THE BRANDY TALE
C’erano una volta… nel XIV secolo, degli alchimisti islamici che cercavano cure contro le crisi respiratorie e iniziarono a purifcare delle bevande negli alambicchi a scopo medico. Nel corso dell’espansione araba, portarono il vino così distillato in Spagna, da dove si difuse prima in Olanda e poi Inghilterra, aspetto che spiega il nome anglosassone: brandy, infatti, è l’abbreviazione di brandwine, ovvero “vino bruciato”.
Come si fa il brandy?
Il brandy, sostanzialmente, è l’acquavite distillata dal vino e poi afnata in botti. Per portare questo nome, deve invecchiare per almeno un anno. Lo sapevate che il cognac è un tipo particolare di brandy prodotto nell’omonima regione francese? Se di altre origini, invece, il distillato può chiamarsi solo brandy.
Once upon a time… in the 14th century, Islamic alchemists, in search of remedies for respiratory ailments, began purifying beverages in alembics for medicinal purposes. During the course of Arab expansion, they brought this distilled wine to Spain, from where it later spread to the Netherlands and then to England. This journey explains the Anglo-Saxon name: brandy is, in fact, a shortened form of brandwine, meaning “burnt wine.”
How is brandy made?
Brandy is essentially a spirit distilled from wine and then aged in barrels. To bear the name brandy, it must be aged for at least one year. Did you know that Cognac is a specifc type of brandy produced in the French region of the same name? If it comes from elsewhere, the spirit can only be called brandy.

Once upon a time, in the French region of Charente, there lived a white wine with a bold dream: it longed for longevity and to grow old with grace. When it was fnally tasted, its spirit had changed so profoundly that it enchanted everyone. They honoured it with a noble title and named it Cognac, in tribute to the land where its treasured grapes were born.
Dall’uva al cognac
Le uve vengono fatte fermentare per circa tre settimane. Il vino ottenuto viene poi distillato due volte: dalla prima distillazione risulta un liquido con solo il 2430% di alcol, chiamato bruillis, che viene reinserito nell’alambicco per la seconda distillazione. L’acquavite che ne risulta, scartando le teste e le code, viene infne fatta invecchiare in botti di rovere per minimo due anni. Un dato curioso: al termine delle distillazioni, da 1000 l di vino ne rimangono appena 62 l circa!
Non è tutto cognac quel che luccica

Nello specifco, per almeno il 90% deve trattarsi delle varietà
Ugni Blanc (o Trebbiano), Folle Blanche e Colombard, questo perché producono un vino semplice ma con due essenziali caratteristiche per la distillazione: un alto livello di acidità e un basso tenore alcolico, che aiutano a enfatizzare i meravigliosi aromi foreali e fruttati dell’uva.
From grape to Cognac
The grapes are fermented for about three weeks. The resulting wine is then distilled twice: the frst distillation produces a liquid with only 24-30% alcohol, called bruillis, which is then reintroduced into the alembic for the second distillation. The resulting spirit, after discarding the heads and tails, is aged in oak barrels for at least two years. A curious fact: at the end of the distillation process, from 1000 litres of wine, only about 62 litres remain!
Not all that glitters is Cognac
Only the brandy made from white grapes, strictly grown in the eponymous French region, can become Cognac. Specifcally, at least 90% of the grapes must come from the varieties Ugni Blanc (or Trebbiano), Folle Blanche, and Colombard. This is because these varieties produce a simple wine with two essential characteristics for distillation: a high level of acidity and a low alcohol content, both of which help emphasize the wonderful foral and fruity aromas of the grape.

Whisky o whiskey? Entrambi, dipende dall’origine. In Scozia è whisky, in Irlanda whiskey: i due Paesi, infatti, si contendono da secoli la paternità del distillato, ormai difuso in tutto il mondo. Le diferenze non riguardano solo la grafa, ma anche il metodo di produzione e la materia prima utilizzata. Whisky deriva dal termine gaelico per “acquavite” e si ottiene dalla fermentazione e successiva distillazione di vari cereali, come orzo, segale, grano e mais. Poi viene invecchiato per un tempo mai inferiore ai tre anni.
Whisky or Whiskey? Both, depending on the origin. In Scotland, it’s “whisky,” while in Ireland, it’s “whiskey.” The two countries have been competing for centuries over the claim to be the birthplace of the spirit, which is now enjoyed worldwide. The differences are not just in the spelling, but also in the production methods and the raw materials used. “Whisky” comes from the Gaelic word for “water of life” and is made through the fermentation and subsequent distillation of various grains, such as barley, rye, wheat, and corn. It is then aged for a period of no less than three years.
Come nasce il whisky?
Il primo step è il maltaggio dell’orzo: gli amidi si trasformano in zuccheri più semplici, che saranno il “nutrimento” per i lieviti. La germinazione dell’orzo viene interrotta dall’essiccatura.
Quindi, l’orzo viene macinato in polvere, messa a sua volta in infusione in acqua calda. La parte solida viene poi fltrata e rimane un mosto non alcolico detto wort, che viene rafreddato a ca. 20 °C per poter aggiungere i lieviti e dare inizio alla fermentazione. How is whisky made?
The frst step is malting the barley: the starches are converted into simpler sugars, which will be the “food” for the yeast. The germination of the barley is stopped by drying it. The barley is then ground into powder and infused in hot water. The solid part is fltered out, leaving a non-alcoholic liquid called wort, which is cooled to about 20° C so that yeast can be added and fermentation can begin. Finally, the alcoholic solution is distilled, and the resulting spirit will mature and “develop its character” in oak barrels for varying lengths of time, depending on the type.

AMERICAN WHISKEY

It is distilled in the United States and is classifed based on the raw materials used into Bourbon (with at least 51% corn and aged in toasted oak barrels), Rye (with a minimum of 51% rye and aged for at least four years), and Tennessee (subjected to maple charcoal fltration). By the way, the barrels can only be used once for bourbon, but they can continue to be used for aging other spirits, such as Scotch whisky.

Until the frst half of the 1800s, whisky was consumed clear, just as it came out of the still. When large quantities began to be exported, barrels were used for transport, and it was discovered that these containers added colour and aromatic complexity to the spirit. Rum’s history stretches back millennia, woven with tales of adventure, trade routes, exploration, and uprisings. Though now seen as the iconic spirit of the Caribbean, its true origins lie in Asia, where sugarcane-based fermented drinks were crafted as far back as 6000 BC. Even Marco Polo, during his journey through Malaysia, wrote of a refned “sugar wine.” Rum reached the Americas with colonization and quickly gained such value that it was once traded like gold across Europe. Some historians even argue that the 1764 Sugar Act, which increased rum production costs, played a role in sparking the American Revolution.

How rum is made
It all begins with the pressing of sugar cane. Using pure extract results in a high-quality distillate, while rum made from molasses yields more industrial results. The liquid is then fermented in contact with yeast. This phase can last from a few days to several weeks: slower fermentation tends to produce a richer favour. Next, the liquid is distilled in stills to increase the alcohol concentration. Finally, the rum is aged in oak barrels, either new or used, which impart their distinctive aroma to the product. The longer the aging, the more complex the favour becomes. Before bottling, diferent varieties of rum can be blended to create a specifc aromatic profle and fltered to enhance clarity.

WHITE RUM

Demerara rum originates from the distilleries that lined the banks of the river of the same name in the 17th century, where the world’s oldest sugar cane cultivation fourished. Azienda produttrice dal 1800 circa, Flor de Caña è riuscita a dare un signifcato e una personalità a quella tipologia di rum defnita “industriale”, ossia ricavata non dal puro succo della canna da zucchero ma dalla melassa, riuscendo a elevarla a un livello superiore. Il 12 anni si caratterizza per il corpo pieno e strutturato così come la grande complessità aromatica, difcilmente riscontrabile in altri rum ricavati da melassa.
Founded around the 1800s, Flor de Caña has succeeded in giving meaning and personality to that type of rum defned as “industrial,” meaning produced not from pure sugarcane juice but from molasses, elevating it to a higher level. Don Papa played a pivotal role in the Philippine fght for independence: a foreman on a sugarcane plantation, he recognized the injustice of colonial rule and courageously joined the resistance. The exceptional Gayuma rum ages for three years in ex-bourbon casks, followed by a six-month maturation in heavily toasted Rioja barrels. The fnishing in Islay whisky casks imparts an intense complexity, refected in its layered aromas.

A Panamanian rum aged for a remarkable twelve years (the lifespan of an adult gorilla) in ex-bourbon American white oak barrels and fnished for three months in ex-port barrels. This rum is distilled in very small batches: only 4804 bottles, as many as the remaining eastern lowland gorillas in the world. Finally, it is bottled in a beautiful black ceramic bottle shaped like a gorilla’s head.

Desired and created by master blender Tito Cordero, it is the result of a long process of selection and blending of the best rums from the cellar. It ages in American oak barrels for a minimum of twelve years and is then further aged for two more years in ex-Pedro Ximénez sherry casks, thus enhancing its already refned sensory complexity. Ambassador is bottled directly from the cask to preserve the full expression of its organoleptic properties.
