Taking place throughout Waterdown Village from October 18 to 31, kids can get interactive with the popular scarecrow scavenger hunt, too. The event has become so wellknown, hundreds of visitors from surrounding regions now come to check out the wacky fall creations.

Vegetable NAPOLEON

Dive into culinary innovation with Kamoosh Bistro's celebrated Vegetable Napoleon recipe, a masterpiece that promises to transform your perception of vegetarian cuisine.

INGREDIENTS

Butternut Puree

• 1 cup tamped roasted butternut squash

• ½ Fl oz extra virgin olive oil

• ½ Tsp of Kosher salt

• ¼ Tbsp of ground black pepper

• ¼ Tbsp of ground cinnamon

• 1 Fl oz ghee (brown preferred)

• 1/ 8 cup 35% cream

• ¼ Tsp of fresh garlic puree

Gorgonzola Sauce

• 75 ml tomato paste

• 75 ml 35% cream

• 8 Fl oz of Italian Gorgonzola cheese

Grilled Vegetables

• Four ½ inch thick rings of eggplant

• One large red pepper, cored and quartered

• Twelve ½ inch thick diagonal cut of yellow zucchini

• Twelve ½ inch thick diagonal cut of green zucchini

• Four small portobello mushrooms

METHOD

1. Keep skin on your butternut and remove all seeds. Sprinkle the extra virgin olive oil on the flesh and season with kosher salt and ground black pepper. Place butternut face down and roast in a convection oven at 375 degrees C for 20 – 30 minutes until fork tender. Once cooked, let it cool & scoop out the flesh and place in food processor. Add salt, pepper, cinnamon & cream and puree till smooth. Add the hot liquid brown ghee at the end & pulse till smooth.

2. Crumble Gorgonzola cheese in a sauce pan on low heat with cream. Stir constantly until all cheese is melted and you have a very smooth consistency. Take off heat, add tomato paste and stir until smooth while you bring it back on the low heat, and you achieve a darker orange color.

3. Toss all vegetables in a bowl, sprinkle with some extra virgin olive oil, kosher salt & ground black pepper & grill. Make sure the eggplant is cooked and not spongy.

4. To plate the dish, start by placing one grilled eggplant down on your plate, followed by red pepper, three yellow zucchini as one layer, three green zucchini as one layer & one portobello mushroom. Make sure between each layer of the grilled vegetables, you rub a thin layer of the butternut puree. Pour the hot gorgonzola sauce on the vegetables. Put some toasted almond slices above the sauce. Add chiffonade of fresh basil on top and enjoy.
