Jaggery, like sugar, it is made from sugarcane and is often referred to as unrefined sugar that’s because it is manufactured without isolating the molasses. After extracting and filtering the sugarcane juice, it’s cooked until the mixture turns into a thick, sticky brown paste. After that, the paste is poured into moulds and set aside to cool.

The colour of jaggery fluctuates from light, golden brown to dark brown because of the type of sugarcane and the juice in it. It is used to make various jaggery products. It might not seem attractive to some, but it has a number of health benefits to consider. It's often confused as brown sugar because of its colour.
