Looking for something different for your group? Be sure to get a catered Turkey & Dressing Sandwich while you are in Dubuque. Here is the secret recipe you can share with your guests.
INGREDIENTS
1 (10 to 12 pound) turkey
2 boxes of corn bread dressing mix
1 stick of butter
2 medium onions, chopped fine
2 stalks of celery, chopped fine
1 teaspoon of pepper
1/2 teaspoon of salt
1 (48-ounce) can of chicken broth
Reserved turkey juices Hamburger buns

DIRECTIONS
Roast turkey according to directions; reserve all juice, remove all meat from the bones, and shred. (Can be done well in advance and frozen.)
Over medium heat melt butter, add celery and onion, cook until onions are translucent. Add chicken broth and turkey juice. Add stuffing mix. Add shredded turkey and mix well. Keep warm, covered in slow oven until serving time. Mixture should be sticky. Add more chicken broth if it becomes dry. Serve hot on buttered buns. Makes enough for 50 to 75 sandwiches served on buns.
