The organisers are delighted to announce the findings of the Rascal Voyages and the Conservation International expedition, which took place in the stunning waters of Eastern Indonesia earlier this year. The team were able to make more headway than was originally anticipated with the discovery of two new species of Goby – the Grallenia Goby and the Silhoueetta Goby, the names of which are yet to be confirmed. A new Manta Ray cleaning station was found in Dayang, another suspected cleaning station in Ayau was confirmed and at least 25 new individual manta rays identified. This work proved the success of pioneering new drone technology methods. The Rascal team is passionate about playing an active CSR role in supporting environmental research in the seas it cruises. The long-term plan is for the Rascal yachts to host marine ‘experts in residence’ that will allow Rascal guests, divers and conservation enthusiasts to play an educational role while on their luxury charters.

SUSTAINABLE EATING THROUGH “SCRAP YOUR DINNER” AT W BALI – SEMINYAK W Bali – Seminyak has introduced “Scrap Your Dinner,” a new culinary concept that uses creative and sustainable eating to raise awareness of the amount of food that the world produces every single day and the amount of waste. Director of Cuisine, Richard Bias introduces a series of experimental dinners making use of food items that are usually discarded and transforming them into delicious 5-star quality dishes. The “Scrap Your Dinner” series started off with Episode #1 held on the 26th April; Chef Richard presented a seven-course dinner featuring unique dishes such as Beef Trimming Croquette and Slow Roasted Pigs Cheek that repurpose food scraps to put discarded items to tasty use. These “experiential” dinners will be presented in 3 different venues throughout the hotel and start with cocktails and canapés at W Bali – Seminyak’s own Herb garden. The series continued with Episode #2 on the 10th May in a special collaboration with Chef Kieran Morland of Sangsaka Restaurant presenting an innovative series of dishes using discarded food items and adding an Indonesian twist.

INDONESIA TAKES CENTRE STAGE AT THE 18TH ANNUAL AWARDS OF GOURMET EXCELLENCE On 3 April 2018, the World Gourmet Summit Awards of Excellence (AOE) 2018 honoured 31 outstanding professionals and establishments from the F&B and hospitality industries and more specifically 4 from the region of South East Asia. Of the four Regional Awards, 6 had candidates from Indonesia, and 2 of them were awarded the Awards of Excellence – Chris Salans of Mozaic Restaurant as Best Restaurant of the Year and Ragil Imam Wibowo of Nusa Indonesia Gastronomy. This is the third time that Chris Salans has received such an award, but it is the first time that Indonesia has had more than one candidate selected as finalists. The World Gourmet Summit, first launched in 1997, is an international gastronomic festival organised by Peter Knipp Holdings Pte Ltd. Now into its 22nd year, this annual epicurean festival continues to showcase the intricate craftsmanship of prestigious chefs and internationally acclaimed vintners. Encompassing a series of events that include specifically themed dinners, it is a gourmet feast specially crafted for discerning individuals who appreciate fine wines and gourmet cuisine.

2 YEARS IN BHUTAN BHUTAN IS A LANDLOCKED COUNTRY IN THE MOUNTAINS OF THE EASTERN HIMALAYAS. IT BORDERS ON THE TIBET AUTONOMOUS REGION TO THE NORTH, THE SIKKIM STATE OF INDIA AND THE CHUMBI VALLEY OF TIBET TO THE WEST, THE ARUNACHAL PRADESH STATE OF INDIA TO THE EAST, AND THE STATE OF ASSAM AND NORTH BENGAL TO THE SOUTH. BHUTAN IS GEOPOLITICALLY IN SOUTH ASIA AND IS THE REGION’S SECOND LEAST POPULOUS NATION AFTER THE MALDIVES. THIMPHU IS ITS CAPITAL AND LARGEST CITY, WHILE PHUNTSHOLING IS ITS FINANCIAL CENTRE.

wo weeks before I had said goodbye to Cayman Island in the Caribbean, a small island that had been our home away from home for the two years before. En route to Bhutan we spent some time in Chicago, one of our favourite cities, enjoying the architecture, visiting Soldier Field - the home of the Bears, the Science and Industry Museums, the Navy Piers and we wrote our names on the Chicago Ferris Wheel.

After Chicago, we spent a couple of days in Bangkok before flying on to Bhutan with the one and only air carrier at that time Druk Air, owned and operated by the government of Bhutan. The plane was a small Airbus A319 with 118 seating capacity, we flew in the early morning, 4 am, and even coffee can’t help you at such an ungodly hour. We were, of course, moving from one country to another so we just rolled the dice and enjoyed the ride. We arrived in Paro in Bhutan, after an “interesting” landing, surrounded by the beauty and splendour of the mighty Himalayas. During the flight, the plane was pitching and rolling to the left and right and my wife grabbed at my hand saying “Where on earth are you taking me?“ It was only after landing that we found that Paro is considered one of the most dangerous airports in the world. After the custom’s check, quite a simple process, we thought we’d go to the duty-free shop to get a few packs of cigarettes but, when the girl who was serving heard my request, she became embarrassed and started acting quite strangely. Finally, she explained that cigarettes had been banned in Bhutan for some years now and, when travelling to Bhutan, you are allowed to bring in only 200 cigarettes, and you have to pay 200% tax. Try to take in more than that and they will be confiscated by the customs officials though they will give them back when you depart. Finally, we got out of the airport to be greeted with a white garland as a welcome gesture and the cry of “Kuzuzangpo la” which means welcome in Dzongkha (the native language of Bhutan)

Acclimatisation You really do need to acclimatise when visiting Bhutan; it is 2195 meters above sea level and, at this altitude, the air is already getting quite thin. High altitude affects everyone and, no matter how fit you are, when a person is not used to it, they will soon run out of breath. It took me a good month of acclimatisation to be able to breathe normally and walk more than 10 meters without running out of breath. The only way to do it is to go for slow, short walks for a few days and let your body adjust to the lack of oxygen. Now, after three months, I am out on the football field and playing with the team in my department.

Food in Bhutan There are some very interesting choices of food in Bhutan, here are some of my favourites: Momo - local cheese & vegetable dumplings with chilli dipping sauce, this is very good as a starter or for breakfast when accompanied with hot tea & milk. Ema Dathsi - chilli peppers and cheese which give an interesting flavour but when you eat it mixed with Bhutanese red rice the combination is amazing. Rice is harvested only once a year and in Bhutan everything is organic (only fully natural fertilisers are allowed). The cheese is made from the curd of cow or yak’s milk. Yak sa semchung pak - braised Yak & bean curry, Yak is a long-haired domesticated bovid found throughout the Himalayan region. The characteristics of Yak meat are very interesting, it is naturally lean, a high protein meat with a great balance of fatty acids. The Bhutanese air dry the meat and cook it with ema dathsi to soften it.

Archery - The National Sport In Bhutan we foreigners are known as “Chilip” and for us, archery is something new and exciting to learn. In Bhutan it has been the Kingdom’s national sport since 1971 although they have been a nation of archers for generations. The distance to the target, known as a “Karay,” is about 145 meters. The targets are relatively small, usually measuring about 91 cm tall and 28 cm wide, and are cut from wood and brightly painted. Bhutanese bows are made from bamboo, and the arrows from bamboo or reeds and fletched with feather vanes. Arrows may be painted and tipped with metal arrowheads. Quivers are usually made from wood with an animal hide covering and a woven strap. Unless you can master the way to draw back and release the arrow you will never manage to shoot a Bhutanese bow and arrow.

It is very funny when we first try this deceivingly difficult sport and the Bhutanese laugh at us when we try so hard and, after many failed attempts, finally give up. The hunting bow is particularly difficult especially for those who cannot master the technique. I have seen a very muscular personal trainer who couldn’t even draw the string back never mind shoot it. You only use two fingers to draw the string into the locking position before you aim and release. My mentor, Philip the “Chilip,” has taught me the techniques and safety aspects of using the hunting bow, but whenever the Bhutanese see us standing on the line about to shoot they run away and hide and start screaming to each other “Chilip is shooting!”. I can tell you it is not an easy sport; it took me months just to learn how to aim correctly, how to predict the wind and how to ensure that we didn’t hit some poor passing soul instead of the karray. When, finally, you hit that all elusive target all you can hear is a “tuk” sound as your arrow hits the wooden bull’s-eye and, after all the failed attempts all you want to do is dance! And that is just what the Bhutanese men do - they dance to celebrate every hit just to tease the opposing team. What a sport and what an experience but this is only just one small part of the story of my life after two years in Bhutan, The land of the Thunder Dragon.

Komodo National Park & the Surrounding Islands

It

is only a short flight from Bali to the new airport at Labuan Bajo a former fishing village on the Western tip of the island of Flores. Until recently a small sleepy town, Labuan Bajo and its many attractions has been discovered over the past few years and, with visitor numbers rapidly increasing, this tiny coastal town has been transformed into a busy epicentre of tourism and the Gateway to the island of Flores and the province of East Nusa Tenggara. The best way to get around the islands is by “liveaboard� boat. There are many options available from simple budget boats to beautiful, high-end luxury wooden Phinisi (a Phinisi is a traditional wooden sailing ship).

FOR MANY YEARS I HAVE WANTED TO VISIT THE ISLAND OF KOMODO AND THE SURROUNDING ISLANDS WHICH TOGETHER MAKE UP THE KOMODO NATIONAL PARK AND IS THE HOME OF THE WORLD FAMOUS KOMODO DRAGON. THIS IS A FASCINATING AREA, VERY BEAUTIFUL AND NOT TOO FAR FROM HOME. IT IS ALSO AN AREA WORLDRENOWNED FOR ITS MARINE LIFE AND DIVING.

Only 20 minutes out into the bay from the harbour at Labuan Bajo is Bidadari Island, a small beautiful island with a white sandy beach stretching along its coast. With its crystal clear, calm water Bidadari is a great place to sit around on the beach, to soak up the sun and enjoy a swim and a snorkel. From Bidadari we move on to the Komodo National Park, which has been declared as a UNESCO World Heritage site and has been selected as one of the New 7 Wonders of Nature. Founded in 1980, the park serves to protect the Komodo dragon, the world’s largest lizard which was revealed to the world by naturalist David Attenborough in the 1950’s. A species of monitor lizard, the Komodo Dragon can grow to a staggering 3 meters long and is believed to be one of the few surviving ‘mega’ fauna most of which died out thousands of years ago. The Komodo National Park with a total area of 1,733 km² includes three large islands of Komodo, Padar and Rinca and 26 smaller ones. Komodo Dragons are known for being one of the world’s most fascinating and dangerous creatures and viewing them is exciting but not dangerous thanks to the supervision of the park wardens. Close to the park, we find Pink Beach, one of the most visited beaches in the area due to its unusual pink coloured sand and magnificent underwater life. Situated in an uninhabited area of the island, this is one of only seven beaches in the world that, due to a mixture of red and white sand, have a lovely pink hue. The water here is shallow making the beach perfect for swimming and snorkelling.

Kanawa Island, between Labuan Bajo and Sebayur Besar Island, is also worth a visit. This untouched and secluded island has a grassy and hilly topography, a white sandy shoreline and is surrounded by crystal clear water, the reef that surrounds the island is home to numerous species of coral, fish, turtles and reef sharks. Here, you see one of the most awesome sunrises and sunsets. I had heard about this place but had never been and, as I stepped foot ashore, I knew the things I had been told were true. I was welcomed by a calm tropical ambience and a captivating beauty that seeps into your soul whispering the relaxing sounds of lapping waves and gentle sea breezes into your ear. In recent years the Island has become increasingly popular amongst global travellers due to its natural beauty. Redang Island is, in fact, an archipelago comprising of 9 small islands all within a protected area known as the Terengganu Marine Park.

The first unusual thing you notice about Redang Island is that there aren’t any roads apart from the road from the airport; there is no land transport to get you from one place to another. But not to worry, a boat service is arranged by the resort providing transportation around the islands. I TOOK A FLIGHT FROM SINGAPORE TO KUALA LUMPUR CONTINUING ON TO KUALA TERENGGANU ON THE EAST COAST OF THE MALAYSIAN PENINSULA. FROM THERE I TOOK A FERRY ACROSS TO REDANG ISLAND.

and coral reefs that are home to teeming marine life such as shoals of bright coloured tropical fish, black tip reef sharks, cuttlefish and turtles. But then, finally, there is the crowning moment of the day, a time to sit with a cool drink and watch the amazing sunsets that have an incredible ability to put life into perspective, to calm your mind and nurture your soul. This was indeed an unforgettable holiday experience and, even though it was very short, the memory of this island will always stay with me.

As

one of Asia’s most vibrant and dynamic cities, there are always new places to explore and enjoy, and each trip is memorable. Some may think they know the place, where to shop and where to dine, but the fact is that in Singapore there is always something more to see and do, something you have not seen in the past. The city is perfect for short getaways and as a tourist magnet with its sci-fi buildings, glorious street food, museums, fine arts, concerts and all the latest entertainment hits. All made easy by the city’s modern transportation system. Of course, the first thing the visitor should always do is to savour some of the world’s best street food served, these days, not only on the streets but also in open-air coffee shops and air-conditioned food courts. My personal favourite is the Makansutra Glutton’s Bay near the Esplanade theatre. Here you can

enjoy a wide variety of delicious local specialities, such as Hainan chicken rice and Singapore chilli crab, while sitting under the stars with the Marina Bay as a picturesque backdrop. After dinner, you can watch the fascinating water and light show over the water at the Event Plaza along the Marina Bay Sands promenade. The 15-minute show is stunning with its gorgeous dancing water fountains, colourful visual arts, inspiring orchestral soundtrack and mind-blowing special lighting effects. For something totally different you take the world’s first vintage Vespa sidecar tour service, a tour that will take you off the beaten track breezing through unexplored open rooftops and down quaint alleyways where you’ll come faceto-face with the locals. They have several tour options depending on your interest; I chose a tour that took me cruising through Kampong Glam to have a look at some places I’ve never seen before.

If you happen to be in Singapore between the 9th June and the 13th August, take the opportunity to enjoy the “Great Singapore Sale” known to Singaporeans as the “GSS”. Bargain hunters and shoppers alike can buy branded items at discounted prices. Retailers offer steep discounts, sometimes up to 70 per cent off the original price. Talking of shopping, it would be remiss of me not to mention the high-end malls, the stores selling quality goods and the crowd-pulling annual mega-sale periods making Singapore a one-stop haven for travellers and shoppers alike. Everyone enjoys a trip to Singapore; it is a clean, well organised, modern city. It is easy to get around, excellent for food and shopping and with a never-ending supply of interesting things to do. What more could you ask for?

Some parts of the Palace, such as the Inner Court, are not open to the public. Thanon Bamrung Muang is Bangkok’s famous street of many Buddhas. If you wish to buy a Buddha, this is the place to go. Like many ancient cities, Bangkok was once a city with dedicated artisan’s neighbourhoods and Bamrung Muang Road, close to Bangkok’s present-day City Hall, was the street of Buddha makers, the street where all the country’s Buddha statues were made and here you will still find Buddhas of all kinds, standing, sitting, kneeling, sleeping, the come in all shapes and sizes. These days they are made in factories out on the fringes of Bangkok but the road is still the place where the statutes are sold. Once an elephant trail, Bamrung Muang Road was one of the first streets to be paved in Bangkok and is the largest centre

I was welcomed to the spa by the receptionist who asked a range of important questions and explained the products that would be used for my treatment. The cosy treatment rooms are well appointed and come complete with their own shower rooms. I decided to have the 60-minute detox body scrub. We started with a foot cleansing after which the skilful therapist applied the scrub compounds that they make in-house from pure natural ingredients. As the treatment began, I was pleasantly surprised to find the ingredients gave me a warm, tingling sensation that was very effective in releasing tension. Massage is not needed for this treatment, it is purely a scrub and the cleverly mixed compounds stimulate the body to ease stiffness and sore muscles while toning the skin leaving it smooth and fresh.

Prague Author Laini Taylor aptly describes Prague as “a fantasia scarcely touched by the twentyfirst century—or the twentieth or nineteenth, for that matter,” a place where Gothic and Baroque architecture mixes with 20thcentury modernism.

Its Classic Architecture Last December, I had the opportunity to visit Prague for the World X-Photographers Photography Exhibition, and the city of alchemy and gold, of myth and culture, welcomed us for a collective exhibition by 27 X-Photographers, along with talks and practical workshops led by the photographers themselves.

Dining In Prague

After some rest time at the hotel, I set off to explore the city. You can’t visit Prague without going to the Charles Bridge that connects the “Old Town” to the “Lesser Town”. A Gothic stone bridge, it is pedestrian-only, offering some of the best views of the old city and its castle complex.

Winter in Prague, with a light snowfall or the sharp angles created by a December sunset, creates an atmosphere of mystery and suspense. The city looks otherworldly when there are Christmas lights and markets everywhere; it appears to not quite belong in any particular era but more within a fantasy. With a host of splendid rooftop and boat restaurants, there really is no better way to take in the city’s winter skyline than over a wholesome dinner.

Crossing the bridge I moved on to the Old Town Square and, as luck would have it, I was there at the right time to see one of Europe’s best Christmas Markets (they hold one at Easter too), a market just as it would have been in medieval times. Then, with the Gothic spires of the Church of Our Lady before Týn, a major church since the 14th century, as a backdrop, I explored the Staré Město or Old Town.

Prague is truly a city of wonders and I wish I could have stayed for longer and, although I did get to visit the city of Brno, the short trip just wasn’t enough to see everything! It is safe to say that I wasn’t looking forward to leaving and the flight back to Singapore.

A city of castles and fortresses, the Basilica of St. Peter and St. Paul is just down the river in the Vyšehrad while across the river lies the St Vitus Cathedral, probably the best-known example of Gothic architecture in Prague. From here I decided to get off the beaten track immersing myself in classic architecture steeped in culture with Romanesque, Renaissance, Gothic and Baroque buildings all around, - although it is a bit disconcerting to see a seven-foot statue of Sigmund Freud hanging by an arm from the top of a building (it often gets reported to the police by worried passers-by who think they have seen a man hanging).
