And in the spirit of gratitude, we’re continuing our work to support local food resources, where you can give back or find fresh produce. Ingredients:
THE PERFECT PIE CRUST RECIPES
2 Cups All-Purpose Flour
1 teaspoon Salt
1 table spoon Sugar
6 tablespoon butter
6 tablespoons shorting
6 to 8 tablespoons of ice water
For a more crisp crust subsitute water for:
3 table spoons of water
3 tablespoons of vodka
1 tablespoon lemon juice
Directions:

Dough Blender
Cutting Board
9 in. Pie Pan *
*Pan may be smaller but not bigger.
Mix in a large bowl your 2 cups all-purpose flour, 1 teaspoon salt, and 1 tablespoon sugar. Then cut it with the dough blender and your 6 tablespoons butter, 6 tablespoons shortening, and 6 to 8 tablespoons of water (or your 3 tablespoons of water, 3 tablespoons of Vodka, and 1 tablespoon of lemon juice) The mixture will look textured and crumbly.
Wrap your pie crust in plastic wrap and place it in the refrigerator for 20 or more minutes while you make your pie filling.
After your pie crust has plenty of time to chill, cut the dough into two equal halves. Roll one of the balls of pie crust out until it is 1/8th of an inch thick. You can then wrap it around your rolling pin and unroll it onto your pie pan.
Shape the crust to fit inside the pie pan up the sides. Then take a fork and poke holes in the bottom of the crust. This lets the steam out as the pie bakes.

Roll out the remaining pie crust dough. Then wet the lower crust and place the top crust on. Create a pattern with the back of your knife pressing the top and bottom crusts together. Lastly, poke some holes in the top of the pie crust as well. If you would like, you can roll and cut out decorations made of extra crust dough. Just remember to wet the back of the dough to better connect the dough piece.
Now you are ready to bake!

APPLE PIE FILLING
Ingredients:
5 tart peeled apples
1 cup of sugar
2 tablespoons Flour
1/2 teaspoon of Cinnamon
1/4 teaspoon of salt
1 tablespoon of apple cider
vinegar
1 tablespoon of Lemon Juice
Directions:
Peel and slice you apples. Soak them in water with a Tablespoon of Lemon Juice. This will prevent the first apples cut from turning. Mix in a large bowl 1 cup of sugar, 2 tablespoons flour, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, and 1 tablespoon vinegar. Now drain the water off the apples and mix them with the spices. Now you can fill your pie crust. Fill the pie crust with the apple mixture. Then place about four chunks of butter on top of the apple filling. This will give the the filling a rich flavor. When filling the crust you may not need to use all the filling so be careful to not over fill it.
PUMKIN PIE FILLING
Ingredients:
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 ounces) 100% Pure
Pumpkin
1 can (12 fluid ounces)
Evaporated Milk, (Or substitute with equal amount Lactose-
Free or Almond Cooking Milk)
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Directions:
Mix sugar, cinnamon, salt, ginger, and cloves in a small bowl. Beat eggs in a large bowl. Stir in pumpkin and sugarspice mixture. Gradually stir in evaporated milk. Pour into pie shell. Bake in a preheated oven at 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 minutes or until knife inserted near center comes out clean. Cool on a wire rack for 2 hours. Serve immediately or refrigerate.

4 Florida bell peppers, any color
1 tablespoon olive oil
1 teaspoon all-purpose seasoning
Sea salt and black pepper, to taste
Directions:
Slice peppers in quarters. Toss in olive oil, seasoning blend, salt and pepper. Bake at 375 degrees for 8 minutes.
Fresh Tip: Roasted peppers can be stored whole or chopped, and in the refrigerator for up to one week. They can also be frozen, used in pasta salads, stews, soups, casseroles or pureed for dressings and sauces.

SWEET CORN AND SASAUGE STUFFING

Ingredients:
1 ear Florida sweet corn, kernels removed
1 pound ground sausage
3/4 cup carrots, chopped fine
3/4 cup celery, chopped fine
1 medium onion, chopped fine
2 tablespoons fresh herbs (such as parsley, thyme, sage)
1 tablespoon all-purpose seasoning (your favorite)
3 cups cornbread, crumbled
1 cup vegetable broth
1 egg, beaten
Sea salt and fresh ground pepper, to taste
Directions:


Preheat oven to 350 degrees. Preheat a large cast iron skillet (or any other oven-safe pan) over medium-high heat. Brown the sausage, then add corn, carrots, celery, onion, allpurpose seasoning and fresh herbs and saute for 5 minutes or until vegetables begin to soften. Remove the vegetables from the heat and pour the mixture into a large bowl. Add the crumbled cornbread and toss to combine. Add vegetable broth until mixture is moistened. Taste and adjust seasoning with salt and pepper if needed before adding the beaten egg. Pour the mixture back into the cast iron skillet and bake for 45 minutes or until golden brown. Serve warm.

The tradition of fall harvest and feasts is deeply rooted in human history, stretching back thousands of years These celebrations, often marking the end of the growing season and the gathering of crops, have played a vital role in many cultures worldwide The fall harvest represents a time of abundance, community, and gratitude, with feasts serving as a way to celebrate the success of the agricultural year and prepare for the winter months ahead
Ancient Origins: The concept of a harvest festival is nearly as old as agriculture itself, which began around 10,000 years ago. Early agricultural societies recognized the importance of the harvest season as a time to gather the crops they had nurtured through the growing season These communities often held ceremonies to honor the gods or spirits they believed controlled the weather, fertility of the soil, and the success of the harvest.
Ancient Egypt: In ancient Egypt, the festival of Opet was celebrated in honor of the god Amun, who was believed to ensure the fertility of the land This festival occurred during the inundation of the Nile, which was a crucial period for Egyptian agriculture The inundation brought nutrient-rich silt to the fields, ensuring a bountiful harvest. The celebration included feasting, music, and processions, all meant to ensure the continued favor of the gods
Ancient Greece: The Greeks held the Thesmophoria, a festival in honor of Demeter, the goddess of agriculture and fertility. This festival was an important part of the Greek religious calendar and was celebrated in late autumn It involved rituals to promote the fertility of the land, as well as feasting and offerings of the first fruits of the harvest to Demeter
Medieval Europe: In medieval Europe, harvest festivals became a central part of rural life. The end of the harvest season was marked by the Harvest Home festival, also known as the "Ingathering " This celebration typically took place in late September or early October, after the last of the crops had been gathered. The festival included feasting, dancing, and the decoration of homes and barns with the last sheaf of corn, which was often saved and used as a charm to ensure good fortune in the coming year.
One of the most well-known medieval harvest traditions was Lammas Day, celebrated on August 1st. This Christian feast day, derived from the Anglo-Saxon "hlaf-mas" or "loaf-mass," marked the first wheat harvest of the year. On this day, loaves of bread made from the new crop were brought to church to be blessed
Indigenous Traditions in the Americas: Many Indigenous cultures in North America also had their own harvest celebrations long before European contact For example, the Haudenosaunee (Iroquois) people celebrated the Green Corn Festival, a thanksgiving event held in late summer when the corn was ready for harvest This festival included dances, feasts, and ceremonies to give thanks to the Creator for the bounty of the earth.
Similarly, the Wampanoag people, who lived in what is now the northeastern United States, held a harvest feast that later became intertwined with the American Thanksgiving narrative. This event, held in the fall, was a time for giving thanks for the harvest and sharing food with the community.
Thanksgiving and Modern Harvest Festivals: The modern Thanksgiving holiday in the United States and Canada has its roots in these earlier harvest celebrations. The first American Thanksgiving is often traced back to 1621 when the Pilgrims at Plymouth celebrated a successful harvest with a feast that included the Wampanoag people However, it wasn’t until the 19th century that Thanksgiving became an official holiday in the United States, largely due to the efforts of Sarah Josepha Hale, who campaigned for a national day of thanks.
Today, Thanksgiving is celebrated with a large feast that typically includes turkey, stuffing, and various side dishes made from seasonal ingredients like squash, cranberries, and pumpkins. While the religious aspects of earlier harvest festivals have largely faded, the theme of gratitude remains central to the holiday
In other parts of the world, similar harvest festivals continue to be observed. In the UK, the Harvest Festival is celebrated in churches and schools, with collections of food given to those in need. In Germany, Erntedankfest is a religious holiday celebrated in late September or early October, featuring processions, church services, and a feast
