Welcome I

t is hard to believe spring is almost done and summer is right around the corner. Summer activities begin in mid-May, and before long, we will be enjoying the July 4 festivities, followed by the fireworks display on the Driving Range. We will have those wonderful long summer days with BBQ's and spending time at the pool. What better place to spend your free time than here at The Peninsula Club?

As we head into the busy season with all the hustle and bustle, we would like to highlight and remind everyone of a few safety matters around the club. With so many events taking place and the great outdoor weather, the parking lot will see an increased amount of traffic volume. This means our membership of all ages will be out and about walking from cars to the clubhouse, or to an activity on club property. Please make sure everyone is following the posted speed limit signs, taking extra caution when taking turns, and backing up out of a parking spot. Remember, this includes when traveling in golf carts, as well. Please refrain from leaving pets inside your vehicles for an extended period, as they can bark and become distracting to those around them. And finally, always be considerate of music when driving through, summer means windows or convertible tops down, and music carries. Last item and then the rule police will drive away. Please remember the Mulligan’s Patio is a place for members of all ages. We ask that kids refrain from running around the tables, please use the grassy knoll as a fun area away from other diners as we look to burn off some of the youthful energy. Please enjoy yourselves here at the club, participate in all the great activities, and make memories. We are looking forward to a summer of fun and can’t wait to see you at the club. Chocolate Mousse

Recipe

6 oz Bittersweet Chocolate 3 TBSP Butter, Room Temperature 3 Each Eggs, Separated ½ tsp Cream of Tartar ¼ Cup + 2 TBSP Sugar ½ Cup Heavy Cream ½ tsp Vanilla

1. In a medium stainless steel mixing bowl, melt the chocolate and butter over a double boiler. 2. In a separate medium mixing bowl, beat egg whites until foamy. Add the cream of tartar and ¼ cup sugar and beat until soft peaks. 3. In a small mixer with the whip attachment, beat the cream until thick. Add 2 TBSP sugar and ½ tsp vanilla. Beat until stiff. 4. Fold the Egg white into the chocolate mixer then fold the cream into the chocolate mixture, folding not stirring so it does not deflate.

DIRECTIONS:

1 lbs Strawberries (stem removed then halved) ½ Cup Sugar 1 Each Lemon, Juice Only 1 tsp Vanilla Extract

DIRECTIONS:

1. Combine all ingredients in a small saucepan. Place on low heat and simmer for about 15 minutes until the berries break down. 2. Strain through a fine mess sieve to remove the seeds. Season slightly with salt.

ASSEMBLY:

1. In a martini glass, fill 2/3 the way up with mousse. Add 2 TBSP sauce and garnish with crushed Oreo.

This camp is designed for the more experienced junior golfers who are actively competing in golf tournaments.
