While there’s no shortage of delectable eats to energize the whole family for the next big hike, ski, or climb, Jasper’s culinary scene is itself a complex, gastronomic gem. Sample inventive twists on locally sourced ingredients like bison, elk, or Saskatoon berries; find comfort foods to nourish the soul; or pair dinner with a quintessential Jasper experience like stargazing.

Cuisines from across Canada and the world mix and mingle in this northern pocket of the Rocky Mountains to bring you mouth-watering flavours capable of satiating even the most elevated palates. Today’s culinary arts are seasoned by Jasper’s rich history off the beaten path. Many restaurants continue to sponsor community dinners to this day, inspired by communityoriented traditions dating back to when a tardy cargo train meant local families would have to group their rations and create meals for everyone.

Jasper’s food scene welcomes everyone, and those with dietary limitations or preferences will find they’re easily accommodated with numerous options throughout town. In the summer, we always recommend reservations — as well as the patios, which are perfect for peak (and people) watching. When winter rolls around, indulge in ultimate coziness by the fireplace with a craft beverage and your favourite person.

EAT LOCAL

POUTINE

A culinary gift from Québec, poutine combines french fries, cheese curds, and gravy to create the ultimate comfort food. Find this classically casual dish on most pub-style menus, like DE’D DOG BAR AND GRILL, or sample local creativity at the JASPER IN JANUARY POUTINE SHOWDOWN

BANNOCK

A traditional food of the Indigenous Peoples, BANNOCK is a delicious blend of flour and water fried over a fire. Recipes vary and while many today use wheat flour, historically Bannock may have been made with corn or nut meal and flour from ground plant bulbs.

Here’s a recipe prepared by Métis interpreters for visitors to Rocky Mountain House National Historic Site. Enjoy!

BANNOCK RECIPE

ingredients :

3 cups | 460 g flour

3 tsp | 15 g baking powder

3 tbsp | 45 ml oil

1 cup | 250 ml cold water

directions

Combine flour, baking powder and oil into a bowl and stir until mixed well. Add cold water and knead well. Roll into a ball, cover for 10 minutes.

BISON

This iconic animal has been a key ecological player in the region for an estimated 100,000+ years! Try it for yourself with slow braised Alberta bison at the OLIVE BISTRO AND LOUNGE, a bison burger at the INN GRILL, or a top sirloin bison steak from O’SHEA’S RESTAURANT & SPORTS LOUNGE

Press ball onto a hot long-handled cast iron fry pan over an open fire. Cook for 15 minutes or until golden brown. Score into slices while still warm and serve with your favourite jam or wild berries.

When the days turn long and sunny the patios start calling. Come winter, it’s time to cozy up by the fireplace with a warm beverage. Jasper has an abundance of both breezy, scenic patios and gorgeous, comforting fireplaces. These special spots are not to be missed.
