A WORD FROM THE TOPCITY RISE EDITOR: For several years, this ornament was my favorite one to hang on the Christmas tree. It filled me with hope and peace as I hung it and served as a reminder of such great love...until six years ago, while trying to adjust an ornament I bumped this one and frantically tried to catch it before watching it shatter into thousands of little pieces on the hardwood floor. That was the grain of sand that broke the dam. I burst into tears while the weight of that year melted me to the floor. In that moment I couldn't breathe. I was trying to be strong for my whole family, but the weight was just too much. I was worn. Broken. Shattered beyond what I could recognize in the mirror. After sobbing, crying and praying that He would pick us up out of the depths I got myself together, picked up a broom and began to sweep up the mess before the little ones woke from their nap. All but one piece of the ornament was shattered beyond recognition...as I reached to pick it up, that one piece of a shattered ornament brought me to tears again as clarity swept through my mind. Baby Jesus. Not a scratch. Not a crack. Nothing. Everything else was gone but he remained.

A few years ago we went to Hobby Lobby for our, now 15-year family tradition and as each of the kids picked out their ornament, I held my breath as something caught my eye...I had searched through the aisles of ornaments for 3 years and had just about given up but there He was. He is faithful. Even when everything seems like it is falling apart, He remains. He is my peace when I feel lost in the depths. He is the thrill of hope when I am weary from this world's burdens. He is my joy when I lack understanding. Two years ago this month, the first publication of TopCity Rise was released...2 weeks prior I lost my father, 1 week after we lost my mother-in-law and soon following my grandfather. So, as I unwrapped the ornament again this season there He was. Through the years of trials, He has revealed himself again and again....It was as if he said..."I'm here. I know everything is scattered and seems lost. But you are not alone. I'm here. Let me hold you in this darkness." May your holiday season bring hope, peace and joy to you and yours even if chaos seems ever-present. Merry Christmas from my family to yours!

Thriving Through The Holidays By: Dr. Corey Schliep, PHD., LCMFT

The holidays season is quickly approaching and with it the joys, celebrations, regrets, pains, and grief that can accompany holidays. With the culture-wide traumas suffered in the past several years, hearts and minds may be filled with happiness and sorrow. As we try to hold on to joy between these two realities, keep these thoughts in mind to minimize holiday stress.  Plan in advance: Prioritize the events that are most meaningful and make a plan to attend those events, leaving room rest. Set realistic expectations for the events you can enjoy without feeling overburdened. For what you want to be a part of and make the necessary plans to help those plans come to fruition.  Identify your boundary skills: Try to anticipate “emotional landmines” that may accompany certain interactions or activities and give yourself a planned “out” to make a quick exit if needed. Talk with your support system and arrange a signal to use if a quick departure is needed. Drive separately if needed so that you have the flexibility to leave when it is right for you.

5

TopCity Rise  Recognize the holidays can bring up grief and loss issues. The holidays may not feel “normal” this year and it is o.k. to grieve the loss of how things used to be. Utilize your resources for support, schedule purposeful self-care, create a new tradition, make healthy choices to avoid numbing emotions with alcohol or drugs. Extend grace to yourself and to well-meaning, but possibly hurtful people, who encourage you to get through these feelings quickly. Plan healthy responses to anticipated triggers to avoid emotional responses. Your thoughts and feelings deserve to be valued. Consider attending your local Grief Share groups for additional support.  Share your wish list: Remember the people who have said “If you need anything”, they usually mean it. Let your family and friends know what things would be most supportive of you during the holidays. It is ok to admit you may not be able to do everything you have done in holidays past, communicate this with your support system early and often! Remember, you are not on this journey alone, and it is a marathon not a sprint. Do not forget to recharge your battery for the journey!

Legacy Craftsmanship: The Artistic Journey of a Local Woodworker

Local artists are the heartbeat of creativity in our community, breathing life into the everyday with their unique skills and passions. Among these artisans is a seasoned woodworker, Chris Wagner. He was born and raised in Naugatuck, CT, and found his artistic calling in the heart of Kansas. With 23 years of marital bliss to his wife Becky, three stepchildren, and five grandchildren, his journey transcends family bonds and resonates with the spirit of community. Woodworking skills, passed down from generation to generation, became the foundation for his venture into the world of craftsmanship. "Growing up, I was always in my father's workshop watching him make all kinds of wood crafts. After raising our two grandchildren, I had a lot of time on my hands, so I dusted off my tools, purchased a laser engraver, and started making items," he shared. This passion quickly gained momentum as friends, family, and coworkers started requesting his creations after seeing them showcased on Facebook.

12

TopCity Rise

Navigating through a spectrum of handmade delights, Chris modestly admits, "I am always trying to come up with new items to make or to laser. I would say cutting boards, charcuterie boards, coasters, and game boards are among the best-selling items." Each piece is a testament to the artisan's dedication and creativity. In his commitment to support local suppliers, the craftsman collaborates with vendors like Adam Moser for charcuterie boards, using kiln-dried slab wood. "One of my local suppliers I use to make my charcuterie boards is Adam Moser. When it comes to my game boards, I will purchase my marbles and dice from Moon Marble," he explained, emphasizing the importance of fostering local partnerships. As the holiday season approaches, the woodworker plans to participate in various vendor pop-ups, including events at Milk and Honey Coffee Shop, Happy Bassett Barrel House Craft Fair, and Santa Paws. These engagements not only showcase his craftsmanship but also contribute to the vibrant local artisan scene.

13

TopCity Rise

While this woodworker never envisioned himself as an entrepreneur, he acknowledges the joy derived from making people happy. "I love to make people smile. I want my customers to feel like they got a great product at a great price," he expressed. The journey, marked by gratitude for the support of family, friends, and faith, is a testament to his humble beginnings and steadfast commitment. In addition to the thriving business, the woodworker actively engages in philanthropy. Belonging to the Jayhawk Area Council Boy Scouts and serving as the Advisory Chairman for the Salvation Army, he generously donates items to small non-profit groups for charity raffles and fundraisers. His ethos of giving back echoes his father's teachings: "My father raised me to give and then give more." Looking ahead, the woodworker aspires to leave a legacy of honor, kindness, and dedication to doing the right thing. "I want to carry out some of what my dad did. I want to honor My Lord and Savior. I always want to do the right thing," he shared, encapsulating the values that drive his artistic pursuits. For this artisan, the business transcends personal gains. "I have met many new friends and acquaintances. I have been able to use my abilities to touch people's lives with my work. It also allows me to have a little extra funding," he reflects, highlighting the profound impact his craftsmanship has on both his family and the community at large. As he continues to craft pieces that tell stories and create connections, Chris' journey stands as a testament to the transformative power of artistry within our local community.

Hot Buttered Rum for Two By: Aaron Zentner Photos: Aaron Zentner After the warmer days of fall have passed and the cool days of winter blow in, I find myself looking for something warm to take the edge off. If you’re spending a night in with a loved one, a warm glass of buttery overproof liquid is exactly what the doctor ordered to warm things up. Hot buttered rum has flown under the radar for far too long and I am writing the article to actively put an end to that. Here is my preferred recipe for hot buttered rum, and while it is over the top in a lot of ways, the juice is absolutely worth the squeeze. This recipe is built to complement the inyour-face banana-y, funky flavor of an overproof Jamaican rum (in which I recommend something molasses driven like Hampden Overproof). Not a fan of rum? Sub it out for your spirit of choosing or whatever you have on hand. Bourbon? Rye? Cognac? Barrel aged gin? Anything strong works.

Hot Buttered Rum for two: 3 oz Hampden Overproof Rum 1 oz Winter Spice Syrup* 2 tbsp Butter Batch** 8 oz Hot Water

Building the Cocktail (Serves two): Add 1 oz of Winter Spice Syrup and 2 tablespoons butter batch into a small mixing bowl. Add 8 oz of hot water and whisk thoroughly to incorporate syrup and dissolve butter. Lastly, add 3 oz Hampden Overproof Rum or spirit of your choosing into the mixture. Portion into mugs and enjoy.

15

TopCity Rise *Winter Spice Syrup: 300g or 1 1/2 cups Cane Sugar 150g or 2/3 cups Water 5 Whole Cloves 10 Allspice Berries 1 Cassia Cinnamon Stick 2 Star Anise 10 Black Peppercorns

*Winter Spice Syrup: Begin by toasting cloves, allspice berries, Ceylon cinnamon, star anise and black peppercorns over low heat in small sauce pan. Once lightly toasted, add cane sugar and water to sauce pan and bring heat up to medium high. Whisk until sugar is well dissolved and spices are well infused. Pour through a mesh strainer to remove spices, place in a syrup bottle or container and refrigerate. This syrup will last 3-4 weeks under refrigeration. **Butter Batch: 227g or 1/2 lb Softened Unsalted Butter 80g or 1/3 cup Refined Sugar 1/2 tsp Fine Sea Salt 1 tsp ground Nutmeg 1 tsp ground Mace 1 tsp ground Clove 1 tsp ground Ceylon Cinnamon 1 tsp ground Ginger 1/2 tsp ground Cayenne Pepper (optional) 1 Madagascar vanilla bean

**Butter Batch: Begin by adding softened butter, refined sugar and salt into a mixing bowl or stand mixer. If any spices you have purchased are whole, blitz in a blender into a fine powder. (Note: it is very important that the spices are well ground in a fine powder. Texturally speaking, large chunks of spice are not desirable in this cocktail.) Split vanilla bean down the center lengthwise with a small knife and scrape seeds. Add nutmeg, mace, clove, Ceylon cinnamon, ginger and vanilla seeds into a bowl and thoroughly incorporate with whisk or rubber spatula. Place butter batch in container. This will keep under refrigeration for two months) Tools Needed: ● Kitchen scale ● Measuring spoons ● Small Kitchen Knife

● Small sauce pan ● Whisk ● Measuring cups ● Cocktail jigger ● Blender or spice grinder (optional)

16

● Mixing bowl ● Mesh strainer ● Stand Mixer (optional)

A Spread of Local Flavor Embracing the joyful spirit of the season, we couldn't be more thrilled to bring you a collection of well loved flavors from local businesses! Our community sparkles with an array of splendid small businesses, each an expert in delivering delectable tastes. To infuse your holiday gathering with magic, we've curated a list of holiday essences perfect for constructing the perfect charcuterie board. This not only creates a dazzling spread but also lends support to the local gems that make our community shine during this festive time! Now, discover a few tips to craft your own magical charcuterie board: Variety of Colors: Opt for a diverse selection of colorful vegetables and fruits to enhance the visual appeal of your display. The more varied the colors, the more visually pleasing the arrangement will be. Appropriate Vessels: Ensure you have suitable bowls to accommodate items with high juice content, such as pickles, as well as those prone to rolling, like olives, or dips that require containment. Strategic Assembly: Begin by placing bowls and containers on the board. Follow this by arranging larger items like cheese, meat, pickles, and vegetables. Then, fill in the gaps with smaller items such as nuts and blueberries. Be mindful of pairing items like cheese and meat on different sides of the board. Thoughtful Evaluation: Assess the space on the board for dry goods like crackers, popcorn, and bread. Distribute them strategically or, if space is limited, consider placing them on a separate plate or in containers on the side. This approach also helps maintain the crispness of dry goods if the board needs refrigeration before serving. Article: Topeka Foodies Author: Lesleigh Hodam Photo: 5 Senses Photography

In the summer of ’23 Carmen opened La Creperie Co. “I like the flexibility of changing locations and catering to events. I wanted to bring something new and creative to the Topeka area-bring diversity. I'm originally from Mexico City and love to try different crepes. Crepes are such a versatile food you can eat any time of day! I grew up in the kitchen with my grandmother, grandfather, my mom and several aunts and uncles. Cooking has always been a part of how I was raised. I think cooking is just a part of how my family operates and its expected. As we get older and busier with life we tend to spend less time in the kitchen but recipes dishes and aromas are lodged in our memories forever. I know they are for me”.

MAD Marketing recently interviewed Carmen: What are your top sellers?: “We have a tie- chicken & waffles and berries & cream crepes are our top sellers. Several family members are part of the La Creperie Co. team. My family has always been very supportive and we’re definitely a family owned and operated small business”. When asked what advice she'd give for someone wanting to start a small business: “Have a plan. Make sure you're organized and do your research; definitely, seek help if needed. Topeka has so many resources to help, so take advantage. I'm happy to personally refer anyone needing help. I love this community and I'm here for all of its members. We’d love for you to follow our page and stay tuned for upcoming events and menu additions”. You can find Carmen and her crepes at Blue Jazz Coffee Roaster’s event on December 9th. Tickets will be available on Blue jazz website. Favorite local restaurants: Owner of La Creperie Co., Carmen Romero-Nichols

“Lonnie Q’s, Milk and Honey, Lupita’s Tacos food truck. Can you tell I live on the east side of town? My personal favorite crepe is the berries and cream, but I have more flavor ideas that aren't on the menu yet, so that may change. Our plan is to continue growing and who knows where that will take us!”

TopCity Rise Favorite collaboration thus far: “I love the collaboration we did with The Wheel Barrel- from the support we received while working with their staff and the love we received from everyone who attended. It was a memorable event. It probably didn't look like it at the time because we had a big spill inside the trailer shortly before opening. This put us really behind on orders but I'd have to say that was my favorite event so far even with all the stress of having to catch up”. Carmen is passionate about our community and serves and supports our community in a number of ways, like: Serving as Vice chair for The Human Relations Commission for the city of Topeka, volunteers for Habitat for Humanity and the Kansas National Guard, donates regularly to Helping Hands Humane Society and Helping Women Period. It’s no wonder she is a recent nominee for Topeka’s 20 under 40. Please give La Creperie Co. a follow on Facebook and Instagram!
