa — had numerous wild onion dinners in the past.

Ross said funds from dinners pay monthly bills, apportionments and necessary repairs to the churches.

“Unfortunately, the economics of our native churches just aren’t what some of the other churches are, so the wild onion dinners/Indian taco sales help greatly, plus, as you know, it helps to keep our family ties to the 18 Tulsa World Magazine

church as families go back to either help with the fundraiser or to support the fundraiser,” Ross said.

Peeling the dirt and grime off the raw wild onions can be time consuming. A few hours is usually designated for a few gallons. With a church fundraiser, it takes manpower and patience.

“It’s a lot of work, but, man, I sure enjoyed doing it and gathering up my family to come out and help (in hopes that they would keep that family connection to the church),” Ross said.

“So much goes into getting these events off the ground, and it truly does take everyone pulling together to get that onion supplier lined up or getting church/family to go dig onions, plus who will go shopping for paper products, who will contact all

the cooks to come out and then who are the servers?”

The recipes for cooking wild onions differ. A standard recipe includes cutting them into 1-inch pieces and boiling them until soft. Mix the onions with scrambled eggs and the feast is on.

Bread has eaten wild onions her entire life. She laughed when she said she dislikes all other onions.

She doesn’t like them on any food.

When growing up, she painstakingly took each onion out of the meals her mother would cook.

“To eat a raw onion, oh no. But wild onions, I love the flavor of them and I’ll eat those,” Bread said.

Like a steak needs a baked potato, there needs to be side dishes for wild onions. Bread suggests salt pork, beans and “fry bread, of course.”

Much like Thanksgiving dinner, this isn’t just an everyday meal. It’s a cultural celebration.

“You can’t just cook just a little bit (of wild onions),” she said. “I’m waiting for my family to get together.”

H

ome remodeling contractors and interior designers agree, 2020 was unlike any other year for their industry.

The world paused to absorb the realities of COVID-19 in March and then began to adapt. Calls from homeowners eager to remodel and renew rushed in like a tidal wave starting in April as we all began collectively nesting, local renovation experts said.

Outdoor spaces in particular got a lot of love last year as they became refuges for meeting with friends and family whom we hadn’t seen for months.

Spring is the prime renovation season; however, the increased demand for home redesigns and projects are expected to continue throughout 2021.

Tired of staring at the same color wall?

Paint it. Ceiling feeling a little low and closed in? Raise it. Kitchen appliances can’t keep up with increased use? Replace them. Need a new work-from-home space?

Design it.

Patios, pergolas, pools and putting greens ... those are just some of the outdoor projects homeowners are clamoring for as they continue to bring resort life home amid the pandemic.

Industry professionals talked with us about the spike in demand last year and shared trends and tips for homeowners, too. We’ve even got a great DIY project that will make a big statement in your home but is adaptable for all budgets.

grew 22.8%, going from 3,080 in 2019 to 3,783 in 2020, according to Tulsa-based New Orders Weekly.

That total is the highest since 4,303 starts were recorded in 2007. In January, area home construction increased 37.4%, according to the Home Builders Association of Greater Tulsa.

“I really think this is as busy as I have seen it since the time I got in this business in the ‘80s,” said Brian Wiggs, owner of Brian D. Wiggs Homes. Wiggs is a past president of the Home Builders Association of Greater Tulsa, a top Tulsa builder and remodeler.

to the consumer demands, said Dixie Moseley of Joie de Vie Interiors.

“Everything changed, none of us knew what to expect, it just came on so quickly. There was quarantine, then there was the question out there of what everything was going to look like moving forward.

We had a sense that people are going to be spending more time at home and they are going to be looking around and taking stock. I have been blessed beyond hope as far as how our business has turned out in all of this,” she said.

The Home Builders Association hosts many events throughout the year that are helpful to homeowners who are looking for remodeling contractors. The pandemic shutdown happened right in the middle of the Greater Tulsa Home & Garden Show in March 2020 so the event closed early. But it was clear even then, Wiggs said, the people who arrived before it closed were there to do business, asking thoughtful questions and for quotes.

Then in the fall, the HBA’s Home Remodeling Showcase was held and, again, attendees came focused, ready and raring to remodel. Virtual tours were also available for this event.

This year, the Greater Tulsa Home & Garden Show was back, running March 11-14, and there’s still the Home Remodeling Showcase to look forward to Sept. 25-26.

So what sort of projects were homeowners interested in?

“Maybe they were thinking about a new kitchen, maybe they were thinking about updating the master bathroom ... They had more time at

home last year to watch those home remodeling programs and they were able to make more phone calls to remodelers,” Wiggs said.

Enhancing entertainment options at home became a high priority, too, he said.

“I think technology continues to drive how people operate their homes, large-screen TVs, full surround sound ... With people not going out as much, they are wanting enhanced viewing capacity and more people are putting in wireless, too,” Wiggs said.

Demand spiked last year for outdoor living projects, such as swimming pools, outdoor kitchen projects and pergolas, “things people can get to make their homes more resort like,” Wiggs said.

Living the club life‌ Want to make your staycation dreams come true? Pools and putting greens are popular projects that offer new entertainment options at home. Here’s some information from local experts.

POOLS‌ “Pools went from something that was already in high demand in our region, because how hot it can get here, to a whole other level,” said Luke Fiveash, designer and sales representative for Baker Pools, 1817 N. Elm St., Jenks.

The spike in new construction last year added more demand for pools too, he said.

“From April on, literally every month last year was a record month,” Fiveash said.

Don’t hesitate if you are considering a new pool for your backyard, experts cautioned. While builders and remodelers still have connections to contractors to get the pools built despite demand, individual homeowners will have a harder time getting on the ever-growing lists.

Now, Baker Pools is booking projects to start construction in the fall, but at the current pace, they will soon be booking projects for 2022 and beyond.

“We are a small local business, but we are a really big small business,” Fiveash said, with Baker Pools averaging about 120 pools a year.

Trends in pool construction mirror the rest of the industry, he said, with a continued demand for the “farmhouse style, with contemporary materials and flair.”

“We are doing a lot more geometric-style pools, such as rectangles, but using natural stone to tie them together,” Fiveash said.

At Baker Pools, customers can see what the pool and surrounding landscape will look like with 3-D technology that creates a video rendering of the space.

“We can literally walk around the landscape together. People have always told me, ‘I’m a visual person, if you don’t show me what you are talking about, I won’t get it.’

Now, I can literally show you,” he said.

BACKYARD SPACES New options for artificial turf lawn projects continue to expand, with putting greens, for example, popping up throughout residential areas. This gave them the time to think about it and pull the trigger.

From refresh to fabulous

Cy Murray wanted to update her kitchen, but nine months later, she ended up with an entirely new home.

The ideas pitched by her interior design team, headed by Dixie Moseley of Joie de Vie Interiors, were just that good.

“I gave her carte blanche because she was pretty much on the top of her game,” Murray said.

“When I heard her ideas, I told her to just knock everything out.”

The 1970s ranch-style home in the Holiday Hills subdivision near 61st Street and Harvard Avenue that Murray bought six years ago needed a refresh. It was filled with dark colors and woods and dated flooring, surfaces and spaces.

The good news: Murray wisely had a feeling the neighborhood was ripe for revival and she was primed to lead the way.

Murray moved out of her house at the end of 2019 to let Moseley “do her thing.” But the bulk of her renovations occurred during a unique time in the world — smack dab in the middle of a global pandemic.

Murray saw only positives from the timing, especially when her family settled into a freshly remodeled home in August 2020.

“It was actually perfect because I’m self-employed, so I generated my own little home office,” Murray said describing her WFM space in the house she bought a block away as an investment and to live in during the renovations.

“Then to return, it was like a safe haven and so beautiful and refreshing. There was not a better time. During the pandemic, there was not much to do anymore. I had plenty of time for meetings about the progress and to check on the house. Otherwise, I would

not have had as much time to do it so easily. It gave us time to focus on the remodel, as well as come back after the remodel and enjoy the house,” Murray said.

Renovating the house all at once made sense to Murray, and she would recommend it.

“I think one mistake that homeowners make is going room to room as they have time and the budget rather than saving and doing the entire house. Then, you are not living in dust all the time and it all blends together nicely,” Murray said.

Moseley showed Murray pictures based on the style she

was seeking. They focused on light, earthy elements for the Scandinavian-inspired design.

“I think everybody who comes here, they are just blown away by the kitchen and living room and they all want to move into the master bath,” which she said has a wet bar, coffee area and a beautiful stone wall by the bathtub.

“When I bought this house, I knew the neighborhood would be the next big thing. As soon I started remodeling, I saw the storage containers pop up in front of other homes too. They were doing the same thing. The neighborhood is changing sooner than later,”

Murray said.

Moseley, who headquarters out of the Joie de Vie Interiors storefront at 4224 S. Peoria Ave., said the project was immensely rewarding.

“You would absolutely not recognize it being the same house.

There is not a surface we did not change, and it was a fabulous end result,” Moseley said.

Historically, Moseley has found that homeowners primarily seek improvements to kitchens and bathroom suites for the master bedroom.

“That has largely been because it has the greatest return on investment, and I think with people being at home last year, it just amplified all of that. People are spending far more time at home and seeking their entertainment there too,” Moseley said.

Creating a bedroom space that is a peaceful retreat has been another popular trend, she said.

“And as far as the home office trend, people are wanting built-in cabinetry in their office space.

We are also getting more calls from people wanting to upgrade a space, maybe it was not an office to begin with but they are wanting to convert a dining room or perhaps a bedroom into a formal office,” 32 Tulsa World Magazine

Moseley said.

The whole redesign process starts with a conversation to hone in on the homeowner’s needs, lifestyle and dreams for the home.

“It really is not just about creating pretty space. Functional comes first and aesthetics are secondary to that,” Moseley said. “It is a very personal thing, and we don’t take it lightly. We realize it is a great level of trust a family is placing with us to be in their home, to impact their life ... that is really what drives us.”

For those looking to quickly create a fresh look for their home, a trend that is popular in interior design is wall coverings, Moseley said.

“There are all types of wall coverings, not just the wall papers of the ‘80s and ‘90s. We are doing more wall coverings in select areas to add texture. Grass cloth has been real fun. We have incorporated that into multiple rooms, some real, some faux. When you are doing a monochromatic room, texture is very important to keep it interesting and add dimension. Florals and even murals are coming to the forefront,” Moseley said New wall coverings can even incorporate glass, metals or gilding to make the room appear, “glamorous, textural, warm and cozy.”

Appliance upgrade Homeowners had time to reevaluate their appliances during quarantine in 2020 and many opted for upgrades, said Tarah Duncan, assistant general manager with Metro Appliances and More, 5313 S. Mingo Road.

“We noticed that people were using their kitchens more, cooking at home more, and they thought, ‘Oh, my gosh. Look at this junk.’

They paid more attention to the old appliances they were cooking with and decided it was time for something new,” Duncan said.

business last year; the showroom was closed for a few weeks, but we were still receiving and delivering product. We opened the showroom back up and were full-steam ahead in sales,” Duncan said.

So if you are feeling the itch to ditch your outdated appliances, don’t wait too long. Demand is high and wait lists can be long.

“Demand is just crazy. The manufacturers are backordered, you definitely need a much longer lead time. They have had to do social distancing and take more precautions in the facilities, so that puts a strain on production,” Duncan said.

Those looking to mix it up in the kitchen are bringing back color, Duncan explained.

“For so long it was nothing but stainless, but people are going back to color. White is a new-old trend because everything is cyclical. We are seeing a lot of white kitchens with white appliances.

We are even seeing kitchens with avocado cream appliances, which was obviously a trend from decades ago,” Duncan said.

Technology is taking over in the appliances world. Some cool new features that have come out include air fryers inside ovens and remote access to turn ovens on to preheat while you are away.

Remote access cameras also let you see inside your fridge and save a trip home to see if you need to pick up some milk.

“Also, with that technology, if you have something wrong with your appliance, the service tech can diagnose it without coming

out so they can order the part first.

Or you can diagnose it with an app on your phone and save a step,” she said.

Can projects improve a home’s

resale value?

‌Home buyers tend to watch a lot of HGTV, even more so now that COVID-19 has been keeping people in front of the television. And the network sets high expectations when people start looking at real estate listings.

“Everyone wants a house that looks like the last three minutes of the show,” says Marty Newman at Walter & Associates, one of Tulsa’s premier independent real estate firms Of course, that can make a seller feel pressured to fix up a house before putting it on the market.

But slow down, Newman says.

Think twice.

“Never spend money to make money,” he tells clients. “It just doesn’t work.”

Certain types of home improvement projects might help a house sell faster, he says. But projects rarely improve the bottom line.

Some can even become a profit drain.

In the average house, only two rooms will probably let a home seller recoup the costs of remodeling — kitchens and master baths, he says. Even there, it’s a one-to-one return, increasing a home’s value roughly $1 for every $1 spent on the project. Don’t expect a profit.

“A new kitchen or master bath will tend to move a house off the market faster, but homes aren’t staying on the market very long right now anyway,” Newman says, explaining that Tulsa has a seller’s market right now thanks to ultralow mortgage rates.

Anywhere else in a house, improvements aren’t likely to break even, according to Newman. Remodeled living rooms, bedrooms and smaller bathrooms will increase a home’s value but TULSAWORLDMAGAZINE.COM

not as much as the projects cost, in his opinion.

Does that mean you shouldn’t make home improvements? Of course, you should.

“Do the projects that are going to make you like your house more,” Newman says. “Do it for yourself.

Do it for your own comfort, but only if you’re going to be staying in your house for a while. If you’re getting ready to sell, it’s probably better to hold on to your money.”

Even professional home flippers, who know how to control costs, lose money sometimes. It’s a risky business, Newman says.

“Let the new buyers make the improvements they want to make, and save your money to spend on the house you’re moving into. That way, everybody gets what they want.”

That does not, however, mean that sellers should sit back and do nothing before listing a home. To maximize profit, focus on projects you can do yourself, Newman recommends. Put up a fresh coat of paint. Clean the carpets.

De-clutter. And keep the house spotless.

“When people come to look at your house,” he says, “they want to see that you’ve been a reasonably good steward of the property, that you’re going to hand it on to them in reasonably good shape. They might see a bathroom that needs to be updated or a kitchen that needs work. OK, they expect that.”

But if the potential buyer sees a stain on the carpet? Or a dirty sink?

“They start to wonder if maybe there’s a problem with the plumbing that you haven’t taken care of. They start to think that you’ve been putting things off.”

Clean the house you’re selling.

‌Homeowners should put as much thought into a home-improvement contractor as they put into choosing the home itself, according to Tulsa experts.

“We are always happy to have people reach out to us, and come to out events, it helps them get started on their projects,” said Hali Mayfield with the Home Builders Association of Greater Tulsa Here’s some advice from the Home Builders Association for finding the right people to do the job.

Check if the contractor belongs to the HBA to ensure the company carries the proper insurance and has agreed to abide by the association’s code of business ethics. Then check the Better Business Bureau to see any complaints about the contractor.

Confirm that the contractor has a verifiable mailing address for his or her business.

Don’t just ask a contractor for references. Actually contact those references.

What to ask references: Are you happy with the project? If you had any problems, were they fixed promptly and properly? Would you use the same contractor again?

Questions to ask a contractor: How long has the company been in business?

Who handles customer service after the project is finished? Who would be responsible for correcting any problems that arise?

Don’t get pressured into signing a contract before you’re ready. Reputable companies won’t suggest that prices will suddenly go up if you don’t agree to a deal right away.

Be cautious, however, if anyone suggests that “a contract won’t be necessary.” Insist on a complete and clearly written contract signed by you and the contractor.

Deposits of 20% to 50% are common, but you should not be asked to pay in full in advance. Insist that the final payment not be due until the job is completely finished and you are fully satisfied with it.

If any of the work requires city or county inspections, make sure that is done before you make the final payment.

She already has a couple of photo galleries in her own home, and now, she is working on the layout of a different, more dramatic kind of gallery to fill a big, blank white wall in her two-story-tall entryway that is open to a stairwell.

So far, she has rounded up a couple of pieces from local artists, vintage art

she has collected and even an antique rug.

“I also have a vintage Japanese wood carving that I might use. I already have some brass frames and the rug is framed in a box with light wood, so I plan on doing a mix of brass and woods for the frames,” Wakefield said.

“I’m hoping to achieve a clean look that compliments our mid-century home but still keeping it interesting and a little quirky. “ Sarah Vespasian’s home gallery wall was created with an ulterior motive — to distract the eye from the big flat-screen television in a casual room in her home where her family hangs out the most.

“We have our TV on a great vintage file cabinet, but the idea of that (TV) being the main focus of the room is just not it for me,” Vespasian said. “My goal for the wall is to be fun, flexible and colorful.”

As a distracting backdrop for the TV, her gallery wall mixes and matches items collected from travel to Greece, Mexico, Alaska and Los Angeles and from garage sales with family pieces, a custom painting of her family’s previous home and a treasured painting her mother-in-law made of her old dog Ricardo.

“I purposely made this wall a mix of frame types, textiles — one of these is a rug sample from my work that was just too pretty to sit in my garage — canvas paintings and prints, so I can easily swap things out as we change the room layout or TV size,” she said. “We did both recently, which prompted a re-hang of the whole thing, or as we get new pieces we want to add.”

LAREMORE — While courting his future wife about a decade ago, Zach Hollingsworth decided to lend a hand at her family’s dairy farm.

“I came one time to help make cheese and they said, ‘Hey, you want to come help do something else?’ It

kind of snowballed,” said Hollingsworth, a 2016 animal science graduate from Oklahoma State University.

Today, Hollingsworth spends his time hoofing it alongside Holstein and Jersey cows, making sure every drop of natural goodness is milked from the herd.

Together with his brother-in-law, Jason Williamson, and Zach’s veterinarian wife, Ashley, he is part of a fourth-generation legacy at Swan Bros. Dairy, which is closing in on its 100th anniversary.

“Every now and then, one of us will get to take off,” said dairy co-owner Diane Williamson, Hollingsworth’s mother-in-law. “… My son (Jason) is pretty much here every day because he takes care of the baby calves and the dry cows and calving them in.

“Twenty-four-seven, 365 days a year, somebody has to be either here or on call in case the electric goes down and we have to get the generator started to

keep milk cold or get the cows milked. But it’s also satisfying when you have the people that are supporting you, your customers and your community that are thankful that you are here.

It makes it all worth it.”

The coronavirus outbreak has strained the dairy industry, as it has almost every business.

But it also has provided consumers a tutorial on the supply chain, Hollingsworth said.

“We were booming for a while when Walmart sold out of milk and people came to us,” he said.

“The pandemic was not good. But what people learned from the pandemic was a good lesson, I guess. The grocery store is not where your food comes from. It’s where you buy your food.

“We could boom tomorrow by calling a big supermarket and trying to get our milk in there. But we don’t want to grow too fast and it be over. There’s a reason it’s been here almost 100 years.”

HOW IT ALL BEGAN

Harley Swan Sr. and his wife, Ruby, founded the farm in 1923 with one cow, and Harley went on to establish a milk route in town until World War II, when extra help became hard to find, Hollingsworth said.

The Swans’ sons, Harley Jr. and Larry, bought the dairy in 1962, with Harley Jr. and his wife, Dorothy, purchasing the entire operation a decade later.

Junior’s daughter, Diane Williamson, gained a foothold in the business in the 1980s as the dairy confronted a hurdle in the milk market.

Early in the decade, any milk the Claremore dairy couldn’t sell could be shipped for a Grade A price to the Dairy Farmers of America or any willing cooperative, she said. But in the mid1980s, Swan Bros. was told it would only get the Class III price for its surplus because it sold milk out the door, Williamson said.

“So, we had all this milk that we were going to get a lower price for it,” she said. “Dad said, ‘If you are going to stick around and work, let’s make cheese.’”

And she has.

Honing her craft over the decades, Williamson is the tender loving care behind the brand Oklahoma Premium Cheese, which has morphed into many varieties, including colby, mozzarella and hot pepper cheddar. She and her husband, Don, ended up purchasing the dairy farm in 2016.

“I had two brothers,” Williamson said. “They worked here but they didn’t stick around.

Everything just fell in place for us to keep it going.”

THE PROCESS A dozen at a time, the cows at Swan Bros. Dairy line up to be milked twice daily in a windowed parlor, feeding on grain while their teats are disinfected, wiped and then hand-squeezed, or “stripped.” A process by which three to four streams of milk are removed before milking, stripping is the primary method for detecting mild and moderate cases of mastitis and assists in milk let-down.

Finally, mechanical milkers are attached. Each of the farm’s 75 dairy cows yields between 4 and 10 gallons of milk per day, Hollingsworth said.

“We believe milk is God’s natural nourishment for not just children but for adults, too,” Williamson said. “You can survive on drinking just milk. There’s everything in there, nutrition-wise. You can’t say that about a whole lot of anything.”

According to the United States Department of Agriculture, U.S. consumption of total dairy products has risen faster than the growth in population. But this country’s per-capita consumption of fluid milk has declined because of competition from other beverages and a declining share of children in the population.

To that end, Swan Bros. Dairy recently began to branch out. Several years ago, it started raising Holstein steers for retail beef. Since 2019, pig and chicken operations have been added.

“It’s diversify or you’re done in the dairy business,” Williamson said.

Late last year, the family opened a new 800-squarefoot retail store that more than tripled the size of a previous facility built in the 1960s. In it, the dairy showcases its products and those from other local vendors.

“Twenty years ago, I would say 70% to 80% of the clientele was here in Claremore,” Hollingsworth said.

“Now, going off our Facebook analytics, I would say 50% to 60% comes from out of town, Tulsa and the suburbs of Tulsa. People are driving here to get milk and other stuff.

“Our milk is not the cheapest out there. We don’t try to be the cheapest. It costs us more because we’re not doing it on this massive scale, so we have to charge a little more to compensate.”

Myrtle McDougal, the wife of a former mayor of Sapulpa, hurt her ankle while visiting friends in Nashville and recuperated at the city’s St. Thomas Infirmary.

A teenager delivered newspapers to the hospital every morning, and he always spared a few minutes to sit with the talkative Mrs. McDougal and listen to colorful tales of the Oil Boom that was transforming Tulsa from a dusty little cow town into a prosperous big city during the early 1900s.

Bill Warren had dropped out of school without finishing the eighth grade when tuberculosis left his father unable to support the family. And the young Warren went through several odd jobs, from Western Union messenger to peanut vendor at a baseball park, even dance hall instructor, before becoming a newspaper carrier and running into McDougal.

She stayed in touch after returning to Oklahoma and wrote letters to the energetic young man back in Nashville, urging him to give Tulsa a try. She even helped find a job for him with a railroad, but he quit after just five days and became an accountant for the Gypsy Oil Co., which would later become part of Gulf Oil. Eventually, it merged with a company called Warren Petroleum. But he could not have imagined that yet.

Warren was 18 years old and penniless when he left Tennessee in February 1916.

It took him nearly seven years in Oklahoma to save up $300, roughly the equivalent of $4,600 today, adjusting for inflation. Warren and his wife, Natalie, who had followed him from Nashville, invested every penny of it in oil. And by 1953, when the company merged with Gulf, Warren had become the biggest seller of natural gas in the TULSAWORLDMAGAZINE.COM

The company’s headquarters stood on South Denver Avenue, where internationally acclaimed architect Bruce Graham designed a 12-story masterpiece of mid-century minimalism.

Warren filled the offices with trendy Barcelona chairs and Eames furniture that made it the most fashionable place to work in Tulsa. But what really made a splash was the location, a mile south of the central business district, making Warren one of the first local companies to move out of downtown.

It seemed even more unconventional, at the time, to put a hospital way out at 61st Street and Yale Avenue, basically the edge of town. But with Tulsa growing rapidly and facing a shortage of patient rooms, Warren announced plans for the new facility Dec. 3, 1954 — his 57th birthday and coincidentally the feast of St. Francis Xavier, a 16th century missionary.

Saint Francis Hospital admitted its first patients Oct. 1, 1960, the same month LaFortune Park opened across the street. Warren and his wife, acting through the charitable William K. War-

ren Foundation, had spent $8 million to build it. And when they handed the hospital over to the Sister Adorers of the Most Precious Blood, it became the single-largest gift ever made to a Catholic religious order at the time.

Deeply devout, Warren got up early every morning for daily Mass, regardless of rain, snow or ice. He attributed his success to the same three values that propelled St. Francis on his missionary trips around the world: faith, hard work and purpose.

“By following in God’s plan,” his son William Warren Jr. once told the Tulsa World, “he felt that he had an extra sense of confidence to achieve in sometimes impossible goals.”

Warren Sr. died in 1990 at the age of 92. His wife died in 1996 at age 97.

The hospital, meanwhile, has grown into the sprawling Saint Francis Health System, with clinics and campuses as far away as Muskogee and Vinita. And the Warren Foundation remains one of Tulsa’s most prominent philanthropic institutions, with Saint Francis still one of the primary recipients of the foundation’s support.

The exhibition will span the museum’s Helmerich and historic Villa galleries, showcasing artworks that reflect on American history, honoring those who challenged racial violence across America and speculating on visions of a future still yet to be.

“Views of Greenwood” is a collection of photographs from three Tulsa artists — Don Thompson, Gaylord Herron and Eyakem Gulilat — that chronicle some 50 years of north Tulsa life.

‘Faces of Greenwood’‌

The Black Wall Street Alliance is hosting a uniquely immersive exhibit, a timeline of local and national Black history made up of thousands of images, documents, collages and clothing displays titled “Faces of Greenwood Timeline Experience,” which occupies a hallway that runs behind the buildings and businesses that stretch from 100 N. Greenwood Ave. to 120 N. Greenwood Ave. The exhibit is open by appointment on Saturdays.

TRANSFER IN TULSA‌ When you think of a transfer student, you may imagine the freshman who gets homesick after the first semester away at college or the junior who wants to change to a major not offered by their university.

For a growing number of students, however, transfer is the plan from the beginning.

The reasons Tulsa-area students choose the transfer pathway are varied. Some cite cost, with programs like Tulsa Achieves making the first two years of college virtually free. Others earned concurrent hours in high school and want to make the most of those credits. For some students, the reasons to transfer to a university in Tulsa are closer to home.

“My family is the main reason I’m here still,” said Cre Alexander, a management student who transferred to OSU-Tulsa.

A GROWING TREND‌ The growing trend of transfer students has not gone unnoticed. In 2018, Tulsa-area higher-education institutions launched the Tulsa Transfer
