INVEST IN YOURSELF! YOU Do you ever struggle to justify spending money on yourself?

Suggested reading:

Studies show that most people can easily part with small sums of cash to “treat” themselves. But it can be harder to justify bigger expenditures for ourselves, regardless of whether the expense is something we simply want or something we genuinely need. Feelings of guilt arise, along with the ugly little voice in the back of our heads that tells us we’re being selfish.

A common tactic in therapy is to put your best friend in your shoes, so to speak.

Imagine if your friend was debating on whether or not they should spend money on themselves: wouldn’t you tell them to go for it? Wouldn’t you assure them that they’re not being selfish at all, that they deserve it?

ADDRESS NEEDS

If you truly need something, be it a medical procedure or reliable transportation, spending money isn’t a matter of selfishness or greed; it’s a necessity. Paying for a necessity actually benefits everyone around you. You know how airlines advise you to put on your own oxygen mask before helping others? It’s the same with your everyday needs; if you aren’t taken care of, you can’t take care of anyone else.

INVESTING IN YOUR CAREER

Investing in your work life can be rewarding on many levels. The costs of professional development, memberships to networking groups or going back to school can pay off in the long run. More than that, they help broaden your horizons and enrich you as a person. That’s worth the price of admission!

INVEST IT/SAVE IT

Many people struggle to save money because they feel like that money should be put toward more immediate concerns. While paying down debt and meeting your needs is important, saving for the future is absolutely essential. Consider it paying your future self. Moreover, you should have a small emergency savings set aside in case everything in your life goes sideways. “What if” is an uncomfortable question, but it’s worth asking: “What if the worst happens?” You deserve to have the security that an emergency fund could provide.

FEEL AMAZING

One area many people struggle to spend money on? Their appearance. It’s hard to justify these expenses as anything but self-serving. But... what’s so bad about that?

Confidence spreads throughout all areas of your life. Consider it an investment in your power!

MAKE MEMORIES

Experiences are priceless – even if your favorite airline seems all too eager to put a price on your fun. While you shouldn’t go into debt to have fun, you should set aside money and PTO to ensure that you are able to enjoy your one incredible life!

Ready for some money tips that feel a little more advanced? While we'd never claim to have it all figured out, we can share the advice we've gotten that felt like an "AHA!" moment.

Create a Personal Financial Calendar Making time to think about your finances sounds about as much fun as scheduling a root canal. But just as you keep track of doctor's appointments and vehicle maintenance, you must keep track of financial to-do list items. Some money maintenance tasks, such as quarterly taxes, are regular and have fixed due dates. But much of minding your money is up to you to remember to tackle. Rather than leaving it up to chance, why not make calendar reminders for yourself?

Here are some items that you may want to set aside a date to consider or handle. If you're not sure which are necessary for you, ask your trusted financial expert!

Pull your free annual credit report Schedule a meeting with your financial advisor(s) Make your maximum retirement contribution Review your financial goals with your family Assess and plan for quarterly/yearly taxes Review insurance policies Review your FSA/HSA Finalize charitable contributions for the year

Set Clear-Cut Goals I think it's a fair bet that we all aim to save more money and grow our wealth. But it's hard to stick to goals—or celebrate your successes—if you don't have a clear picture of what winning looks like.

Skip nebulous, poorly defined goals. Instead, set specific goalposts with real numbers and timelines. We suggest sticking to smaller, more manageable objectives with shorter timelines. This allows you to see your success in real time and feel confident that it is possible! When you hit your target, set the next one and keep that forward momentum.

Institute a (Reasonable) Shopping Policy Impulse shopping is a reality of our lives—it's unavoidable.

So, rather than feeling guilt and dread, we encourage you to create a few rules or mantras that can help you navigate these impulses just a little more mindfully. That way, you can be sure that the things you buy will be used and loved, with no regrets!

For many shoppers, it's helpful to have a list of "nobuy" categories of products that they simply don't need.

Personally, I don't need to add a single short dress, pair of pants or sweater to my already overstuffed closet.

Studies consistently show that sales drive impulse spending and buyer's remorse more than anything else.

Before adding that "bargain" to your cart, ask yourself whether you would love it just as much if it weren't on sale. Very often, these are items we wouldn't have looked at twice if they weren't under that "50% OFF" sign. Buy what you love, not what's on sale.

Make Use of Information Available to You There are tons of experts waiting to help you navigate financial matters. Obviously, having a wealth management, financial planner or investment advisor in your corner is the best way to ensure you're making the right money moves. Suppose you don't already have a financial expert you meet with regularly. In that case, many offer one-time financial "checkup" appointments to answer your questions, set up a preliminary game plan and make you feel more confident.

But you may not know that you likely have some experts in your corner already. Your bank or credit union may offer free financial guidance. (If you're shopping around for a bank, consider whether they provide this when deciding on the future home for your money.) Your workplace retirement plan likely includes free help from the vendor that manages the plan. If you have an online brokerage tool, it likely includes resources to educate you on investing. And it goes without saying that the internet offers a wealth of information – just be sure it's a reliable, expert, trustworthy source.

Negotiate at Work It's good advice to negotiate your salary at regular intervals and when interviewing for a new role. But have you considered negotiating other aspects of your work "perks" and compensation? Vacation time, reimbursements, commissions, job titles, special projects, retirement benefits matching, remote work days, professional development, severance and more may all be negotiable.

There are many potential ways you can increase what you get from your career.

Have a Credit Card So much of the discourse around credit cards is negative.

And it's true, they can be your worst enemy. But in today's world, a credit card can actually be a financial safeguard as well as a benefit to your credit – so long as you pay the balance off in full every month and try to stay below 30% of your card's spending limit.

We've all had the dreaded fraudulent activity alert on our debit cards. It's stressful and scary when your account has potentially been compromised. Your whole life goes on hold until the situation is resolved.

However, this moment is still somewhat stressful with a credit card, but you're not immediately cut off from your money. Credit cards also offer a level of consumer protection that debit cards don't always provide.

Especially if you shop online, a credit card places a wall between thieves and your money. While it doesn't mean you'll never get another fraudulent activity alert, it does mean that you'll still be able to make purchases – and your checking account won't be drained. That kind of peace of mind isn't exactly priceless, but it is nice.

Don't Just Sit on Savings This sounds counter-intuitive; after all, the first piece of financial advice you got was probably "save more money." Having some money in your savings account is absolutely essential. But having too much money just sitting there means you may be missing out on opportunities for that money to grow.

For the risk-averse saver, one tactic may be to move "overflow" savings into a high-yield savings account.

This means the money will accrue more interest. The drawbacks of these accounts is that there are often limits to the number of withdrawals and it can lack the perks of a traditional savings account. It's also just not the most efficient way to grow your wealth; a target date fund may be more effective for you.

Shop Around When it comes to your money, it's essential to know that you're getting the best possible service for the best price. From car insurance to wealth management, it's worth occasionally shopping around. While it's very important to bear in mind the trust and warm relationship you have with your current vendors, Just remember: cheaper does not always mean better.

If a new vendor offers a much, much better deal, be skeptical and ask lots of questions.

Be Patient Warren Buffet famously said, "The biggest thing about making money is time. You don't have to be particularly smart; you just have to be patient."

In times of financial uncertainty, it can be tempting to make drastic moves. If you're feeling uncertain, meet with your financial team to have a conversation. But if they advise caution and patience, take their advice – and a deep breath. It's going to be fine!

The JCC Group Founder, Juan From the beginning of The JCC Group, our founder, Juan Carlos Castro (hence the initials), wanted to use his many years of experience in the accounting arena to ensure that Nonprofit organizations and Hispanic small business owners had a reliable and well-versed professional able to help small and medium-sized organizations with their bookkeeping, payroll, sales tax, and local Net Profit reporting needs.

After a successful career in the hospitality industry, where Juan worked for the Hilton and Marriot corporations – including The Seelbach in Louisville, KY – Juan continued graduate school at Eastern Kentucky University, earning a master’s degree in business administration with an emphasis in accounting in 2000.

Juan has worked with nonprofit organizations since 1995, first as an accountant for Jewish Hospital in Louisville and Lexington, then later as a consultant with a regional CPA firm in Lexington. In 2005, Juan was the first VicePresident of Finance and Administration for the newly merged Bluegrass Community and Technical College. He successfully led a team from several departments and disciplines to attain accreditation from the Southern

Association of Colleges and Schools (SACS) as a single institution. Juan and his team were able to accomplish this within 16 months of the initial merger.

After leaving BCTC, Juan started The JCC Group. Juan spends most of his time with JCC Accounting Solutions, LLP, where they concentrate on helping companies to succeed through sound financial planning, monthly bookkeeping, in-depth financial analysis, payroll processing, and tax preparation. He is also the founder of the JCC Consulting Group and a general partner for JCC Insurance Group.

In 2005, Juan became the first Hispanic to join a selected group of Kentuckians as a member of Leadership Kentucky. In 2017, Juan was appointed by Governor Bevin to the Board of Regents at Eastern Kentucky University, where he chaired the Diversity, Equity, and Inclusion committee. He also served on the Finance and Audit committees and the Diversity, Equity, and Inclusion Committee at EKU’s Board of Regents. Governor Bevin also conferred Juan the honor of being named a Kentucky Colonel for his continuing effort on behalf of the Commonwealth of Kentucky.

In August of 2020, Lexington Mayor appointed Juan to the Downtown Lexington Management Board to serve as a voice for the Hispanic community in Lexington. He currently serves as the treasurer for that organization. In February of 2022, the mayor of Lexington also appointed Juan to the Permanent Commission for Racial Justice and Equality where he serves as chair of the Education and Economic Opportunities sub-committee.

In the past, Juan has also volunteered with a number of nonprofit organizations, including the Girl Scouts, United Way, and the Lexington Hispanic Education Association, where he served as treasurer for five years and is now the Chairman of the board of Directors. Additionally, Juan has also volunteered with the Dia de la Mujer Latina, Newport Aquarium, The World Equestrian Games, The Breeders Cup, Real Men Read program at Coventry Oak Elementary, Boys of Color, The IRS VITA Program, Bryan Station High School Band Association, and The Committee on Equal Opportunity at the Council for Post-Secondary Education. Juan also volunteers with Lemonade International as their Financial Director, Greater Gardenside Association as treasurer, Casa de la Cultura de Lexington, and Lexington Community Radio (RadioLex).

2021 brought a lot of changes and adjustments. Francisco was asked to focus full-time on the Insurance agency.

Francisco with members of the JCC Insurance team Francisco also volunteers in the community and is currently the President of the Greater Gardenside Association, a resident and businesses neighborhood association. In this position, he has been instrumental in bringing our businesses and neighbors together under a common goal. The GGA also participates in the Community Farmers Market every Wednesday from June to September. In this position, he has also worked with Casa de la Cultura Lexington to bring the festival Viva Mexico to our area, and last year, we had the largest attendance to date. Francisco also volunteers as an Ambassador with Commerce Lexington and is an active member of Gideons International.

In the past, Francisco has also served as a teacher in 3 different Spanish-speaking Bible Institutes and continues to volunteer with many different Hispanic Churches in Kentucky and Ohio. Francisco was also the Regional Director of The Spanish Concilio of the Church of God of Anderson, Indiana. Francisco continually works with different praise and worship teams throughout Kentucky and Ohio and serves as one of the musicians in his local church in Winchester. •

The best reason to do a home renovation is to make your home more enjoyable and livable for you and your family. But the next-best reason is to improve your home’s resale value.

The annual Cost vs. Value report for 2023 by Remodeling looks at what value homeowners have recouped through home remodels once they sell the home. They average the national cost of each project versus the average resale value in our region to determine the ROI each renovation might net.

While it’s worth considering the amount you may recoup in the sale of your home, it’s also important to remember that you will be using the spaces in the here and now. So if a renovation “only” nets a 75% return on your cost, weigh that against how much personal value you got from the space. We’ll bet you will agree that the remodel was 100% worth the investment!

GARAGE DOOR REPLACEMENT We all know how cumbersome a heavy, dated, poorly installed garage door can be – to say nothing of how much they negatively impact your home’s appearance.

Homeowners are looking for garage doors installed in more modular sections. They also want them installed on heavy-duty tracks with motorized garage door openers (this study assumes you are reusing your old garage door opener; your return might be slightly lower if you need a new one). Still, getting your money back – and then some – ain’t bad!

MINOR, MID-RANGE KITCHEN REMODEL Real estate agents agree that, more than anything else, kitchens are what sell a house in our market. Completing a minor, midrange remodel to your kitchen can increase the sellability of your home.

However, there does seem to be a point of diminishing returns with this remodel. In Lexington, the study showed that $25k kitchen remodels generally resulted in a 100% value return; $75k kitchen remodels dropped to 45% recouped for the homeowners. While a stunning kitchen will get potential buyers’ attention, what they’re willing to spend on a kitchen doesn’t increase by much. The study is clear: renovate your kitchen for your own enjoyment, but don’t expect a big return on a major overhaul. Still, a great kitchen is – almost – priceless.

The other “lesson” she was taught (especially when she started using make-up in her early teen years) is to never go to bed without washing your face first. Ever. She still does this every night, no matter how tired, how late, or where she is. Words of advice: "Don't let anyone tell you that you can't do something."

Vicki Evans, VP of Community Relations, has a mom who insists you should work a normal work week, like 9-5. Then enjoy the rest of your time away from the office doing the things you enjoy most. Your career should be just that… your career…. Not the main focus of your life.

Stephanie Gilmore, Photographer, has a mom who hosts the most amazing dinner parties–like she's Martha Stewart–plans fun games for the family to play on Christmas Eve, cans the best dilly beans all the granddaughters fight over, she's an amazing seamstress (she used to sew us all matching outfits for Christmas), loves to cross stitch, keeps meticulously manicured flower gardens, and can teach you all about astronomy, or ornithology. She’s the warm hug that holds everyone together. Now that Stephanie and her mom live in separate cities, she dreams of going home to snuggle on her mom’s couch for the world’s best back scratch.

Joseph Yarber, Digital Specialist, was taught to always work hard—no matter what you do in life.

Chloe Day, Graphic Designer, has a mother who has always been a style icon and beauty guru. Whether it was teaching her how to put on eyeliner, sharing her (extensive) collection of shoes, or handmaking the perfect bracelet, she always knows how to look puttogether. Even though she’s outgrown most of her mother’s shoes now, she still looks forward to going home and sharing makeup tips and their favorite finds with each other.

Keith Yarber, Publisher, learned by his mother’s example to treat everyone equally with dignity and respect, especially those who need it most.

Keni Parks, Photographer, grew up with a mom who was the wife of a minister, and took in over 35 foster kids throughout her childhood. They did not have a lot of money, but she never remembers feeling like she lacked for anything. In your child’s first years, having reliable childcare is essential for most parents. Even if you don’t plan on having your child in daycare regularly, establishing a trusting relationship with a childcare provider can set your mind at ease when you need their service.

Get Started Early Waiting lists for early childhood care and schooling can be lengthy – often months or years. Putting off your search can back you into a corner in terms of your available choices. The process can also take longer than you’d think between tours, references and research.

Do Your Research From licenses to safety procedures, there are many aspects of childcare on which you will want firm, clear answers. Do online digging, ask lots of questions and find references to talk to. Also, check your gut feeling about the facility and caregivers: your intuition can tell you a lot!

Young Childhood Education Why Your Choice Matters

Early childhood is a crucial time in your child’s development. Your child’s first school experiences will set the tone for how they approach the world.

Public Schooling Most children attend the public schools within the district in which their primary residence falls. You can put in an out-of-area request if you wish your child to attend a different public school. However, the criteria for these requests are limited due to capacity concerns.

Know Your #1 Priority Each student has their own goals, which will shape your choice. A budding sports star should look at the sports program and coaching staff of a prospective school.

Determine your top priority early in your vetting process, and the choice may be easier than you expected!

Whether you’re debating this choice on behalf of yourself or your child, post-secondary education often comes down to one issue: a future career. It’s important to understand the accreditations your prospective schools hold, as well as what’s required of you to attain the role you eventually hope to achieve.

Certificate For those looking to develop certain skills quickly, certificate programs can be a flexible means of advancing their careers. These can be earned at community colleges, technical/vocational colleges, or online.

Associate’s Degree Many two-year institutions offer the Associate of Arts or Associate of Science degree. Often, these schools are branded as community colleges because they have close links with local high schools and universities. Generally, students commute to the campus. These schools have flexible admissions processes and lower tuition. These schools can help students adjust to the higher-ed lifestyle while offering them qualifications that can lead to better-paying careers.

Some students take the “2+2” track wherein they attend a community college for two years, then attend a nearby college or university for two additional years to earn a Bachelor’s Degree.

Bachelor’s Degree Most colleges and universities offer this degree type, a basic requirement for many jobs nowadays. Most students finish their degree within four years, though some programs may take longer.

The most critical factor in selecting a college is whether it offers a course of study in your chosen field; some schools have prestigious programs in select areas of study, which may make them more appealing than other institutions. After that, cost is generally the biggest factor for many students.

Master’s/Graduate Degree Attending a Master’s program provides a more narrow field of study.

These degrees generally take around two years to obtain. You should select a school that offers the Master’s program you’re seeking. W HILE MOST OF US

probably think of picnics as more of a late-summer activity, we’re here to make the case for dining al fresco in May. While breezes may be cool, that means bugs aren’t quite out in full force. That fact alone is enough to get us grabbing our picnic baskets!

But our favorite reason for picnicking in May? We want to get into the habit of indulging in casual luxuries this summer. That might sound like an oxymoron, but “quiet luxury” is very much on trend, both as an approach to building your wardrobe and a way of living.

What is quiet luxury? In fashion and interior design, it refers to utilizing elevated materials in timeless styles. It’s upscale without being ostentatious.

And we love the idea of bringing that approach to our summer fun! Why not make treating yourself to the finer things a matter of habit rather than something you reserve for special occasions? Why not allow yourself to indulge in the moment just a little?

One thing that holds a lot of us back is that we often equate “luxurious” with “expensive.”

But the best things aren’t necessarily the most expensive; a $3 wedge of cheese can feel like an outrageous indulgence in the right circumstances. Simply having your usual sandwich on bakery-fresh bread outdoors transforms the whole into something far more luxurious than the sum of its parts.

We get that having a picnic isn’t exactly a revolutionary idea. But the art of doing so intentionally, with the aim of enjoying every second to the fullest, may well be.

PERFECT CHICKEN SALAD 1/2 c. mayonnaise 1/2 c. plain Greek yogurt 2 T lemon juice 2 tsp. dill, finely chopped 4 c. cooked chicken breast meat, diced 2 c. seedless red grapes, halved 1 c. celery, halved and sliced 1/2 c. red onion, finely chopped 1 c. toasted pecans, roughly chopped Mariposa Napkin Boxes and Weights (available at The Front Porch)

In a small mixing bowl, mix together mayonnaise, Greek yogurt, lemon juice and dill.

Toss together chicken, grapes, celery, onion and pecans in a large mixing bowl. Add dressing to salad and gently stir to evenly coat salad ingredients. Cover and refrigerate until ready to serve. We mean it when we say that luxury doesn’t have to mean taking out a loan.

Pricey wines are obviously lovely, but we know it’s entirely possible to have a fabulous bottle for under $25. Bougie on a budget is beautiful!

Hoping to select your own stunner without breaking the bank? Try asking the staff at your favorite wine shop. They’ll be happy to help steer you towards something within your budget that suits your tastes. Don’t be shy; they’re not going to judge you for going on the low end! That said, most wine experts suggest not dipping below around $10/bottle – though that’s by no means a hard and fast rule. Do avoid “last call” or “bargain bin” deals unless you know it’s a wine you love.

Another tip is to stick to white wines. Production of white wines tends to be faster than reds, so you’re likely to find a bright, refreshing sip for less. If you want to try reds, go for lesser-known regions or obscure grapes.

Cover tilapia with water in a medium skillet. Bring to a boil; remove from heat, cover and let stand 5 minutes.

In a small bowl, add jalapeño, lime juice, 2 T cilantro, oregano and salt; mix well.

Transfer tilapia to a nonreactive dish with a slotted spoon. Pour lime juice mixture over top. Add bell pepper, tomato, onion and olives.

BLACK GARLIC

We all agree that garlic is a flavor sensation, the “secret ingredient” that changes the game in so many of our favorite dishes. But have you heard of black garlic? It’s a delicious variation of this familiar ingredient that can be an absolute game-changer in your cooking.

This culinary delight is just regular garlic that has been carefully aged over the course of weeks – or even months – in carefully controlled conditions. The result of all this time and effort is a more subtle flavor than regular, raw garlic. It takes on a molasseslike sweetness and depth.

BLACK GARLIC VINAIGRET TE 4-6 cloves black garlic 2 T Dijon mustard 3 T red wine vinegar 6 T olive oil Add black garlic, mustard and red wine vinegar to a blender or food processor; blend to combine. Blending on low, slowly stream in the olive oil. Season with salt and pepper, to taste.

Store in an airtight jar in the refrigerator, and shake before using.

Essentially, it’s a little like caramelizing onions; instead of the pungent punch of flavor you’d get with the raw product, you end up with something sweeter and more refined.

The softer texture of black garlic means it’s a little easier to eat whole or can be mashed with a fork for a spreadable consistency. That makes this delicacy perfect for pizzas, bruschetta, cheese boards, burgers, dips, dressings and more.

While it can be used in place of regular, raw garlic in many recipes, the texture means it can be difficult to mince; always do a quick internet search before swapping in black garlic for tips to help you navigate its handling.

Black garlic can be purchased from specialty food stores, generally jarred though some stores offer it in bulk. Most recipes call for peeled cloves. You can also find dried, ground black garlic in many grocers’ spice aisles to use as a seasoning. But we think the dried stuff lacks a little of the magic. • May 2024 | TOPS

RHUBARB

“AN ACQUIRED TAST E”

is probably a fair assessment of rhubarb. The vibrant pink, fleshy stalks of this plant are mouth-puckeringly sour. The texture is crisp, not unlike celery – a divisive vegetable in its own right.

But this spring vegetable grows readily in Kentucky soil, ready for harvest in April or May. Greenhouse production means rhubarb may be available year-round, but US-grown rhubarb is generally available from April through July.

Curiously, the leaves of the rhubarb plant are poisonous. They contain a heavy dose of the potentially-lethal toxin known as oxalic acid. While you probably wouldn’t eat enough to ingest a lethal dose, you’d still experience some very serious stomach upset. The stalks of the plant contain none of this poison, and ironically, were used as a cure for stomach aches over 5,000 years ago by Chinese traders.

So how did this strange, sour vegetable become a spring dessert staple? By the late 18th century, Europeans were utilizing the sour stalks in tarts, likely in place of lemon. As sugar became more readily available, people realized that the sour taste could easily be tempered to something pleasingly tart.

Eventually, rhubarb made its way to the States. It was often used as much as an ornamental plant as it was a part of the culinary garden; many homes use rhubarb in place of other broad-leafed plants like elephant ears. But as it was often ready just in time for Easter and Mother’s Day, the pink, tart stalks of the rhubarb plant quickly became a must-have for springtime desserts. by Amanda Harper

RHUBARB CHEESECAKE PIE RHUBARB TOPPING

Preheat oven to 375°F.

3 c. chopped rhubarb 1/2 c. sugar 1 T all-purpose flour 1 T lemon juice

Combine rhubarb topping ingredients in a small saucepan. Bring to a boil, then allow to cool completely while preparing the rest of the cake.

CRUST

Prepare the cream cheese filling. Combine the cream cheese and sugar in a large bowl; beat until creamy. Add in eggs 1 at a time and mix until completely combined.

1 c. all-purpose flour 1/4 c. sugar 1/2 c. butter

Combine crust ingredients, mixing until crumbly. Press into the bottom of a 9” springform pan. Bake for 15 minutes.

Pour over crust and bake until filling is set, about 30 minutes.

Immediately spread cooled rhubarb mixture over the surface.

CREAM CHEESE FILLING 2 8oz. pkgs. cream cheese, softened 1/2 c. sugar 2 eggs

Prepare the sour cream topping. Combine sour cream, sugar and vanilla in a bowl. Spread on top of still-warm cake. Optional: Top with toasted sliced almonds. (adapted from AllRecipes)

ST RAWBERRY RHUBARB CRISP BARS 1 c. rolled oats 3/4 c. all-purpose flour 1/2 c. light brown sugar 1/4 tsp. salt 6 T butter, melted 1 c. rhubarb, small-diced, divided 1 c. strawberries, small-diced, divided 1/2 tsp. cornstarch 1 T lemon juice 1 T sugar, divided

Preheat oven to 375°F. Grease and line the bottom and sides of an 8” square baking with parchment paper.

Add oats, flour, brown sugar and salt to the bottom of the pan and mix with a fork. Drizzle melted butter over the mixture and stir. Remove roughly half of the crumble mixture and set aside. Press the remaining half into the bottom of the pan in an even layer.

Spread half the rhubarb and strawberries over the crust; sprinkle with the cornstarch, lemon juice and 1/2 T sugar. Spread with remaining fruit and 1/2 T sugar. Scatter reserved crumble over the fruit and press gently.

Bake for 35 minutes, or until fruit is bubbly and crisp is golden. Let cool in pan for 20 minutes, then place in fridge to cool completely. Sprinkle with powdered sugar and cut into squares to serve. Keep refrigerated. (adapted from Smitten Kitchen)

2 large stalks rhubarb, cut into 4” pieces 1/2 c. sugar 1/2 c. water 3 T lemon juice

Add rhubarb, sugar and water to a medium saucepan. Over mediumlow heat, bring to a simmer; cook around 15 minutes, or until rhubarb is tender and liquid turns pink. Add lemon juice. Strain and let cool completely.

SPRIT Z 2 T rhubarb syrup 1 oz. elderflower liqueur Club soda, chilled

SPRIT Z Add ice cubes to your glass. Add rhubarb syrup and elderflower liqueur and gently stir. Top with club soda. (adapted from Food Network) Notes: If a little more kick is desired, replace club soda with prosecco!

RHUBARB CURD 13 oz. rhubarb, cut into 1” pieces 1/4 c. water 1 c. sugar 3 T lemon juice 4 large eggs, whisked 2 T butter, room temperature

Add rhubarb to blender and blend until smooth. Press through a fine mesh strainer, rendering 1 c. juice.

Add juice to a saucepan with sugar and lemon juice. Add eggs and stir.

Over medium heat, bring mixture to a simmer, stirring constantly. Bring to a boil; when mixture coats the back of a spoon, remove from heat.

Immediately add butter, stirring until completely melted.

Pour mixture through a fine mesh strainer. Add to jars. Let cool to room temperature before covering, then refrigerate overnight; keep refrigerated. Use within 2 weeks. (adapted from The View From Great Island)

SWEET AND SOUR RHUBARB CHICKEN 2 T olive oil 4 skinless chicken thighs 4 skinless chicken drumsticks 1 large red onions, sliced 5 cloves garlic, sliced 1 T black pepper 2 tsp. turmeric 1 tsp. ground ginger 1 14oz. can chopped tomatoes, undrained 5 T honey 3 T lime juice 1 lb. rhubarb, chopped 2 1/2 c. chicken stock

Heat oil in a large Dutch oven over medium heat. Add chicken and fry until golden brown all over, around 5 minutes per side. Remove to a paper towel-lined plate.

Add onions and garlic to pot and cook for around 5 minutes, stirring occasionally. Add pepper, turmeric and ginger; let heat until fragrant, stirring constantly. Add chopped tomatoes and cook for 2-3 minutes.

Add honey, lime juice, rhubarb and chicken stock, and gently stir to combine. Return chicken pieces to pot. Bring to a boil, then reduce heat to medium-low; simmer, uncovered, for about 1 hour, stirring occasionally, until chicken is cooked through. Season to taste. (adapted from Where is My Spoon) Notes: Some people prefer adding more honey at the end for a sweeter sauce. Can be served over rice or stir fried mixed vegetables.

RHUBARB ICEBOX CAKE COOKIES 1 T vanilla extract 1 1/2 tsp. baking powder 3/4 tsp. salt 3/4 c. sugar 16 T butter, room temperature 2 c. all-purpose flour

FILLING 4 c. rhubarb, diced into 1/2” pieces 3/4 c. sugar, divided 1/8 tsp. nutmeg 1 T orange zest 1 T cornstarch 2 T cold water

W HIPPED CREAM 2 c. heavy cream 1 T sugar 2 tsp. vanilla extract

Make the cookies. Preheat oven to 350°F. Line two baking sheets with parchment paper.

In a large bowl, combine vanilla, baking powder and salt. Add butter and beat until smooth. Add flour and mix until dough comes together.

Scoop by teaspoonful onto prepared baking sheets, leaving 2” space.

Gently press tops with the bottom of a glass dipped in sugar to 1/4” thickness.

Bake 20 minutes, until cookies are very light golden brown. Transfer to wire racks to cool completely.

Prepare filling. Add rhubarb, 1/2 c. sugar, nutmeg and orange zest to a medium saucepan; bring to a boil. Reduce heat and simmer for 20 minutes.

In a small bowl, mix together 1/4 c. sugar, cornstarch and water until no lumps form; stir into filling mixture. Return to a boil and cook for about 1 minute until sugar dissolves and filling thickens and mixture is no longer cloudy. Remove from heat and cool completely.

Make whipped cream. Place cream and sugar in chilled mixing bowl. Whip until whisk’s tracks are visible. Add vanilla and beat until firm peaks form, but stop before whipped cream curdles.

Assemble the cake. Take a cookie and spread with 1 T rhubarb filling; top with another cookie. Keep alternating rhubarb and cookies until you have a stack of four cookies. Lay on its side on a cake stand. Keep repeating this, laying stacks on their side and form a circle. When you complete the last stack, spread cake top and sides with whipped cream. Chill at least 4 hours before serving. (adapted from King Arthur Baking) Notes: Serve with sliced strawberries or rhubarb curd. •

may seem unbelievable that we’re already using THAT “s” word, but Memorial Day does mark the unofficial beginning of summer. With all the graduation parties, Mother’s Day brunches and cookouts galore, it’s the perfect time of year for summer sips – even if the calendar doesn’t technically agree. These refreshing cocktails (and mocktails!) will keep you cool all season long...

Strawberry Sparkler 5 medium strawberries, sliced 1/2 oz. simply syrup 1/2 oz. lime juice 10 mint leaves 2 oz. vodka 2 1/2 oz. club soda

In a cocktail shaker, muddle together strawberries, simple syrup and lime juice. Add mint leaves and gently tap a few times with muddler.

Add vodka and fill 2/3 full with ice. Shake until chilled.

Add ice and club soda to a Collins glass. Strain cocktail into glass, and stir gently.

Agua de Melon Verde 3 c. 1” honeydew chunks 4 c. water, divided 1/3 c. lime juice 1/4 c. sugar

Puree melon, 2 c. water, lime juice and sugar together in a blender until smooth. Strain into a pitcher. Add remaining water and stir. Refrigerate at least 1 hour prior to serving.

Garnish with a lime wedge, if desired.

Ranch Water 3 oz. tequila blanco 1 1/2 oz. lime juice Topo Chico

Fill a glass with ice. Add tequila and lime juice. Top with Topo Chico. If desired, garnish with a lime wedge.

Notes: other sparkling mineral waters will work here. Feel free to go with a flavored variety, if you prefer!

Kentucky Kiss 2 large strawberries, sliced 1/2 oz. lemon juice 1/2 oz. maple syrup 2 oz. bourbon 1 splash club soda

Add strawberries, lemon juice and maple syrup to an oldfashioned glass. Muddle well.

Add bourbon and fill glass with ice. Stir. Top with a splash of club soda. If desired, garnish with sliced strawberries.

Gin Basil Smash 8 basil leaves 2 1/2 oz. gin 3/4 oz. lemon juice 3/4 oz. simple syrup Add basil leaves to a cocktail shaker. Gently muddle.

Add gin, lemon juice and simple syrup. Add 2 handfuls of ice and shake until chilled.

Fill a lowball glass with ice. Strain cocktail into glass.

Aperol Spritz 3 oz. Prosecco 2 oz. Aperol 1 splash soda water Orange slice Fill a wine glass with ice.

Add Prosecco, Aperol and soda water. Stir gently to combine, and garnish with orange slice.

Perfect Paloma

Sea Breeze

Grapefruit slice 2 shots blanco tequila 2 oz. fresh grapefruit juice 1/2 oz. lime juice Grapefruit soda

Grapefruit slice 1 1/2 oz. vodka 3 oz. cranberry juice 3 oz. grapefruit juice

Place a slice of grapefruit at the bottom of a rocks glass. Fill with ice.

Add tequila, grapefruit juice and lime juice. Top with grapefruit soda of your choice.

Note: if you want an even saltier sip, rub a grapefruit wedge along the rim of your glass before filling, then dip in salt.

Place a slice of grapefruit at the bottom of a glass. Fill with ice.

Add vodka, cranberry juice and grapefruit juice.

Gently stir.

Note: fresh-squeezed grapefruit juice will make all the difference. If you want an even bolder sip, use flavored vodka – raspberry or grapefruit would be great.

Pimm’s Feisty Michelada Cup Salt Cayenne pepper Lime wedge 1/2 oz. lime juice 2 dashes Worcestershire sauce 2 dashes Tobasco Black pepper 6 oz. Clamato juice 6 oz. Mexican lager beer

2 oz. Pimm’s No. 1 1/2 oz. lemon juice Ginger ale Cucumber slice Mint sprig Strawberry Optional: lemon wedge or orange wedge

In a small plate, mix together equal parts salt and cayenne pepper. Rub the lime wedge along the rim of a pint glass, then dip into the salt mixture.

Garnish with cucumber slice, mint sprig and a skewered strawberry. Optionally, garnish with an additional lemon or orange wedge.

Add lime juice, Worcestershire sauce, Tabasco and a pinch of black pepper to the glass. Stir gently. Add ice to glass.

Notes: That’s a lot of garnishes, but they really do complement the flavor of Pimm’s beautifully.

Pour in Clamato juice. Carefully pour in beer to float on top.

Fill a highball glass with ice. Add Pimm’s No. 1 and lemon juice and stir to combine. Top with ginger ale.

Pimm’s is a gin-based digestif. If you don’t have this liqueur on hand, combine 1 part gin, 1 part red vermouth and 1 part curaçao for a quick substitute. •

Notes: garnish as you would a Bloody Mary – we encourage you to get creative with this step.

Money Matters

Q: One of my friends is perpetually “broke,” but never turns down plans to hang out... leaving the rest of us with the bill. What can I do?

Let me guess: they “forgot” their wallet? They’re “totally shocked” that their credit card was declined?

They’ll “get the next one,” if you’ll just cover them this time? (Yet they mysteriously post photos of vacations on Facebook, like, every week...)

There are some people who, for whatever reason, never have the cash to support the lifestyle they’re trying to lead. They never pay you back and yet they never seem to stop having fun.

First, try altering your plans with this person. Instead of going out to dinner, drinks, concerts or shows, why not do free (or low-cost) activities? Go on a hike, browse public art, have a picnic or play board games at your house.

But if you feel like you’re perpetually footing the bill to have fun with this person – especially if it’s often their idea – maybe it’s time to try a little honesty.

Let them know that you’ve noticed that you have paid for the last several outings.

Explain that you don’t need reasons why, just you want to know what’s up and how you can make hanging out with them work for both of you. Prepare for them to go on the defense – these folks are often very aware of their bum ways, and are actually deeply ashamed. Just approach them with a lot of love and empathy; your friendship may be something you can save (pardon the pun).

Q: When should we talk about splitting the tab at a restaurant?

This is what the group text was made for, my friend. When you all finally decide on a spot for dinner or drinks, drop your proposed method of splitting the bill in the chat. Don’t make it a question.

Instead, lead off with something like, “If it’s cool with everyone. we’ll...”

That way, everyone has the opportunity to voice any objections – before the server is standing by your table, waiting for a card.

Q: I have a friend who brags about money. Ew. These are often deeply insecure people who have no idea that they’re not actually impressing anyone. If you’re tired of nodding along, try one of these tactics: • Change the subject. Treat their brags as an overshare. Nod, then start talking about anything else.

• Talk to them. Take them aside and let them know that sometimes, it feels like they’re focusing a lot on material wealth. Say that you’re happy for them, but that you’d really rather hear about how they are doing, emotionally and spiritually.

• Compliment them more often.

Let them know the parts of their personality and life that you truly do admire – and that it’s not their money, vacations or possessions.

Q: How do I get my partner to open up about our finances?

We each bring lots of hang-ups and assumptions about money to our romantic relationships. No one is completely right about how these things should be handled.

This is a common issue that brings couples to marriage counselors. Don’t panic; these are professionals who understand all the emotional baggage that we bring to this issue.

If that’s not on the table, an open, honest talk about your concerns is absolutely reasonable. Explain what you want to know and why.

If your partner flat-out refuses to talk about money, or minimizes your concerns, please take that as a big ol’ red flag.

Q: Should I lend my friend money?

Oh, the age-old question. You’d think by now that we’d have come up with a simple answer to this one. But it’s always going to be a sticky situation.

The prevailing wisdom seems to be this: never lend any money you’d be uncomfortable with never seeing again. Period.

But saying no to a friend – especially a friend in need – can feel heartrending. You want to help this person who you (presumably) love and trust.

First, get realistic about who your friend is. If you’re honest with yourself about their track record with money, it may not be hard to see how they got themselves into this pickle – and why they’re not likely to pay you back.

Second, get concrete details about what they intend to do with the money. If their plan sounds like a money pit,

strongly reconsider lending them money – or perhaps consider talking your friend out of this stupid idea.

Perhaps most importantly, take a look at your own finances. Can you really afford to potentially lose this money? Even if your friend makes good on their word, you’ll likely be without that cash for a while. Can you swing that? If you have any hesitation, then don’t lend it.

So let’s say you decide to go forward with the loan. Get the details of the exchange in writing, including the plan for repayment. Both of you should sign it, ideally in front of a witness. If your friend tries to wiggle out of paying you back, you could potentially have some legal recourse.

One piece of advice? Do not lend a friend your credit. Never co-sign a loan and don’t let them use your credit card to make a purchase. That could haunt you for years. •

“THE IDEA IS SIMPLE. You give $365—a dollar a day—to make our community better. You pool those daily dollars with others. Then, once a year, you decide together which organizations you want to receive $30,000 in total grants.”

That’s how the Blue Grass Community Foundation explains BGCF365. This program unites emerging philanthropists of all ages to make a collective impact in our community through a year-long cycle of engagement—and fun.

An important aspect of BGCF365 is that money is awarded through collective decision-making among the members. Non-profits aren’t simply chosen from a pile; finalists pitch their ideas for utilizing the funds live during a fun grantmaking meeting. Members then vote and award $30,000 in grant money then and there.

But that’s not all. Half the membership contribution helps build the BGCF365 Endowment. This perpetual charitable asset is set aside to provide grantmaking resources for years to come. Their endowment encompasses more than half a million dollars, thanks to both the BGCF365 members and a generous commitment of $365,000 from philanthropists John and Donna Hall.

It can be hard to picture what kind of impact a single dollar might have. But through this initiative, it’s easy to

see how powerful a buck can be. Since 2017, $150,000 in cumulative grants have been awarded to local nonprofit organizations.

Each year, the members vote to choose a theme for grant pitches. For 2023, they heard project pitches from nonprofits supporting local youth. Last year’s first place $15,000 grant winner was Operation Making a Change. OMAC aims to pave the way for success, one child at a time, through after school programs, services for incarcerated youths and public school mentoring programs. They offer a 12-week violence prevention and intervention program, as well as addressing other critical issues. The second place winner was the African American Ballet Troupe, which offer free ballet classes to traditionally underserved youth. The third place grant recipient was Specialized Alternatives for Families and Youth, which offers a Pathways to Success Skill Building Program to aid youth aging out of foster care in establishing their adult lives.

This year, pitches fit the theme Connecting Communities to Resources. Participating nonprofits will feature programs that break down barriers for local people in Fayette County to access vital resources. Join them on May 8th, 5:30-7:30pm at The Melodeon for BGCF: The Finals to hear the pitches and see the power of a dollar.

Reading Up On Kentucky Author

Tyeshia Sturgis

If I Learned

anything from my inspiring conversation with Kentucky writer Tyeshia Sturgis, or her pen name T.L. Sturgis, it’s that as long as you have the willingness and grit to go after what you want, and stay grounded, you can achieve anything.

Tyeshia grew up in Mt. Sterling, where she started journaling at a young age. Since mental health was not a heavy topic while she grew up, she found herself using journaling to cope. “My outlet was always writing”, she said. However, it wasn’t until a teacher wrote a note on her short story assignment, “Stephen King & Edgar Allen Poe would love this” (Tyeshia’s favorite authors), that she knew writing would always be a part of her life.

But generating the momentum Tyeshia has now found, writing 6-8 hours per day and in the production of transforming a novella into a film, didn’t begin until the lockdown of 2020. After moving to Lexington in her twenties and raising her children, she suddenly found herself with time. “During COVID, it let me get back to me.

Let me try to write a book.” First came a book of poetry, which received high praises on social media. From there, she just kept going. “I read articles, watched Youtube, and tried to do things on my own. I didn’t realize how much work it entailed.”

When I asked Tyeshia about her experience or inspirations from other Kentucky writers, she explained, “I couldn’t find writers that wanted to help other writers.” Rather, it was through social media and online writers’ groups, that she found the most community, and where others sought out her advice. “People thought I was a guru but really

I’m not. I skipped a lot of steps, reset…I’m just a regular person. You can come to me with anything with writing.”

Tyeshia explained how just like her journaling was therapeutic for her growing up, that’s how writing is for her now. “When I write, I am thinking about trauma and how to overcome it.

There’s always an uplifting part, which is very important to me. When I started this journey, it’s because I had a passion for writing. I wanted to leave a legacy for my family, break generational curses, advocate for mental health.”

Tyeshia stays true to this effort in “The Devil’s Daughter”, her novella currently in development to become a film.

“I wanted to write a horror book. I’m going to put my biggest fears in this book. Not only was it a release for me, but it was like a way to journal for me.”

Tyeshia hopes to use real paranormal places in Kentucky for filming in efforts to stay locally focused.

Every sentence Tyeshia spoke was coated with gratitude and humility. “I feel like I am so blessed,” she said multiple times during our conversation. “I never forget the people who help me along the way.

God has given me the gift to gab, so I just gab!”

Tyeshia strives to make her writing leave the reader on a positive note, no matter the genre. “I want to leave hope for people. If I can step out and do it, then they can too.”

Through telling her story, Lilith hopes to shed light on the truth and warn others about the dangers that lie ahead. She remains steadfast in her belief that she is not insane and that her actions were necessary to save humanity from eternal damnation. For those who refuse to believe in the supernatural, Lilith strives to provide insight and understanding before it's too late.

The novel is currently in development as a cinematic exploration delving into the realms of psychological horror and the supernatural. This upcoming movie aims to navigate the blurred boundaries between the tangible and the supernatural, inviting viewers to question their beliefs and immerse themselves in a haunting narrative.

FUND FOR THE ARTS There is something beautiful about Lexington—the rich symphonies of the youth orchestra, the vibrant murals adorning the city walls, the colorful horses across downtown, or my personal favorite, the resonant applause of the Lexington community echoing back to as I conclude a performance on stage. The arts community of Lexington is truly beautiful.

During the younger years of my childhood, I had immersed myself in the world of gymnastics. I was constantly pushing my boundaries: flipping off the vaults, tip-toeing on beams, swinging off the bars, and tumbling on the floor. From when I was three, this rigorous routine continued. It was around when I was eight years old, when my mother had taken me to my first ballet performance, ‘The Nutcracker.’ It was unlike anything that I had experienced before. Beautiful dancers floating across the stage, partnering with enchanting melodies that kept me at the edge of my seat, eager for more. Reflecting back upon the past six years of my life, I realized that my true fulfillment was not as a gymnast, but rather somewhere else: amongst those dancers. Less than a year had passed when I was enrolled into my first ballet class at Kentucky 161

Ballet Theatre (KBT), the very same company that had entranced me with their performance a year prior. I stepped into the studio, wearing a teal leotard, rainbow neon shorts, small pink glasses, and a high ponytail adorned with a huge black bow. I had both hands on the barre with my eyes on the girl next to me as I mimicked her steps, but I felt a profound sense of belonging. And it was in that defining moment when my identity became true: I am a dancer.

Being a dancer had brought me friends, mentors, and lifelong connections that I would have been oblivious to otherwise. This sapling of dance had sprouted into a network of people, bridging both local and international communities. While KBT may lack the extravagance of lavish sets, expansive studios, or a large company, they are filled with passion and love for the arts. Many dancers from diverse backgrounds, spanning from countries such as Cuba, Switzerland, Japan, and most importantly, Lexington, are united with a shared love for dancing. This past summer, I had the opportunity to participate in the Kentucky Governor’s School for The Arts program for dance. Through this enriching experience, I had the pleasure of encountering many dancers and

mentors from various places of Kentucky, further expanding and deepening my connections within the artistic community.

Even today, the bonds and memories that were created through this program remain as a principal part of my dancing, constantly serving as inspiration and motivation as I move across the stage.

Following the pandemic, several of my friends, the people who initiated my passion for dancing, had chosen to prioritize their academics over their dance pursuits. Finding this delicate balance between academic responsibilities and dedication to dance had been a little difficult at times.

However, within the familiar studio, I found solace and liberation, escaping the pressures of school and home to express myself free of worry through the art of dance.

Being in the studio had served as my lifeline, dancing away my worries and concerns. It was through this dancing that I was able to uphold the cherished bonds and connections from my friends, both my old and new, through our shared passion of dance.

Although my story may lack originality, its relatability is what renders it special—embracing that it resonates with many, highlighting the accessibility of the arts to “ordinary” individuals. In this vibrant community of Lexington, anyone can enjoy the arts and partake in creative expression.

However, nothing is more important to the quarterback than his faith.

“With football I know we I could throw for five touchdowns and 700 yards and run for 400 yards and we win by 82 (points) or I could throw three picks, get sacked six times and five be my fault and my family would treat me the same and I would get the same amount of texts,” Vandagriff said.

“I am more than a football player. I find my identity in Christ. Football is great but it is just a platform for me. I hope others see that in me and the overflow of my heart in my faith.

Football is just a game and whatever happens I prepare as hard as I can and get in position to win but in the end I am a follower of Christ.”

Vandagriff was the No. 4 quarterback coming out of high school in the class of 2021, according to the On3 Industry Ranking, and was a highly sought after prospect when he decided to transfer to UK after being part of two national championship teams at Georgia. He picked Kentucky before he even visited Lexington because he knew that was the right spot for him after talking to UK coach Mark Stoops.

So how has life in Lexington been for him?

“It’s getting better. I mark down how many days since the last snow because that kind of weather was not that enjoyable,” the Georgia 164

native said. “Driving in the snow for the first time was interesting. I do like to be outside as much as I can.”

Greg Vandagriff coached his son at Prince Avenue Christian School in Georgia. Before that Brad Johnson, a 17-year NFL quarterback who led Tampa Bay to the 2002 Super Bowl, coached the current UK quarterback in middle school.

“My dad was never a quarterback coach. He was a defensive guy until my ninth grade year when his offensive coordinator passed away suddenly from pancreatic cancer,” Vandagriff said. “He called both sides of the ball that year.”

Vandagriff was a slot receiver his freshman season-—his father’s second year as head coach—because the returning quarterback was 28–2 as a starter.

“My dad said he wasn’t even going to see if I was the better quarterback,” the UK quarterback said. “I learned to play slot and started the sixth or seventh game. I learned a lot but I did not win much on man routes.”

His sisters are exceptional athletes, too. Audrey is an Alabama state track champion in the sprints and Anna is a sophomore volleyball player at Eastern Kentucky University. “Our family is very competitive but that made us all better,” he said.

“I do not want to take the highs too high or lows too low. If you win, people are ready to vote for you for the Heisman. If you lose, you are the worst player ever. I just make sure I stay on that steady course and stay away from the highs and lows.”
