Here’s what we can tell you about the Technicians at Mighty Auto Pro, and why these things are very important!

1. Drug Tests, Background Checks and Driver’s Records Checks with high standards are required for everybody on the Mighty Auto Pro Team. After all, your safety, and the safety of your family rest on the quality of repair performed by the Technician working on your car.

2. ASE Certified – Our Technicians are all Automotive Service Excellence (ASE) Certified. In our industry there are literally no requirements to call yourself a Technician. Our Technicians voluntarily test and maintain the high standards required by ASE and we have two Master Technicians on staff. The highest level of achievement possible.

3. Continuing Education – In today’s vehicles technology is changing at lightning speed. It is critical that Technicians keep up on the latest developments. All of our Technicians complete a minimum of 40 hours per year, with many completing much more.

4. Tool Investments – Not only does Mighty Auto Pro invest thousand upon thousand of dollars to keep up with state of the art tools, computer programs and software to work on today’s vehicles, the Technicians invest in their own personal tools as well at Mighty Auto Pro.

Many times, people will ask, “what is your hourly labor rate?”. The honest answer is what difference does it make if the Technician working on your vehicle is not properly qualified to perform the job? If the hourly rate is $50.00, but the Technician is not properly trained and qualified, and does not have the proper tools, it may very well take him 8 hours to do a job that a qualified Technician with the proper tools could do in 2 hours.

Sausage Parmesan Palmiers

also known as elephant ears

2 Tbs Butter

2 onions, sliced

8 oz breakfast sausage

1 sheet frozen pu pastry – thawed

½ cup grated parmesan (not shredded, grated to a powder)

1 large edd

Put the butter and onions in a skillet over medium heat and brown the onions until dark, 40 to 45 minutes. Remove from the skillet and set aside. Add the sausage to the same skillet and crumble; cook until done, 5 to 8 minutes. Roll the pastry out to 10 by 12 inches. Sprinkle the cheese over the pastry, then the sausage, then the onions. Roll both sides toward the center of the rectangle until they touch. Chill in the fridge for 20 minutes or place in the freezer for 10 minutes.

Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment. Slice the pastry into 1/3-inch slices and transfer them to the prepared baking sheets. Mix together the egg and 1 tablespoon water in a small bowl and brush the mixture over the top of the slices. Bake until golden brown, about 20 minutes.

Cheese Ball Wreath

1 Pound Cream Cheese – at room

2 cups shredded Cheddar cheese

2 tsp Worcestershire sause

Kosher salt and freshly ground black pepper

½ cup pickled picuante

(Peppadew) peppers – nely chopped

½ cup fresh parsley – nely chopped

¼ cup nely chopped fresh Chives

Creckers, sliced bread or crudites, for serving

Line the inside of a 6-cup Bundt pan with plastic wrap. Process the cream cheese, shredded cheese, Worcestershire sauce, 1/2 teaspoon salt and few grinds of pepper in a food processor until smooth. Empty the mixture into a medium bowl, and fold in all but 2 tablespoons of the chopped peppers.

Spoon the cheese mixture into the prepared Bundt pan; pack it in, spread into an even layer and cover (or simply form the cheese mixture into a ball and wrap tightly with plastic wrap). Refrigerate until chilled, at least 1 hour up to 2 days.

Uncover and invert the cheese mold (or unwrap and transfer the ball) onto a serving platter. Sprinkle with the chives and parsley to completely coat the wreath, and garnish with the reserved 2 tablespoons peppers. Serve with crackers, sliced bread or crudites.
